Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Nicest frat bar in town - walking distance to most housing college housing. Great place to prefunk and start a great night in Corvallis. Affordable drinks and the bartenders are super friendly/knowledgable. Drinks are A+++

Oh Sanchos....where do I begin. It's a very small establishment. College kids pack the inside and outdoor patio once the evening hits, so beware....unless you are said college kid. Wow I feel old these days. The food...cheap. It tastes....kinda cheap. I didn't even come here but a couple times in college and re-visited this last weekend. Ordered a tostada with. It was ok. Small, but hot horrible. I had ordered shredded beef but got chicken. Whatevs...no biggie. Blackberry margarita was pretty good. I'd recommend ordering with an additional shot. They have $2 tequila shots on special pretty much daily. They have daily drink specials, TVs for game watching, and a small outdoor patio area overlooking Monroe St. The staff here is friendly. Not a bad stop for a drink. The salsa they served us tasted a bit like mango? It was good.

We told the waiter that this restaurant came highly recommended (by our cab driver), to which he responded "Really?" It's a very small space and the service was slow. The waiter was friendly and the food was just ok. However, I'm not sure you have better Mexican options in Corvallis.

This review is only on the street tacos, so be advised on its limitations: They don't have the good meats (al pastor, lengua, pollo asado being my favorites), and the chicken, carne asada, and carnitas (which wasn't on the menu, but recommended when I asked for al pastor) were all really bland. Plus they were topped with pico de gallo. I want a roasted tomato or tomatillo salsa plus onion and a butt-load of cilantro with my tacos. On top of all that, the tacos were small even relative to other "street tacos." Other than that, the ambiance seemed quite nice, and the service was very friendly. The booze selection looked decent and competitively priced, as well. I might go back to drink, but never to eat their tacos again.

The secret is to order their lunch menu (street tacos). For $2, you can get lovely small taco and bowl of salsa and chips.

Sancho's is a small bar, with a few good drink specials. The chips and salsa are always a good late night snack. The bartenders and owner are very friendly, and for the most part, the crowd is usually pretty fun. The balcony is what really stands out at Sancho's. On warm nights it's one of the best places in town to people watch with a few drinks. The Sancho's special is worth it's price, and trust me, you'll only need one. Tequila shots are only $1.50, but are very watered down. It's nice when the bartenders decide to pass out free shots though, and it's always fun to do a round with some friends. Also, Beaver Brews (Miller High Life, I think) are a good deal. The only other con about Sancho's is its size, but it makes due. Also, be sure to spend at least $10 if you're planning on using a debit or credit card (A Beaver Brew and Sancho's Special should do the trick).

A great, small bar here in Corvallis that can act as both a chilled out place to grab a drink and a wild night out location. The atmosphere is always fun, and the drinks are pretty cheap! Friendly bartenders usually, and since everyone is there to have a good time, you'll probably leave with a few new friends! Food is decent and a good price.
