My wife and I came here for our anniversary dinner and were so disappointed in the service and the atmosphere that we left after one drink (which took our server 25 minutes to bring to our table). The tables are so close together that we felt we were actually part of the neighboring party of four. Add to that the fact that the loudmouth chef came from the kitchen every three minutes to describe to some of the diners how menu items are prepared. I don't know if he is hard of hearing or if he just likes to hear himself talk, but he bellowed so loudly that it interrupted my wife's and my conversation. If that wasn't annoying enough, the manager (at least he appeared to be someone who might have been in charge) kept squeezing between our table and the one next to ours to rearrange other tables. Each time he did so he said, "Sorry, guys." Someone needs to teach him restaurant etiquette. Restaurants with any class do not refer to their patrons as "guys." The coup de gras was the fact that neither the server nor the "manager" acknowledged my complaint about the slow service or the loud-mouthed chef. The server merely placed the check in front of me and offered no apology or regret. Instead she tried to explain that they were understaffed (as if I should be sympathetic. The bottom line with the 1794 House has incompetent management, if it has any management at all. Take my advice and avoid this place at all costs.

Out of the two orders of food (i don't consider the pecan pie one of them) - one was v gd- the blue crab cake. The crab cake was of v good quality- didn't see not taste any fillers- just fresh, sweet, clean tastes of crab meat. The short ribs, on the other hand, while the carrot, celery jus was awesome, as was the grit cake (absolutely yummy!) was super dry. It was really disappointing as the sides were so good. The description on the menu said that the ribs are slow braised. I'm not sure if the braising liquid ran out in the pot or what it was, but it was really so dry. Otherwise the dish would've bee really good. The pecan pie was also a big disappointment- very plain. They could at least have served it warm to us. The cocktail was good :) Service was very friendly & warm. Nothing to be faulted on that. I just wished my ribs were tender & the pie warm & more delicious. If I could give it a 3.5 star I would.

We visited on a Saturday around 4:00 for a few cocktails and ended up getting some small plates. The cocktails were really tasty and there was enough choice on the menu so that everyone found one or two they really wanted to try without repeating. Also: the kasespaetzle and the sweet potato fries were delicious. We didn't have dinner, so we can't really offer much guidance there, but this is a great place to come and have a few delicious cocktails and nibbles.

This place opened recently and my friend heard nothing but good things about it from some people he knew. That being said we followed suit and tried it. Pleased, but not surprised is how I would describe our experience. This restaurant is located in the Comfort Suites in Carlisle. It is a quaint little hole in the corner that, from what I heard, is still under construction in some capacity. They plan to add doors which will fully enclose the dining area apart from the hotel; should look nice when finished. Still, the way the place was at the time of my meal was very nice. A few tables and booths scattered in front of a fireplace makes for a cozy dinner spot. Its hard to describe the menu of this restaurant. Its somewhat small and yet suffices a variety of palettes. The obvious selections, burgers and steaks, comprise about two thirds of the choices while a few additional items filling in the gaps. As its name implies, whiskey plays a big influence on the entrees. A lot of featured items are prepared or flavored with varying whiskeys and other alcohols though nothing we ordered was. From what we tried, the Chicken Pot Pie and Steak Medallions, we were satisfied with our meals. However, I wouldn't fuel the big hype that has been circulating around. This place has a lot of potential and given its location I expect it will thrive as it continues to grow. As a whole, I can't really find any faults with the Rebellion and am curious to see how it develops over the course of its first year.

We're like bad pennies at this place lately, and it's not because there aren't great places to go in Carlisle. We just like the way we've been treated, and enjoy the food and drinks very much! I gotta say I prefer the bar for service and atmosphere, tho. The restaurant is cozy enough with its fireplace, it's just feels......out of place. They did what they could with limited space. Back to what's really important: THE FOOD! We haven't had anything here we didn't enjoy. The Reuben has ONE WHOLE POUND of in house made corned beef on it. I ate a quarter and we cooked the rest the next morning as a corned beef hash. Get this one if you're really hungry, or sharing. And skip the appetizers! Filet medallions were fantastic. Burgers were, too. Shepherd's pie is made with Jameson (everything has some whiskey in it, it seems). The chicken was good, deviled duck eggs are banging, spinach and baby kale salad was also delish (helloooooo pork belly dressing!). You can get a bit of an education on whiskey and bourbon at this place, and try something you might not find elsewhere (who knew they distilled whiskey in Utah??). I'm a fan.

