One word. Overrated. The food was...good. The service was...okay. It was clean. Honestly this is a bland review for a bland restaurant. We planned to dine here for two days. Arrived and immediately the atmosphere felt off-putting. The menu had no prices next to anything they offered. Basically giving us the "if you need to know or ask how much each thing is then why are you even here" vibe. The wooden tables and wood paneled walls give it an appearance of being relaxing and inviting...but was actually everything but that. Seemed too lush. Not complaining about a lush restaurant but come on, this place is a brewery. Shouldn't it seem more "welcome to all" rather than just doctors and lawyers. About the service well...after our appetizer we waited an hour for our entree. And within that hour we had one refill on our drinks and one piece of bread. Most places you get a small basket of bread slices but this is a bit more shfancy (yes I said shfancy) so one piece of bread is all you get until your meal. But the server even came out to our table and a few others to apologize for the wait because the kitchen was backed up. Mind you the restaurant wasn't a bit busy. At least they could offer another small piece of bread for the 60 minute wait between the first two courses. Eh, this place is average. I would spend that much money somewhere else or I could have recreated that meal at home for cheaper, and with more flavor. Nice dining, just not for the price that it is. If you're looking for a nice dining experience that is relaxed and worth the price you're paying in Green Bay I would venture out more. Unless you want to spend a chunk of money on just "good" then go for it. (The dessert portions are so small the entire thing can fit on your spoon).

In town for work in Green Bay and happen to find this place on yelp. We got there around 4 in the middle of the week and it was a little slow so we were given really great speedy service. We all tried a cocktail and agreed they were all all really good, but one was amazing! It was a stout and bourbon cocktail I believe. This is a brewery however so I had to try a beer but I couldn't decide. So my waitress said, "well you can sample every beer on tap for $15 and its ends up being like 55oz of beer!" So I said I'm in! They were really delicious beers. They had a IPA which I liked a lot and then and different version of that IPA that I liked even more. Not being from Green Bay, we had to try the cheese board. Sharp cheddar and gouda were all of our faves. Next we had the red curry soup (my FAVE dish here) and then we split a pizza. We had the 4 cheese pizza which had a very great cheese blend and then fresh blue cheese crumbles and a Rosemary infused honey drizzle. What a GREAT pizza! I am so excited about this restaurant! All my boxes are checked: Moose head on wall, check. Bitter, spirit forward cocktails, check. 15 beer Hinterland tasting flight, check. Seared scallops, fried calamari, grilled duck, pork porterhouse, truffle pizza, pot de creme, salted caramel bacon fat chocolate cake, check check check check check check check check check check check check check check! Pro tip: sit directly under one of the lamps to experience odd acoustic phenomena. Also, buy a round for the kitchen. They deserve it.

This is my 3rd 5 star review of the day. And believe me they are all justified. I would given this place 6 stars if Yelped allowed me to. For being a brewery (I am not much of a beer drinker), they have a great selection of craft cocktails. Based on the bar tender Christina's recommendation, I went with her Classic Old Fashioned and for the price ($6) this is one of the best Old Fashioned I have had. She used Basil Hayden so a quality Bourbon, not some cheap Old Overholt that I use at home :). The Brussels sprout salad was A-OK but what stole the night was Cobiah, a white fish prepared with snap peas, mushrooms and served over jasmine rice and a red occult curry. A little pricy for Green Bay but definitely worth it :). Service was awesome! And the beer selection looked pretty diverse too.

5 Stars for food 4 Stars for service Every been to a place where the food was horrible but the service was excellent? Or vice versa? Well for me the food was excellent but the serve was kinda lacking (?) to say. I had dinner at 5pm, on a Wednesday... My gf and I were the second table there! So there should be any excuse to have bad service. First off, the food was amazing! Definitely a price that I would pay! I ordered the artisan cheese and charcuterie plate, the bison striploin, and the beef ribeye. The cheeses on the plate were amazing! A great mix of sharp, sweet, and smooth cheeses. However, the charcuterie part was kind of lacking... Just 2 kind of meats. I wish they gave us 3 different cuts. There's 4 different cheeses and 2 kinds of meets with a bowl of olives... I think they can up it a little with at least one more meat. Ribeye, OMG the steak was just how I like it!! For the first time my med rare steak was actually cooked CORRECTLY!! THANK YOU! It was smooth to cut into it, and chewing it was ORGASMIC! I would have done without the blue cheese. Bison, definitely can tell that it was a grass fed bison the way the meat was. At first I was skeptical about how I wanted the bison to be cooked. Because of the smell so I went safe and ordered it Medium... HOLY smokes! I should have got it med rare, but medium was totally fine! No smell, and it as cooked nicely! $52 SURE!! HAVE MY MONIES!!! HAVE IT ALL!! Service- It wasn't bad, it was just lacking. Our server, who I thought was the host only checked on us to see if the food was food and if we needed drinks. As slow as it was she should have ran her own food, and explain to us what was on the Cheese and Chacuterie plate. At the end, I had to get up from my table look for her and ask for our check, because the only "host" just ignore us even though she looked me right in the eye as I was trying to get our servers attention. Next time I'm back in Green Bay, I probably should try their brews!

Came here on back to back nights. Beer is great and the food is good. I recommend the Brussel sprouts and the charcuterie. Stay away from the duck wings. Nitros IPA was awesome. Joe at the bar took good care of us.

I now live in Chicago but have been here many times whenever we come home for a visit! As a beer lover/brewer we are so excited to enjoy this spot in Green Bay (and with Title Town right across the street). The restaurant feels more 'upscale' for Green Bay (you know what I mean). Still you definitely feel comfortable walking in wearing jeans and casual attire. The menu changes daily so by the time you read this some of the options may not be available. Still, it is hard to go wrong with anything you order. I love the backwoods decor mixed with some interesting marine life wall art and a giant moose head above the fire place. We are greatly with friendly front of house staff and our waiters/waitresses have all be so nice and helpful. We started off our most recent visit with the soup of the day/week, shrimp bisque. So warm, creamy and filling. Love the shrimp and potato chunks. We also tried the Fried Brussels Sprouts. My boyfriend cleared the bowl so fast I hardly had a chance to try them. For my main, I went with the Salmon Roll (I had a running race the next day). It was a perfect simple sushi roll with seared salmon in the middle. More rice than I was expecting. My boyfriend ordered the Quattro Formaggi Pizza. So much cheese pile on a semi thin crust with bubble edges. I could not try this unfortunately due to the Goat and Blue cheese. Judging my his reaction and that he literately picked very crumb from the plate speaks to how tasty it was. He was really hungry and was able to finish this pizza by himself. I however would have split it with someone. You cannot go wrong with your beer selections. If you like lighter IPAs or, like us, the darker the better you will have great options. We went with the Doppelbock and the Lunatic. The Doppelbock does have a very strong bourbon flavor. More than I was expecting and almost too boozy for me. I gravitated to the Lunatic. It was smoother and had a darker flavor. After your done with your meal, take a walk through the brewery and head upstairs for a band and a more casual setting and enjoy another beer while your at it!

