I left the Hilton's beautiful views and walked up the street because of the raving reviews for Bleu Northeast Seafood. And looking out over Lake Champlain, I was ready for some fish. Was disappointed when I ended up in the Marriott's restaurant next door. Oh no! I too have a hotel restaurant snob crawling in my sub-conscious, even though I've eaten at some pretty fabulous hotel restaurants. Then after reading the menu, I hit a new low - where was the awesome Lobster Pot Pie??! But my server was gracious and quick. Soft-spoken Evelina told me the menu was changed a couple weeks ago for more of a summertime theme. What to do? What to do? Should I stay or should I go? Evelina had already brought my unsweet Arnold Palmer out. I read through the reviews again and thought...."Why not?" I still had three more nights in Burlington. And I immediately relaxed and started enjoying the relaxed atmosphere and smooth, cool Jazz twining its sultry tunes through my travel-weary mind. First up - crusty bread & butter. This was yummy and chewy. Appears to be baked in-house. I don't know the difference in butters unless they are flavored, it tasted like butter to me. Next came the Fried Whole Belly Clam. Do Clams have Bellys? Aren't they a mullosc? Anyway, they are super delicious. Not like the hard chewy clams we tend to get at the NC/SC Coast with our Calabash style fried everything. These were nice and plump (fat clams) and came in a tower of golden brown fried goodness mixed with pickled red onion, apple cider vinaigrette, capers & celery. Washington salads seem to be a theme for us this summer, so my main course was the Bleu & Greens Salad. Knowingly melancholia over the missed Lobster Pot Pie, the astute Evelina suggested salmon on my salad. Genius! This salad is mixed baby greens, VT Blue cheese (VT COWS!), candied bacon (VT PIGS?), local apples (don't need to say it), buttermilk herbed dressing and a large piece of salmon. Salmon first - mmmmmmm. mmmmmmm. Crunch crunch mmmmmm mmmmmmm sorry, typing with my mouth full. It's juicy, full of flavor. The top and skin have a nice crunch. I've never eaten fish skin because it's....fish skin. Best gosh this is good - crunchy like a spiced potato chip. Okay, I get it now. Oh yeah, there's a salad here! The taste is deep, and rich. Someone compared it to the chowder and now I see (taste) what they are talking about. Everything is chopped just so you get a piece of it in each forkful, so it's bam, boom , taste! I wanted to eat it all, but there is dessert - oh, there is dessert.... Creme Brûlée Cheesecake?!?! With toasted hazelnuts and fresh fruit compote. This review is getting too long, you'll have to wait & see! Food - 5 stars. Service - 10 stars Atmosphere - 5 stars My apologies to the chef & staff for my unrealized prejudice against "hotel restaurants". You have proven your point!

Totally awesome. Best restaurant I've ever eaten at in a hotel, hands down. Scallops were amazing. Muscles were delicious. Service was superb. I'll be eating here more on this trip to Burlington. Skyler, the GM, was super cool, really welcoming and accommodating and gave me other food recommendations to boot! If you're in Burlington, whether you're staying at the Marriott or not, get you some Bleu!

Great wine selection, must try the seafood chowder and the mushroom pasta dish! The atmosphere is excellent for dinner as well. Great bar area to relax in and wind down after dinner. One of the best in town in our opinion!

This is a very classy, sophisticated dinning environment. Clams as a starter was very good. The scallops and red fish were delicious. wait staff was kind and service was actually fast.

I really just couldn't get over the fact that this is in a Courtyard Marriott.... I never thought I was a snob for ambience, but even stepping into the Courtyard with its awful 1990s carpet really tainted this whole experience for me from the start. The decor was quite nice inside the actual restaurant itself, although it did still have a bit of a hotel feel. Maybe it's where we were seated, but we had a view right into the hotel bar where they were playing a soccer match on TV, and honestly it just kills the experience for me when you're spending $30+ on an entree when people are several feet away from you having a boozy happy hour with their coworkers while watching the game. Not to mention having to walk through part of the hotel (again, totally different, neutral/Courtyard Marriott decor) to use the restroom, where a high school reunion was in full swing!! That was all too bad, because the food was actually pretty good. The seafood chowder was a big stand out, as was the grilled squid. The scallops were great, but my husband did not like his fish (he said it tasted like soggy fish n chips) and the sides were nothing to write home about. The service was fine, but honestly the waitstaff seemed a little embarrassed to be there. Overall, this was just a weird dining experience to me, completely overshadowed by the fact that it was in a Courtyard Marriott.

