Pizzeria La Gitana is a jewel in Olympia if you are looking for an authentic Italian brick oven pizzeria. A frequent visitor to northern Italy, I find La Gitana's pizza tastes exactly like stepping into Italy for a short visit without the cost of air fare. The crust is thin and crispy every time with a light kiss of tomato sauce. We had the 4 Stagioni 3 times & it is a perfect every time with a mix of thin sliced ham, sausage & artichokes. Perfetto!! Perfect Italian brick oven pizza !! And the coffee is great. Ciao!!

I visited on a week night after getting out of work and my experience was so-so. 1. The menu was confusing. I chuckled when I saw "tomato sauce" listed under nearly every pizza option. It's typical of places like this to put signature pizzas in a separate section highlighting them to the customer, but this was taken to pointless extreme. You have ham and mushroom toppings, no need to tell me you offer a ham and mushroom pizza! 2. The customer service wasn't that good. There were only 2 other tables with customers (7 people counting me), yet it took 45 minutes for my pizza to cooked. The waitress never visited my table during this time, I never got a drink refill until my pizza came out and that was it. I had to flag down another waitress to get my check as I never saw my original waitress again. (too busy hitting on the guy making pizzas) 3. The pizza is over priced. I'm not eating in Manhattan, NY. 4. The pizza itself was pretty good. I actually liked the really thin crust and easily polished off the pizza myself. It could have used more pepperoni though, as it basically worked out to 2 per slice, which on a single-item pizza is not enough. Overall it was nice place, but just needs to some work.

Had a pepperoni pizza and a sausage pizza. Pepperoni was very salty. I realize cheese and pepperonis are going to be salty but this wa too much. To me, the sausage had a peculiar taste that I can't quite put my taste buds on... If you like cracker thin pizza you may like it here. The service is subpar. It is a nice looking place though.

I really like this place. If the price of pizza were that of Little Caesar's, I'd be here every other day. I am not a fan of thick crust. It fills me up fast and then I have no more room for delicious pizza. Luckily for me, and all you thin crust lovers, this place has the thinnest of thin, with a really good crunch! My favorite pizzas to order here are the Margherita, Romana, and the Marinara with fresh basil substitution. The woman who helped us was so funny, knowledgeable, and very patient considering we had a 5 year old tornado with us. I give this place a two thumbs up for the kid friendly atmosphere while still looking like an adult date night place to be. I love the pizza and the people. I will be back.

YUMYUMYUM! The pizza here is so f'reakin good! We had the prosciutto and arugula with blue cheese and also the sausage pizza. Both were superb. Wish this place was closer to home. We drove all the way to Olympia (30 minute drive from Tacoma) to eat here and will do again!

This place. (sigh) I don't want to just go on a rant... first, the good. We went on a Saturday evening, and there were plenty of people on staff. Our food came promptly (we ordered 2 pies to share), and it was fairly tasty. The location is nice, the decoration is modern (a little confusing to see Latin influence in the doorway, then modern abstract art toward the back). My negative comments come from a lot of experience at wood fired pizza places, both as a customer and as someone who knows the business. It's a delicate pizza to make, but if you do it right it's unbeatable. I'm a stickler on customer service, too, because you have to relate to your patrons and know your product in order to make the place great. A kitchen staff can work miracles, but they aren't the only people who bring your customers back. With that said, a few points: - Too expensive. Nothing under $20. Why? Because they think that wood fired pizza is artisan, and the ingredients are high-standard. It's not, and they're not. They don't even do their own home made mozzarella, which might actually warrant the price. Instead, it just looks greedy. That, or they are failing and have to make up for costs somehow. Either way, it doesn't look good. - The service was awful. Our waitress actually hovered next to our table while we were looking at the menu... after we had already told her we didn't have any questions and just needed a couple minutes to decide. It was off-putting, and made the rest of the experience uncomfortable. - The pizza. There is no need for a squished together 2-page menu -- good wood fired pizza will only have 12 different choices, tops. Why? Because if you want anything extra, you'll ask for an addition. It is not necessary to list every possible combination of ingredient on a pizza. That, and the poor kitchen staff obviously had to analyze the menu every time an order came in. It was ridiculous to watch. - The pizza part deux. Not quite cooked to bring out the wood fired flavor. It wasn't even busy for a Saturday night, so it's not like they were rushed to turn out pizzas for the crowd. - Minor note about the cleanliness: dust collecting on bottles of wine and glass that is clearly there to display something lovely that might accompany your pizza. Added thought: the dust-collected wine bottles were perched above a counter they used for food prep and/or dish storage. Yuck. To end positively, this place has a lot of potential, if they can just get it together. And they better, because I bet downtown Olympia can be hopping if they have a way to entice the crowd.

Had my first visit here yesterday, and it was DELICIOUS! Amazing pizza options, delicious ingredients, a delightfully thin and crispy crust (without being crunchy), and yummy desert options. Our pizzas were loaded with fresh toppings, and were cooked to perfection. It was in the middle of the afternoon, so service was fast and friendly. It's a big place though, so I can imagine it could get pretty busy, and with each pizza fired in the oven, I can see how some people might have a bit of a wait to get theirs. I'll be going back for sure!

I love this place. Light, Crisp wood fired crusts. Great pizza flavors. Live music on the weekends. I debated the 5th star because service can be a little slow (has been hit or miss for me). But after living in Olympia for a few years, I realized NOBODY had good service. So compared to the the competition, La Gitana is on par with the best pizza in Oly. Plus live music/entertainment on the weekends. If you haven't been, check it out!

After hearing rave reviews about this place I decided to take a friend for dinner here as an end to her bridal shower celebration. When we arrived, I gave the waitress my name for our reservation. She said there was no reservation for us. This was a bit embarrassing as she also added (in front of my guest) that I must have been mistaken. As if I would mistake the day of my best friend's bridal shower! She then told us to pick a seat, which kind of took away from the whole feel of a special dinner out. We ordered drinks and then were left alone for close to half an hour! I finally asked if we could order please and she asked what we wanted, without even offering an apology for the wait, which was actually code for "I forgot you guys were even here!" You would think it would be simple to order two Margharita pizzas with basil, but the waitress seemed annoyed when I also asked if the sauce was free of tree nuts (like pine nuts in Pesto) due to my severe nut allergy. The pizzas actually arrived quickly, but were served without a smile or an inquiry as to if there was anything else we needed with our meal. We sat and chatted for over an hour with no sign of our waitress EVER! I finally had to ask another waitress if we were supposed to pay up front on our way out instead of receiving a bill like most nice restaurants. This waitress sincerely apologized to us and swiftly brought us our bill. We paid and left without anyone even noticing us. This was a very disappointing experience for a special meal out with a friend. As for the actual taste of the pizza, it was good, enjoyed the thin crust. The restaurant itself was cold and the music was way too loud. I will most likely not return due to the lack of energy from staff to make us feel welcome and want to eat there again.

Love it here! Delicious pizza, amazing caprese salad and good wine. The atmosphere is nice, calm and peaceful. The interior is well decorated and pleasant. Can't say enough nice things about this place. Just moved here from Seattle and a place like this would be packed up there. Very similar to Tuta Bella but without the pretentiousness.

I still love the food here and the servers are really friendly, however having been a few times now, I do want to say the service can be a little slow so come with some time to spare. A few friends and I did order the gluten free crust once, and did not care for it. It was very chewy and extremely hard to cut which pretty much ruined the whole pizza experience. However, none of us are gluten free or have perspective for comparison.

Here they shoot for Naples-style, wood-fired, thin-crust pizzas as one sees in southern Italy and also in modified forms at other places. La Gitana's pizza is definitely a cut above the USA average, but during my one visit, at a weekday lunchtime with business a bit slow, the all-important crust was too pale. That said, the toppings are very fine. We ordered a margherita with fresh mozzarella and added basil, and a prosciutto and arugula pizza. There was a very large amount of good quality prosciutto on the one pie. The cheeses, sauce, and everything was excellent quality. The pizza maker told me the oven temperature was 550-600. which I know to be all of 250 degrees too cool for the Italian flour that they are using. Perhaps the restaurant might be saving a bit on oven fuel by not keeping the oven blazing at times when the house isn't very busy? I'd be game to try the place again during the evening when the oven might be hotter. Some of the pictures here on Yelp suggest better browning for some people.

Some of the best pizza I've ever had! When I get to visit the Pacific Northwest I always ask my family to take me there. Just about all the pizzas are delicious and I especially love anything they make with their pepperoni or mushrooms. The dessert list is also an absolute must (try the puff pastry!) Excellent service, delicious wood fired pizza with simple ingredients, and one of the cleanest establishments in all of Olympia. The laminated menus, oil and balsamic jars, and table tops were all wiped clean! Something that you don't find often at pizza establishments. Friendly staff, and excellent food. The folks at La Gitana are so warm and friendly. Their amazing costumer service matches their AMAZING pizza!! My sister had her rehearsal dinner here and Carlos and his crew did an amazing job. They set up the perfect menu of salad, charcuterie, and pizza to feed our massive crowd. I was so glad to see it was wood fire gourmet style pizza. My favorite had to be the arugula, prosciutto and truffle oil pizza. Just an little concoction of heaven in my mouth! They had something for everyone. I highly recommend la Gitana to anyone looking for amazing gourmet pizza!

When you walk in to la gitana you are greeted by a warm atmosphere that smells amazing and super friendly staff. I love that they use the highest quality ingredients and even have buffalo mozzarella!! Yum! Great salads too. Good wine selection and reasonably priced for the atmosphere and quality! It was good pizza. Got the Alpina with Truffle Oil. The Oil was a worthless splurge, but the flavor was good. The crust was a little burnt, but thats to be expected with that type of oven. I throughly enjoyed the flavor. Also ordered a lemonata. Disappointed because I thought it would be San Pellegrino with fresh squeezed lemon juice...turned out to be the canned stuff.

