Don't let the building fool you- the food is fantastic! The vegetarian taco comes with cheese, potato, lettuce and either salsa or guacamole. It was the best taco I have ever had. I normally do not like hard shell tacos but the shells appeared to be made from scratch. The beef taco with guacamole was also fantastic. The best thing here is the salsa. It puts most other salsa to shame. It's not chunky salsa but it lacks a punch with heat and flavor! It is spicy and not for the faint of heart. A little goes a long way. The salsa is the best I have ever had! It reminded me a bit of Guyana pepper sauce! Excellent! And the staff is super sweet. We were $.06 short but were told that was fine (we were out of coins but had bills). Lovely lovely lovely. Cash only and tip well!

Simple & Satisfying El Parasol is an outgrowth of the neighboring fancy restaurant. This is just a trailer set up next to bunch of beautiful trees under which are some picnic tables. Chicken & guacamole tacos are the specialty of the house. And I can see why. They were delicious. There are a few other items on the menu, but who cares? With tacos like these I wouldn't ever want anything else.

Fantastic chicken taco with guacamole. Very fresh and great little roadside location with outside seating.

The most delicious burrito. Ever. Love that it's an order-at-the-window little shack with picnic tables. Fyi: no bathrooms, so that's a bummer when you're on a road trip.

So so glad we stopped here for breakfast. Ate breakfast here 3/4 days of our stay in Chinayo. Corned beef hash & potatoes burrito with green chile. Simple, superbly delicious burrito. Even the veggie burrito was loaded with all kinds of veggies & delicious. Wish we had tried other items on the menu but I got stuck on them beef n potato burrito , sigh ! The lady at the counter messed up & charged us for two extra bottles on day 1 but tht was just a slip & they are pleasant. If possible, call ahead for a pick up if getting there after 10 am as the wait can be anywhere from 20 - 40 mts

Husband had a meat and bean burrito. He said it was just ok. I had two chicken tacos, one with salsa and one with avocado. They were awesome! The service was slow but the prices were cheap and I was satisfied.

This place is always my first stop on the way back to Albuquerque from a ski trip. You can eat on their picnic tables, but I usually take the food home. The tacos are delicious (vegetarian available!). The salsa is HOT so avoid if you're not into hot food. If you like tamales, go no further. The tamales from this taco stand are the best around. Hands down. Don't expect to go in and out in two seconds. But the wait is worth it.

Excellent homemade New Mexican food. Good quality in general. I tried chilaquiles and chicken burrito. Both were yummy, however, I rated 4/5 because I think that it was a little bit overpriced. It seems that they have recently raised prices. For example, the chicken burrito was $5.75, and now, it is $6.05. Good parking and several outdoors tables, excellent spot to eat your order as long as the weather is nice.

I use to have the secret number and would call ahead while I was driving to this shack of a hole in the wall greatness but lost it with my driving days..It was written on my sun visor..Be prepared for a wait cause this place gets packed and they have the secret # Number...I keep forgetting to ask them for the number..Next time..

This place used to be so good. It's sad to see how a place builds a name and then just keeps living off it. The chicken tasted terrible, and the guacamole was extremely hot. This food will taste amazing if you are drunk

The best green chile cheese burgers and tacos in town. The ladies at the espanola location are the best! Just parking and the long lines can get bad on weekends.

Stopped here on our way back from Red River by the word of a good friend. Boy was he right! Wonderful tacos and tortas! My bf and I shared about 6 items together and all of them were delicioso! Place is a little hole in the wall walk-up window that is dishing out amazing food! I just love these types of places.. especially being a native New Mexican ;) If you're passing through, you must try! Yummy!

Lovely tacos, nice people. Just a little shack, but it's pleasant to eat lunch at the picnic tables on a beautiful day.

Ahhh El Parasol... My mouth waters just by thinking of how delicious there food is. El Parasol is a mini version of El Paragua which they serve almost the same menu but its faster and cheaper. I have pretty much tried everything on the menu but there Chicken, Beef Tacos are some of my favorites there bean burritos are surprisingly good, tacos las brazos are excellent, arroz con pollo is also a hit. If you are ever in the area I would recommend checking this place out.

Not good. Tiny dry burrito that was relatively over priced and they wanted to charge us for a couple of teaspoons of salsa.

Get the chips and salsa! I'm sure whatever they put on their chips is an addictive chemical. I love them. Also, since the menu is a la carte it's nice to have a little something on the side. Though to be honest the burrito is always enough. I always get the veggie burrito, so I don't know how their other offerings are but that burrito is great! I've been to several of their locations, they are pretty consistent with their food quality. We were a little surprised to find out that this location is just a small building with a covered seating area. Not a big deal since we were just stopping by for lunch on the road, but be forewarned that there is no warm area to sit down if it is chilly outside.

El Parasol was so tasty! We loved the chicken taco with guacamole. My kids devoured the chicken burrito. It was good, but I added the green salsa and then it was fantastic! Great guacamole, good chips and overall, pretty good value. We would eat there again.

The Tiny Trailer with the Cottonwood Grove Lunch Room Everybody was buying lunch at El Parasol, lunch trailer little brother to El Paragua. I tasted the excellent chips from sombody's adovada meal, dipped them in salsa our local citizen of Wisconsin would not stand near, and figured I'd have to try El Parasol too. I had the pork and avocado burrito, good hot out the window, but much better six hours later after the flavors blended. My next meal at El Parasol is the Khalsa Vegetarian Burrito, just to find out what's going on in the veggie department. There are many great New Mexican eateries in Espanola, but if your in a hurry, stop by El Parasol

Friendly and attentive servers and staff, extremely inexpensive tacos with homemade corn tortilla shells that make Taco Bell look and taste ghetto (which should be the case with any restaurant), and this location is totally unassuming. It's usually got quite a few people parked in their lot, but that's a good sign.