Awesome place, great service. I'm usually traveling solo for work, head to their upstairs to the bar. Christina, the bartender, is excellent and will recommend all the best food and drink in house.

Really awesome cheese curds and beer selection..we came in a larger group in the restaurant week and the menu choice was interesting..the shrimp soup and the tandori tofu were an excellent choice..nice place to hang out with friends!

Amazing service, beer and food. I like fruity beer and tried the Cherry Wheat and Grand Cru. We ate the beer battered tacos for appetizer and it was scrumptious. I'm still here chillin to Reggae music upstairs. Will definitely come back on my next WI trip.

I have eaten here upwards of 10 times now and I must say I've never been disappointed in the food. The menu is always changing and the combinations they offer never let me down. I've tried a few types of fish, andouille encrusted, that were always cooked to perfection. Great atmosphere here too. I recommend a table by the fireplace on a cold winter night. Service can be hit or miss, but I did have the best service experience ever here too. On a cold night last winter when most businesses were shut down, we had a reservation and they called to ask if we were still coming. We were still planning on it so they kept the restaurant open for a two top. We felt like royalty plus had a few Hinterland IPAs to warm us up. A gem, for certain. Happy memories created here.

Came here the night before the Packers and Patriots game to check it out while we were in town. We arrived about 45 minutes early with the intention of just grabbing a beer before our reservation time. The hostess however made some adjustments and got us seated immediately. Our server was Angela and she was awesome. We told her we were still very full from lunch so she suggested some appetizers that were delicious and not filling. We ordered 3 appetizers and a flight of beer. The food and beers were all excellent but what stood out the most was our server. Thank you Angela for the great time.

I have been to Hinterlands two times and had extremely different experiences. First visit: Went to dinner with friends. There were four of us and we had awesome service. We each ordered something different I had the quail which was amazing. The resturant itself was well decorated and the moscow mule drink I had was well made. Second visit: Came for taco tuesday special with friends. There were about 10 of us and the service was the worst I have ever experienced. The waitress took our orders down incorrectly causing many of us to get the wrong food (about 5 of us). The food took a long time (about an hour) to come during their "happy hour". The meal ended up lasting from 6-8:30 due to the slow service. The waitress had the bills incorrectly written down and then charged the wrong cards or gave out incorrect change. I wish I could like this place as the first experience was really nice but I just cannot recover from the second visit. I would not recommend eating here. Their Luna Stout is the best though, at least they have that going for them.

So good! Recommended by my hotel's front desk, and within walking distance of my hotel, which was a bonus. Everything on the farm-to-table menu sounded great. Had a hard time choosing so I ordered a couple appetizers instead of an entree: The Smoked Pork Belly with Shrimp over grits and apple slaw -- so tasty, I cleaned my plate. Also got the cheese and charcuterie appetizer (when in Wisconsin...). Between those 2 dishes, it was plenty of food. Had the sunflower greens salad, with the pomegranate dressing, which was also delicious, though on the small side. Im not a big beer drinker, but the place is a brewery so I tried the cherry wheat, which was very refreshing. Really good service and nice atmosphere: rustic-chic. More upscale than the average brewpub, but not at all stuffy. Would certainly return next time I'm in town.

I'm going to preface this by saying that I cook for a living and attended culinary school. I've experienced many extremely high quality restaurants and I have a pretty solid idea of what food should taste like. I have to vehemently disagree with the 4- and 5-star reviews of this place. Looking at the menu, there's potential; though admittedly, I'm moderately concerned about the price points in the Green Bay market, but I've been surprised before (see: S.A.L.T.) However, I feel like Hinterland is either on it's way downhill with the food quality, or people in the area just don't know what quality food actually tastes like. It was my first time, but my dinner companion has been here numerous times since it has opened. The service, to me, was solid. There was a large party upstairs, and therefore we had a longer wait for our food, but we were given a little bit of soup to tide us over (but probably only 3-4 ounces... it was only a few spoonfuls). It was a nice gesture. However, food quality, which is, you know, kind of important for a restaurant was just not that great. Even eating just off the bar menu, the expectations were not met. I ordered a pizza, and the bottom was caked with flour. Not dusted, but caked. Every bite that I took was immediately met with my tongue being coated with flour. How can I taste your "delicious" food if I can only taste raw flour? Trying components separately, there was little to no flavor on the pizza either. They claimed there was chicken, goat cheese and BBQ sauce on this pizza; why can I not see and/or taste any of them? Why even bother putting it on the menu if you're just going to give me mostly floured dough and flavorless ingredients? And then decide to charge $14 for it. My companion had the waygu beef burger, which I will say is an shame anyway; why are you wasting your money cutting up that quality of beef for a burger? Regardless, when you ask for a burger at medium-rare, it should NOT be completely gray. Any good cook or expeditor can touch a burger and know that it's overcooked. Disappointing for a $16 burger with "quality" ingredients. Red Robin will likely give you a better burger, and that's really disheartening. The highlight: the garlic fries with the burger. They were the only redeeming quality, and the only part of the meal that was eaten completely. Maybe the entrees are much better. But I'm guessing if you can't cook a burger properly, or you don't understand how to compose a pizza, I'm probably not going to trust that you could pull off mahi mahi. I'm also not willing to let you prove it at the prices that you want to charge me for them. Save your money or go spend it elsewhere. There are numerous other places in the area that you can get better food, and a better experience. Hinterland just isn't worth it.

Wow- excellent meal. Took employees here for a special dinner and was not let down. Everyone was happy and full when leaving. Two of us orders the scallops, I ordered the sirloin, and the last one we ordered was be fillet of pork. All the floor combinations worked and the sauces here yummy. Bartender made me a blueberry mojito even though it was not on the menu. Dessert was a perfect finish to a well balanced meal. Will definately return.

Ate here with the Las Vegas Chef tour of Wisconsin Dairyland. We had a cheese and beer pairing before dinner. I had the Chef pick my entrée. I got the scallops and short ribs. It was great. The Chef is clearly thinking in this kitchen. Great job.

I can't believe I didn't leave a review for this place, I'm always telling people how great it was!! We were seated at *the* table, beside the fireplace and underneath the giant animal head. It was very romantic, and a much more high end experience than I expected in Green Bay! The food was delicious, and there were lots of local ingredients on the menu - huge plus, for me. Coupled with friendly service and great cocktails: a true five star experience. Enjoy!

Great atmosphere. Good beer! We took the brewery tour - $10 - includes pint glass and 2 beers. Probably better off skipping the tour. It was long and boring. Or maybe it was more the tour guide as he was very long winded and seemed to talk around the questions. And I think he was hammered. Well worth the visit!