BEWARE! I purchased a Living Social deal for La Gitana only because I intended to use it for La Gitana's lunch special. When I showed up to use it, La Gitana had added a notice to their menu that the internet deals could NOT be used on the lunch special. Living Social refused to return my money - so I will never return to La Gitana or use Living Social again.

They seem to think that means a cheese pizza....no basil or tomato. sauce is bland in serious need of garlic. dough is bland in need of flavor. salad was fresh and good. service was adequate. Won't be going back. There are many good pizza options in Olympia and this is not one of them. Italia and Old School beat these guys hands down!

My wife and I visited La Gitana on a recent Friday night. We were seated quickly in a quiet back corner. The atmosphere is clean, modern, and minimalist, without feeling cold. We split the Gustosa pizza (I love prosciutto) and their side salad. The salad was nothing special. I would tell you more about it, but frankly I don't remember much - which kinds of says something about it right there. The greens were foofy and it had some olives with pits. After a few bites, I ended up dousing it with the olive oil and balsamic vinegar on the table to try and salvage it. The pizza was really disappointing. The crust is like the thin communion crackers we had when I was a kid, only thinner. I usually look forward to the crust at the end of a slice of pizza, but this was like finishing your pizza with a saltine. Each ingredient seemed high quality, but they didn't work together very well. The prosciutto comes in long slices, which makes it hard to take a bite without the full slice sliding off the pizza. I ended up with a mouthful of prosciutto more than once. Instead of the crackly, bubbly, ooziness that wood-fired pizza should have, this was just kind of mushy. I liked the blue cheese. If they would just put the blue cheese, prosciutto, and cracker crust on a plate and bring it out, that might be good. The prices really seem a little over the top. If I had been hungry and the pizza had been good, I could have finished all $21 dollars of it by myself. For that price, it would have to be darn near the best pizza I've ever eaten, which it's not. I have one of those internet-half-off-coupons for this place. It cost me $10, but I'm really considering not using it.

I have been here twice and both times I have LOVED the pizza but was not real crazy about the service. Both times, the server appeared to be the only server for the entire restaurant. Both times, service was slow and almost non existent. Friendly but spread WAY too thin. The pizza with the aragula and blue cheese is TO DIE FOR. I crave it actually. Wonderful flavors, perfect sauce and crust. On the spendy side. Here is the deal - when I go out, the quality and value of the food are important but just as important is the service. If I am paying high prices, which I feel this place has, I want good service too. Basic things like bringing water and refilling drinks, offering to go box, bringing check before I have to ask and ringing it up without it taking 15 minutes. If you have a lot of time to spare and like great pizza, this is the place for you. Just dont expect good service because so far I havent seen any. Maybe a to go order would be a better idea?

When we walked in, I went to the counter as I had the feeling that there was going to be a place to make an order, but was quickly told that someone will seat us. Then there was just awkwardness between me and the waitress as she asked if she could help us with something and I explained we needed a seat. Maybe we were just supposed to seat ourselves? I wouldn't have thought much of it but people after us seemed to have the same "do we wait or do we seat ourselves?" questioning going on. The ingredients tasted fresh, but the sauce seemed to be strictly tomato paste. The crust was crispy, but tasted like an unsalted cracker. The spread of the sauce left little, to no sauce in the middle and a thick ring at the edge, right before the end of the crust. Toppings also could have been spread out more evenly. Not a super flavorful pizza, and the 2-people tables are very small when a pizza, two plates and two drinks are arranged on them. I didn't find this pizza to be something worth going back for.

This place seemed to have a lot of potential but my experience here was a serious letdown. Where do I even start? I walk in with my boyfriend and the ambiance is great: clean, well-lit, modern decor and not too noisy. There was some confusion though as we stood in the entrance for a moment and no one greeted us. The guest counter is actually in the middle of the restaurant so we walked over there after nothing happened and were told to sit anywhere we wanted by a waitress. We ordered a half and half pizza with one side Margherita and the other pepperoni. This is where the trouble started. I will preface this by saying that it was probably my fault for not reading close enough, but when I order a Margherita pizza, I usually expect basil on it at the very least and some Roma tomato slices if you want to get fancy. This sad pizza though had none of these things. It had tomato sauce and cheese... and nothing else. I at first thought this was a possible mistake so we thought we'd wait for our waitress to come back so we could tell her before eating anything. After waiting a while and looking around, no one came so my boyfriend walked up to the counter to ask about the pizza because I was a little irritated by this point and he's a lot more patient with things like this than I am. So he kindly asks if what I got was the Margherita pizza and the older waitress who had also been helping us snaps back, "That is the Margherita." And turns on her heel and walks away. Nothing else. No apology, asking if there's anything they can do, or if we're okay. Nothing. Cue to my jaw dropping and wondering if that actually just happened. She then proceeds to go and sit down with her friend/boyfriend/whoever sitting behind us for awhile while the other younger waitress is working the entire restaurant all by herself. Seriously?! (Note: We initially thought she was on her break but she kept getting up in between their conversation to do menial tasks in a meek attempt to look like she was still working) The entire dinner though, no one came back to ask if the food was okay, refill our water or ask if my boyfriend wanted another beer. The older waitress just threw down the check when we were done and quickly walked away with no, "Thanks for coming in!" or "Have a nice day." Now I'm a waitress too and I'd like to think she was just having a bad day but the other people working there didn't seem to get on with her that much either. I don't expect amazing service every time I go out but at least the basics and some kind of gratitude for coming in. They get two stars though because the pizza was decent tasting, not the best best but certainly not the worst either, and their beers were super cheap (3.5 for both domestic and micro-brews). I just think they should have called the pizza what it actually was, a CHEESE pizza instead of a Margherita in order to jack up the price. I probably should have ordered an IPA too like my boyfriend so I could have at least drowned my sorrows in good alcohol. Definitely not coming back here anytime soon.

I went here for lunch with some co-workers last week (or the week before, not sure). I'm always nervous to go somewhere new, it's typically hard to eat out being gluten free. I almost always get sick. But I figured, what the heck, I'll give it a shot. I was disappointed that I couldn't get the $9 lunch special (a 9" pizza and green salad) gluten free. They must have their gluten free crusts pre-made and they are much larger than 9". A co-worker opted to share a GF pizza with me and we each ordered a side salad. The salad was AMAZING. It had whole green olives, artichoke hearts, and other goodies. We ordered a bleu cheese and ham GF pizza. SO GOOD. The crust was thin and a little crisp. The cheese was perfectly cooked. This is the closest thing to REAL Italian pizza I've found since eating pizza in the birthplace of pizza, Naples. AND I didn't get sick! I knocked off one star for being a little spendy at lunch (since I couldn't get the special). And I took off one star for service. Our server was wonderful and was running her butt off, but the place was packed and the poor girl was the only one on staff (besides the one guy making the food). I've been in that position before and it sucks. They need more servers and probably and additional person or two making the pizza and salads, even at lunch time. Definitely some of the best GF pizza I've had. YAY for more options in this town! I will for sure return when I have time to wait, because it is for sure worth it.

They make pizza and only that. Seriously, it's the only they really make and it is good. There are a lot of choices in Olympia for Pizza. We have our franchise chains (Which some are actually quite good) and we have our mom&pop shops. The list consists easily of Old School, Vics, Apollos, Dirty Daves, and Wagner's new place which makes one wonder where they should go for a slice. Well, the answer really lies in "What do you want?" or perhaps what is it in a pie which makes you zingle. La Gitana is very different in atmosphere, flavor, crust and toppings. For what it is it blows the competition out of the water. You will get olives imported directly from Italy (Some trade secret I have yet to be able to crack, the young green ones are to die for), speck which melts in your mouth and one hell of a crispy crust. I believe they have an oven which uses only cherry wood. Lots of details but it boils down to a few things. So is it good? Yes, is it cheap? not terribly, is it worth it? Definitely. Should you come and try it out? Yes yes and more Yes. I'll see you there.

This is my kind of pizza! Wonderfully thin, crispy (but not too crispy) crust. A great selection of topping combos. Delicious! And a good wine list. Service was good, tasteful decor. Great place for families and large groups, or for an intimate meal for two. You'll want to sit good and close as it can be a little loud when it's crowded. The only negative is the lighting. Track lighting shining down on glossy tables. I was fighting a bit of glare, but then my eyes are awfully light sensitive. Not enough to keep me away when I'm town, however. Long live La Gitana!

It's just not my kind of pizza, and I shouldn't hold that against them, but I do. It feels like it's trying to be fancier than it is, to be just a cut below, say, Acqua Via, which it just isn't. It's really as nice as Al Forno Ferruzza, but it feels aspirational, rather than content. The interior is overwrought and feels rather cramped, the product of an exceedingly-bad floorplan, which does not make the best of the, admittedly limited, space. The menu is underengineered and overelaborate. They have N toppings. Rather than list these, they explore the combinatorial space clumsily. Hey, look, a pizza with Tuna! I guess if I want Tuna and sausage I have to order that pizza, hold one of the toppings, add another. It's Towers of Hanoi for ordering the pizza you actually want. I'd forgive this if the pizzas they selected to enumerate were interesting combinations, and limited in scope, but you have two pages of desorted pizzas to rummage through, hoping you'll find what you want. And if you do attempt to go from what's on the page to what you want, the owner (bless him) won't be able to figure out how to ring it up, because I guess their POS system lives up to the alternate expansion of that initialism. Oh, the food! Um. If you like crackery-thin pizza, and I don't, you might like it, and I certainly won't. The sauce is sweet and slightly-unpleasant. The margherita is offered with oregano, not basil, and you might get the impression that the oregano would be fresh, and it just isn't. If you get their regular mozzarella, it will set up into a sickening lump. If you get the Buffalo mozzarella, they splat overly-thick slices of it onto the thin and lightly-sauced pizza. The pieces of mozzarella were cooling rapidly (and probably never got very hot; it'd be too easy to burn such a thin pizza in a wood-fired oven) and twice as thick as the crust. A disgusting experience, biting through them was. If I want hearty, satisfying pizza, I'll go to Al Forno Ferruzza, and I'll probably order one of an astonishing stromboli instead. If i want cracker crust, I'll take the trashy-but-flavorful Dirty Dave's: mild green chiles and cashews, please. I see no need for this pizzeria to exist in Olympia. I would bring back the defunct and around-the-corner Underground any day. This place has food on-par with some of the other trash on the block catering to the captive audience of state employees and bankers, but looks quite pitiful compared to new neighbor Kitzel's, or Al Forno just blocks away. Get on a bus and go to Vics! Hoof it to Old School. Drive to Dave's. There are so many better choices than this bland, even slightly gross, non-pizza. Avoid, avoid, avoid, unless you like that sort of thing.

