When the place is almost deserted and the white servers complain to the next booth over about the place being a Korean-owned Japanese restaurant, you kinda have to be embarrassed for them. And then there's the food... Large hot sake was okay, pretty middle of the road stuff. Charles insists they have an excellent cold sake to offer, but it was just too chilly a night to indulge in it. Bento box is a good portion of food, though I was certainly puzzled by their choice of forcing us to use the tempura dipping sauce as the only soy sauce source for the sushi. Wasabi and pickled ginger were provided, but not even bottles on the table? Odd. Miso soup is standard, small halved cubes of tofu and a pinch of scallion. Shrimp and veggie tempura were a little heavy, could've used seasoning and a little more drain time before plating. Tempura yam slice on the bottom was a nice soaker, resulting in me leaving it half-uneaten. Steamed rice was okay, presented with a fried appearance but it wasn't greasy and the grains were just al dente enough. Unfortunately the peas mixed in could've been cooked a little longer. Gyoza were average, acceptable amount of grease on the outside, but lukewarm temperature and the filling had a mealy texture. California roll B was pretty average, but still tasted fresher than my poorly molded nigiri. Yellowtail had an unpleasant texture, like I'd gotten a corner piece that had been exposed to the air long enough to dry out. The rest of the fish were of acceptable quality, but sloppy sushi assembly all around, and no wasabi in the nigiri. Service was attentive, even friendly enough to deliver the news on the Ravens-Steelers game. Hinode's website advertises casual dress code, which is a nice minimum that unfortunately clashes with the obvious investment in modern decor and LCD displays. The oldies' music is equally incongruent, though there's nothing wrong with a little REO Speedwagon in your day. Won't be back for the sushi, if at all.

I keep trying to give this place another chance but it keeps disappointing. This most recent trip was the worst. We were one of two tables on the water. The service was fine, nothing to complain about. But I swear, neither of us had any alcohol in our drinks. I had some citrus mojito which tasted like orange juice and my friend had a vodka tonic... or just tonic with lime, I should say. The food was not edible. The rice was mush, the fish was nonexistent and we didn't even finish it. We paid the bill- which lacked a drink charge, that was promptly added, and I left most of the food on the table... $40 later- I went somewhere else and had a "snack". I've given this place enough tries.

My co-workers and I (4 of us) went to Sushi Hinode for lunch based on a co-worker recommendation. We all got bento box lunches. All of the food was out of spec for temperature. The miso soup was cold, as if it had been made hours before and allowed to sit out at room temperature. The tempura dishes were not only cold, but were greasy as well. The vegetable tempura was undercooked and hard to bite into. My sushi was room temperature (not cool, as it should be if the fish had been under refrigeration), and very fishy smelling. None of us could finish our food.

I had high hopes when Hinode first opened, finally a great sushi place in Frederick...NOT. If you liked canned muzak while you eat, or worse - 'soft rock', sushi that is less then average, and a HORRIBLE wait staff - this place is for you! Frederick STILL doesn't have a good sushi restaurant, i'm sorry to report. What's worse , it's not cheap. Maybe they will go under soon, and a real sushi restaurant will take over? I miss Kyoko (which was also, only so-so). We still go to Rockville, Momo-taro for sushi.

Love this place! The sushi is great, the service is great (ask for Shawn or Nicole). A change in music or perhaps live music would be my only suggestion. We'll keep coming back for sure.

We used to always go to Hinode almost every weekend for sushi, have not been in a while but recently went and found the quality not near is good. I hope they bring back the freshness soon.

Great sushi, great service, good atmosphere. It's located right along Carroll Creek next to Ben&Jerry's and Five Guys. I came here late one night with two of my friends and they gave us a free order of sweet potato rolls--it definitely made my night!

I think Hinode is the best sushi place in town. I have never been disappointed at Hinode. The pork katsu is great and I love the bento boxes. Salmon teriyaki is also very good. Service is efficient and friendly.

Hinode was a disappoinment. The bulk of the seating is in a large room with terrible acoustics. It does not feel inviting or comfortable. The sushi is overpriced and unremarkable.