I'm not really on board with all of the 4 and 5 star reviews for Der Hinterland. I found the ambiance to be conducive to the burial of some Eastern European head of state-dark, creepy, and velvety. The beer was OK, nothing special. I tried the Nitro IPA which lacked any similarity to anything with "Nitro" in the name (rather bland and flavorless), and the stout which was on a similar plane. The silver lining is that it's cheap at $3.50 per glass. As for the meal; I was promised some bread and when it finally arrived (2 tiny slices served with tongs and great ceremony) I was disappointed. It was cold, and mostly crust. I ordered the duck breast, but was persuaded by one of the servers to go with the "signature" Andouille encrusted walleye. Was it tasty? Yes, fairly. But it was diminutive an ill defined (a bunch of different sauces and a medley of roasted vegetables-root and otherwise). My advice would be to stick to the classics and eschew the frou-frou. This is Green Bay, correct?

Everything from the appetizers which included lamb meatballs was spectacular! The tenderloin was absolutely incredible and enormous! Perfectly done and have never, ever had better. The trout and diver scallops were absolutely fantastic! Last note, Brad, our server was very attentive and very aware of his menu. He must be a foodie himself. Hinterland is outstanding!

Wow! What a great dining experience! This is my first time to Green Bay and I searched on Yelp for a place to eat. I was 9:45 on a Wednesday night. Weary from a road trip of 7 hours we meandered into the Hinterland. As for the food, awesome! Service friendly and attentive. The beer tasty! Lobster Bisque to start followed by the Elk tenderloin. This was the tastiest piece of loin I have ever had. Don't take my word for it, try for yourself. A weary traveler.

Great place! If you want a up scale place for dinner it has a wonderful dining area downstairs. For a more casual atmosphere try the upstairs lounge. The beer is excellent. Tried a couple of samplers (IPA's, Luna Stout, Maple Bock, and seasonal). All were great, find the taste that is best for you. If you love a solid coffee taste and a strong flavor, the Luna Stout is for you. Had a pizza to eat. Really good. Will be coming back!

Loved this place! We just stopped by for drinks, but wished we would have paid a bit extra and ate here. Everything looked and smelled great. The wait staff were extremely pleasant and even walked us upstairs when we were looking to have a drink at the bar (a bit more festive upstairs, more formal downstairs). We each sampled two beers (both IPA, Maple Bock and the Stout). All were delicious and much more our palate then the beer across the street. We stayed for over an hour in the nice and relaxing atmosphere and just stopped on these fine brews. We will definitely recommend to others!

This place in a word is OVERRATED. I can't see the 4 & 5 star reviews! Don't let it fool you, this place sucks. After waiting 45 min for my food, I got a pizza that was totally burned, one beer & appetizer for 46 bucks!!! The food wasn't good and they included the tip on my bill ... I ended up tipping the server $14 because I missed this. On top of it the menu was a nightmare with no "real food" on it. To add insult to injury it was freezing cold; very drafty there. If you like fancy overpriced food, this is your place. I did not like it and I will not be returning.

My favorite spot in Green Bay. Has a high end white table cloth feel, mixed with a swanky speak easy feel as well. The seasonal changing menu is always interesting and delicious. I recommend the bristle sprouts, salads and pork belly. Love the seasonal drinks and a great wine list. I am not a fan of the sushi.

First, I love the atmosphere! I would recommend sitting upstairs in the lounge area at one of the window seats if possible. It is cozy with a nice view of the river. The old building with all it's exposed brick and original industrial feel is beautiful. I had the pale ale and it was delicious. I preferred their hoppier brews to the darker smoother ones. Tried the goat cheese curds, they are a nice twist on the old Wisconsin staple. Also had the three cheese wood fired pizza which mixed goat cheese with blue cheese and rosemary honey. Yum. Also tried a garlic French fry or two from my neighbor and was impressed with them. The food is a little pricey but worth it! Would have given them a five star review but service was a little slow, which was understandable as they were quite busy.

Thank. You. Yelp! Hinterland is nothing short of out-fucking-standing! I was delightfully shocked how amazing the food was. Had the service been on par, I would have had one of the most delightful dining experiences in my tenure as a foodie. //Food// As a very recent vegetarian, I had a slight concern that there wouldn't be much for me to enjoy on our visit after seeing the menu online. I called ahead to see if they would accommodate a request for a meatless dish. The woman on the phone said that vegetarian requests come in quite often so there would be something available that evening. However, if that didn't please me, she said the chef was willing to personally call me to arrange a special dish to be made. Really?! Wow - that's some customer service!! That evening, the vegetarian platter was a grilled trumpet mushroom, and a combination of sides from the other dishes. I opted to have the goat cheese polenta, and roasted zucchini and cauliflower with a watercress emulsion. It was amazing. Hands down one of the best vegetarian meals I've had. I tried just about everything ordered, despite my desire to stay purely vegetarian. Everything was perfectly cooked and absolutely delicious. Also ordered - ::Twin elm farms mizuna salad ((fennel, citrus, marcona almonds, mint vinaigrette)) ::Sweet grass farms beef potstickers ((radish sprouts, sweet chili sauce)) ::Seared diver scallops ((amber barbecue glazed pork belly, honey crisp apple-celeriac slaw, chili oil)) ::Artisanal cheese and charcuterie plate ((romao, saxon, evalon, dunbarton blue, crostinis)) The prices are high and the portions are somewhat small, I won't deny that. But as a girl from Chicago, I'm not shocked by this. Quality, organic, and local ingredients come with a slightly higher price. And for such delicious dishes, I have no problem paying a premium. //Service// Initially, I was fairly disappointed in the service. Somehow our reservation was put down for only one person. So when we showed up, we were given a one sided booth in the back of the restaurant since that was all that was available. Since we were stoked for dinner (and starving) we looked past the small booth, climbed in next to each other, and were ready to chow down. I'm not sure if the waitress didn't know we were there, or what, but she didn't come to take our drink order for a good ten minutes. Eventually she came by, apologized for the wait, and actually offered for us to move tables since a larger one had opened up sooner. I also found that the food was fairly slow to come out once it was ordered. However, it's well worth the wait. //Atmosphere// Backwoods chic. Dimly lit. Romantic. Rustic. The restaurant was simply and beautifully decorated. It had a very rustic and wilderness feel mixed with a little contemporary decor. //Beer// Since Hinterland specializes in craft beer, one would anticipate that we would have sampled some of their finest beers. However, we chose to indulge in the food instead of drinks, since Hinterland is bottled and sold in stores. I can guarantee we will give them a try the next go-around. Hinterland is the shining gem in the land of green and yellow and one of my new favorite restaurants. If you're a foodie who craves something other than pub food and cheese curds, it's a must try if you're in the Green Bay area. I guarantee we will be back - and cannot wait to indulge in another out-fucking-standing experience. You can take the girl out of Chicago - but you can't take Chicago out of the girl!