I gave you a second chance but both times were disappointing. I love thin crust, but it should be crispy. Mine was soggy, cheese was rubbery. the topics were soooo sparse- 1-2 pieces of sausage per piece- really? Don't call it a sausage pizza with that amount. One big leaf of basil on the slice- how is this supposed to flavor the whole piece? You have to hold the piece of basil in place with your finger while you bite into the slice. if you are going to put the basil on after it is cooked, at least chop it up. No reason to go back here- there is better pizza in town.

The pizza is really excellent! Nice thin crust with good toppings so you dont end up too stuffed. Good selection of beers and wines and the decor is actually really chill. Nothing fancy, it just feels good to be in there. One of the walls is old exposed brick which I really love. We also had caprese salad and milhojas for dessert which were phenomenal. We will definitely be going back there again. The only complaint came from my wife who wanted the owner/manager to sing for us... I think she has a crush on him though.

We have been to La Gitana several times and ordered carryout once. The atmosphere is cozy with exposed brick and an open kitchen with wood-fired oven. Love that they offer Gluten Free pizza crust however it is way overpriced! Also, the 3 times we have been for the GF pizza it has been burnt on the outer edge which also makes me upset that the pizza is so expensive. The salad is delightful, but simple. Fresh greens, olives, & artichoke hearts. They need to offer their GF pizza as a lunch special size and bring the cost down. Service was marginal at best and that is why I dropped it from 4 stars. I got to wear an entire glass of soda on my lap after the waitress spilled it upon delivery. Then she brought a roll of paper towels for us to clean up her mess?!? Where to start with this one...So impressed when we walked in - clean modern almost communal table feel. Had no idea what to expect as we are new to the area and we went b/c I had a Living Social. Menu was great, lots of Pizza's to choose from and a little price, but quality ingredients- so willing to pay extra. Good wine selection and beers from Fish Tale (local brewery). They didn't have a kids menu but had crayons and coloring sheets, so we asked if they could do smaller cheese pizza and answer was yes- at this point I thought I had ordered one for the kids and this is where it fell apart. We then proceeded to order an Adult pizza- prosciutto, arugula, parm + drinks and then got the adult pizza and waited a few minutes and asked about the kids pizza and waitress had informed my that she didn't repeat the kids pizza back in the order so she didn't think we wanted it- understandable at that point, then went on to advise me how she always repeats orders back, so I said OK and asked for the pizza, 15-20 mins later when my husband asked and advised we were a little irritated at that point she still had not apologized or said sorry for misunderstanding and again tried to prove her point. We said we didn't want the pizza then and were ready to go. The saving grace was the manager or owner who came back and profusely apologized a couple times and brought the pizza to us in a box as we were ready to go. I understand misunderstanding but proving a point vs apologizing and moving on is annoying. I will go back because the pizza was great, and hopefully I can increase to a 4 or 5 star.

I have been to the La Gitana in yelm and thought the pizza there was cazzzzzy good. I was so excited to have a location right in downtown Olympia. Since I work near the place, i was excited to have another lunchtime escape. Let me say this-The pizza is really amazing. They put it in a wood fired oven to give it that smokey crispy taste. BUT THE SERVICE IS HORRIBLE. I"m not sure if they just don't realize that pizza is something Olympias like and therefore will patron any pizza establishment, but it sucks. They have one lady working and the place gets packed for lunch. One time I went for my lunch hour. We didn't even get menues for a half an hour. Once we finally did, and ordered, our food didn't come out for another 30 minutes. My 1 hour lunch break was not enough to sit and wait an hour. For this, i have rated this restaurant 3 stars. Its unfornate because I like the food, but rarely go there because I can't ever get food within the reasonable time frame. I have been there at other times and the service still lacks. La Gitana-just hire some more servers and stop being so stingy. I'd like you a lot better..

Amazing pizza. Thin flaky crust in a brick oven. Farmers market fresh toppings that you will not find at most pizza places including truffle oil and REAL BUFFALO mozzarella. I've noticed a phenomenon about a lot of the 'fancy' establishments in Olympia WA. The verbiage describing items on the menu cause you to assume the place demonstrates quality. Unfortunately just because you use arugula doesn't mean you're getting something special. The ambiance would lead you to think that you're in an upscale establishment, but you're not. La Gitana is one of many restaurants in Olympia that have caused me to coin the term 'pseudo fine dining'. Its fake. Its sad. Its scary.

I found this place on opentable and since it was within walking distance from my hotel and one of the few restaurants open I gave it a try. Immediately upon entering I was greeted warmly by the staff and asked to take a seat. The menu is basic but the options were plentiful, combinations endless, and prices solid. I decided to go with the Emiliana and was pleasantly surprised at how it resembled many of the pizzas I had eaten in Italy. The restaurant prides itself in using the freshest locally grown ingredients, imported flour from Italy with no hormones or antibiotics so that alone set the bar high. The flavor was very rich and full and you could easily taste the quality. The pizza tasted like those I had eaten in Italy so I was not disappointed. Very delicious! I liked it so much I returned with a friend the following night. Waiter provided excellent service and was very nice! 5 stars for food, service, and atmosphere :)

We are visiting Olympia and Yelped this small "hole in the wall" traditional Napilitano pizza restaurant. All food is excellent and natural. The food here is just as good as I had in Italy. Very pleasant atmosphere. Very clean. Excellent service and servant like hearts of the waitress Traditional stone oven. Excellent selection of food and beers. The prices were extraordinarily reasonable for the quality of food and excellent taste. I would not hesitate to come back here and recommend this restaurant to all natives and visitors.

La Gitana is one of my favorite places to go for lunch in Olympia. The lunch special is a mixed green salad with wonderful balsamic dressing and a 9 inch pizza. I am partial to either the mushroom and onion pizza or the Tropicana pizza. The service can sometimes be slow but other than that the ambience is nice and the food is excellent.i'm always partial to pizza places with Woodstone ovens made near Bellingham.

Needed a bite to eat after a long day of traveling. This was conveniently located to my hotel and looked inviting for a single person to eat. First, slices were not available. Second, small pies are not available...one size (14") only. Hmm. Okay. I'm hungry, so I'll go for it. Liked the thin crust, but not brilliant. Toppings on the sparse side. Wanted pesto as a sauce, but was only offered basil as a topping. Asked for Parmesan to sprinkle on top and was advised it was "a side". Declined as I couldn't possibly eat that much parm. For the price, only adequate - and I live in the most expensive city in the U.S., so I know this was over priced and really only okay. Service pleasant and timely. Overall, a bit pretentious for the product delivered.

I bought a Groupon for this place, big mistake! This was the worst and most overpriced pizza I've ever had. Maybe my mistake was getting pepperoni pizza (I had to pick something my kids would eat also) I honestly would have saved A LOT of money and it would have tasted better if I would have made my own pita pizza at home (the crust was exactly like a big pita, not thin home made pizza dough.) Maybe it was an off day but, I'm not sure but it was so bad that we threw away the rest of our leftover pizza. It was so bland!!! It cost almost $30 after my $20 Groupon for 2 adults and 2 children. I still have one left. Maybe I should go back and order something under $20 but I honestly would rather not waste my time even if the food is already paid for.

When I first saw the pizza it looked great. But the taste - something missing. Garlic! that was it - it needed garlic. I went during a "special" and asked for garlic and they would/could not put garlic on the pizza! First of all it should be in the pizza already.... to make a long story short... I never went back because real pizza needs garlic!

Update - The spousal unit (SU) and I were enjoying a sunny Sunday walk around the Crapital and swamp, I mean lake, when we decided to stop here for linner (lunch / dinner). I am pleased to report that the flavor of their pizza sauce etc has improved since my Dec 2011 review. The SU had been here previously during a GNO (girl's night out) and also found the flavors then bland. No longer so. Very tasty, indeed. On that basis, I've added a star to my previous review.

Here they shoot for Naples-style, wood-fired, thin-crust pizzas as one sees in southern Italy and also in modified forms at other places. La Gitana's pizza is definitely a cut above the USA average, but during my one visit, at a weekday lunchtime with business a bit slow, the all-important crust was too pale. That said, the toppings are very fine. We ordered a margherita with fresh mozzarella and added basil, and a prosciutto and arugula pizza. There was a very large amount of good quality prosciutto on the one pie. The cheeses, sauce, and everything was excellent quality. The pizza maker told me the oven temperature was 550-600. which I know to be all of 250 degrees too cool for the Italian flour that they are using. Perhaps the restaurant might be saving a bit on oven fuel by not keeping the oven blazing at times when the house isn't very busy? I'd be game to try the place again during the evening when the oven might be hotter. Some of the pictures here on Yelp suggest better browning for some people.