Way better than hen in the woods for the same gauge my eyes out price point. Grilled squid is phenomenal! The spicy red peppers and tart blood oranges were the perfect complement. $12 Red fish pan seared and plates on beet risotto and spinach. Spinach was way over cooked in my opinion. Risotto was delicious but nothing special-unique. Could have used more broth and butter. Fish was delicious but again nothing super impressive. Pineapple upside down cake was sooooo good and I am not usually a cake person. I really enjoyed the coconut ice cream. I definitely liked that it wasn't a huge slab but that is something to consider for price/value for $10. Waitresses were all absurdly pretty. Clientele was rich old white folk happily discussing how they exploit their workers, and beautiful young women talking cheating, love, and the men( devotees) in their lives. So....

The ambiance is nice with a sophisticated flare. I was told it was the best seafood in the area however it is not at the same level of equivalent establishments in neighboring states like Maine, New Hampshire or Massachusetts. The breakfast has limited options and is expensive. An egg or omelette breakfast will run around $20 with tip. At breakfast asking for coffee or water refills is not unusual. There are other breakfast and dinner locations in walking distance that offer variety at reasonable prices. Bleu is nice for a drink and a sandwich or salad after a long trip. If I was not at the hotel I probably would not have eaten at Bleu.

A truly outstanding restaurant. The attentive service, fresh food, wonderful wine and stylish decor made for a wonderful evening. I can't wait to come back. This is probably one of the nicest restaurants in Burlington.

I first visited Bleu more than a year ago (?) and had an ok experience, but I wasn't blown away. At that time I left it a 3-star review, which I deleted just now because I don't feel that the current restaurant is well represented by it. I went to Bleu last night with two girlfriends and had a really lovely experience. I think a few things have changed since my previous review. 1. the restaurant has hit its stride and settled on dishes and a flow that really work for it. 2. Skylar, a previous employee of Trattoria Delia (one of the two best Italian restaurant in the area) is now managing Bleu and I think his attention to detail, knowledge of what works and his ease with customers has really taken the restaurant a long way. I don't know him well, but I chatted with him a few times at Sotto Enoteca and Trat (sister restaurants) when he worked there, and it's obvious that he's very knowledgable and has good insight about what makes a good restaurant great. That know-how certainly showed through last night in our dinner experience. My friends and I had the Bleu Salad, whole-belly clams (YUM), lobster roll and lobster pot pie. All were extremely good. We all tore into the crust of my pot pie which was a bit of a puff pastry and very good. I did not have the bread to start, but my girlfriends ate two servings of it with the butter, so I'm assuming that was also very tasty ;) One commented that she wished the butter were cultured (I'm always a fan of cultured butter) and I suggested that Bleu should do something none of the restaurants in the area do - serve goat better. It's amazing and really brings out the taste of the bread. Aside from our butter debate, everyone was very happy with their meals. We also finished off the evening by sharing a Pot-de-creme and the Creme Brûlée Cheesecake. Both were more nouveau-style than hearty desserts, regardless, we enjoyed them very much! Something to keep in mind: Sunday-Thursday from 5pm-6pm the bar serves $10 lobster rolls. I will definitely return for that. I'm so happy I revisited and the restaurant has hit its stride. Please don't get rid of the clams! So delicious and it's really hard to get good clams anywhere now a days - such a nice surprise. This is by far the best seafood restaurant in the area, so if you're in the mood, this is the place to come!

Well that was terrific. Restaurant-Week dinner #2 and it was outstanding. First, this is a gorgeous room. Beautiful, sophisticated color palate. Second, our server, Ali, was a champ. She made a smart recommendation for wine--a very reasonably priced petit Chablis ($37). We got a bottle and it paired well with everything. My starter was the afore-mentioned chowder. Subtle, layered, satiating. Joe got the fried whole-belly claims. Not really my thing but I ate one and they were excellent. Main plates, we both opted for the pan-roasted redfish. It was stacked on a glorious beet risotto and perfectly cooked spinach (which is harder than it sounds). Full, yes, but we soldiered on. The pineapple upside-down cake was calling our names. I normally like this down-home favorite by the book--nothing high brow about it. This was refined, and the cake was not as gooey as it sometimes can be. But it was paired with a coconut sorbet and it all worked together gorgeously. I had it a most satisfying glass of Sauternes, a bargain at $9. As was the case with EB Strong, by the time you tip on what the check would have been, it came in at over $200 for two. But worth it, for an outstanding experience. Kudos all around.

