Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

For some reason this is my sister's favorite Mexican restaurant. I found the food to be mediocre at best. However the salsa and guacamole were both great....as for the rest of the food = bland, flour-y, greasy, not good...maybe I'm just spoiled by all the great taquerias in my home town. Skip the lunch buffet (it reminded me of a high school cafeteria buffet). Cheap packaged shredded cheese, black olives just thrown in a tub with juice and all (you had to swim for them I swear!). Subpar packaged and canned food thrown right into bowls and set out for the masses. I did like the little fried tortilla chips covered in whip cream that they bring out with the bill though. That was a nice touch in an otherwise bland place.

Now I'm not a Prinevillian--well not technically. I was raised there since '76 then moved to Eugene in '92 then Portland in 2000, so I'm something of a quassi-hipster-hippie-cowpoke. Having said that I've experienced a wide variety of restaurants all over Oregon from purely vegan to steak two inches thick and everything in between. I've eaten at five star restaurants on river cruises to excellent holes in the walls. I recognize the importance of the consistency of McDonald's and Starbuck's products from one store to the next and yet also appreciate finding a random hole in the wall that makes an amazing cinnamon roll and dry cappuccino. And in reading a fair number of reviews I've come to believe in two simple rules: 1. The writer should have had at least two to three distinctly separate experiences at the business in question and 2. the writer must be able to demonstrate the ability to separate their subjective thoughts and feelings from the objective experience. I've eaten at Ranchero since it opened. I admittedly go in biased as I was complimented by one of the staff who, after watching me down salsa covered hot nachos one after another said, "Hey man, you eat like a mexican!" I tell that story to friends and family from time to time because it's one of those experiences that made my day and brought me back to the Ranchero time and time again. I make the trek over the Cascades mounts ounce or twice a year and invariably find myself seated at Ranchero. The ambiance is warm and feista-like, the booths comfortable. There could be a few more seafood options on the menu for my girlfriend (hopefully they'll read this review and come up with a few more). The staff is generally kind with only one or two exceptions to those rules and these generally are the result of someone having a bad day (whether said person be the staff or, god forbid, the person writing a rant on Yelp! [Like that ever happens here!]). My experiences on January 9th, 2013, was overall good. The free salsa and chips--well, this is/was/may always be the absolute best free salsa I've ever eat at a Mexican place. The person serving my friend Petra and I, however, didn't seemed entirely interested in us other than what basic conversation was necessary to get the order taken the delivered followed by some form of payment. Now I should note I didn't feel the help that night was top notch and it certainly wasn't what I've experienced there in the past. What I will say is that out of having eaten there at least once a year for a decade or so I've come to respect the quality of Mexican food made at Ranchero even if their staff is sometimes, well, human! My only criticism? The first round of tortilla chips is free, after that its $1 a bowl. I've never had that experience in a mexican restaurant (though perhaps I don't look close enough at the bill). Free chips, folks, it keeps us happy while we try avoiding conversation with our families ;)

Love this place in small Prineville, Oregon. Right next door to the Rustler's Inn, very convenient to walk over and get a great meal. Have eaten here a few times, and food has always been great tasting. Bar makes an excellent margarita as well. Perfect to end a long hard work day.

Warning: Do not be swayed by any of the the good reviews. We ate lunch there yesterday. Yes, our first time. And the only time. The food is terrible. Watery chicken, greasy beef. Lousy cheese. We were fooled by a full parking lot. Nope, just a very large group..

S.U. and I had been driving all day (from Boise) and had checked into the 'value' motel right next door. It was July 4th and most places were closed so we walked across the parking lot and entered a classic, overdone Mexican-themed Cantina. They're in towns all over the American West. They're not dirt cheap taqueria's, They offer a full menu and specials (July 4th spicy prawns, $9.99) and they're hit or miss for quality. This one was a hit. The chips were home made, the salsa spicy and plentiful. S.U. had a chicken tostada, the chicken was flavorful and moist. I had the chicken mole and it was a knock out. I asked the owner who said they made it in house and he rattled off the ingredients (no peanuts) including chocolate, pine nuts and the several roasted, fried and ground peppers. I'm a sucker for good mole. A few more Negra Modelos and we walked back across the parking lot to our balcony to watch the fireworks. Great spot. Long live the Revolution!

Without going into the long and crazy story, my husband and I found ourselves driving through Prineville on our way back home to Portland from Idaho on Saturday night. We needed to stop and get something to eat for dinner and the usual fast food locations didn't interest us. We drove by Ranchero and thought it looked promising and sounded good, so we turned around and pulled in. Since we were still several hours from home, we didn't want to be there for a long time. The waitress brought us chips and salsa and our drinks right away and took our order as soon as we were ready. Luckily, the restaurant wasn't completely slammed. My husband ordered the taco salad and I ordered the fajita salad with shrimp. His salad came in the usual fried tortilla shell and he was surprised that there weren't any rice or beans at the bottom - usually there is one or the other or both in a taco salad. Other than that, he enjoyed it. My shrimp fajita salad was absolutely delicious! I was surprised to see that it did include a little rice on the bottom as well as the lettuce, cheese, tomatoes, sour cream and guacamole. Seriously, this salad was very very good. If we find ourselves back in Prineville, I would imagine we would go back to Ranchero.

The only good thing about this place is the guacamole made table side and that's even made sans a smile. The beans tasted like they were cross contaminated with fish so my boyfriend used it as a dam to block it from the other not so tasty mole. I had the taquitos which were average. Were thirty minutes since we finished dinner and still haven't been asked if we would like our check. I've had time to write this review and could take a nap before they get back to us. I would not recommend this place.

Okay so I was hovering between 3 and four stars on this one. We went there last week and I ordered the seafood chimichanga, I didn't even make it out of the restaurant before I know I clearly had eaten some bad shrimp. YUCK! Stomach churning bathroom visiting fun. We have been to this restaurant many many times before. The service is supper slow but the food is really good. My first mistake was to order seafood in the desert. oops I called the restaurant to let them know later that evening and they were pretty dis-concerned. I would go back but I wouldn't order seafood!

Great place. Good food. Excellent service. What more can you ask for in a small town.

Great food and tastey mango margarita. Everyone loves the food here and we always receive friendly and fast service. But they are not always clean. There was food on our seat and spilled food on the floor.

Typical Mexican food. Enjoyed some fried jalapeños and the pineapple fajitas. Service could be better but we got everything we asked for.

High light was the chips served with beans and a delicious salsa. As for the lunch marginal . My huevos were greasy, and the eggs were over cooked. No beer on draft all three taps were out. Very disappointed . I would not eat there again. Nice waitress , good service .