I'm giving this a 2 because there were more bad things, but very few good things. I came here on a double date with my boyfriend and his parents because I have Celiac Disease and my boyfriends mother has a thyroid problem which causes her to not be able to eat gluten. The only reason we came here is because there was a misunderstanding that I didn't like Vicks Pizza, when really I said I didn't like Apollos. So next time we'll be going to Vicks! Anyway, beside the point. My boyfriend and I got there first before the parents. They didn't even acknowledge us, didn't even look at us or anything. We tried asking if we had to seat ourselves, but we weren't even acknowledged for that. So we sit down and wait. They still pay no attention to us until about a good 15 minutes. A blonde waitress came by, didn't even look at us, didn't even greet us, and just tossed menus in front of us and walked away without saying a word or asking us if we wanted anything to drink. Pretty rude, a smile would of been nice but apparently that's asking for too much. Finally, a waitress named Abby came by and helped us, she was honestly the only good thing about this place since she smiled and was polite and got us what we needed. By the time the pizza came by, which is extremely expensive compared to dominos even, I ordered a gluten free sausage pizza, the crust was black and burnt and the toppings were lame, lame as in they hardly put any toppings on the crust for being $13. The pizza didn't taste all that great and the burnt crust definitely made it harder to eat. I could still eat it with no problem but it's just not something I'd ever come back and order. We ended up not getting any straws for our drinks and had to go up to the counter and ask for which was difficult since no one even bothered looking at me or asking if I needed anything until I raised my voice a few times to get their attention. Overall my experience wasn't that satisfying at all. But I do want to compliment Abby for being better than all the other staff members. I don't plan on coming back here unless someone else is paying and really wants to... I uploaded some pictures of the burnt crust and the very little toppings they give you just to prove my point.

Sign up for text alerts and you can get awesome deals for their pizza. Example: 7 dollar mushroom pizza on Mons and Tues after 4pm! Also first small pizza is free! Vegetarians are safe here. Asked about their marinara sauce. Beef/lard free. Found the mushroom pizza delish! Loved the thin crust. Like really loved it. Reminded me of gourmet pizza I had from NY or Boston. Restaurant has an open design with wood floors and a bare brick wall. If you are traveling with a gluten-free companion, then you can both eat well here. The adobe-looking pizza oven is visible from the seating area.

Without exception every time I have had the pleasure of eating here I have been pleased with both the food and with the service. As all cooks know, it's difficult to have a perfect meal come about 100% of the time and having read some other reviews here, I'm sure there have been a few odd days where something wasn't exceptional at Pizzeria La Gitana. Don't let those reviews stop you. However, if you want to experience real "home-style" cooking and one of the best made pizzas ever and are not upset with a little authentic fire-kissed bread now and then, try this place; it's worth it. If you are on a budget, the bill might make your eyebrows lift a bit, but when you want taste and quality sometimes you have to dig into your pockets a little deeper. Let's face it, sometime those "cardboard pizzas" cost more by their lack of taste and few ingredients. Save La Gitana for a time when you want to spoil yourself and want something different. When you compare the fast-food places with this restaurant, you will find La Gitana is worth a second and a third visit!

If you are a fan of thin crust pizza....this is your place. We found it on the day of the toy Run. My daughter and two grandchildren. One of the owners was our server, he helped my 7 year old grand daughter decide on lemonade when she couldn't decide on a beverage, Made chocolate milk for my 4 year grandson and my coffee....was awesome. We ordered a custom pizza with a wedge of plain cheese for my grandson. It was delicious. If you are looking for pizza you would find at a large chain you will not find it here. This place is for those of us who like a thin crust pizza that comes out of a wood oven crispy with just the right amount of sauce as to not overpower the flavor of the toppings. The owner was charming and very kind to our little group. My 7 year old Grand Daughter was thoroughly enchanted. The atmosphere, flavor and service were all top notch. We will definitely be back, finally found the pizza place we have been looking for.

Okay I eat here so often it's really time I give them a review and the credit they are due. This IS my favorite lunch spot in DT Oly. The pizza is fantastic, the service is friendly and prompt and the place is just cool - with their exposed brick, high ceilings and local artwork. Their pizza is legit wood fired hot deliciousness. There are several wood fired pizza places in the area that essentially just make a traditional gut bomb pizza in a wood oven. While I suppose they are technically 'wood fired' to my mind that label implies more than just a cooking method, but also a style of pizza tradition - i.e. thin delicate crust, quality ingredients use to heighten thoughtful flavor and texture combinations not just overpower the taste buds with fat and salt. (Not that there isn't a time and place for that, mind you. But when I am expected to return to work after AND function the rest of the afternoon, I prefer the likes of La Gitana.) They have a very reasonable lunch special - a personal pizza and salad for about $10. My favorite, Arugula and prosciutto is $5 extra - but worth it. I have been for dinner as well and they have some great live music on the weekends - I'd say a gypsy jazz flamenco-ish style that suits the ambience well, and rather important in my book, does not interfere with the enjoyment of your meal. So definitely check this place out. It's a great lunch or dinner spot in the heart of downtown.

I am French with italian roots (I have lived in Italy for a few months and travelled there often) and definitly this pizzeria meets great standards. Things are definitly "made with love" here. Yes, it is more expensive however the quality justifies the difference of price : For instance, flour does taste really different in Europe than in the US, (just ask any expat), so it is worth importing it if you want to run a genuine Italian pizzeria... The only minor criticism is that the Tiramisu lacked of the bitterness of an upper layer of cocoa, which is how it should be done in the state-of-the art (for the curious minds, this desert comes from the North of Italy, around Turin, in local dialect "tirami su" litterally means "bring me up / comfort me", their ultimate comfort food speciality !) At last, what I liked the most in this place was the atmosphere : We went on a fourth of July and there was a good jazz band playing there, some local artists promoted on the walls of the restaurant (even if not my taste) : you could feel this place has a general aim to bring a certain art-de-vivre in town, and they certainly deserve to be supported for that too!

I still love the food here and the servers are really friendly, however having been a few times now, I do want to say the service can be a little slow so come with some time to spare. A few friends and I did order the gluten free crust once, and did not care for it. It was very chewy and extremely hard to cut which pretty much ruined the whole pizza experience. However, none of us are gluten free or have perspective for comparison.

Excellent service, delicious wood fired pizza with simple ingredients, and one of the cleanest establishments in all of Olympia. The laminated menus, oil and balsamic jars, and table tops were all wiped clean! Something that you don't find often at pizza establishments. Friendly staff, and excellent food. The folks at La Gitana are so warm and friendly. Their amazing costumer service matches their AMAZING pizza!! My sister had her rehearsal dinner here and Carlos and his crew did an amazing job. They set up the perfect menu of salad, charcuterie, and pizza to feed our massive crowd. I was so glad to see it was wood fire gourmet style pizza. My favorite had to be the arugula, prosciutto and truffle oil pizza. Just an little concoction of heaven in my mouth! They had something for everyone. I highly recommend la Gitana to anyone looking for amazing gourmet pizza!

When you walk in to la gitana you are greeted by a warm atmosphere that smells amazing and super friendly staff. I love that they use the highest quality ingredients and even have buffalo mozzarella!! Yum! Great salads too. Good wine selection and reasonably priced for the atmosphere and quality! It's a must try.

It was good pizza. Got the Alpina with Truffle Oil. The Oil was a worthless splurge, but the flavor was good. The crust was a little burnt, but thats to be expected with that type of oven. I throughly enjoyed the flavor. Also ordered a lemonata. Disappointed because I thought it would be San Pellegrino with fresh squeezed lemon juice...turned out to be the canned stuff.

Pizzeria La Gitana is a jewel in Olympia if you are looking for an authentic Italian brick oven pizzeria. A frequent visitor to northern Italy, I find La Gitana's pizza tastes exactly like stepping into Italy for a short visit without the cost of air fare. The crust is thin and crispy every time with a light kiss of tomato sauce. We had the 4 Stagioni 3 times & it is a perfect every time with a mix of thin sliced ham, sausage & artichokes. Perfetto!! Perfect Italian brick oven pizza !! And the coffee is great. Ciao!!

I visited on a week night after getting out of work and my experience was so-so. 1. The menu was confusing. I chuckled when I saw "tomato sauce" listed under nearly every pizza option. It's typical of places like this to put signature pizzas in a separate section highlighting them to the customer, but this was taken to pointless extreme. You have ham and mushroom toppings, no need to tell me you offer a ham and mushroom pizza! 2. The customer service wasn't that good. There were only 2 other tables with customers (7 people counting me), yet it took 45 minutes for my pizza to cooked. The waitress never visited my table during this time, I never got a drink refill until my pizza came out and that was it. I had to flag down another waitress to get my check as I never saw my original waitress again. (too busy hitting on the guy making pizzas) 3. The pizza is over priced. I'm not eating in Manhattan, NY. 4. The pizza itself was pretty good. I actually liked the really thin crust and easily polished off the pizza myself. It could have used more pepperoni though, as it basically worked out to 2 per slice, which on a single-item pizza is not enough. Overall it was nice place, but just needs to some work.

To me, the sausage had a peculiar taste that I can't quite put my taste buds on... If you like cracker thin pizza you may like it here. The service is subpar. It is a nice looking place though.

I really like this place. If the price of pizza were that of Little Caesar's, I'd be here every other day. I am not a fan of thick crust. It fills me up fast and then I have no more room for delicious pizza. Luckily for me, and all you thin crust lovers, this place has the thinnest of thin, with a really good crunch! My favorite pizzas to order here are the Margherita, Romana, and the Marinara with fresh basil substitution. The woman who helped us was so funny, knowledgeable, and very patient considering we had a 5 year old tornado with us. I give this place a two thumbs up for the kid friendly atmosphere while still looking like an adult date night place to be. I love the pizza and the people. I will be back.

After hearing rave reviews about this place I decided to take a friend for dinner here as an end to her bridal shower celebration. When we arrived, I gave the waitress my name for our reservation. She said there was no reservation for us. This was a bit embarrassing as she also added (in front of my guest) that I must have been mistaken. As if I would mistake the day of my best friend's bridal shower! She then told us to pick a seat, which kind of took away from the whole feel of a special dinner out. We ordered drinks and then were left alone for close to half an hour! I finally asked if we could order please and she asked what we wanted, without even offering an apology for the wait, which was actually code for "I forgot you guys were even here!" You would think it would be simple to order two Margharita pizzas with basil, but the waitress seemed annoyed when I also asked if the sauce was free of tree nuts (like pine nuts in Pesto) due to my severe nut allergy. The pizzas actually arrived quickly, but were served without a smile or an inquiry as to if there was anything else we needed with our meal. We sat and chatted for over an hour with no sign of our waitress EVER! I finally had to ask another waitress if we were supposed to pay up front on our way out instead of receiving a bill like most nice restaurants. This waitress sincerely apologized to us and swiftly brought us our bill. We paid and left without anyone even noticing us. This was a very disappointing experience for a special meal out with a friend. As for the actual taste of the pizza, it was good, enjoyed the thin crust. The restaurant itself was cold and the music was way too loud. I will most likely not return due to the lack of energy from staff to make us feel welcome and want to eat there again.