This is an absolutely fantastic place to eat. The service is wonderful, the food is fantastic, and the lighting makes for a very nice ambiance. We got to sit right next to the fire place on a cold night, and it was so comfortable. You could blindfold yourself, and point to something on the menu, and it would be the right choice. Upstairs, you can just visit the bar. There are very comfortable couches up there to sit and congregate with friends. Really nice place to visit. Come hungry, and you'll be very pleasantly surprised.

Had a very tasty Bloody Mary and a delicious Lunatic Stout at the upstairs bar area. Server was friendly and knowledgeable. Crowd was a mix of dressy and casual people. Not crowded on a Saturday afternoon--my group of 5 was seated at a table right away. Coming from NYC, the prices seemed right on par, but may be a bit expensive for GB.

One of two downtown Green Bay brewpubs, located across the street from Title Town. Interior is rather dark; décor is somewhat industrial, with exposed ductwork, but by no means stark. 8-seat bar, plus tables and booths, and even one cozy corner with armchairs. Fast and friendly service (we arrived right at the 4:00 opening), and we were given a brief tour of their brewing facility. The entrée menu (which we didn't try) looks more ambitious, and pricier, than is typical of brewpubs. What we did try was the tacos, a Tuesday special at $3:00 each. We tried the lengua (tongue) and fish tacos, both excellent, served on flour tortillas with, among other things, jicama and red cabbage; and the Italian sausage pizza: thin crust, crumbled sausage, a bit of spinach, and lots of cheese. All quite satisfactory. We ordered the house beer sampler, consisting of: - Pale Ale. Rich gold color, medium head. My husband ordered a beer and thought it tasted like a massage therapy room... They wouldn't take it off the bill. Bit overall, this place was great.

I was visiting the area for a Packers game and read the Yelp reviews. I also like the ease of OpenTable scheduling. Nice location. Full bar and microbrewery. Limited but good selection of seasonal brews. The menu has very creative and interesting items. We chose to order only flatbreads and appetizers. We were more than satisfied. Flatbreads were tasty and fresh. The bison meatballs were hearty and rustic. I am one of the few brussel sprout fans that will actually admit they like them and I was blown away by the fried brussel sprouts. There were several interesting sounding entrees, but we chose not to order. The desserts were great. The milk chocolate pot du creme was outstanding. The ambience is trendy and classy. Service is a bit slow. Overall a great choice for a fine mean and good brews.

The menu was varied but sensible. Our group had beef, pork and fish entrees. All were excellent. The service was also excellent -- helpful and friendly but not intrusive. We also sampled from 4 appetizers which were imaginative, tasty and light -- not too much but enough to enjoy. The bread had come right out of the oven and was also excellent. This is a fine place to enjoy in Green Bay. For northern Wisconsin it was a bit on the pricey side, but as against similar quality restaurants in major American cities -- very reasonable.

Struggled to find a place to eat in Green Bay, every yelp review seemed like it was good and bad. Finally pulled the trigger and went to Hinterland. Was looking for more casual and bar setting since I was alone. Tyler was great! Good beer recommendations, onces I wouldn't have ordered but loved. Same with the food recommendations. The cheese curds were better than expected, salmon poke was good and felt healthy, the fried quail was a little heavy on the batter, but that was the best part. Almost had an embarrassing no money situation and Tyler helped with that too. Glad I picked Hinterland for my one night in Green Bay.

Apparently on packer weekends they limit the menu so I wasn't able to try things that I wanted to so if I were to return, I would want to come back on a Thursday. My husband and I LOVE Hinterland. We feel like we are ALWAYS taken care of by good service (usually upstairs in the bar) and great food! Taco Tuesday is always our favorite day to go for dinner. $3 tacos that are the freshest around. I always get the fish and my hubby usually gets the beef or pork. The mushroom is good too. The Goat Cheese Curds are fantastic for a starter. In order of greatness for their Beer: The Nitro IPA, the Bourbon Barrel Doppelbock, and Luna Stout- are FANTASTIC! If you skip trying this fantastic restaurant, your loss. But that means more gain for us! Keep it up Hinterland! And we'll keep singing your praises!!

We had Bar food a Ham and Peach Pizza and a Hamburger. Both were great but the appetizers were the hit along with the beer. If I had a knock on the place it was freezing in there. AC was too low so bring a sweater its worth it.

SIster and I went here the past weekend on Friday and ate in the lounge. Server (one of the bartenders) was super attentive, but not obnoxious. Brandy old fashioned sweets were again very good. We both had a burger, and both the burger and fries were amazing. Too filling to have desert! A little pricey, but we knew that going in, and you get what you pay for. If you want, you can send a round of beer to the kitchen for $8, which we did out of appreciation!

Super cool restaurant and microbrewery in Green Bay. I came here with low expectations for Wisconsin cuisine. In full disclosure, I'm a Steeler fan and still sore about this last year's super bowl loss. I imagined I'd be forced to eat bratwursts and blocks of stinky cheese the size of car batteries. But not so. Hinterland is a first class place all the way. The beer selections are nice. I started with an IPA that was decent, if not noteworthy. I switched to the Luna Stout, which was one of the best decisions I've made all year. With a rich roasted, creamy coffee-chocolate flavor, this may be the finest stout I've ever had. Time for food. I started with a shrimp and scallop ceviche that was quite nice. I ordered the andouille encrusted sunfish as my entrée, mostly because I thought it sounded unique. Turned out to be another great decision. It was nice flaky white filet with the perfect light panko crust. A great combination of flavors. I'm not sure if it's a regular menu item, but I highly recommend trying this one if you can.

We came just for some beer, and ended up getting a private tour of the brewery. That was super cool. The restaurant itself is very well decorated and chic, but still maintains a northwoods feel. It's kind of dark, but overall I like the interior and the fact that it's a working brewery is impressive. We did not eat any food. The reason I'm giving it three stars is because we thought all of the beer tasted the same. it got old after the second glass. Every beer had this carmely-sweetness and lack of carbonation - might be personal preference, but just didn't love it. You just can't trust a brewery with a full bar.

My friend and I were road tripping across Wisco and the great UP and wanted to hit up any brewery we found on the way. That being said we walked in completely underdressed. We quickly rushed upstairs to the more "casual" lounge. Still feeling a bit out of place, me in a white t & jorts & Kelsey S. in a very similar outfit. Anyways we were just here for the beer not the ambiance. And the beer was just as upscale and amazing as the space. I had one of the best saisons I've ever had. (later I stopped at Mars Cheese castle and picked up a 4 pack, & recommended it to 4 random people in the castle) and Kelsey S. liked it so much she walked out buying hinterland merch. As far as the food, that was also damn good. We split a quatro formagio pizza drizzled with rosemary honey. mmmmm what a great pie. Hinterland is one of those places that makes me wish I wasn't on a budget & could of easily spent a pay check on great food and drink. I guess I'll have to go watch my Lions beat the Pack up in Green Bay soon just to go back to Hinterland.

