So my 11 year old brother only eats chips and salsa, and he managed to fill up on theirs because it was really good. I had chicken enchiladas, which they happily substituted rice for beans (and no dirty looks!). The chicken was shredded, and really well seasoned, so good to eat it. My dad was with me, and while it didn't meet his from Phoenix test completely, his plate was empty and he was full of happiness when we left. I will definitely go back, sans family, and try the monster margaritas!

My family always come here when I come home for Christmas break. They have the BEST chips, salsa and bean dip that I've ever had. They always refill out salsa and bean dip if we run out. The service is excellent. I'm not big on the booths (they can use a little updating) with stains and such on them. But the food is amazing. I usually get the enchiladas with tamale and it gives me a flavor of explosion in my mouth ever time. GREAT mom & pop place and for the price, its even better. I wish they had this in DC...

Casa Tequila has some great reviews, so we decided we should try it out for an early dinner. When we walked in, the décor was friendly and inviting (although the level of cleanliness was a bit nerve-racking.) We were seated quickly, but most of our other service was quite slow (we were literally the only customers in the restaurant at this time, so I expected quicker service than was provided.) We ordered two Carne Asada burritos, as well as a Chile Colorado burrito. The traditional chips and salsa were brought out, which were both quite tasty (and there were plenty of them.) The meal started out well with the chips and salsa, but ended on a lower note. While the Carne Asada burritos were mid-range as far as taste and quality, I was super unimpressed with the Chile Colorado (which happens to be my favorite Mexican themed dish in general.) It honestly tasted like the Chile Colorado you purchase in cans from Winco for $2.00, and the Colorado sauce truly looked as though it was from a can (overly reddened with separating oil, gritty texture, taste of tin.) It was disheartening, since my hopes were high after tasting the fresh, lovely salsa and chips. The meal ended with two free dessert chips (cinnamon with fresh whipped cream and strawberry topping) which would have been delicious if they hadn't been slightly overcooked with a hint of burnt taste to them. All in all, I would consider giving this place another try if they cleaned up their décor a bit, and didn't appear to pour my meal out of a can.

Stopped in multiple times and the food was always decent to good...nothing special, yet nothing to write home about. All in all, it was average and exactly what you'd expect.

My favorite Mexican restaurant! The salsa is the best I have had. I have ate at dozens of Mexican and salsa is best. The waitresses are good, the food is big portions and the prices good. I always get the same thing...just can't remember # on dinner but it is carne asada tacos and I get mine in flour tortillas(do not like corn anywhere). I live in Dallas so high gas prices keep me from coming every week like we used to come. They also have another room for huge party of people and the other room has bar with pool and lottery machines. Restaurant is designed smartly. Could be a little cleaner ...

I eat here for family functions and when I am feeling a good quesadilla. The salsa and beans are quite good and you get pretty much as much as you are able to consume. I really enjoy the carne asada meat, guacamole, and salad toppings that they serve, but the rice is only okay. To be honest I havn't had great spanish rice in Oregon so far. My husband ordered enchiladas (he is mexican) and said that they were just okay. I'm really a fan of street tacos, barbacoa, tongue, and cabeza on fresh tortillas with cilantro and lime. This restaurant and the others in the area don't seem to cater to that type of food. I go here when I want a nice cheesy quesadilla and to the taco truck for my other mexican fare.

Friends living in Corvallis drive out to Casa Tequila several times a month for lunch or dinner. After extensive research, they have concluded that this is the best Mexican restaurant around. They have excellent salsa and beans with their fresh chips. Don't eat too much, leave room for the entrees! I ordered the combination of two tacos (requested pork in response to the chicken or beef query and got it with no problem) and a chicken enchilada. Yummy! Friend A ordered taco/chili relleno combo to his satisfaction. Friend B ordered the carnitas platter. Wow, that's a lot of food for $10. Also had an excellent HUGE margarita. Very good food, very good service. Well worth the drive from Corvallis. Downtown Independence is very charming, too.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
