Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Some of the best Mexican I've found in Kansas City. You know when most of the patrons are Mexican, the place must be doing it right. I've had shredded beef tacos, huevos rancheros, and my favorite so far, the enchiladas poblanas. That mole sauce is to die for! Also, they have real salsa, not the watered-down ketchup with hot sauce that a lot of "Mexican" places in KC seem to favor. Not a bad place to watch the soccer (sorry, "futball") game, if you're so inclined. All around good place.

Taco Tuesday strikes again. For the record, only their hard shell beef and chicken tacos are $1. And those are good. They use that super tasty white cheese that lots of authentic places use and I love it so much. Their other tacos on the menu aren't that much more ($1.65) and they are seriously, hands down, the among the best al pastor tacos I've had outside street tacos in Mexico itself. Their tacos might just be the best of all the authentic street tacos I've had... and that's a pretty big statement to make. Not flashy. No mango chutney in these babies. Just solid, tasty meat with onions and cilantro on a small corn tortilla. Heaven. I must come back here and try everything on the menu. I'm serious. I'm a fan.

The chips and salsa were good. I asked for the waitresses recommendation and she suggested this bowl of meat dish. So it was a stone bowl with steak, chicken, shrimp, chorizo, cactus, pepper and tortillas. It came with a bean soup as well. Everything in the bowl tasted fine and the chorizo was particularly tasty. I just thought it was okay since it was basically eating tacos of just meat and I think I'd rather have a something a little more flavorful. Service was a bit slow.

Kansas City: a town which, by all rights, ought to be as famous for Mexican food as for BBQ. We certainly are at no lack for Mexican eateries, to the point that it pretty much makes up for the total lack of Chinese. Up here in northeast, we have a boatload of good Mexican options, and I keep coming back to this one in particular. I refer to this as the "Happy Cactus" joint, as their sign and menus feature a happy smiling cactus mascot. I've got two go-to favorites here. The first is a dish featuring steak, chicken, and shrimp with peppers and onions smothered in cheese and served with rice, refritos, and flour tortillas. The second is a skirt steak (OK - so the skirt steak usually isn't the best quality beef in the world, but the dish overall is so good that it's not going to bug you too much) wrapped around melted cheese and jalapenos. Can you see where I'm going here? I'm a fat man with a love of food, and this place isn't really by the diet-conscious or for the diet-conscious. It's good though. Real good. There're plenty more on the menu though, and I've tried probably half of it without a single bad experience. You'll get free unlimited salsa and chips and they'll bring these out as soon as you're seated. The hot salsa here - which you have to ask for them to bring out, normally they just give you the mild - is absolutely fantastic. I'm big on good spice - not just spice/heat for spice/heat's sake. This hot salsa has a really great, unique flavor. Their chips are thin and are served warm, which I like a lot - I've never gotten a nasty, stale batch of chips here the way I have elsewhere. If you're down with spice/heat, you must try the hot salsa. The staff are also really good here. The decor/atmosphere is hardly romantic, so this may not be a first choice for a first date, but my wife and I are always happy to eat out at the happy cactus.
