Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

The service was excellent. We had a group of 22, and they were already busy. They had us in and out in a hurry. The salsa and chips was nothing special and the food was average to slightly above average.

Quite possibly the worst Mexican food I have ever encountered! Not one the four meals was even close to good. This place made Taco Johns or Taco Bell look like a five star dining experience. I recommend NOT stopping here. We politely paid our tickets and quickly found somewhere else to go.

This gets five stars because the waiter recommended a dish that turned out to be totally awesome!!! The restaurant is in a fairly old building and it has two stories and the top floor has windows that overlook the street which is actually really cool! They also have seating on the street if that's what one would prefer. The inside is total Mexican decor and has Mexican music playing and it feels really cozy because of the design. The cook is also the owner and invented the menu and he is not Mexican but the dish I had was a m a z i n g!!! It was called chipotle aioli el pollo en lote. It is a large chicken breast fried with a lightly spicy breading smothered in aioli corn garnish with raspberry chipotle sauce. This was amazing how all the different things blended together and tasted!! Delicious and what a surprise for being in remote Wyoming!! It is rare that I give a 5 star rating but this place was a diamond in a rock mine!! I would definitely go back again!

Good food, reasonable prices, friendly service. What more could you ask for? We had small burritos (which actually are small; it left room for dessert). And the waitress gave us some helpful tips about things to do in the area.

A little slow on service but try the chicken w raspberry chipotle!

Definitely nothing spectacular. It was ok food but lacked a lot of flavor!! I ordered a chicken chimichanga and I just wasn't impressed. The chips and salsa weren't very good either :/ I was sent here by friends who absolutely love it here but it definitely fell short for us. We had great service and a friendly waiter tho.

Mexican in Thermopolis. Craft brews and good margaritas. The chef does some nice stuff with Mexican and local produce. Cute decor.

Comical!! Quite possibly the nastiest mexican food on the market. The kids enchilada was directly out of the TV dinner section of the local grocery store. Lol It was heated up and put on a plate. The rest of the meal was inedible. We actually found humor in how bad it was. The salsa is nothing more than pace picante with some hot wing sauce added. If you want to break up with your lady, and don't want to hurt her feelings, take her here twice and she will do it for you!!

Amazingly good Mexican food. Not your average Mexican over processed carb overload. Fresh ingredients and local microbrewery ales on tap. Full beverage menu. Wide range of vegetarian options highly recommended.

We eat here all the time- and I never thought to leave a review until we tried another Mexican restaurant in the next town over. This place has spoiled us!!! The ingredients are always fresh, the dishes taste amazing, and we have had just about everything on the menu. I love the options offered here- from the "spicy scale" for the sauces to if you want anything with chicken/beef/steak/shrimp. Everything we've had has been excellent, though our favorites are the enchiladas, stuffed rellenos, chimichangas, burritos...ok we love it all. Also, they have habanero Tabasco sauce on every table, which is awesome for those of us that love spicy!

It's good, nothing spectacular or amazing. Not terribly authentic. A lot of the southwest and texmex comfort food standards this gringo grew up associating as Mexican food. It has its place. I love deep Mexican cooking but sometimes you want those old standards. Uber - cheesy enchiladas, ground beef tacos. A few creations specific to this chef. Again, good. The chilis are ok, choose between red or green with 5 levels of heat. Don't look for carnitas or any pork for that matter, the chef won't serve it. Pity. Mexican cooking is slap full of delicious slow cooked pork recipes. I enjoy the food here but I don't go looking for authentic.

Food was good and it is kid friendly. I pushed to 4 stars because of the service. He was good. Not bad Mexican for the middle of Wyoming. Red sauce is not hot at all. Go for the green.

I'm not a fan. My margarita hardly had alcohol in it. The red chili was bland as was the spicy salsa. Also, my waiter hardly took care of my food and drink needs. I don't think I will be back.

We ended up here because the safari club was too busy, so we drove through town, searching for an open restaurant. It was here or a diner :-). When we came in, there was a group of 10 ladies, a family of five, and nobody else. They had an American menu with chicken strips and fries, so the boys were happy. Then the rest of us ordered chicken and beef fajitas, and a tilapia filet. They have a "wall of flame" - if houngan eat eight wings with the chef's special hot sauce without drinking or eating anything else, you get your photo posted on the wall and a 25 buck gift certificate. We didn't dare... The fries were seasoned and fresh. The chicken strips were good, and the boys scarfed them down. After the kids food came, we had a very loooong wait for the fajitas and tilapia-- 40 minutes. Not sure why - we were the only customers left by then. The fajitas were average, and so was the tilapia. This was a good place to go with good kids choices, just not exceptional.

I found nothing bad but nothing outstanding here. The chips and salsa weren't bad, neither were the chicken tacos nor the cheese enchilada. The service was friendly although we had multiple items on our bill in which we were overcharged. In a town with less than 15 restaurants I guess this could be good. I wouldn't return.

I used to like this place, but the service and food I received tonight was disappointing. I understand that people have off nights, but this was ridiculous. Bad shrimp, told the waiter and he looked at me like I was lying (pretty sure he was the owner), and I hardly ever send food back! Then he took my margarita off the bill, but not my meal. Technically I paid more for a margarita since I only had one bite of my meal. Very disappointed in this situation..

Tasteless, unseasoned food. I seriously question whether they've ever eaten Mexican food. The servers were inattentive.

Nice Mexican food in the north. Try the chicken enchiladas super good salsa and chips are super addictive. Ate there because we were on vacation on our way back from Cody.
(5)Sheri S.
The food was ok, service was pretty good. The server was very friendly and polite. We're vacationing in Thermopolis and have been to 4 eateries here. Las Fuentes was not the best but not the worst.

Very pleased with dinner. Not the best Mexican I have ever eaten, but very good. I had the beef and bean burrito with green chiles. Hot, but not brutally so. Wait staff was friendly and attentive. I imagine it would be quite loud if the place was full. The dining room is situated on two floors. Total bill around $12. Would I go back? Absolutely.
