I was pleasantly surprised by the new Ichiban restaurant in Vernal, Utah. I travel to Vernal/Roosevelt for work and I typically struggle to find a decent meal in the area. I find myself eating at the same few restaurants every time I am here, which is often. The service and staff was very friendly and outgoing. I ordered a couple pieces of sushi, squid salad, and a couple rolls. The food was well presented and delivered in a timely manner. I ordered a local IPA and it was only $3 a bottle! This is a welcome addition to the Vernal dining scene. Apparently, this is part of a series of sushi restaurants based throughout Utah. Their shirts indicated that they were the "best of" City Weekly in Salt Lake City.

I'm kind of a sushi geek and seek out new restaurants as I travel. Ichiban is really an excellent little sushi place, and much better than I expected for Vernal's first restaurant in this category. The fish is fresh and the service is great. The menu is a little pedestrian and includes things like Chinese stir fry. I would find it a little more interesting if they had a wider variety of sushi instead (like nigiri with quail egg, for example). The interior feels like a lightly renovated Denny's, but still not unpleasant. Overall, though, it will keep me coming back.

First impression: nasty dirty carpet Sushi: is not to be taken seriously.. It was a Chinese rendition of the caterpillar roll. It had lettuce in it and a nasty fish smell that also carried over to the taste.. I only ate 1 piece out of the 8 pieces..

I actually liked this place when it first opened but now it's not so good. The smell waking into the doors is enough to make you turn right around. If you're brave enough to stomach that good luck! My husband and I got a bad tummy ache last time we ate there...

There's a lot going on in this review. Even though it's only of a few dishes. Please to enjoy. While most here claim this to be a Japanese sushi house it's more of a pan Asian fusion. That being said, I don't think the local community as a whole has much exposure to the proper Asian facets of which this restaurant is comprised so, for a local spot, it works. I ordered the edamame, combo fried rice and soba. I would write about the edamame but I cancelled it as the other dishes came out long before it was going to. The fried rice looked #nom and was actually quite tasty. Packed with chicken, shrimp, etc. However they could have toned down the oil just a touch. Still tasty though. 'Soba'. They proudly confess to using egg based noodles which bear a striking resemblance to ramen. Not a bad dish - just nowhere near any soba I've ever seen. So, if you're looking for a ramen type dish order the soba. I was also seeking a Japanese spice I like to use a bit - togarashi. Initially they all looked at me with blank stares and pointed to the sriracha sauce. Hey, it was spicy and, in Vernal, I wasn't being picky. I don't know what happened but about three minutes later my togarashi showed up.

Horrible service. Horrible food. Horrible sushi. I ordered a roll I did not care for and they still made me pay for it. They told me they had to cover the cost of the sushi. What crap. So disappointed. I will never come back. Ever. Don't expect a good sushi joint. It sucks. Bad.

Was hesitant at first, I mean "sushi in Vernal". But I was pleasantly surprised! I don't do the raw kind but love hot stuff. The volcano and the Vegas roll are awesome. If you don't like sushi, the regular Asian fare is awesome also!

Probably should have been more wary of getting seafood, let alone raw seafood in the middle of the continental US...sushi was OK, but the seaweed salad definitely tasted off, maybe old?