This place. (sigh) I don't want to just go on a rant... first, the good. We went on a Saturday evening, and there were plenty of people on staff. Our food came promptly (we ordered 2 pies to share), and it was fairly tasty. The location is nice, the decoration is modern (a little confusing to see Latin influence in the doorway, then modern abstract art toward the back). My negative comments come from a lot of experience at wood fired pizza places, both as a customer and as someone who knows the business. It's a delicate pizza to make, but if you do it right it's unbeatable. I'm a stickler on customer service, too, because you have to relate to your patrons and know your product in order to make the place great. A kitchen staff can work miracles, but they aren't the only people who bring your customers back. With that said, a few points: - Too expensive. Nothing under $20. Why? Because they think that wood fired pizza is artisan, and the ingredients are high-standard. It's not, and they're not. They don't even do their own home made mozzarella, which might actually warrant the price. Instead, it just looks greedy. That, or they are failing and have to make up for costs somehow. Either way, it doesn't look good. - The service was awful. Our waitress actually hovered next to our table while we were looking at the menu... after we had already told her we didn't have any questions and just needed a couple minutes to decide. It was off-putting, and made the rest of the experience uncomfortable. - The pizza. There is no need for a squished together 2-page menu -- good wood fired pizza will only have 12 different choices, tops. Why? Because if you want anything extra, you'll ask for an addition. It is not necessary to list every possible combination of ingredient on a pizza. That, and the poor kitchen staff obviously had to analyze the menu every time an order came in. It was ridiculous to watch. - The pizza part deux. Not quite cooked to bring out the wood fired flavor. It wasn't even busy for a Saturday night, so it's not like they were rushed to turn out pizzas for the crowd. - Minor note about the cleanliness: dust collecting on bottles of wine and glass that is clearly there to display something lovely that might accompany your pizza. Added thought: the dust-collected wine bottles were perched above a counter they used for food prep and/or dish storage. Yuck. To end positively, this place has a lot of potential, if they can just get it together. And they better, because I bet downtown Olympia can be hopping if they have a way to entice the crowd.

Can't say enough nice things about this place. Just moved here from Seattle and a place like this would be packed up there. Very similar to Tuta Bella but without the pretentiousness.

I gave you a second chance but both times were disappointing. I love thin crust, but it should be crispy. Mine was soggy, cheese was rubbery. the topics were soooo sparse- 1-2 pieces of sausage per piece- really? Don't call it a sausage pizza with that amount. One big leaf of basil on the slice- how is this supposed to flavor the whole piece? You have to hold the piece of basil in place with your finger while you bite into the slice. if you are going to put the basil on after it is cooked, at least chop it up. No reason to go back here- there is better pizza in town.

My wife and I visited La Gitana on a recent Friday night. We were seated quickly in a quiet back corner. The atmosphere is clean, modern, and minimalist, without feeling cold. We split the Gustosa pizza (I love prosciutto) and their side salad. The salad was nothing special. I would tell you more about it, but frankly I don't remember much - which kinds of says something about it right there. The greens were foofy and it had some olives with pits. After a few bites, I ended up dousing it with the olive oil and balsamic vinegar on the table to try and salvage it. The pizza was really disappointing. The crust is like the thin communion crackers we had when I was a kid, only thinner. I usually look forward to the crust at the end of a slice of pizza, but this was like finishing your pizza with a saltine. Each ingredient seemed high quality, but they didn't work together very well. The prosciutto comes in long slices, which makes it hard to take a bite without the full slice sliding off the pizza. I ended up with a mouthful of prosciutto more than once. Instead of the crackly, bubbly, ooziness that wood-fired pizza should have, this was just kind of mushy. I liked the blue cheese. If they would just put the blue cheese, prosciutto, and cracker crust on a plate and bring it out, that might be good. The prices really seem a little over the top. If I had been hungry and the pizza had been good, I could have finished all $21 dollars of it by myself. For that price, it would have to be darn near the best pizza I've ever eaten, which it's not. I have one of those internet-half-off-coupons for this place. It cost me $10, but I'm really considering not using it.

BEWARE! I purchased a Living Social deal for La Gitana only because I intended to use it for La Gitana's lunch special. When I showed up to use it, La Gitana had added a notice to their menu that the internet deals could NOT be used on the lunch special. There were no such restrictions on its use on the Living Social website or the La Gitana voucher. Living Social refused to return my money - so I will never return to La Gitana or use Living Social again.

They seem to think that means a cheese pizza....no basil or tomato. sauce is bland in serious need of garlic. dough is bland in need of flavor. salad was fresh and good. service was adequate. Won't be going back. There are many good pizza options in Olympia and this is not one of them. Italia and Old School beat these guys hands down!

I have been here twice and both times I have LOVED the pizza but was not real crazy about the service. Both times, the server appeared to be the only server for the entire restaurant. Both times, service was slow and almost non existent. Friendly but spread WAY too thin. The pizza with the aragula and blue cheese is TO DIE FOR. I crave it actually. Wonderful flavors, perfect sauce and crust. On the spendy side. Here is the deal - when I go out, the quality and value of the food are important but just as important is the service. If I am paying high prices, which I feel this place has, I want good service too. Basic things like bringing water and refilling drinks, offering to go box, bringing check before I have to ask and ringing it up without it taking 15 minutes. If you have a lot of time to spare and like great pizza, this is the place for you. Just dont expect good service because so far I havent seen any. Maybe a to go order would be a better idea?

I walk in with my boyfriend and the ambiance is great: clean, well-lit, modern decor and not too noisy. There was some confusion though as we stood in the entrance for a moment and no one greeted us. The guest counter is actually in the middle of the restaurant so we walked over there after nothing happened and were told to sit anywhere we wanted by a waitress. We ordered a half and half pizza with one side Margherita and the other pepperoni. This is where the trouble started. I will preface this by saying that it was probably my fault for not reading close enough, but when I order a Margherita pizza, I usually expect basil on it at the very least and some Roma tomato slices if you want to get fancy. This sad pizza though had none of these things. It had tomato sauce and cheese... and nothing else. I at first thought this was a possible mistake so we thought we'd wait for our waitress to come back so we could tell her before eating anything. After waiting a while and looking around, no one came so my boyfriend walked up to the counter to ask about the pizza because I was a little irritated by this point and he's a lot more patient with things like this than I am. So he kindly asks if what I got was the Margherita pizza and the older waitress who had also been helping us snaps back, "That is the Margherita." And turns on her heel and walks away. Nothing else. No apology, asking if there's anything they can do, or if we're okay. Nothing. Cue to my jaw dropping and wondering if that actually just happened. She then proceeds to go and sit down with her friend/boyfriend/whoever sitting behind us for awhile while the other younger waitress is working the entire restaurant all by herself. Seriously?! (Note: We initially thought she was on her break but she kept getting up in between their conversation to do menial tasks in a meek attempt to look like she was still working) The entire dinner though, no one came back to ask if the food was okay, refill our water or ask if my boyfriend wanted another beer. The older waitress just threw down the check when we were done and quickly walked away with no, "Thanks for coming in!" or "Have a nice day." Now I'm a waitress too and I'd like to think she was just having a bad day but the other people working there didn't seem to get on with her that much either. I don't expect amazing service every time I go out but at least the basics and some kind of gratitude for coming in. They get two stars though because the pizza was decent tasting, not the best best but certainly not the worst either, and their beers were super cheap (3.5 for both domestic and micro-brews). I just think they should have called the pizza what it actually was, a CHEESE pizza instead of a Margherita in order to jack up the price. I probably should have ordered an IPA too like my boyfriend so I could have at least drowned my sorrows in good alcohol. Definitely not coming back here anytime soon.

When we walked in, I went to the counter as I had the feeling that there was going to be a place to make an order, but was quickly told that someone will seat us. Then there was just awkwardness between me and the waitress as she asked if she could help us with something and I explained we needed a seat. Maybe we were just supposed to seat ourselves? I wouldn't have thought much of it but people after us seemed to have the same "do we wait or do we seat ourselves?" questioning going on. The ingredients tasted fresh, but the sauce seemed to be strictly tomato paste. The crust was crispy, but tasted like an unsalted cracker. The spread of the sauce left little, to no sauce in the middle and a thick ring at the edge, right before the end of the crust. Toppings also could have been spread out more evenly. Not a super flavorful pizza, and the 2-people tables are very small when a pizza, two plates and two drinks are arranged on them. I didn't find this pizza to be something worth going back for.

Had my first visit here yesterday, and it was DELICIOUS! Amazing pizza options, delicious ingredients, a delightfully thin and crispy crust (without being crunchy), and yummy desert options. Our pizzas were loaded with fresh toppings, and were cooked to perfection. It was in the middle of the afternoon, so service was fast and friendly. It's a big place though, so I can imagine it could get pretty busy, and with each pizza fired in the oven, I can see how some people might have a bit of a wait to get theirs. I'll be going back for sure!

I love this place. Light, Crisp wood fired crusts. Great pizza flavors. Live music on the weekends. I debated the 5th star because service can be a little slow (has been hit or miss for me). But after living in Olympia for a few years, I realized NOBODY had good service. So compared to the the competition, La Gitana is on par with the best pizza in Oly. Plus live music/entertainment on the weekends. If you haven't been, check it out!

When we were in Italy this fall, we had authentic Italian thin-crust pizza in Rome. The pizza we had at Pizzeria La Gitana was very similar. Probably the best thin crust pizza in Thurston County if not all of Puget Sound. The service was excellent as well - on a very busy Friday night.

