Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Ignorance is bliss? I ordered the Burrito Mexicano, which looked like a thick quesadilla - shredded pork, tomatoes, onions, and bell peppers, topped with cheese and guacamole. Am I ignorant to think that its supposed to be a tortilla cylinder with beans and rice? (There is a Burrito California on the menu that's described like the burritos that I know.) Regardless, the pork was delicious - grilled and marinated rather than just doused in sauce. Chips and mild salsa are included. The only non-chain, non-fast-food places in Kimball are two Mexican joints. There were only a few families on a weeknight, and no one happy houring at the bar. Fajitas, burritos, tacos, enchiladas, combos, and the usual are mostly ~$10. The small bar is fully stocked with usual variety of domestic and import cervezas along with singles and you-aint-driving-home-tonight pitchers of margaritas and daiquiris.

Food was below average, but the karaoke made up for it a little. Had the chimichanga. Ask for shredded beef, got ground. Like it crispy after being deep fried, this was soft and more like a burrito. Didn't like sharing my food with the flies either. Came time to pay and stood up at the register for almost five minutes waiting to pay. In that same time a couple came and left because no one came to the front to seat them. Just passing through, but wouldn't go back if I lived near by.

This place sketches me out after one too many awful experiences. The first being that every time I would go I would always get put with a really creepy server. He constantly tried flirting with my friends and I on several different visits. Finally I ended up getting irritated and said something to him after he started asking my friend how old we were and shortly after how I heard him comment how "hot" my friend was when she walked to the bathroom. Apparently he couldn't find a manager even after I asked. So when our food was served I went to take a bite and only after I spotted a huge curly black hair in my queso. I honestly believe this guy put a pube in my food. I almost threw up on the plate. He came over and I just told him I wasn't paying for it. He said "Oh, you don't have to pay for that." No, really. You disgusting pig, you didn't have to tell me that. It's just one of those gut feelings you get about people and I will always believe they tampered with my dish because I didn't enjoy being uncomfortable and hit on while trying to get lunch. I've only been there once since with a group of friends and didn't eat, however, I didn't see him there. I really hope they canned that creep. He was not meant to be around females, let alone be in service.

Very good service and food I worked in Mexico for 10 years so I have a lot of data points I would recommend it and will return myself

No waiting on a Monday, a little after 1pm. Women's bathroom toilet was broken, so that was a downer...let me not get started on the fact that there were no paper towels to dry my hands (sigh) I ordered some pork chops w/rice and beans. The chips were blah and the salsa was too oniony. I like mine w/cilantro and this didn't have much, if any- it was still ok. My pork chop was as thin as jerky, but it was seasoned well. Rice and beans were decent. I've had better mexican food and wouldn't return. It was just not a memorable experience or meal.

Excellent food and service. Their salsa is not overpowered with cilantro as so many are. We ordered Chimichangas, mini chimi sampler and grilled shrimp. All were perfection. When we are on a trip, our policy is to eat local and never at a chain. Even though this was in a strip mall, it was a wonderful find. We'll be back as our travels take us through the area again.