I'm in Green Bay working on the Lambeau renovation and went here the other night with coworkers. I travel for a living and this is the best food I've had in a restaurant in a long time. Compares favorably to or bests anything west or east coast, big city etc...fantastic. Beer is also very good. The Grand Cru was a really nice take on the style and the Imperial IPA was top notch. They better hope they don't lose the chef to some celebrity chef that might visit for a Packers game. Skipping lunch today and heading back for dinner tonight before that happens. Taking the hotel shuttle so I can drink and blow out the expense account!

We found the Hinterland after our original dinner plans fell through. After the great reviews on Yelp, we decided this would be the place. The parking lot was full, the people leaving seemed happy, we were set. We sat in one of the areas near the parking entrance. There were a few couples there, and the area was relatively quiet. Most of the "party" must have been upstairs in the lounge area. Fair enough, as I don't really need loud noises while I eat. We started with some curds (delicious) and moved on to the entrees. We were offered beer samples, and while delicious, they took forever to arrive. Once we finally received the beers we ordered, we noticed that they didn't fill them to the same level. The waiter attributed this to a "new keg." Oh, so, take care of that next time, right? After we enjoyed our curds, we waited for well over 30 minutes for the rest of our food to arrive. We were offered another beer sample, which didn't come quickly (even though our proximity to the bar was within eyeshot) and we could tell the waiter was irritated that the bar person kept leaving their post. However, once we received our second beer, and our food, things seemed rather good. You know, until the first bite of the burger. This is a first. The burger, on the bun, was cold. The fries, scalding hot. Well, we ate it. It was getting late, we had no more time to wait, and we needed to get on with our night. However, the next time in the area, we'll probably give this a miss. To be honest, the beer, and the food was pretty good. The service speed, and the cold burger, kind of ruined the night for us.

I loved the dark, quiet atmosphere at the Hinterland. They have an amazing wine menu and the food was prepared exactly as I asked for it. The carpaccio with capers and mushrooms was great, the burger was juicy and had a smoky flavor, and the stout cake with bacon caramel was a great end to the meal. Will most definitely be back to try the pizzas! I had enough food left to bring home for lunch tomorrow! And I love the option of sending a round of beer to the kitchen staff, they absolutely deserved it!

As much as I wanted to give this place 3 stars, because of our 1st impression, but I simply cannot. Reason being, their food was outstanding! Everything cooked PERFECTLY and seasoned right. SOOOO much flavor. WOW. Coming from Los Angeles, CA, my wife and I recently made a trip to Green Bay, WI to be a part of our first Packer game! We stayed at the Quality Inn & Suites which was very close to Hinterland Brewery. We walked to Hinterland Brewery not knowing what to expect. It is so peaceful and quiet out there (in GB) that we didnt know if this restaurant was open. But it was. Needless to say, we went in and it didnt start off very well. Obviously out of towners, we felt that no one really paid attention to us and didnt care we were sitting at the bar, waiting for some service......fortunately, my wife simply asked if we could put in an order for some drinks and only then, were we helped. But it was definitely a FAKE "help".....the bartender was completely useless to be honest. Besides that, the decor, the lighting, and the ambience was truly romantic and classy. We shared a bottle of wine and we both decided to have fish. She had the Bluefin Tuna and I had the Halibut. Luckily our waitress and the food made up for a bad start which is why I can give this place a 4 star rating. Would have earned a 5 star if it hadn't been for that terrible bartender. Very pricey though, but it was worth it. If you dont have the money to splurge on a place like this, look around to other restaurants in the neighborhood because as we experienced, Green Bay people KNOW how to eat!

Taco Tuesdays makes Hinterland a permanent destination for any Tuesday that I don't feel like cooking. So awesome that they've added a vegetarian taco to the menu. All of their tacos are topped with the same cabbage, pico de gallo and chive aioli dressing. Not sure if they all have the mix of roasted bell peppers on them but they definitely added sweetness to the lime and spice kick from the pico de gallo and aioli on the Mushroom Seitan (vegetarian) taco. The seitan is soft and chewy which works well with the soft crunch of the oyster mushrooms. The tortillas are nicely grilled and the whole package is served warm. Again, perfection is reached in a dish via fresh ingredients, distinct flavours, and contrasting textures. Thank you Hinterland. Did I mention that they're only $2 a pop? I can't wait until next Tuesday...

I have been to Hinterland three or four times and the last time was about a week ago. I had not written a review about it in the past because I always found the food to be good but the service was not on par. That being said I was very impressed by the service and the food at my last visit. The meal was delicious and the service was attentive. The menu was different than the last time I went. I would recommend this spot to anyone in Green Bay looking for a fine dining experience. Allow at least 1.5 to 2 hours for the full meal.

Don't be put off by the fancy shmancy menu at this place, they brew some A-quality craft beers here. And you can sample them in the bar area, while you look at the menu and decide if you want to eat there or not. You can buy a flight of 3 - 10oz pours or sample 5 - 4 oz tastes. My buddy and I shared two flights so we can sample all 6 beers they had on draft. And all of their beers were quite good. My favorites were the Pub Draught, a cream ale in the style of Boddingtons but more flavor, and the Amber Ale, very drinkable, and the Luna Stout. But the outstanding one of the lot is the Barrel Aged Scotch Ale.... oh my gosh.... your taste buds will explode with flavor and it isn't too harsh like some higher alcohol content strong ales. This one costs a little more, but it is worth trying. To balance out the beers, we tried the Elk Sliders that were surprisingly delicious. Too bad they don't export their beers outside of Wisconsin (yet). So if you are visting Green Bay... be sure to try them out.

The staff was very attentive but just as we were getting our appetizers we noticed ants crawling all over the table. It was disgusting. If the service had been perfect, I'd rate Hinterland six stars. The food was that good. Perhaps the best we've had since we were last there four years ago as a prelude to our engagement. (Yes, this place has a supremely romantic ambiance. In a sort of rustic-nostalgic-industrial kind of way.) This time we started off with some of their delicious microbrews and got the blue cheese wedge salad as an appetizer. Perfect start. Then we went for the heavy stuff on the menu: Elk tenderloin and beef ribeye (big steak). Both were excellent. Perfectly seasoned and perfectly cooked as we had ordered (medium rare). These entrees are what made this a four star rating instead of three. Our server was great but seemed like he had more than he could handle. We had to wait a long time between visits after the restaurant got busy. For example, it was about a half hour between finishing our entrees and receiving desert. Not necessarily a bad thing if we wanted to take things slow, but we were there for two hours by the time we left. Also, the desert I ordered never appeared (Luna stout cake and Luna stout ice cream. I REALLY wanted that!). AND we were given the wrong bill. Our server realized and corrected it, but still a bit of a wrinkle for a place as nice and expensive as Hinterland. I'll say again, the food was awesome. Gourmet.