My wife and I have been to Whiskey Rebellion five times since it opened in February. Since we do not plan to return we want to share our thoughts. The restaurant's opening in February was promising, if rocky. We went a few days after it opened, so we were more than prepared to cut them some slack. The food was interesting, if a bit odd, and was locally sourced. That first time we waited about half an hour for our drinks. Nothing complicated, just a draft beer and a glass of wine. The server kept apologizing, saying that the bar was backed up, but she wanted to take our food order. I kept telling her that we wanted our drinks first. Even though this experience was an early one, it was repeated in subsequent visits. The service was neither bad nor good, just kind of dumb. I had hoped that the renovation which took a long time would result in a more elegant space. Instead, the bar was virtually unchanged, with a strange Spanish wrought iron gate at its entrance, presumably to block after hours access to rampaging hotel guests. Also, in the dining room, which was warm if quite cramped, they placed a soda dispensing machine. I have no idea why this was not located in the adjacent breakfast seating area. Hearing the machine dispense ice and soda hardly contributed to the restaurant's atmosphere. As Mark L. noted the chef barged around talking loudly and interrupting dinner for customers. I kept thinking that his time might better be spent in the kitchen and managing the servers. A few months later we invited some friends to Whiskey Rebellion. That time, in addition to the service, the problem was the food. I ordered a steak sandwich. It consisted of a few tiny pieces of beef on a dried out bun. My wife ordered fish. It was good, but did not come with anything. It was just a huge piece of fish swimming in sauce with no accompaniments. Again, the chef almost tried to join our table, clearly annoying our guests. We were embarrassed to have invited them to Whiskey Rebellion. Later in the spring when the weather was getting warmer I reserved at Whiskey Rebellion through OpenTable, hoping to sit outside. We arrived and I requested a table on the patio. The hostess said that they were reserved, so we could not use them. I asked if I could reserve them in the future. No, she said, you cannot reserve them. Okay, which is it? Instead, she offered to seat us at a long table. I asked whether others would be seated there in addition to us. Yes, she said, that would probably happen. So much for an intimate dinner. I just said that we would cancel the reservation and go elsewhere. She smiled vacantly and said that was fine. Again, the service was neither bad nor good, just kind of dumb. Last night we dropped by Whiskey Rebellion after dining at a new restaurant in Carlisle that is mobbed because it is correctly staffed and serves good food in a great atmosphere. We sat in the bar. No server came by, so in a few minutes we left. I noted that the dining room was almost empty. The hostess at the front of the restaurant asked if we enjoyed our visit. I politely said that we were in the bar and no one came by to serve us. I got the trademark vacant glare that I had become used to. Too bad. Whiskey Rebellion had a shaky, but promising start. Their current downward trajectory is unmistakable.

The good: The flavors. Everything is properly seasoned, drinks are delicious, smoke on grilled meats is ever present and makes for good eats. Presentation is also unique in a good way as plates look vintage and are always different. The drink glasses out of old wine bottles is also a nice touch. Bourbon selection is fantastic, as would be expected by the name. Now for the bad... I preface by realizing they have only been open three nights, however, they are still trying too hard. The chef is personable and visits tables, but he should be making sure his plates are correct. My medium rare steak was still cold in the middle. Raw. It was refired, but in 3-5 more minutes there is only so much you can do to fix raw, but at least they got the outside warmer. The timing of the plates was also way off. Mains came out just a few minutes after salads were served - we weren't even done with half of them and then just quit them to dig into the mains. At a diner or even a lower end chain, I almost expect that kind of pushed service; at a $100+ for two, experience based restaurant, I don't. We did hear some complaints about under done meats from two or three other tables too. ...Again, more time in the kitchen, less time at the tables. Also, we were more than chatty and kind with the waiter and chef, but EVERY table around us got free appetizers, a free desert, one table even got 50% off their check and we felt like the uncool kids in school. I didn't expect anything to be given to us, but when every single other table is being told they are getting these freebies, you can't help but get a little jealous when you're left out, especially when you had some unmet expectations. It's worth a try and I hope they work out the kinks, but there are other restaurants I would go to at this price point before I would return.

Great food, great service, and great atmosphere. Craft cocktails were delicious. Highly recommend the Pennsyltucky Mule, and request the off-menu house made bourbon cream. It's incredible. Can't wait to go back

The bourbon chicken is amazing. Drinks are good service was nice. We came in early with our kids. They have a kids menu that the waiter can give. Nice little spot in Carlisle to eat. Came in after spending all day at the very rainy car show and left feeling much better. The kids loved the spiral cute fries and sweet potato fries are to die for b

