Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

I would give this place no stars if I could. Don't know were to begin. I've been here a 5-6 times in the 4 years I've lived hear. The same thing every time. Nothing is authentic. It taste like everything comes out of a can. Ordered a steak, chicken, shrimp bowl in some sort of sauce. It tasted like spaghetti sauce from a can. No joke. Ate the beans and that was it. I've eaten tacos, enchiladas, fajitas, and burritos from here. All disappointing. I think you have to be drunk to eat here. Looking around that seems the case. This has happened every time I go. Save your money and go to the Chinese joint right next to it. Or Mamas. The staff is very friendly, I'll say that much. Just needs do something extremely different in the kitchen. A waste of $.

The service here is very friendly and very accomadating those with disablities and service dogs. However there food was a bit over priced food for the portion sizes and the food tasted hot but like it came out of a can or frozen wraper. It didn't taste like real mexican food, a real disappoint. I give them three stars because of there good service and there really above and beyond service towards people with disablities.

Service: friendly and a little slow and forgetful. Salsa: tasty with some kick, but comes in tiny bowl. I had to ask for more salsa and it still wasn't enough for the basket of chips. Food: good to outstanding. The best Mexican pizza I've ever had (I ordered it with shredded beef). The carne asada wasn't fried crispy enough, but was good.

Salsa was good stuff. Chimis were good. Best Mexican food we've found on Western Slope via I-70 so far.

Chorizo burrito was pretty good. The vegetable burrito was a bag of frozen veggies, including peas and carrots, in a flower tortilla. Not very inspiring. Margaritas were very good.

Very very good Mexican food. Some people say it's pricy but i personally don't care, if food is good and it's really good there!!!

First the good: Salsa was pretty good, but very watery. Cabbage (slaw?) was pretty good as well. Bad: Over priced, in my opinion. I'm from Texas and know Mexican food, this "food" didn't come close to the good stuff. I ordered the Veggie Chimichanga and was upset to find out that the $10 fried burrito I ordered was full of the frozen mixed veggies you and buy at Walmart.

Big decline in food quality over the last year! Used to be fun to eat here. Even a margarita doesn't help the food go down. :-(

Good, standard Mexican food. We live in a small town with no dining options, this is the closest restaurant to home. We eat here regularly and are always happy. Friendly staff, typical tacky "Mexican" decor, and large portions (we get a good meal for dinner and enough leftover for lunch the next day). Good taco salads, chimichangas and burritos. Only thing I've ever had that I didn't enjoy were the fajitas (over cooked, under seasoned.

My daughter and I stopped in here about 9pm one Friday night due to the highway being closed. The staff was friendly and accommodating to us even though I think they were getting ready to close. The food was good, I had an avocado tostada, and the ingredients were fresh and tasty

Very good food and service, but can be expensive unless going for lunch on weekdays.
