This little gem is in Hinesburg. Maybe out of the way for some but definitely worth the ride. Absolutely one of the best sandwich shops in the state!! Fresh ingredients, great bread !! Especially the Cool Cuban, Tomato Motz ( the pesto aoli and fresh mozzarella are amazing) and the Larry Byrd ....simply fantastic. Make sure you order the sweet potato fries and the homemade onion rings. Crisp, fresh and delicious. I would have given a fifth star however I took one off for being CASH ONLY. Which in this day and age is inconvenient. However this place is SO worth the trip to the ATM.

Without a doubt the absolute best sandwiches on the planet are here. Wonderful breads and buns. Fresh, fresh ingredients. This is food perfection. And the owner and staff are aces. There aren't enough superlatives to do the Paisley Hippo justice.

This place is amazing!!! I moved to Hinesburg from NJ about a year ago and haven't had a real sandwich since. Tonight I ordered The Italian with a side of sweet potato fries and I was in heaven!! Can't wait to go back!!!

If this shop was in burlington they would have a line out the door! John is great and so is every single one of his employees. You aren't just another number there. It's first name basis ! Not to mention the sandwiches!! Every hoagie I have EVER had there is so fresh! I constantly make the trip from burlington just to indulge in the sandwiches and home made blue cheese. Thanks guys!!!

Sandwiches are good. I had The Vermonter and my friend had The Beast. We both ate them all. There's a really awesome juice and soda selection in the case too. Staff is friendly and chatty. Also, since someone mentioned otherwise, I checked out the bathroom. It's good! It's clean and kind of cute its in dire need of a little repair and a bit of update (read: that shelf is terrible), but it was very clean and it's spacious too.

So Yummy and so fresh! I love their version of a vermonter, thick fresh bread, tasty mustard, cheddar cheese, apples, arugula etc. They also have amazing sweet potato fries. Awesome place for a great sandwich.

Great subs. Love the cheesesteak. Kids think the chicken tenders and fries are outstanding. Not the cheapest place for a sub, but everything is high quality and the service is fast and friendly. A few tables to sit down and eat but mostly this is a takeout operation.

This is a great place when they are open. Long before the Bristol Bakery took over Hinesburg, there was the hippo. Before that there was Arthur's Deli but that's gone. I get the hippo at this sandwich shop. I've had lots of great food here but the sandwiches are the best. I'd like to see a better option of bread. Everything is white except the wraps. If you have a big appetite go for a burger which is huge and filling. But there is something about the fresh deli sliced meats and fresh veggie in a sandwich. I'm missing this place for the past few weeks. I hope that the mediocre and over priced bakery across the street hasn't taken over. The hippo is the real deal with a friendly and helpful staff along with some Dead tunes on the hi-Fi.

This popular sandwich shop is owned and operated by the same couple that ran the highly successful Storm Cafe in Middlebury. We ordered 6 hoagies to go for a house party: 1) Smokin' Turkey Club, 2) Ruben, 3) The Cool Cuban, 4) The Vege Head, 5) The Hippo, & 6) The Tomato-Motz. I sampled them all and thought they were all excellent. My favorites were then Reuben & the Tomato-Motz. Ambiance/Decor - 3 stars Service - 4 stars Food - 4 stars

Great sandwich shop! Can't go wrong, steak and cheese, bambino, buffalo gal... Never had a bad sandwich here... Try the sweet potato fries with dipping sauce.

the paisley hippo sandwich shop totally rocked my taste buds with the signature hippo burger. the sandwich shop had a relaxed atmosphere and friendly staff with classic rock playing in the back ground and a mural of a giant hippo on the back wall dressed in a paisley shirt and looking down as if to cheer you on. i had a great experience that i will tell all my friends about.

The roast beef sub was perfect for lunch at the top of Camels Hump. Big enough for two of us after the decently long hike :) The grilled pastrami sandwich with cabbage slaw and guinness aioli was perfect on a rainy day. I'll pass on the tomato bisque soup next time tho.