Had dinner here and really enjoyed the pizza. The ambiance is nice, with really cool flamenco paintings on the walls (still confused if they are trying to go for a Spanish or Italian theme here). Our waitress was friendly and the service was prompt. The pizza that we got was very good, far superior to Al Forno Ferruzza. We would definitely go back.

I went here for lunch with some co-workers last week (or the week before, not sure). I'm always nervous to go somewhere new, it's typically hard to eat out being gluten free. I almost always get sick. But I figured, what the heck, I'll give it a shot. I was disappointed that I couldn't get the $9 lunch special (a 9" pizza and green salad) gluten free. They must have their gluten free crusts pre-made and they are much larger than 9". A co-worker opted to share a GF pizza with me and we each ordered a side salad. The salad was AMAZING. It had whole green olives, artichoke hearts, and other goodies. We ordered a bleu cheese and ham GF pizza. SO GOOD. The crust was thin and a little crisp. The cheese was perfectly cooked. This is the closest thing to REAL Italian pizza I've found since eating pizza in the birthplace of pizza, Naples. AND I didn't get sick! I knocked off one star for being a little spendy at lunch (since I couldn't get the special). And I took off one star for service. Our server was wonderful and was running her butt off, but the place was packed and the poor girl was the only one on staff (besides the one guy making the food). I've been in that position before and it sucks. They need more servers and probably and additional person or two making the pizza and salads, even at lunch time. Definitely some of the best GF pizza I've had. YAY for more options in this town! I will for sure return when I have time to wait, because it is for sure worth it.

They make pizza and only that. Seriously, it's the only they really make and it is good. There are a lot of choices in Olympia for Pizza. We have our franchise chains (Which some are actually quite good) and we have our mom&pop shops. The list consists easily of Old School, Vics, Apollos, Dirty Daves, and Wagner's new place which makes one wonder where they should go for a slice. Well, the answer really lies in "What do you want?" or perhaps what is it in a pie which makes you zingle. La Gitana is very different in atmosphere, flavor, crust and toppings. For what it is it blows the competition out of the water. You will get olives imported directly from Italy (Some trade secret I have yet to be able to crack, the young green ones are to die for), speck which melts in your mouth and one hell of a crispy crust. I believe they have an oven which uses only cherry wood. Lots of details but it boils down to a few things. So is it good? Yes, is it cheap? not terribly, is it worth it? Definitely. Should you come and try it out? Yes yes and more Yes. I'll see you there.

This is my kind of pizza! Wonderfully thin, crispy (but not too crispy) crust. A great selection of topping combos. Delicious! And a good wine list. Service was good, tasteful decor. Great place for families and large groups, or for an intimate meal for two. You'll want to sit good and close as it can be a little loud when it's crowded. The only negative is the lighting. Track lighting shining down on glossy tables. I was fighting a bit of glare, but then my eyes are awfully light sensitive. Not enough to keep me away when I'm town, however. Long live La Gitana!

It's just not my kind of pizza, and I shouldn't hold that against them, but I do. It feels like it's trying to be fancier than it is, to be just a cut below, say, Acqua Via, which it just isn't. It's really as nice as Al Forno Ferruzza, but it feels aspirational, rather than content. The interior is overwrought and feels rather cramped, the product of an exceedingly-bad floorplan, which does not make the best of the, admittedly limited, space. The menu is underengineered and overelaborate. They have N toppings. Rather than list these, they explore the combinatorial space clumsily. Hey, look, a pizza with Tuna! I guess if I want Tuna and sausage I have to order that pizza, hold one of the toppings, add another. It's Towers of Hanoi for ordering the pizza you actually want. I'd forgive this if the pizzas they selected to enumerate were interesting combinations, and limited in scope, but you have two pages of desorted pizzas to rummage through, hoping you'll find what you want. And if you do attempt to go from what's on the page to what you want, the owner (bless him) won't be able to figure out how to ring it up, because I guess their POS system lives up to the alternate expansion of that initialism. Oh, the food! Um. If you like crackery-thin pizza, and I don't, you might like it, and I certainly won't. The sauce is sweet and slightly-unpleasant. The margherita is offered with oregano, not basil, and you might get the impression that the oregano would be fresh, and it just isn't. If you get their regular mozzarella, it will set up into a sickening lump. If you get the Buffalo mozzarella, they splat overly-thick slices of it onto the thin and lightly-sauced pizza. The pieces of mozzarella were cooling rapidly (and probably never got very hot; it'd be too easy to burn such a thin pizza in a wood-fired oven) and twice as thick as the crust. A disgusting experience, biting through them was. If I want hearty, satisfying pizza, I'll go to Al Forno Ferruzza, and I'll probably order one of an astonishing stromboli instead. If i want cracker crust, I'll take the trashy-but-flavorful Dirty Dave's: mild green chiles and cashews, please. I see no need for this pizzeria to exist in Olympia. I would bring back the defunct and around-the-corner Underground any day. This place has food on-par with some of the other trash on the block catering to the captive audience of state employees and bankers, but looks quite pitiful compared to new neighbor Kitzel's, or Al Forno just blocks away. Get on a bus and go to Vics! Hoof it to Old School. Drive to Dave's. There are so many better choices than this bland, even slightly gross, non-pizza. Avoid, avoid, avoid, unless you like that sort of thing.

The pizza is really excellent! Nice thin crust with good toppings so you dont end up too stuffed. Good selection of beers and wines and the decor is actually really chill. Nothing fancy, it just feels good to be in there. One of the walls is old exposed brick which I really love. We also had caprese salad and milhojas for dessert which were phenomenal. We will definitely be going back there again. The only complaint came from my wife who wanted the owner/manager to sing for us... I think she has a crush on him though.

We have been to La Gitana several times and ordered carryout once. The atmosphere is cozy with exposed brick and an open kitchen with wood-fired oven. The crust is perfectly crispy, and the sauce delicious. We got the arugula and prosciutto pizza and both the arugula and the prosciutto were fresh and plentiful. Love that they offer Gluten Free pizza crust however it is way overpriced! Also, the 3 times we have been for the GF pizza it has been burnt on the outer edge which also makes me upset that the pizza is so expensive. The salad is delightful, but simple. Fresh greens, olives, & artichoke hearts. They need to offer their GF pizza as a lunch special size and bring the cost down. Service was marginal at best and that is why I dropped it from 4 stars. I got to wear an entire glass of soda on my lap after the waitress spilled it upon delivery. Then she brought a roll of paper towels for us to clean up her mess?!? She didn't offer to try and wipe it up or even buy my lunch after drenching me in soda. The owners need to train their staff with better service skills.

Where to start with this one...So impressed when we walked in - clean modern almost communal table feel. Had no idea what to expect as we are new to the area and we went b/c I had a Living Social. Menu was great, lots of Pizza's to choose from and a little price, but quality ingredients- so willing to pay extra. Good wine selection and beers from Fish Tale (local brewery). They didn't have a kids menu but had crayons and coloring sheets, so we asked if they could do smaller cheese pizza and answer was yes- at this point I thought I had ordered one for the kids and this is where it fell apart. We then proceeded to order an Adult pizza- prosciutto, arugula, parm + drinks and then got the adult pizza and waited a few minutes and asked about the kids pizza and waitress had informed my that she didn't repeat the kids pizza back in the order so she didn't think we wanted it- understandable at that point, then went on to advise me how she always repeats orders back, so I said OK and asked for the pizza, 15-20 mins later when my husband asked and advised we were a little irritated at that point she still had not apologized or said sorry for misunderstanding and again tried to prove her point. We said we didn't want the pizza then and were ready to go. The saving grace was the manager or owner who came back and profusely apologized a couple times and brought the pizza to us in a box as we were ready to go. I understand misunderstanding but proving a point vs apologizing and moving on is annoying. I will go back because the pizza was great, and hopefully I can increase to a 4 or 5 star.

I have been to the La Gitana in yelm and thought the pizza there was cazzzzzy good. I was so excited to have a location right in downtown Olympia. Since I work near the place, i was excited to have another lunchtime escape. Let me say this-The pizza is really amazing. They put it in a wood fired oven to give it that smokey crispy taste. BUT THE SERVICE IS HORRIBLE. I"m not sure if they just don't realize that pizza is something Olympias like and therefore will patron any pizza establishment, but it sucks. They have one lady working and the place gets packed for lunch. One time I went for my lunch hour. We didn't even get menues for a half an hour. Once we finally did, and ordered, our food didn't come out for another 30 minutes. My 1 hour lunch break was not enough to sit and wait an hour. For this, i have rated this restaurant 3 stars. Its unfornate because I like the food, but rarely go there because I can't ever get food within the reasonable time frame. I have been there at other times and the service still lacks. La Gitana-just hire some more servers and stop being so stingy. I'd like you a lot better..

