Giving this spot a 4-star due, mainly, to its location and that area's realities. Carlsbad NM just doesn't offer a lot of choices and, relatively speaking, this one seems to be at the top of the heap. Airlift this restaurant into a more gastronomically competitive setting, and my rating would drop by at least one star. With all that said, this seems to be a new eatery that deserves some time to tweak its formula and stick around in order to cater to the Caverns' tourist set. My party wanted steak and we first went to the Stockyard downtown. If you saw my tip on that place, you know that I was disappointed by the discrepancy between its name including the word "steakhouse" and what it truly is. Anywho, the steaks here were pretty high quality and tasty overall, cooked correctly (a perpetual issue for us, since I like rare and my companion likes medium-well), and were served quickly. The bread was delightful - soft, warm, and a great mix of doughy and firm. I had the steak and shrimp entree, which consisted of a 10 oz sirloin and 3 beer-battered shrimp. My steak seemed to have quite a bit of fat and gristle around the edges, but there was still ample steak there to satisfy me, just felt like I had to trim it myself in order to get there. The shrimp were an excellent complement. My companion had the rib eye, which came out perfect. Greeted at the front door, by a gent in a formal jacket with French-cuffed shirt, he even pulled the chair out for my companion to seat her like a lady (nice touch!). Nice decor, pleasant ambiance, and the staff dresses up the way that you'd expect from an above average restaurant. The meal was billed as coming with a handmade salad with house made dressing, which I was really looking forward to trying. Unfortunately, the staff didn't serve us the salad. Our entrees were brought out within about 5 minutes of the bread and we were too shocked at the quickness to mention that they had forgotten the salads. Besides, what do you do when that happens? Tell them to take the steaks back to the kitchen to rest under a heat lamp while you go get the salads for us? Certainly not! Mentioned the oversight to the server at the end of the meal and they offered to bring out the salads then but my stomach wasn't about to lay salad on top of a steak, rather than doing it the way that nature intended (rabbit food first, then the protein). They offered a comp dessert, but we were pretty tired from a long day and passed on that. Instead, they gave a token comp on a (small) portion of the meal. Sadly, they couldn't offer any wine - they don't have their liquor license yet. A faux pas for a steakhouse, for sure, but I'm willing to overlook it because they're somewhat new and it is a small town. We wound up sticking with water, which was not refilled until after our meals had been completely consumed. Overall, the sins that we endured (forgetting the salads, not refilling the water, lack of wine) were relatively minor and all, in my opinion, fall under the "hey, we're still getting our act together" umbrella a new place should be allowed. If you find yourself in Carlsbad NM, I'd recommend giving this spot a try.

It all depends on what you get, keep it simple. The liver and onions were good if your into that. The deserts are actually delicious, it is our new desert place. Stay away from the tilapia it has horrible. Pico and chips are pretty good. 3.50 for a pint of Stella!

Went to Chapmans with my boyfriend and 2 of the guys he works with in the oil field. My lunch was delicious, chips and salsa was great, and endless sweet tea. My boyfriend's medium rare steak was dropped on the floor and had to be replaced. It took them over 20 minutes, and the rest of us finishing our lunches with him snacking on my fries, before the replacement was going to arrive. We asked to take the other one home for our dogs, so I gather that they figured since we were getting 2 (though one inedible by people) for the price of one, they wouldn't deduct anything off the price- which they should have considering the insane amount of time it took to get the replacement out of the kitchen- rare/medium rare shouldn't have taken that long. Especially when the restaurant wasn't that full. The decor was nice, wait staff was friendly, and prices seemed about right, but when you mess up FIX it. Quickly. He took it home and ended up eating it later since everyone else had finished and we had to get him back to his site.

Nice decor. We had the haystack (very thin strips of battered and fried onion) for an appetizer and it was delicious. The salad was an average house salad. The broccoli cheese soup was better than most. They actually serve liver and onions, and my husband actually ordered it and liked it! I ordered a steak as usual. It was a bit under-cooked, but that's OK in my book for steak. I asked for medium rare, and I got rare. The meat cut was average, but large portion. The mashed potatoes were homemade but were killed by instant (or maybe canned?) gravy that was really a turn off. Honestly, it reminded me of the gravy at Church's Chicken.

Cold steak and rude manager made this a very bad experience. Things happen and the steak was cold. He brought out another one just as cold. We let him know both times. He got so defensive and didn't seem to care when we informed him. He never once apologized and basically couldn't understand why we were telling him. I don't believe the Customer is always right but I do believe if you are in the Customer Service business, you need to at least say your sorry and try to make it right. He didn't do either and had a very condescending attitude when we told him. He basically could care less that a Customer was not happy. Our Server was awesome and we got more apologies from her. She offered to "comp" us and give us a piece of cake. All we wanted was to have a good meal. Her "Gesture Of Goodwill" was the only thing that kept the whole dinner experience from being a total bust. Bottom line is this; if you want a cold steak and a rude and uncaring manager, Chapman's in Carlsbad is the place for you. Buyer Beware! You've been warned.

Well we were apprehensive about trying this due to the 2 bad reviews but it was actually pretty good...steaks cooked right, beer battered shrimp was excellent with a very light batter and all shrimp, the sirloin was tough even at medium but the ribeye was just right, baked potato was small and the mashed seemed like powdered but desert was good, some coconut cream cheese pie, Now for the service...slow, slow, slow Our waitress had a table of 4 regulars that she spent 90% of her time with, she did take our order and drop off the check but everything else was done by whoever we could flag down No kids menu so u can choose mashed potatoes or fries that's about it no small dishes not even a burger and thee is about 12 things on the menu luckily we like steak. With a better waitress this could be a real good place

We were there for the soft opening. Steaks were delicious... melt in your mouth. Everything is home made including the salad dressings. Steak came with shrimp that were hand-battered. Intimate setting.