We were a little reluctant at first to try this new restaurant. After a week or two deliberating we decided to give it a go. We did not have a reservation but arrived around 8:20 on a Saturday night. It was probably three quarters full. The space was a little warm for my taste being in a room with the fireplace but I think they have done a nice job with the decor especially considering what they had to work with. We were fairly hungry and we like to try to get a feel for the place so we ordered a variety of food. Our waiter was very eager and sweet if perhaps a little awkward but he was very nice about answering our questions and giving us additional information since it was our first time. I would go to 1794 TWR just for the bar menu. I am not a whiskey drinking sadly but you aren't going to find such a nice cocktail list in Carlisle anywhere that I have seen. My husband had their version of an Old Fashioned which was made with Woodford Reserve. I had a sip and it was a lovely balanced drink although I didn't not notice the club soda it had listed on the menu. I went with the Pennsyltuckey mule served in the traditional copper cup and it was lovely and refreshing, not too sweet. I was concerned that the non-whiskey drinks wouldn't be as good but I would say if mine is any indication of the rest of the menu there should be no worry. The restaurant is doing a farm to table approach which I really appreciate. I think for the ,oat part the food was well executed. We started with the deviled eggs which was probably a little large for two people especially when I do t actually care for hard boiled eggs. Nonetheless I did try the fillings if each of the three favors. The traditional was traditional, just what you would expect, the trout was lovely but for me the chipotle blue cheese filling was amazing. I would spread the filling on toast if I could. We also tried the kasespaetzle. It had a very nice mild flavor with a soft noodle, however the menu listed bacon that was not present. I think the bacon would have added a lovely hint of saltiness that was needed. Definitely large enough to split among four people for a nice little taste. I would say if you are a vegetarian you could do this for a meal sans bacon as it seems to be the only non meat dish on the menu. Add a side salad or another side a la carte and you would have a satisfying dinner. For entrees we opted for the bison and the crab cake dinner. I had read good things and also the waiter recommended the crab cake. Being from Maryland my expectations are typically too high when it comes to crab cakes. Nicely broiled withe just slightly more filler than I would have liked, these were probably the best crab cakes I have had in Carlisle and close the the best I have had in PA. It came with a root vegetable hash. The hash had a nice sweet taste probably from the beets. This also made it sort of pink. I probably would have preferred yellow beets (so hard to source in this area) to create a more appetizing color. Flavor was just great though. My husband's bison was done slightly more on the rare side than the medium rare he had ordered, the flavor was delightfully smoky from the bacon prune Demi glaze. We both thought that the two components by themselves would be better with other items as opposed to each other but the sauce was so good that I was mopping up the excess with the waffle cut sweet potato fries. The fries were great and totally addictive when paired with the maple cream dipping sauce. The grit cake with the bison was texturally appealing and had a wonderfully complementary taste when paired with the bison and sauce. Not sure we would order either of these right away again because there were several other interesting dishes on the menu we would like to sample. The portions were both generous. Two baseball sized crab cakes and the 8 oz of bison were plenty of food. I took one whole crab cake home. My husband felt the cast iron mini pans were a little difficult to eat out of due to the need to cut his meat but I had no issues with the crab. Since we were sort of celebrating a birthday we did sample dessert. The apple dumpling a la mode was a highlight of the meal with my only critique being how hard the ice cream was initially. We will definitely be returning.

Given the mixed reviews on Yelp and elsewhere, we were hesitant to come here. But it was the 4th of July, we'd already been to G-Man, and we'd run out of open places to drink, so it was convenient. Turned out to be a good choice. First of all, our waiter, whose name I sadly cannot recall, was hilarious. I would like him to just follow me around the world and be my waiter everywhere. I would like him to give seminars on how to be awesome. There are not enough tips for that guy. This is certainly a classier joint for the Lizzle. The cocktail menu alone is unusually interesting for the area, which was a great plus. Everyone ordered something different: fireside punch, raspberry whiskey jar, bourbon betty, washington pear, citrus spring, bellini, and some ginger beer. Everyone loved their cocktails all the way around. Very interesting, layered flavors, unusual combos, cool presentation. Big thumbs up. We had already eaten like twice that day, so people only really nibbled at food. My friends ordered the burgoo, a salad, and some sweet potato fries. The BF had the Bulleit-n-steak sandwich with a side of the mushroom trio, and I had the crab chow chow. I didn't hear much about the fries or the salad, but the burgoo was a big hit. Our friend said it was maybe the best soup she had ever had and raved about it the rest of the night. We thought the mushrooms were under-seasoned and a bit watery. The BF liked his sandwich enough, and I am a big fan of the house-made chips that came with them, which were dark and huge, long slices of whole potato. The crab chow chow was like a corn salsa that happened to have some crab, and very little crab at that (maybe a tablespoon). But, the flavor was great, it tasted very fresh and light for summer, and came with toasted flatbread and those house-made chips, both of which were delicious. The presentation, in a little jar, kept with the theme, but the portion was really small (maybe 1/3 cup?), too small for the massive amount of chips and flatbread on the plate. The decor was nice: earthy, dark wood and a fireplace. There's a patio when the weather is nice. That it is conveniently attached to the hotel is great, given that the hotel is a local institution and doesn't close. I think most people would say that it is pricey for the area given the portion sizes, and I agree. The chow chow, given the minuscule portion of actual crab contained within it (I'd be surprised it if it was $1 worth, presuming it was fresh), was definitely overpriced at $10+. But, I don't think it's unreasonable if you want something more interesting than most everything else in town. Plus, you'll probably get a really cool waiter.