So first encounter with Hinode was not for eating at, initially.. We were on a huge scavenger hunt for the Key City Roller Derby team of Frederick and needed chopsticks. We went to Hinode and explained and said that it would end in 45 minutes and my wife and I wanted to come back and eat.. He manager looked at me really oddly.. and just said "Gimme a dollar"... acting like some weird playground bully. I said 'really'??? and he nodded.. ok - i have no problem paying for them but to give such an attitude to future customers, was horrible. So 3 months later our friends decide they want to eat there.. I decided to give them another chance. It was a sunday @ 5:30. We stood at the reception area for 5 minutes before the sushi chef yelled to us "go sit. we ll find you"... so we sat. On our way in we told asked the waiter for a high chair for our 16 month old and he said sure thing.. 15 MINUTES later he comes and asks us for drink orders.. we tell him and ask for a high chair again... he mumbled something and went off.. 15 more minutes pass and we get our drinks. My water tasted like metal and he was so fast throwing the drinks on the table and running off we couldnt even ask about the high chair. Our friend got a fat buddha or something and she said it was revolting.. her boyfriend got sake - in a bottle.. with no glass. We asked the waiter again for a high chair and a glass for him.. 10 more minutes (40 total) and nothing. We go looking and get our own high chair.. We cant order sushi as he still has yet to give us our menus.. We looked at each other, looked around, and only 1 table had sushi - and it was 1 roll... Our friend paid for her mixed drink, and he politely told another waitress he didnt want - as we were leaving. She grunted at him, snatched the bottle from him, and TOSSED it into a sink.. He told her the bottle was unopened so... We will never go back. Ever again.. (I asked our usual sushi place, Miyako, what chopsticks costs and he said he wasnt sure but easily under 5 cents).

Tried Hinode on Carroll Creek this past friday. It is nice to find a place that we can get a trusted sushi meal. I tried the Mexican roll, which was a special for the evening. Tuna, ginger, jalapeno, and cilantro in a roll. My fish was fine. Thought it was fine. My wife got a tuna roll and was put off by the fact that they minced the tuna. Why are you mincing your tuna in your regular tuna roll but not in the special roll? Are you not turning your stock over enough, are you using pieces with sinew in them. My wife was not a fan. The menu looks interesting for the cooked entrees we just didn't have time to have any.

It doesn't deserve a 2 star review! I panicked when I saw the review because we had just ordered our meal and I was so sure It meant "everyone that eats here becomes ill!" but it's mostly people complaining about the ambiance and the waitstaff. I think the prices are average and the sushi was totally decent! Our waitress was nice and kept an eye out for when we wanted to grab the check. I'd eat here again. :)

Pros: It's on Carol creek which is scenic and has a nice outdoor area. Cons: The service was PAINFULLY SLOW, even though there was only one other customer. We felt like we were being ignored by the staff who were neither friendly nor helpful. The ingredients were buffet quality, and didn't look very fresh. The presentation of the rolls was sloppy and uncreative. The rolls appeared hastily made and even fell apart easily when picked up by chop sticks. The flavors were okay, but the portions were embarrassingly tiny. After dining here we went to Wendy's to get full. For these mediocre, miniature rolls the prices were absurdly high. Recommendation: This restaurant is a disgrace. There are no redeeming qualities. If you are contemplating this restaurant at any time for sushi, I suggest you skip the high bill, and go straight for the fast food that you will inevitably be seeking after.

I have been to Hinode several times, we went there last Saturday (June 16, 2012) and it was great. Great food, great location. I was concerned about the speed of service from other Yelp posts, but found the service wonderful. I really liked the Avocado salad and the Maki veggie platter. Can't wait to go back.

I am a sushi feign. I've had it all over the DMV area and was really craving it while in Frederick. The service here was pretty bad. The guy was aloof and was more concerned with chatting up friends or checking his phone. After our disappointing meal we had to ask for the bill because our waiter seemed to be avoiding our table altogether for 20 minutes. He never came back. The food made us all have an upset stomach. The sushi was poorly made and tasted less than mediocre. The chicken teriyaki was undercooked and slimy. You couldn't even bite into the broccoli. Basically we paid for an $80 dinner between 3 people just to all feel like poop afterwards. Definitely NEVER spending money there again. Barf.

Ugh, I was so hungry. How can you screw up chicken fried rice so bad that someone who was ready to eat her own arm won't eat it? I politely sent it back and thank the kind waiter for taking it off of my bill. I ended up paying $6 (includes tip) for some blah spring rolls.

Not bad, not great...hinode san. As ashley H, stated nice decor. I don't feel the $$ was worth a $ meal. I should've got the Chilean sea bass Nice location in historic Frederick. Lots of patrons. my bento box was ok. Won't repeat. But I don't regret for going in and giving it a go.

Good stuff! Andy at the bar is a great sushi chef who came up from the Rockville location. Personable and fast! We've sat in the table area twice and service was good. If you are not a sushi eater, that's okay! Plenty of other yummy stuff on the menu! My son loves the katzu chicken. I give them a 4-star rating instead of a 5-star because the sushi menu isn't very intersting. It's pretty standard. I'd love to see them get a little more creative with their rolls but I think they hesitate for fear of scaring off the "Frederick" crowd.