FOOD. Italian-style pizza, a fusion of Argentinian and Italian desserts, and a unique mix of wine and beer. Simple, doing what they do best, I dig it. If you're looking for New York or 'old school' style pizza pies, this isn't your place, and you should know as much by the time you enter the door and look around. Italian pizza is VERY different than what we're used to in the States. Some people love it, some don't. Personally, I like to mix it up. If you're only into the filling thick-crust dense-topping choose-your-toppings-one-by-one pies, you're not going to have a palette for good Italian pizza. Being a foodie and having eaten a handful of pizzas on the streets of Italy, I know good Italian pizza, and this is as good as you'll find in Oly. As far as desserts go, they're AMAZING! We had the Miljohas (Argentinian flaky pastry with dulce de leche and whipped cream) and Tiramisu. Both were brilliant, better than many desserts I've had at 4-star restaurants (not just Oly 4-star, I'm talkin foodie 4-star). The beer selection more than covers the basics, from blonde to IPA and even Scotch ale. There's a good mix of at least a dozen bottles and drafts. The wine list is similar. They've got a few dozen bottles, and maybe eight or so glasses to choose from. Spain, Italy, France, Argenina, Portugal, Chile, CA, WA. ATMOSPHERE. Possibly one of my favorite vibes in Olympia, and probably why I loved the food so much. I've been to a few of the upscale places that attempt a more posh/night-out vibe, and they lacked the authenticity of La Gitana. This reminded me of one of the best rated restaurants in Santa Barbara, Opal, where you've got a view of the preparation and there's a very community open-floor type vibe. It can get louder than a dark and cozy 5-star place, but certainly not annoying. The lighting's nice, dim enough for my sensitive eyes, but not dark. No booths here. Romantic in a lively sense. We were smiling the whole time. The deco's got a good blend of masculine and feminine. Red brick on one side, red and black walls on the others, with some nice paintings (flamenco dancer, I think), check the photos. Definitely the best at dinner time. SERVICE. The owners were both there when I went last on a Friday, and they do an excellent job at making people feel warm and welcome. One was working the floor and helping with orders, and another was managing the oven. Our waitress was on it as well. Lots of genuine eye contact and smiles here, what you'd find in the more romantic countries (where people are less insecure). Our pizza happened to take twice as long as everyone else's, I'm guessing the order got misplaced, and we were comped both desserts without even asking. PRICE. Around $20/pizza, perfect for splitting between two average people. We got the Emiliana (mozarella, prosciuto, arulula, parmessan shavings) and I'd definitely recommend it. Couple glasses of wine at $7 each, and a couple desserts at $7 each. Better value than places like Waterstreet or Dockside, in my opinion. I disagree with that 2-star review below. Olympia NEEDS this place and others like it. We need more heart in our cooking, more master chefs. No wonder just about every table was seated, and they've only been open here for 4 months. My favorite place in Oly, so far.

If you're looking for generic American pizza, this is NOT the place for you! They make the most authentic Italian wood fired pizza we've found anywhere in the U.S. and it is AMAZING!!! We go here once a month, if we can stay away. Great find!!

One of the owners, Carlos, came to every table to make sure all was well. I brought my wife and daughter for a dinner. My wife isn't a fan of red sauce and they switched it up for us. We ordered the arugala & prosciutto ham pizza with a garlic olive oil rub on the dough. It was delicious. The pizza with blue cheese, mushrooms, and prosciutto was one off the beast i've had. My daughter ordered a salad and I was leary about the olives with pit in, but they were some of the best olives I've eaten. Great wine selection too. Fish Tale beer and others. I would say this place is one of the top restaurants in Oly. Service was excellent, owner was professional, and the atmosphere was very nice. I am now a huge fan. They have only been open for about two weeks and I am glad they are here. Don't miss an opportunity to check this place out. They have the best Tarimisu I have ever had, and I am not a fan of it. Authentic Italian pizzeria, you can't miss. Go check it out.

Thought I'd be one of the first to review this place but obviously, it has been discovered. I lived in Naples, Italy for 5 years, the pizza there is the best in the world, hell, that is where it started. This place is pretty close to the original, more like the pizza you'd get in Rome. Strange to walk in a door in downtown Olympia and eat something so truly Italian. Give it a try, I think you'll be surprised. I hope to have a small reception there on Dec 17 if all goes well, after my daughter does a seminar at The Timberland Library just two blocks away. so come to the talk and then walk to La Gitana for pizza.

We have come to eat here a few times now and I just absolutely love it. I am talking about food. I know that cleanliness and ambiance is important and this place has both, but to me the food is what should draw people. And they do have very good food. When my gluten free sister's family visited last week, I knew where to take them. We ordered margherita pizza for kids and pizza with prosciutto, arugula and truffle oil for ourselves. We split a bottle of malbec among the adults, and kids got tiramisu (for non-gluten free) and ice cream (for gluten free). Everything was very delicious, with such a variety of flavors! We actually came in 15 minutes before closing time, and I could tell that the waitress was not really happy (nothing too annoying though, I totaly could understand her, as I hate projects being sent to me at work when it's 4.45 pm:)), however, she quickly gained her composure and was very chatty and made us feel welcome. I am looking forward to many more visits to this place.

We still only got a bottle of wine but the staff was very nice and chatty, which we appreciate. However they never came back to fill our glasses for us, which usually happens when you buy a bottle of wine at a restaurant, but that wasnt a big deal. They also didnt check to see if we ever decided to order food later in our visit. Oh well, I'd go back for a second visit!

I LOVE this place! The pizza is killer, the wine is also great (and reasonably priced). The service has always been super friendly and they are really nice when we make changes to the pizzas. I always get the vegetariana, add argula - it's SO good! I do wish the pizza was just a little less expensive, but I am willing to pay more for really good fresh high quality produce/ingredients.

FOOD. Italian-style pizza, a fusion of Argentinian and Italian desserts, and a unique mix of wine and beer. Simple, doing what they do best, I dig it. If you're looking for New York or 'old school' style pizza pies, this isn't your place, and you should know as much by the time you enter the door and look around. Italian pizza is VERY different than what we're used to in the States. Some people love it, some don't. Personally, I like to mix it up. If you're only into the filling thick-crust dense-topping choose-your-toppings-one-by-one pies, you're not going to have a palette for good Italian pizza. Being a foodie and having eaten a handful of pizzas on the streets of Italy, I know good Italian pizza, and this is as good as you'll find in Oly. As far as desserts go, they're AMAZING! We had the Miljohas (Argentinian flaky pastry with dulce de leche and whipped cream) and Tiramisu. Both were brilliant, better than many desserts I've had at 4-star restaurants (not just Oly 4-star, I'm talkin foodie 4-star). The beer selection more than covers the basics, from blonde to IPA and even Scotch ale. There's a good mix of at least a dozen bottles and drafts. The wine list is similar. They've got a few dozen bottles, and maybe eight or so glasses to choose from. Spain, Italy, France, Argenina, Portugal, Chile, CA, WA. ATMOSPHERE. Possibly one of my favorite vibes in Olympia, and probably why I loved the food so much. I've been to a few of the upscale places that attempt a more posh/night-out vibe, and they lacked the authenticity of La Gitana. This reminded me of one of the best rated restaurants in Santa Barbara, Opal, where you've got a view of the preparation and there's a very community open-floor type vibe. It can get louder than a dark and cozy 5-star place, but certainly not annoying. The lighting's nice, dim enough for my sensitive eyes, but not dark. No booths here. Romantic in a lively sense. We were smiling the whole time. The deco's got a good blend of masculine and feminine. Red brick on one side, red and black walls on the others, with some nice paintings (flamenco dancer, I think), check the photos. Definitely the best at dinner time. SERVICE. The owners were both there when I went last on a Friday, and they do an excellent job at making people feel warm and welcome. One was working the floor and helping with orders, and another was managing the oven. Our waitress was on it as well. Lots of genuine eye contact and smiles here, what you'd find in the more romantic countries (where people are less insecure). Our pizza happened to take twice as long as everyone else's, I'm guessing the order got misplaced, and we were comped both desserts without even asking. PRICE. Around $20/pizza, perfect for splitting between two average people. We got the Emiliana (mozarella, prosciuto, arulula, parmessan shavings) and I'd definitely recommend it. Couple glasses of wine at $7 each, and a couple desserts at $7 each. Better value than places like Waterstreet or Dockside, in my opinion. I disagree with that 2-star review below. Olympia NEEDS this place and others like it. We need more heart in our cooking, more master chefs. No wonder just about every table was seated, and they've only been open here for 4 months. My favorite place in Oly, so far.

If you're looking for generic American pizza, this is NOT the place for you! They make the most authentic Italian wood fired pizza we've found anywhere in the U.S. and it is AMAZING!!! Their ingredients are fresh and locally provided. The service is great, the atmosphere is nice, right in the heart of Olympia. And their desserts are delicious! We go here once a month, if we can stay away. Great find!!

It is about time a place like this opened in Oly. This place is off the hook. The pizza is delish. The atmosphere is comforting, yet professional. The service was one of the best I've had inOly. One of the owners, Carlos, came to every table to make sure all was well. I brought my wife and daughter for a dinner. My wife isn't a fan of red sauce and they switched it up for us. We ordered the arugala & prosciutto ham pizza with a garlic olive oil rub on the dough. It was delicious. The pizza with blue cheese, mushrooms, and prosciutto was one off the beast i've had. My daughter ordered a salad and I was leary about the olives with pit in, but they were some of the best olives I've eaten. Great wine selection too. Fish Tale beer and others. I would say this place is one of the top restaurants in Oly. Service was excellent, owner was professional, and the atmosphere was very nice. I am now a huge fan. They have only been open for about two weeks and I am glad they are here. Don't miss an opportunity to check this place out. They have the best Tarimisu I have ever had, and I am not a fan of it. Authentic Italian pizzeria, you can't miss. Go check it out.

Amazing pizza. Thin flaky crust in a brick oven. Farmers market fresh toppings that you will not find at most pizza places including truffle oil and REAL BUFFALO mozzarella. Very stylish for the area and live music weekly. Owner Alex is a lot of fun and is likely to remember you after only 1 visit. Definitely check it out.

I found this place on opentable and since it was within walking distance from my hotel and one of the few restaurants open I gave it a try. Immediately upon entering I was greeted warmly by the staff and asked to take a seat. The menu is basic but the options were plentiful, combinations endless, and prices solid. I decided to go with the Emiliana and was pleasantly surprised at how it resembled many of the pizzas I had eaten in Italy. The restaurant prides itself in using the freshest locally grown ingredients, imported flour from Italy with no hormones or antibiotics so that alone set the bar high. The flavor was very rich and full and you could easily taste the quality. The pizza tasted like those I had eaten in Italy so I was not disappointed. Very delicious! I liked it so much I returned with a friend the following night. Waiter provided excellent service and was very nice! 5 stars for food, service, and atmosphere :)

We are visiting Olympia and Yelped this small "hole in the wall" traditional Napilitano pizza restaurant. All food is excellent and natural. The food here is just as good as I had in Italy. Very pleasant atmosphere. Very clean. Excellent service and servant like hearts of the waitress Traditional stone oven. Excellent selection of food and beers. The prices were extraordinarily reasonable for the quality of food and excellent taste. I would not hesitate to come back here and recommend this restaurant to all natives and visitors.