We were a party of 4 eating here after our sons hockey game. I made a reservation on open table and when we arrived were seated immediately. We started with the calamari and gulf shrimp appetizers. The shrimp were excellent, the calamari were OK but nothing really special. Next was the curried squash soup. This was fantastic! For our entrees we choose the mahi mahi which was excellent, the Ribeye - which was huge and done a perfect medium rare, and the pub burger-which was good but not outstanding. The wine selections were adequate. We did not try any beer that night. The service was stellar! We will be returning here for another meal and to sample the brews. Before visiting my sister in Green Bay, I had already decided I wanted to go to Hinterland. We arrived for our 7pm reservation and were surprised by the lack of cars in the parking lot. When we walked in, we were immediately seated in the room just behind the hostess stand. You know, the one with the big moose on the wall. I had hoped to see more of the place that was named "best place to propose" by another yelper, but we didn't. The patio behind us looked nice and cozy, but was hosting what appeared to be a private party. We ordered a bottle of pino grigo, the only one on their wine list, and were impressed by both the taste and the decent price($25). We decided to split calamari ($12) and a caprese salad ($8) to start. The calamari was really tasty and plentiful. We each (3 ppl) had a good serving of it. The salad tasted good, but was a miniscule serving. As in 3 almost-transparent tomato slices and about as thin cheese slices. The plate also had a string bean salad, I suppose not to look so bad for serving so little food! The beans were way too hard. None of us liked them, it felt like picking a bean off the stalk and chomping on it. App's over, wine infused, we were ready for the real deal. When it was delivered there was not a disappointed person at the table. The entrees more than made up for the puny salad. I had the halibut, which was coated in a crunchy chorizo topping and served with one of the most delectable sauces I have ever tasted. It was truly amazing. My sister had another fish special that was also superb, and her husband had the ribeye. Being family we all sampled each others food and agreed that no one got the shaft on this meal! We couldnt think about dessert because we were stuffed. I can't wait to go back to Green Bay and to Hinterland!

WOW. Just came back from this restaurant. Literally one of the best meals I've had in a very long time! I travel every month to Green Bay, WI for field research with my neurology lab section and we usually end up going to the more casual Packer-packed Titletown Brewery right across the street. But today being St. Patrick's Day, it was way crowded and a 30 minute wait seemed like a punishment after a long work day. Hunger stirring, we opted for the "other" brewery we have always drove by across the street but never entered. Titietown brewery is certainly a good time, but let me tell you, it is no HInterland. When we walked in, we could immediately sense it was a much more upscale microbrewery, complete with a roaring fireplace, classy wood carvings and a pair of HUGE elk busts adorning the main dining room. But I have to say, it was quite empty when we entered, so I came in a little skeptical. The prices were certainly higher than what I expected (I would say it's about $40-50 a person) but they are definitely justified (good thing I wasn't paying! - a nice perk of traveling for medical research work). Of course, I had to try a beer. I ordered a pint of the Pub Draught ($4.50), mainly b/c the description said it was "enfused with nitrogen." I dunno what that meant, but it sounded pretty awesome. And it tasted fantastic too! Great amber body and bold wheat flavor, topped off with a perfect head of foam. Just what I needed after an 11-hour workday. Aside from great brews, one of the coolest things about the restaurant is that the menu changes DAILY based on what the chef is bringing to the kitchen that morning. That means you know are going to get fresh, quality ingredients put together in a creative way with whichever item you choose. All I could think after perusing the menu was, "This is some Iron Chef type of #$%!" Which is BOSS. Come on, how often do you see an item with "foie gras emulsion" in it? Starting off, I chose the potato and nueske (sp?) bacon soup ($8). It was served in what looked like a gravy boat and garnished with chopped chives and what I thought was at first a piece of bacon, but turned out to be, I think, a crispy, nueske-fried potato wedge. Whatever it was, it was mad yummy. The soup itself was perfectly rich, silky-smooth and savory... when I'm senile and lose all my teeth I will request to have this fed to me through straw every day. Yeah, it was that good. For my entree, I ordered something along the lines of barbecue-glazed, farm-raised porkloin with goat cheese polenta and garlic fried brussel sprouts ($28). AMAZING! The pork was cooked perfectly, with just the right amount of fat to complement the chili bbq sauce. I had never had polenta before this (at least some good enough to remember), but I do love my goat cheese - the marriage of the two was phenomenal. The polenta came in a crispy, golden wedge; I broke it open to find a sweet, creamy center, studded with bits of melted goat cheese. BALLER. And even the brussel sprouts tasted great, and who the hell likes brussel sprouts? Oh, but I wasn't finished. One of my coworkers got the ribeye steak ($38; I forget all the fancy extras but I remember it being my second choice). It was one hefty portion of good ol' beef, at least 16 ounces. Yeah, that soccer mom was gonna need my help with that last half! My oh my, hands down the best steak I've ever had. And I was already full from my own meal! Simply cooked to perfection: rosy medium rare, with a crispy, salt-rubbed crust that was just incredible. Words do not do it justice, you must try it when you can. Feel free to thank me later. All in all, Hilterland Brewery provides excellent and creative food in a cozy, rustic atmosphere with a great wait staff and delicious microbrews. One of Green Bay's best so be sure to visit the next time you are in town and looking for great dining experience. I'm gonna go pass out into food coma now and dream of that steak some more. PEACE!

I can't imagine getting near Green Bay without stopping in. We've been there twice in the past 3 years, and both time we were completely delighted. I mention the time span between visits because so often an ambitious restaurant will dumb down over time, but not in this case. Our most recent trip was a special occasion and we'd worked with them in advance to arrange a non-standard offering. We were really impressed that they would entertain the idea, and they pulled it off as if they did this sort of thing all the time. The chef designed a 6 course tasting menu with beer parings, and even with such a request, the price was quite reasonable and actually a great value compared to similar service in cities like Chicago. All the food we had was perfectly prepared and presented. When we arrived, we were presented with printed menus for the meal they'd designed just for us. At first we looked askance at the ordering choice, what with the first two courses being spicier than we would expect so early in the meal, and it turned out to be perfect. The servings were generous and we found ourselves torn between leaving room for more and not wasting a bite. I think we resolved this by eating slowly and breathing deeply, and reflecting on how fortunate we were. Our server was helpful and knowledgeable, and the atmosphere is intimate and warm. Not everyone would like this place. If you shy away from exotic ingredients and presentations, you might be challenged here, but if you ask nice, they might tweak things for you. If you are more of the sports bar fan, then go across the street to Titletown. This place is foodie-safe, but not pretentious or weird for the sake of it. And you can buy bottled beer to take home.

We found ourselves in Green Bay for the weekend and, at the suggestion by friends, had dinner at Hinterland. We have very high standards and considered our meal to be outstanding! Obviously the chef puts a lot of thought into how to combine flavors because each bite was amazing!! We ordered three appetizers and shared one entree and a dessert. That said, there is a disconnect between the food and the service. The restaurant does not seem to train wait staff how to develop a connection with their customers. Instead, wait staff seem to be overloaded with tasks, to the point where service is compromised. For instance, we did not receive our drinks for a good 15 minutes which is a terrible way to start a dinner experience!! Our waitstaff was so overloaded with tasks that she was not able to develop the kind of rapport that would have us want to return. Get this straight, Hinterland and we'll return over and over!