My sister begged me to come here again since she lives downtown and didn't feel like driving, so I begrudgingly agreed despite my prior experience. Things do seem to have improved. I decided to be brave and get an order of salmon rolls - they were well made and fresh. Not the best sushi I've ever had, but not awful either. I'm not sure if it was the time of day that affected the freshness or what - we went on a busy Friday night this time around, my previous horrific experience occurred at a late lunch early in the week. I'm guessing they get fresh shipments in for the busy weekend dinner rush. Though the fact that they would serve not-so-fresh fish at all when it comes to sushi is disturbing to say the least... I also got beef fried rice.. it was good enough, the beef was overcooked as far as I'm concerned though. I'll give them an extra star for actually serving fresh sushi this time around, but given the awful experience from my prior review, I'm wary of giving any higher. The prices are just way too high for for food that is really mediocre in quality and preparation. There are far tastier and affordable places in the Frederick area if you're in the mood for sushi or japanese cuisine.

I was terribly disappointed with the new restaurant. I had been eating at the Rockville location for years and loved the menu, the atmosphere, and the quality of food. So when I saw we were getting one along the creek I was thrilled. It seemed like it would take forever to finally open, and once it did, I wished it was still under construction. My first complaint with the new Carrol Creek location is that it feels more like an upscale fancy-pancy restaurant, not the down home, traditional Japanese restaurant that I was so fond of in Rockville. Let me state, that having been to Japan many timers, I would eat at the Rockville location because I wanted the traditional Japanese environment and food. Instead, I found the menu to to be full of high-end American dishes, or Americanize Japanese dishes and certainly things not typically found in any Japanese restaurant, in the states or in Japan. The menu was completely different than that of the location in Rockville, and it was very difficult to find anything on the menu that really was of interest to me. The cost of the food too in Frederick was higher than that of Rockville, something of a first for me. I guess, the average Frederick yuppie makes more than the Rockville yuppies do now. If not for the same logo, I would not have even guessed that this was the same establishment as to the one in Rockville (or Bethesda) Still, I am so disappointed by the contrast between the two restaurants, that to this day I refuse to step foot in the Carrol Creek establishment, and still continue to drive to Rockville for the food and atmosphere I enjoy.

I'm new to the area and this is the first (and only) sushi I've tried. I was very disappointed. Not only were the rolls ridiculously over priced, the seafood was not fresh. With sushi, the seafood HAS to be fresh. I felt like I was eating week-old fish. Not pleasant. I'm crossing my fingers that there's better sushi in Frederick!

I've had a few takeout sushi combos from here, and today had lunch in. Today I had a special called sashimi bibimbap - which I'd never had before: chopped sashimi (about 4-5 kinds of fish), on lettuce and rice with a few garnishes (like a raw egg and some caviar). Put some of the spicy red pepper paste in, mix it all around, and enjoy. Decent enough, if not a standout. I remember feeling the same about the carryout. Even though food is decent, I can't go higher on stars. It just seems a bit overpriced to me. I won't claim to be a sushi house expert - I've probably only been to a dozen or so in my life. But for a rather modest ala carte selection of basic maki roll, salmon nigiri, tuna nigiri, and a seaweed salad ... it's well over $20 before tax. Stacks up the same for some other basic orders. Service today was also a bit lacking - not in friendliness or cheer, they just dropped the ball on my miso soup, and then took quite a while to get the check as well. In a fairly empty restaurant.

I was not impressed. We live less than a block away and I have been eyeing Honide for some time. Their patio and location are fabulous, but I was off-put by the prices. (I don't eat sushi, but I love spicy Asian dishes) We went last week and were thoroughly disappointed. The service was SLOW, and the prices were high for the amount of food we got. We asked for water along with our beers and he never refilled them, even though they were empty for most of the meal. On the up side, I got the Pad Thai, which was really tasty, just a small portion. Not terrible, but we won't be back with all of the other great places nearby..

