Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

If you can still stand the hot spicy flavor, you can still get tamales prepared just the way they were 50 years ago- except the tamale ends are no longer tied with string, aluminum foil is used to insulate and wrap the order instead of just butcher paper, and they are no longer sold from pushcarts on the streets. Dilworth's retains the use of Ferguson's recipe which was well known for the pushcarts seen on the streets, at sporting events and at local railroad depots during most of the last century. The other distinctive thing you'll notice about Dilworth's is the drive-thru window- their own unique design and an adventure in itself to navigate. Tamales are served "hot", be sure when ordering to specify mild if that is your taste preference.

I have been eating Dilworth's tamales since childhood. Back then the tamale wrapper was sewn shut with thread. That was a coolness factor you don't get anymore, but the taste and balance of seasoning to meal is the same. I have bought a couple dozen just to keep in the freezer for spur of the moment cravings or times I can't get to Dilworth's. Just boil them in the foil bundle for 30 minutes and you are on your way. Tourists should note though: these are not corn husk or banana leaf rolled tamales. There is no shredded beef, pork, chicken or other forms of meat inside them. They are a slender roll about 8" long and rolled in a parchment style paper. Don't hesitate to order 3 dozen or even more if you have 3 or more people traveling with you. It sounds like a lot, but they are small and it takes several to fill you up......like a Krystal burger. Also, tourists, don't make plans to dine in (owner was robbed several years ago and has since closed the dining area) fool her once shame on you, fool her twice....ain't gonna' happen. They do one thing and they do it well. This is an intersting short video about Dilworth's youtu.be/glIuSFEGjgU

Three stars but don't get me wrong the tamales are really good. They were much better the second time and if they are like that every time I might go to four stars. Long and thin but have the typical delta tamale flavor. Make sure to get the hot!

Not sure if there were other options than plain. The tamales were tasty and spicy. It was odd though. They were probably 8 inches long and diameter a quarter of an inch. Very odd. Not the kind of tamales that I am used to receiving. I like how tax is included with the order. There was not a sitting area, drive thru only. Cheap price, but if you go, see if they have beef or chicken filling at all. If it's just plain, Probably pass.

In a 'what were we thinking' aberation, we bought a house in Corinth a few years back...but that's another story! We discovered among other regional delights...DILWORTH'S .! In a former 1930s gas station on a street of derelict empty stores stands DILWORTH'S. If one is expecting 'Mexican' type tamales...think again. The Mississippi Tamale is something different...(and a little the same). They are good...and affordable by the bunch. I would buy a dozen (hot, the only way) and take them to the old Southern RR/Gulf Mobile & Ohio RR station, eat them while watching trains! What a great way to use an hour in Corinth! Side note: another area 'delight' is the 'SLUGBURGER'...interesting to try once, but deserving to remain a regional oddity!