If you find yourself looking for a nice place to eat in Green Bay, skip all the Brett Favre/Packer themed restaurants and head straight to the Hinterland Brewery. Now don't let the "brewery" name fool you. This isn't just a beer joint slinging standard bar food. Hinterland dishes out some top notch dishes, bolstered by a focus on fresh ingredients from local and sustainable food sources. Their menu rotates on a regular basis, but here are a few highlights from my meal. Dinner started with the Ledgeview Komatsuna salad. The salad was light and well balanced with richness from the goat cheese, savoriness from the pancetta, and bright acid from the sherry vinegar and blueberries in the dressing. For aps my coworker and I split the Tomato Dusted Calamari. They were expertly fried and the giardiniera aioli added a nice subtle hint of heat. For my entree I went with the Swordfish in the chef's signature preparation, which features andouille sausage, red hot butter sauce, and chive aioli. I've been a victim of many dry pieces of swordfish, but this one was perfectly cooked. The flavors in the sauce were spicy and bold (akin to traditional buffalo wing sauce), but not overpowering. Naturally I had to satisfy my sweet tooth, so I capped off my meal with their rich Milk Chocolate Pot de Creme. If there's one thing I appreciate it's flavorful, high quality food served with a side of unpretentiousness. Hinterland is a prime example as they take upscale dining and place it in a casual, relaxed atmosphere. Service was excellent, and we had a very friendly waitress who made some great recommendations. I'll be the first to admit that their dishes carry a rather hefty price tag for what one would expect in Green Bay, but the food and experience do not disappoint.

First place we hit in Green Bay. Hinterland is really, really classy inside--understated and stylish. The food is excellent--we had a couple different of the fish dishes, a pretty straightforward salmon and an Asian-influenced sablefish dish--both were perfectly cooked. Really, really nice. The dress code seems to be jeans and a nice shirt for the guys and a hot top for the ladies, and there is nothing wrong with that, is there!

Fantastic brewery, great selection of local beers, amazing staff with a command of knowledge of the menu and spirits, and a local Chef that has it going on, folks! Static menu, but changes with season...I am constantly impressed with every experience I have at Hinterland. You can experience an fantastic apps and glass of wine at a good price, or go all the way with a tasting menu paired with wines. We have never had the send a meal back to the kitchen which is rare in this city. Go to Hinterland and sit up in the bar, try it out!

There are two places in Green Bay that turn my head - Hinterland is at the top of this list. It's urban, fresh and interesting. Though it's a brewery, there is nothing brewery-eque about it. I think the bar has only 5-6 seats and it's out of the way. The dining rooms are the highlight as the food is the star. In addition to beer, the wine list is nice and the liquor selection is top shelf (sometimes tough to find in GB). When dining at Hinterland, I tend to order many things from the appetizer menu and do a table tasting as the dishes are so expressive. And if you are there in the summer - the outdoor space is nice and feels special! We have enjoyed a few birthday celebrations here as well.

Would definitely go back again. The food was great and the beer as well. Was going to sit upstairs, but no room. The dinning room was happy to accommodate us and let us order off the bar menu. I would also agree with some of the other reviews, that the place looks fantastic.

The wife and I stopped in to check out this place a few weeks back; if it was based on the decor and drinks, i would have rated the place 4 stars, but the appetizer I share with the wife was worth 2 stars at best. We ordered 2 beers that made it back to us with a minute and a Tempura hamachi roll. I thought based on past reviews that the food would be on par with what we paid for it (i.e. a $14 appetizer should taste like a $14 appetizer). Sadly that was the low light of the night, as the roll was a sad attempt at sushi, as it looked amateur and tasted quite bland. I realize that this is NE Wisconsin and sushi is not going to be of the best standards, but I think if you are pushing it with a $14 price tag, I would expect better. Not sure if we will come back, especially with Titletown Brewery across the street, that is cheaper and tastier food.

You will NOT be disappointed with this DELICIOUS food and home-brewed beer!!! Every part of our meal was amazing, including the homemade rolls, potstickers appetizer, mahi-mahi dinner, chocolate stout cake and ice-cream, and of course the beer. The staff are super genuine and friendly, the restaurant and brewery are beautiful and hip (they have at least 4 different sections so you will definitely find the mood that you're looking for), and they even source locally for their food. The beef offered is grass fed and the fish is flown in daily and never frozen. I could go on and on, but I don't want to keep you waiting for a great meal!!

We decided on this place for New Years Eve because we were in town for the Packers game. I thought the restaurant was trying to be more than what it should be. The menu was overpriced and very limited in terms of choices. The beer was good but overall, I would say this place was not worth the hype.

Decided to go to happy hour at Hinterland Thursday. Myself and a friend went around 5 p.m. for a couple of drinks and some starters in the upstairs lounge. I've seen it at night several times, and while it's still chic during the day, it always looks better at night, probably because the lights are low and there are always lots of candles. Started with the scotch ale, strong, served in a brandy snifter, it's always delicious. I've always been impressed with their menu, but always thought the lounge menu was lacking, not anymore. First the Scallop starter (1 1/2 scallop) served with a kimchee reduction. The scallop was cooked perfectly, juicy, plump and a golden crust. If you want just a small taste of scallop (which I understand their seafood is flown in daily) go for the scallop starter. Next, goat cheese, cheese curds. Tangy and crispy, a softer texture than the standard curd, really good. Foie Gras pot stickers, this was just alright, filling was good, but the outside of the pot sticker was a little greasy, still delicious. Fish taco, Hinterland has introduced a taco Tuesday, for just two bucks (four dollars other than Tuesday) a piece they offer beautiful tacos, they have a vegetarian version (seitan), fish taco and perhaps two others, not sure because I went on a Thursday. What is so good about their tacos is they look beautiful and taste great, they are served with shredded cabbage on top which provide a great contrast of taste and textures to the filling. Finally, (yes, we were hungry) the wood fired pizza. We chose the sausage. It was excellent, crust slightly charred, crispy crust and an amazing assortment of toppings which were all a little unusual. Service always fantastic without being pretentious. While I like to dress up a little when I go out, this is Green Bay and there is no place in the city where anyone who was wearing a packers jersey would feel uncomfortable. I've been going to Hinterland Brewery for at least 8 years it provides one of the most elegant settings in Green Bay WI. Their microbrews are so popular they are hitting store shelves all over the area and beyond. Even with the elegant setting casual dress is still allowed. I highly recommend trying their varieties of beers. I've had a variety of menu items including the Kobe Burger, Elk, USDA Prime Steaks and so much more. I've never been disappointed. If you want to impress your significant other this is the place to go!