La Gitana is one of my favorite places to go for lunch in Olympia. The lunch special is a mixed green salad with wonderful balsamic dressing and a 9 inch pizza. I am partial to either the mushroom and onion pizza or the Tropicana pizza. The service can sometimes be slow but other than that the ambience is nice and the food is excellent.i'm always partial to pizza places with Woodstone ovens made near Bellingham.

I've noticed a phenomenon about a lot of the 'fancy' establishments in Olympia WA. The verbiage describing items on the menu cause you to assume the place demonstrates quality. Unfortunately just because you use arugula doesn't mean you're getting something special. The ambiance would lead you to think that you're in an upscale establishment, but you're not. La Gitana is one of many restaurants in Olympia that have caused me to coin the term 'pseudo fine dining'. Its fake. Its sad. Its scary.

Needed a bite to eat after a long day of traveling. This was conveniently located to my hotel and looked inviting for a single person to eat. First, slices were not available. Second, small pies are not available...one size (14") only. Hmm. Okay. I'm hungry, so I'll go for it. Liked the thin crust, but not brilliant. Toppings on the sparse side. Wanted pesto as a sauce, but was only offered basil as a topping. Asked for Parmesan to sprinkle on top and was advised it was "a side". Declined as I couldn't possibly eat that much parm. For the price, only adequate - and I live in the most expensive city in the U.S., so I know this was over priced and really only okay. Service pleasant and timely. Overall, a bit pretentious for the product delivered.

I bought a Groupon for this place, big mistake! This was the worst and most overpriced pizza I've ever had. Maybe my mistake was getting pepperoni pizza (I had to pick something my kids would eat also) I honestly would have saved A LOT of money and it would have tasted better if I would have made my own pita pizza at home (the crust was exactly like a big pita, not thin home made pizza dough.) Maybe it was an off day but, I'm not sure but it was so bad that we threw away the rest of our leftover pizza. It was so bland!!! It cost almost $30 after my $20 Groupon for 2 adults and 2 children. I still have one left. Maybe I should go back and order something under $20 but I honestly would rather not waste my time even if the food is already paid for.

When I first saw the pizza it looked great. But the taste - something missing. Garlic! that was it - it needed garlic. I went during a "special" and asked for garlic and they would/could not put garlic on the pizza! First of all it should be in the pizza already.... to make a long story short... I never went back because real pizza needs garlic!

Update - The spousal unit (SU) and I were enjoying a sunny Sunday walk around the Crapital and swamp, I mean lake, when we decided to stop here for linner (lunch / dinner). I am pleased to report that the flavor of their pizza sauce etc has improved since my Dec 2011 review. The SU had been here previously during a GNO (girl's night out) and also found the flavors then bland. No longer so. Very tasty, indeed. On that basis, I've added a star to my previous review.

When we were in Italy this fall, we had authentic Italian thin-crust pizza in Rome. The pizza we had at Pizzeria La Gitana was very similar. Probably the best thin crust pizza in Thurston County if not all of Puget Sound. The service was excellent as well - on a very busy Friday night.

I'm giving this a 2 because there were more bad things, but very few good things. I came here on a double date with my boyfriend and his parents because I have Celiac Disease and my boyfriends mother has a thyroid problem which causes her to not be able to eat gluten. The only reason we came here is because there was a misunderstanding that I didn't like Vicks Pizza, when really I said I didn't like Apollos. So next time we'll be going to Vicks! Anyway, beside the point. My boyfriend and I got there first before the parents. They didn't even acknowledge us, didn't even look at us or anything. We tried asking if we had to seat ourselves, but we weren't even acknowledged for that. So we sit down and wait. They still pay no attention to us until about a good 15 minutes. A blonde waitress came by, didn't even look at us, didn't even greet us, and just tossed menus in front of us and walked away without saying a word or asking us if we wanted anything to drink. Pretty rude, a smile would of been nice but apparently that's asking for too much. Finally, a waitress named Abby came by and helped us, she was honestly the only good thing about this place since she smiled and was polite and got us what we needed. By the time the pizza came by, which is extremely expensive compared to dominos even, I ordered a gluten free sausage pizza, the crust was black and burnt and the toppings were lame, lame as in they hardly put any toppings on the crust for being $13. The pizza didn't taste all that great and the burnt crust definitely made it harder to eat. I could still eat it with no problem but it's just not something I'd ever come back and order. We ended up not getting any straws for our drinks and had to go up to the counter and ask for which was difficult since no one even bothered looking at me or asking if I needed anything until I raised my voice a few times to get their attention. Overall my experience wasn't that satisfying at all. But I do want to compliment Abby for being better than all the other staff members. I don't plan on coming back here unless someone else is paying and really wants to... I uploaded some pictures of the burnt crust and the very little toppings they give you just to prove my point.

Asked about their marinara sauce. Beef/lard free. Found the mushroom pizza delish! Loved the thin crust. Like really loved it. Reminded me of gourmet pizza I had from NY or Boston. Restaurant has an open design with wood floors and a bare brick wall. If you are traveling with a gluten-free companion, then you can both eat well here. The adobe-looking pizza oven is visible from the seating area.

Without exception every time I have had the pleasure of eating here I have been pleased with both the food and with the service. As all cooks know, it's difficult to have a perfect meal come about 100% of the time and having read some other reviews here, I'm sure there have been a few odd days where something wasn't exceptional at Pizzeria La Gitana. Don't let those reviews stop you. However, if you want to experience real "home-style" cooking and one of the best made pizzas ever and are not upset with a little authentic fire-kissed bread now and then, try this place; it's worth it. If you are on a budget, the bill might make your eyebrows lift a bit, but when you want taste and quality sometimes you have to dig into your pockets a little deeper. Let's face it, sometime those "cardboard pizzas" cost more by their lack of taste and few ingredients. Save La Gitana for a time when you want to spoil yourself and want something different. When you compare the fast-food places with this restaurant, you will find La Gitana is worth a second and a third visit!

If you are a fan of thin crust pizza....this is your place. We found it on the day of the toy Run. My daughter and two grandchildren. One of the owners was our server, he helped my 7 year old grand daughter decide on lemonade when she couldn't decide on a beverage, Made chocolate milk for my 4 year grandson and my coffee....was awesome. We ordered a custom pizza with a wedge of plain cheese for my grandson. It was delicious. If you are looking for pizza you would find at a large chain you will not find it here. This place is for those of us who like a thin crust pizza that comes out of a wood oven crispy with just the right amount of sauce as to not overpower the flavor of the toppings. The owner was charming and very kind to our little group. My 7 year old Grand Daughter was thoroughly enchanted. The atmosphere, flavor and service were all top notch. We will definitely be back, finally found the pizza place we have been looking for.

Okay I eat here so often it's really time I give them a review and the credit they are due. This IS my favorite lunch spot in DT Oly. The pizza is fantastic, the service is friendly and prompt and the place is just cool - with their exposed brick, high ceilings and local artwork. Their pizza is legit wood fired hot deliciousness. There are several wood fired pizza places in the area that essentially just make a traditional gut bomb pizza in a wood oven. While I suppose they are technically 'wood fired' to my mind that label implies more than just a cooking method, but also a style of pizza tradition - i.e. thin delicate crust, quality ingredients use to heighten thoughtful flavor and texture combinations not just overpower the taste buds with fat and salt. (Not that there isn't a time and place for that, mind you. But when I am expected to return to work after AND function the rest of the afternoon, I prefer the likes of La Gitana.) They have a very reasonable lunch special - a personal pizza and salad for about $10. My favorite, Arugula and prosciutto is $5 extra - but worth it. I have been for dinner as well and they have some great live music on the weekends - I'd say a gypsy jazz flamenco-ish style that suits the ambience well, and rather important in my book, does not interfere with the enjoyment of your meal. So definitely check this place out. It's a great lunch or dinner spot in the heart of downtown.

I am French with italian roots (I have lived in Italy for a few months and travelled there often) and definitly this pizzeria meets great standards. Things are definitly "made with love" here. Yes, it is more expensive however the quality justifies the difference of price : For instance, flour does taste really different in Europe than in the US, (just ask any expat), so it is worth importing it if you want to run a genuine Italian pizzeria... The only minor criticism is that the Tiramisu lacked of the bitterness of an upper layer of cocoa, which is how it should be done in the state-of-the art (for the curious minds, this desert comes from the North of Italy, around Turin, in local dialect "tirami su" litterally means "bring me up / comfort me", their ultimate comfort food speciality !) At last, what I liked the most in this place was the atmosphere : We went on a fourth of July and there was a good jazz band playing there, some local artists promoted on the walls of the restaurant (even if not my taste) : you could feel this place has a general aim to bring a certain art-de-vivre in town, and they certainly deserve to be supported for that too!

Thought I'd be one of the first to review this place but obviously, it has been discovered. I lived in Naples, Italy for 5 years, the pizza there is the best in the world, hell, that is where it started. This place is pretty close to the original, more like the pizza you'd get in Rome. Strange to walk in a door in downtown Olympia and eat something so truly Italian. Give it a try, I think you'll be surprised. I hope to have a small reception there on Dec 17 if all goes well, after my daughter does a seminar at The Timberland Library just two blocks away. so come to the talk and then walk to La Gitana for pizza.

We have come to eat here a few times now and I just absolutely love it. I am talking about food. I know that cleanliness and ambiance is important and this place has both, but to me the food is what should draw people. And they do have very good food. When my gluten free sister's family visited last week, I knew where to take them. We ordered margherita pizza for kids and pizza with prosciutto, arugula and truffle oil for ourselves. We split a bottle of malbec among the adults, and kids got tiramisu (for non-gluten free) and ice cream (for gluten free). Everything was very delicious, with such a variety of flavors! We actually came in 15 minutes before closing time, and I could tell that the waitress was not really happy (nothing too annoying though, I totaly could understand her, as I hate projects being sent to me at work when it's 4.45 pm:)), however, she quickly gained her composure and was very chatty and made us feel welcome. I am looking forward to many more visits to this place.