Last night was my second visit to Whiskey Rebellion and it was hand down one of the best meals I've had in a while. Between the five members of our family we ordered: -Deviled Duck Eggs as an Appitizer - they are fantastic. -The Molly Burger - Perfectly seasoned and cooked. One of the best burgers I've had in my life. Probably top 3. -The Reuben - It is huge. It was cooked perfectly and was delicious. It has sauerkraut on it which I asked about because the menu fails to mention it. The side of potato chips are home made and were still warm and delicious. - The Kale Salad - perfect combination of fresh and flavor - The Crab Cakes - my mom is a crab cake snob and she said it was the best she has had in years. - The Sirloin Sandwich - The meat was cooked perfectly it was super tender and the simple ingredients really brought out the deliciousness of the meat. - Blueberry Cheesecake - I was a little worried that the desert would disappoint but it was the perfect texture and combination of flavors. I think the only downfall is the atmosphere. It's in a bit of an odd space but the food quite easily makes up for that. I mean it is in the front of a hotel so I can't expect to much. Also the prices are incredibly reasonable for farm to table food. I am super picky about where my meat comes from and they do a great job of keeping it local. Our servers both times have been incredibly friendly even though it seems like the restaurant is still getting into it's grove. I can't wait to go back again. Hopefully the quality doesn't change as time goes on.

I had their signature Hereford bone in rib eye. From a taste standpoint the seasonings and the cooking were actually very good. I expected 1 1/2 inch for the $27 but got at best 2/3 of an inch thickness. My wife's salmon was good and our friends food was also given complements. They do have a logistics problem. On Friday night the bar was crowded and the three bartenders were paying attention to the patrons rather than the restaurant. There should have been a dedicated person for the restaurant. Out of the 11 tables three complained about the slow drink service. One waited for over 25 minutes and our waitress kept apologizing. In one case everyone said they weren't coming back because of it. The Deviled Duck eggs were really good.

We got seated immediately, and the Whiskey Rebellion exceeded all of our expectations. Kate was an informative, attentive and kind server. Every drink we asked about she made amazing recommendations. I'd highly recommend the deviled eggs and the medallions.

Well this place got a lot of hype so I thought give it a try.....wasn't so impressed, our resv was at 715 and we did not get seated till 8 oclock, I had the bison and it was just ok and the side of root vegetables was bland, for the price I could have gone somewhere else and gotten an amazing dinner, it's not bad but just ok for my taste

We were lucky enough to try this fabulous restaurant before it's grand opening this week. The ambiance is lovely, and the fireplace was a wonderful touch on a cold evening. Top quality is apparent everywhere you look. The tables are beautiful and the dishes appear to be antique, eclectic, gorgeous, and very special. Now for the food.....!! I had a Washington Pear martini, which was beautifully presented and very tasty. My husband had two shots of Balvenie with a Troegs Hopback Amber, which he really liked. We split an appetizer and then fought over it because it was so delicious! It was called Amish Kasespatzle and I could have eaten a whole pan by myself. For our entree, I had the filet mignon, which I could have cut with a fork. It was like butter, and so flavorful! I ate every single morsel, and I have to say it was the best steak I have had in my entire life (and that is saying a lot). My husband had a ribeye, and he said it was very good, but agreed mine was superb. I heard that all the ingredients come from within a 50-mile radius and is all organic and of the highest quality available. I also heard mention that the greens in the salad are grown hydroponically, and the vegetables in the house salad were perfection. I'm very picky when it comes to my veggies and I will pick out anything with an imperfection, and I ate every last bite. It was a very large salad, as well. One of my favorite things is sweet potato fries, and as that was one of the sides available, I ordered them. They were cooked to perfection (which is hard to do with sweet potato fries) - a nice crispy outside in a waffle pattern, with a tender, perfectly cooked inside. My only critique is that it would be nice if they came with some sort of dipping sauce, perhaps a nice aioli or something. The waitress was sweet and brought me a side of homemade ranch, which was perfect. My husband had the mushroom trio as one of his sides, and liked it very much. They weren't offering dessert, but when the waitress saw my disappointment (because I didn't want to leave!), she offered to bring us a scoop of vanilla ice cream to share. She brought out a bowl with a perfectly round scoop of obviously top quality ice cream with a chocolate syrup design on top. Cute and special, as everything else had been. Being originally from Seattle and not having been able to find a place that serves good coffee, we had to give them the final test and try the coffee. This came served in a very large, beautiful mug, and satisfied both of us! As you can see, I can't say enough good things about this fabulous new restaurant in Carlisle! I hope everyone supports it so that they are very successful and will stay for years to come!