Made reservation for a busy summer Friday night at 7:45. We ordered three entrees: Open face 1 1/4lb Maine lobster, fennel, squid ink pasta, lemon mascarpone. Wild Mushroom Pappardelle - handmade egg noodles, fresh peas, VT pecorino, green garlic, black truffle. Grilled wild salmon with saffron rice & asparagus. Perfection. Service was nicely paced, far from slow, and it gave us a chance to enjoy a terrific 2012 Domaine du Pre Semele Sancerre Blanc. Clean, crisp, perfect with seafood sauces and handcrafted fine food. Delicate bright, juicy and light quality minerality. The complimentary olives were the best I've ever had. The three of us savored each other's courses and we were satisfied beyond our expectations! We were so happy that we decided to walk off our dinners for coffee on Church Street. With wine, approx $55 per person. Bleu is bright and unashamed with ambience to enjoy your dining partners as well as take in the carefully constructed signature dishes. A couple previous reviews seemed lackluster, however I don't see anyone reviewing the main entree's giving less than 5 star reviews. Bravo Bleu; you nailed it.

Excellent seafood, with attractive (but not overdone) presentation. The salads and desserts were equal to the entrees. Attentive service (Thanks, Evelina!). Strong recommendation for anyone seeking good seafood -- and sustainable and accompanied by locally sourced produce as well' I'd like to see a few more menu options -- but on the other hand, I would much rather Bleu's limited but well done approach compared to a three page menu that fails to deliver. Bleu overlooks the lake, but has the slight distraction of being adjacent to the hotel bar.

Delicious, I've been three times now and have been WOW-ed each time. The fish is fresh, decor is lovely and service is warm and attentive. Start of with a delicious seasonal cocktail, I enjoyed the lavender lemonade. For starters the blue and greens salad is delicious as is the rich chowder. For entree you really can't go wrong, I've had the open face lobster ravioli, pan roasted redfish, Perch and pappardelle adding the flounder. All are absolutely delicious! Desert, Andrew's Opera Cake and the Chocolate Pot de Creme, both are sweet without being too sweet and the perfect way to end a delicious meal. I'm so happy to finally have good seafood in Burlington! I'm looking forward to coming in for breakfast soon.

We came here last night and it was absolutely exquisite. Every dish was excellent, beautifully presented, and delicious. The swordfish was especially well prepared. The general manager, Skyler, went out of his way to make a special birthday celebration even more special. A lovely experience and I can truly say the BEST RESTAURANT IN BURLINGTON!

I was excited to try this place, and it didn't disappoint. First, I read the reviews, and the one that stood out was Heidi's from last June. She complained about a fishy smell, and that concerned me. For the record, there was no fishy smell. None whatsoever. We went into the hotel - which, by the way, is sometimes a little weird, but Bleu is nicely situated and didn't feel like a "hotel restaurant" - and all we could smell was delicious seafood. The decor was nice - it had a nautical feel, without the cheesiness. The main thing giving that nautical vibe was really just the color. There are no anchors, fish nets, or rain-slicker clad fishermen. The bar looks nice, though we sat at a four-top. The seats were comfy and the wood slab of a table was really nice. For starters, we had the mussels and fish chowder. Both were delicious, not fishy, just classic flavors, and fresh seafood. My son had scallops with lentils - unique, and delicious. My wife had a swordfish special, she was blown away. I had the pappardelle pasta with a piece of founder on top. This dish was stellar. it was unique, fresh, and just delicious. Nice work. We split a pumpkin cheesecake, which was awesome. The kids each had raspberry sorbet, which could have been the best sorbet I've ever tasted. We will go back the next time we are looking for a very nice place to eat, with fresh seafood and a fun atmosphere. The staff was good (except for the usual, "I'm _______, and I'll be taking care of you," which could be one of the more annoying phrases in the restaurant world). Overall, I highly recommend Bleu. One thing to note: I found it amusing that the website states it's located in "Burlington's Little Italy." I have heard that the Old North End, a few blocks to the north, was once a heavily Italian neighborhood. Where Bleu is located ain't no "Little Italy," unless you count Macy's and the downtown mall, Cathedral Square senior living, the state district courthouse, Hen of the Wood restaurant and a few new hotels as, "Little Italy." It's more an edge-of-downtown area where there are a few new, and very good, restaurants. Not Little Italy, not even close.