One word: OUTSTANDING. I have visited Hinterland two times now (excluding the half a dozen times I have frequented the Lounge upstairs for the great beer) in the past three months since moving to Green Bay and have had amazing meals both times. I have visited similar gourmet restaurants all over the country and this is on my list of the best I have ever had. The Bison tenderloin with a red wine reduction was one of my all-time best steaks I have had the privilege to taste (and I am comparing this to Kobe and Wagyu beef at various locations). The Bison was so flavorful and melt in your mouth tender that I was actually a little surprised due to the fact that I have had bison previously and it seemed a little tough due to the lean nature of the meat. My Fiancé had the Duck breast and it was amazing as well. For my second meal I had the Stag tenderloin and that was also amazing, very tender and flavorful, but may be a little gamey for some peoples liking. Hinterland prides itself in buying local/organic produce/meats and I think the fact that they do really does make a tangible difference in the taste of the food. Their local/organic Pumpkin pure soup was one of the best tasting dishes I have ever had. As for the ambiance, let's just say that I chose this location above all others as the location to propose to my now Fiancé. The managers coordinated a bottle of champagne and a romantic seat near the fire creating the perfect dining atmosphere. Overall I have to put this as number two (second only to Morimoto in Philly) on my all-time list of best restaurants I have been to. I would recommend Hinterland to anyone in the Green Bay Area looking for a decently priced (about $35 a meal) high end gourmet meal. Oh and did I mention the beer is amazing as well.

Best restaurant in Green Bay. The quality of the food is excellent. If they have scallops on the menu, order them... Huge and perfectly seared. For a more reasonably priced option when visiting Hinterland, try the lounge upstairs for a couple appetizers and a pizza.

Seemed a little surprising to see such a high end menu at a brewpub, but we were not disappointed. You won't get a cheap meal here, but you will get a great meal. I've eaten in restaurants all over the world and the food we were served was about as good as it gets. We had soup/salad, entrées, dessert and a few glasses of wine. All was absolutely first rate. The tab (for 2) ran $150 including a nice tip. We enthusiastically recommend this restaurant and look forward to returning.

Happened to be traveling to Green Bay this week, and went here last night. Very neat place, having been an old warehouse transformed into a nice upscale brewery. I had the amber ale, which was excellent. really good wine list, too (adding Groth to my mental list of wines to try again). We ordered appetizers for the table of 6, though most were seafood which I usually stay away from. The pork potstickers were very tasty, and everyone else liked the shrimp and calamari, so I'll go by their opinions. I had the ribeye steak, perfectly cooked medium, and seasoned nicely. This came on a bed of horseradish cheddar grits, which were phenomenal. Really. As in, I have to find a recipe for them. The chocolate caramel bread pudding dessert was fairly disappointing though, with my favorite coming from McCormick & Schmicks. Upstairs is a little bar area that had a singer/songwriter dude playing acoustic guitar too loudly, making it mpossible to hear the person next to me. And, smoking is still stupidly allowed - how dumb are these people? Admittedly, coming from NJ, it still freaks me out to be asked "smoking or non?" when going to restaurants in other states. Anyway, the prices are in the high $20's to mid $30's for the entrees, so you're definitely paying for good food cooked well, and not small portions either. Appetizers had a wider price range, but all acceptable and well-portioned. A really nice touch in the downstairs dining area is a big fireplace, kicking off a nice warmth. I know nothing about Green Bay, but if I have to come back, this will be on the list.

An amazing dining experience for the palate. Eclectic but refined offerings. The calcamari dusted with paprike with thin sliced cranberry sausage was devine. The loin of bison was devine. Perfectly prepared but slightly cold but this didn't matter since the taste was fabulous. This dish included squash and a confete of mushrooms and cauliflowers and was a great compliment to the bison. My only complaint is the dessert menu contained no selections for diners hwo have lactose tolerance. In defense of this establishment they were able to accommodate me with orange sorbet. The wine selection was more than what would be expected at a brewery restaurant. Although their selection of scotch although wide was over priced.. Don't pass up one of these restaurants when you're in Wisconsin.

This restaurant is very good, but I think it's too hyped up. Some of the menu selections are origional; however, the selection is limited. Not many of the menu items fall into the exceptional catagory. I also think it's pricey for not being a five star establishment. I will certainly go back though and look forward to trying it again.

I was working back in De Pere for a few days and a vendor took me here for dinner and it was very good. He told me it was the best place to go and I think he is probably right. A nice atmosphere, good wine list and great food made it a very pleasurable dinner experience. I'll go there again when I am back in De Pere.

after driving around what seemed like forever on a thursday night in downtown green bay, i decided to go here instead of the thai restaurant nearby and was pleasantly surprised by the chic urban decor that soothed my eyesight as i walked in. (surprisingly there isn't much going on on a thursday night in gb). downstairs was formal dinner, candlelit white linen tabletops and tons of couples. i went upstairs for their lounge and sat at their bar with the college game that was on on their tv. i got really excited by their own brew and had a honey wheat and a weizen beer, both excellent in taste and color. this is what i think of when i think of wisconsin brews - not the millers, the coors, or the buds. some good local beer. what i ordered isn't on their online menu, a burger with wisconsin cheese and a side of fries. this was definitely one of the juiciest burgers i have ever had and the cheese just topped it off. they definitely didn't skimp on the meat! definitely one of the best restaurants in town. i will definitely try the risotto next time i'm in the area.

I was happily surprised by Hinterland Brewery. I was picturing more of a tavern brewery feel but this is more upscale brewery. (Nothing wrong with a tavern though) I sat in the bar with my laptop and ordered some wine and dinner. The brussel sprouts were really good. I was secretly glad I wasn't sharing them with anyone, but if you have to share then this appetizer is a good size for it. For dinner I had the burger and it was very good. The fries were so good I didn't even need ketchup. For someone who thinks ketchup is a food group this says a lot. My server was attentive but not annoying and made sure I enjoyed my meal. Trips to Wisconsin aren't my favorite thing in the world, but now that I know there's a Hinterland Brewery in Green Bay and Milwaukee I feel a little bit better about them. If you're anywhere close to Hinterland Brewery you need to check it out.

Beers were great! We sat at the bar and immediately knew this was a local spot. The atmosphere is really hip in the dining area and the bar. I felt like the dinner prices were a bit high ($30-40 range), BUT it is farm to table and I am willing to pay a bit extra for that. We ordered a few beers and shared at an appetizer. This is a place we will return to on the next trip to Green Bay.

Great food and service! Loved the brussel sprout and pork belly appetizers. The tomato and shrimp soup was awesome and I almost licked the bowl clean. The Copper River Salmon was perfect and I loved the FiddlyHeadFerns. I loved the pub Draught beer. Great experience!

Not my kind of place. Pretentious menu. Very dark/dim lighting which is supposed to add to the "ambiance". I had the burger which was very lean and garlic fries which were bland except for the garlic flavor. Had their IPA at the hotel which made me want more. Tasted the White IPA when I got there, but didn't like it. Had the Pale Ale. It wasn't too bad. Burger, fries, and a beer was $20! Plus tip. Big contrast from Titletown Brewery across the street!