Rumor has it that: Once upon a time, in Espanola, New Mexico, a bunch of really great cooks worked at El Paragua (rain umbrella in Spanish), a moderately priced sit down New Mexican restaurant. They were very happy at El Paragua, until a new boss came along, who apparently had a chimichanga stuck up his butt, and was mean and unreasonable to the cook staff. So, one glorious day, the cook staff QUIT El Paragua, and in the ultimate act of beautiful spite and revenge, opened up a quaint little taco stand called El Parasol (sun umbrella in Spanish), not 4 yards away from El Paragua, in an empty parking lot right next store. Using many of the same recipes, and a few secret ones, this rickety old taco stand now gives El Paragua a run for its money. It boasts the most delicious, greasy, fantastic tacos you will ever eat. They are tacos from heaven. FROM HEAVEN. No joke.

This is real Española cuisine, where locals eat. If you want to sit down go nextdoor to el Paragua. This is the original El Parasol, a little fast food, place in a dirt parking lot . You'll have to eat in your car or at the outdoor picnic tables and sometimes it's a a bit of a wait after ordering but so worth it. They have fresh tortillas (no preservatives like most places). The tacos are chin dripping juicy, but order at least three or you'll have to wait again for seconds. We love the pork and guacamole burrito, the carne adovado burrito, it's all good. I wish they wouldn't use styrofoam cups. No rest rooms. To get here, go east at the Long Silver Intersection (76 and the main road through Española). Take the first left into the driveway. Lots of parking, just drive behind the restaurant. You can get your burrito here, then drive back to Sonic drive-in (tnorth from the Long Silver Intersection) where you can order a drink and watch for the famous Española low riders. Note: There are lots of el Parasol's around from Santa Fe to Los Alamos, the gas station at Okay Owingeh. They all lack ambience, but you will leave not needing to worry about eating until tomorrow.

I love their chicken tacos. I also think their green salsa is very fresh and has cilantro which I love. Their menudo is also very good. Try it you will like it.

This crappy looking little stand serves some of the best New Mexican food in New Mexico!! Everything on the menu here is great. My favorites are: Carne Adovada Burrito, Pork and Guacamole Burrito (add Green Chile), Chicken Tacos with Guacamole and the Chicharron Burrito (add Christmas Chile). Try it all!

If you are in a leisurely state of mind, feeling hungry and with a craving for an authentic Northern New Mexican food experience, go to El Parasol. If you're in Espanola heading North, turn right on what I know as Long John Silver Street, than a quick left into the dirt lot that houses the burrito stand that is El Parasol. It's right next door to its big "sit-down-and-be-served-proper" sister, El Paragua. And don't freak out, there's more parking behind the stand. Order your food, wait (and wait . . . and wait . . .), receive food, and gtfo to enjoy your papas elsewhere, or receive food and eat at one of their huge, green picnic tables shaded by whatever local foliage I have grown up around but am still too head-up-my-ass to recognize, and then gtfo. If, however, you are not in aforementioned leisurely mood, if, for example, you are on your way to Taos from Albuquerque and are already running late because you have yet again underestimated how long it actually takes you to physically and mentally prepare yourself for one night back home, then do not at any cost make a pit-stop at El Parasol. You will wait 25 fucking minutes for one single fucking bean and cheese burrito, this is absolutely the truth. You will rip you hair out, smoke three cigarettes, drain the Coke meant to accompany your meal and entreat the goddess for an explanation of how it could possibly take someone so long to smear some refrieds on a tortilla, sprinkle with cheese, dump some guacamole and sour cream on top, and roll, before you finally get your food. You will be a nervous wreck by the time you get that oozy little number in your hands. And it's really, really sloppy, like seven-napkins sloppy. I always forget to ask for lettuce to add some much needed texture to the slippery thing. Beans and guacamole escape out the back-end while you attempt to take your first bite of the front-end. But it's yummy. For a burrito stand in Espanola, I am always actually impressed by the number of vegetarian options available. Last time I went they offered a vegetarian fajita as their daily special. Christ, what exactly do you hippies expect from a burrito stand in Espanola? Be amazed they even spelled the word 'vegetarian' correctly on their scrawlish menu, let alone thought to invite you to the party! Eat your beans and grilled onions, then get back on the road to Taos, and fast, where your pansy ass might stand a chance of being appreciated.

I ate here based on very positive recommendations from friends. I was extremely disappointed when I first arrived because of the limited selection of vegetarian items and the lack of availability of enchiladas from the menu. Fortunately, the prices on their specialty, tacos were low enough (about $2) that I went ahead and ordered one each of their (only 2 available) vegetarian tacos. I had been cautioned that there would be a wait for the food and this was no exaggeration, it was probably 10-15 min wait for the two tacos! My wait was rewarded by the best two tacos I have ever had. They were fresh made with a variety of ingredients, (including avocado in one case). The held together well, a result of being deep fried, and could be garnished with a homemade salsa that was probably a little too hot even for my tastes which are reasonably accustomed to chile at least. If you are not in a hurry, I highly recommend stopping by this place. Perhaps their limited menu is no accident, they are sticking with what they do well.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