Stayed at Marriott Courtyard and this was truly the most pleasant surprise of the entire stay. Ordered steak and eggs first morning with little expectations and I am telling you it was the best steak and eggs I've ever had. And I've eaten about 1000 of them. The fried oysters Benedict is absolutely perfect. Nice arugula and crunchy oysters and hollandaise / you can't make it better. Highly recommend this spot for breakfast. I didn't actually try any other meals

First time diner, wait staff superb, first cocktail not so good, salty dog not to salty, had the seafood chowder which was very very good, nice presentation, for entre had the striped bass special, looked very nice, fish was good but strong, I thought it would be lake Champlain stripper but it was Atlantic striper. Overall I'd say it's a 3.5 but yelp only can do a 3 or 4. Overall ambiance was good and quiet.

Great food great service, great bar. I understand that some people had concerns about a hotel restaurant. I really believe that the hotel was trying to turn the corner by creating this establishment. They had an amazing staff that was extremely attentive. The portions were perfect. I had this amazing redfish on risotto that was absolutely amazing. I've thought that the menu was perfectly sized and our waiter was awesome. Because we had a birthday I had called ahead and asked for a birthday dessert. They actually comped the birthday desserts. Our waiter got a great tip for that. Overall, I thought the food was fantastic, the oysters were amazing and it was a great atmosphere. Sometimes there is music in the lobby that will come into the restaurant. Which adds a nice vibe. I would certainly check it out with its nice views of Lake Champlain.

We were a little concerned when we realized that this place was in a hotel. I've never had a great hotel restaurant experience. But this place was really great! Fantastic, professional, first-rate service. The kind of service that urges you out to dinner after a long day and makes you feel well cared for. Dinner was delicious, fresh, well presented and nicely portioned. I wish we'd saved room for dessert. The atmosphere was somewhat formal; not cozy but very nice. We will definitely return.

Let's start by saying that having spent years on the Maine seacoast I don't eat seafood "inland". That being said, my Bleu experience was satisfying. I enjoyed a table overlooking Lake Champlain. My server, Erica, was attentive and personable. I had a view of the sunset, obstructed by the trees. I enjoyed a leisurely meal and just barely caught the tail end of the sunset while walking on the bike path. I started with a Bleu and Greens salad (field greens, chunks of bleu cheese and apples, thick cut bacon pieces). It was tasty, but a bit pricey at $12 for a "starter" size. I followed the salad with the 3 cheese plate from the dessert menu. Yum! Three cheeses, strawberry jam and toasted baguette slices. The sunset margarita had a bit of a bite from the jalapeno infused tequila, so good! A cut above the typical hotel dining experience.

Our server was Sarah. She was terrific. She gave us great food recommendations and made sure we had what we needed. Food was excellent. Had the chowder and lobster salad. Both portions were large. I was pleasantly surprised by the amount of lobster on the salad. We had the lobster ravioli and redfish entrees. Great flavor and nice presentation. Dinner was followed by generous servings of sorbet and Apache chocolate cake. I would not hesitate to dine here again.

My girlfriend and I went out for a ladies night during restaurant week. It was so much fun. The atmosphere was open yet swanky. Our server, Skylar was AMAZING. The mushroom pasta dish was out of this world. It was so flavorful and rich. I loved it. My friend ordered the fish and chips which she seemed equally impressed by. The rose I was drinking was very enjoyable. Glad we tried it out. I am not the biggest seafood fan but I found items which left me very satisfied.

Started with ok oysters on the half shell I've never seen them served over the same ice cubes that is used for drinks. The foie gras pate was nothing spectacular. The Martini was mediocre, glass way to big and warm, olive straight out of a jar. My wife's Glass was chipped and drink recycled to a warm glass. Entree was red fish with brown butter caper sauce over wilted spinach and ramp risotto. Terrible. The way-to-salty-pungent fish pan seared so fast the skin curled onto itself, the filets were very small and uninspired. The wilted baby spinach was good, anything with butter really. The ramp risotto - ugly, green gooey texture doesn't go well with fish... and, ramps are no longer in season. My wife had a warm lobster roll? any shack in Bar Harbor can make it and serves it cold. Save your $.

I went last Friday for a nice dinner out. While the service was good, the food was really overpriced for what you received. I ordered fish and the portion was absurdly small while the side portions (which weren't very good) were huge. Dirty martini was great. Overall, wish I would have spent my money elsewhere and gotten a better quality meal.

We've been to Bleu twice now and have found it to be an excellent restaurant. Bleu is a fine dining experience with professional, friendly staff (Kayla!) and a Chef creating seafood "Works of Art." Sorry Chef, I don't know your name, but you rock! I personally love the scallops on lentils with the cherry wash. The oysters . . . heavenly. Our friends raved about the Halibut special. We will definitely return.