You know how they say that dining out on major holidays is strictly for amateurs? Well - I have another day to add to the list of dates on which you should just fire up the grill and stay home. Gallery Walk - First Saturday in Frederick. OMG what a fiasco. In the perfect little world I had dreamed up, I thought I was enjoying the perfect trifecta: 1. A gorgeous evening 2. First Saturday of August and tons of people strolling the town and enjoying the Dog Days of Summer in downtown Frederick 3. Picture perfect setting for 16 of us to enjoy an al fresco meal at Hinode on Carroll Creek Reservations for our outdoor tables were made weeks in advance. My brother and his family were coming for a visit - thrilled to escape the weeks of seemingly endless precipitation that was striking New Hampshire. What a welcome respite it was going to be for them to forget about building an ark and lounge instead in beautiful humidity-free Maryland! (Can you believe that Maryland was enjoying better summer weather than New England? How is that even possible? Truth stranger than fiction...) Anyway, after an hour or two of shopping and admiring all the adorable dogs dressed as cowgirls, we arrived at Hinode - hungry and oh so very very thirsty. We were happy to find our table all set and ready for us. Good so far! Saturday night, cool breezes, and the dinner table waiting for us. Happy. And now, sad. Because having the table ready was as good as it got that night. You see, as it turns out, it really was just the table that was ready. Nothing else. Nobody else. Not a single sole at the restaurant was even remotely prepared to serve us. 7:30, 7:40, 7:45. Ghost town. Finally, one of our more assertive family members waved down a man that looked like he could have been the manager. He mumbled something about finding someone and disappeared into the building. High hopes were dashed when this same suited man emerged from inside Hinode, alone, and proceeded to go off to smoke a cigarette. Finally, at 7:50, our server arrived. Woo Hoo!!! He apologized for the delay, took our drink orders and scooted back inside. We were all still in good moods - socializing, chatting, catching up. Well, the adults were still in good moods. The 16-20 year olds were getting anxious. And by anxious, I mean really Hungry. Around 8:00, our drinks started arriving. In shifts. First some water. But, they ran out of glasses, so only a handful of us got water. 5 minutes later, one bottle of wine. 5 minutes later - a lychee martini. They had also run out of regular sized martini glasses so the server promised to provide a free refill once my sister had polished off the mini-martini. Eventually, some of the men got their beer. The server told us that once we ordered our food, it could be a L-O-N-G wait because the kitchen was backed up and they were short staffed. We had no idea just how long L-O-N-G would be. And here's what irked me. I looked around at the rest of the restaurant - and it just wasn't full. Thinking it may have been packed inside, I looked in there, too. Nope. Maybe 1/3 of the tables had diners. So how is that they were so backed up and ill prepared? How could they be out of water glasses? And martini glasses? It's not like Gallery Walk is a surprise occurrence that the Downtown Frederick Partnership foists upon unsuspecting merchants randomly. It's the first Saturday of the month. Every month. That's why it's called First Saturday Downtown Frederick!!! Pretty much, you can be sure that if you manage a restaurant and you are paying the price to be located right smack dab on the creek - then you are going to be rewarded with hordes of customers on the first Saturday of the month. Especially if the weather is nice. Hello! Weather.com ...had you checked it out, you might have had a clue! I apologize for the sarcastic digression. But really what I'm trying so ineloquently to say is that it should not have been a surprise that people were going to be there to eat. Plan for it man, plan for it!!! Anyway...90, yes you read that right NINETY minutes after we arrived, dinner was served. Was it tasty? Yes. Was it fabulous? No. Was it worth the wait? Hardly. Was it enough food? Well, I'll just put it this way. Within four minutes, every one of the diners under 25 (6 of them) polished off the very small but pricey portion and high tailed it to 5 Guys to get something substantial to eat. And Kudos to 5 Guys - the 6 of them were back in 10 minutes with hot burgers and fries! (See picture above) Because we were all happy to be together and it was such a beautiful night, we did have a nice time enjoying the great outdoors and sharing glasses of water. I have been here 3-5 times, and every time I am hoping that it will be delicious because it is the only place for sushi in downtown Frederick. Usually, however, I am disappointed. The sushi is okay but overpriced. They do have some lunch specials that make it a more reasonable price, but overall it is mediocre sushi. Their house salad has a tasty dressing but is really overpriced. My biggest complaint about this place is that they charge way too much for average food.

Absolutely my favorite Japanese restaurant in Frederick. The decor is modern and sleek, and if you're lucky enough to get a table outside next to the creek, it's even better. Their miso soup is the best, so I always start with that we order some edamame for the table. I always order the lasagna sushi roll (imagine a California roll smothered with delicious warm crab dip) with a couple other simple maki rolls. My husband usually orders the fried rice, and as a person who isn't crazy about Japanese food, he loves it. Yes, the sushi is a little pricey, but to me it's worth it. I used to live in Baltimore and tried just about every sushi joint in the city, and Hinode definitely measures up. I have never experienced unfresh sushi there. Also, the service suffered a couple of years ago when they first opened, but if that was the last time you visited, give it another try. They've really worked out the kinks and are great now.

We made reservations here to celebrate a birthday. Not that we needed them but...better safe than sorry right.When we walked in it was DEAD. This isn't usually a problem per say but it does make you wonder if there is a reason. We informed the hostess that were first few people of B******* Party of 6 and they sat us immediately...but while my husband was in the restroom the server approached me an asked if we would mind moving. Not a problem...I guess but my husband who has had 14+ years in the service industry as a busboy, waiter, bartender and now a restaurant manager was really irked by this. The rest of our party arrived and it was on to appetizers. No issues there although we couldn't help but chuckle at the music selection that was playing in the background. The ambiance of this place is really not bad but when their playing eighties music it just kind of screws the whole vibe up. For dinner we ordered a wide variety of items - a few folks in our party opted for Bento Boxes and others selected sushi. The two that ordered Bento Boxes received their meals in record time and the rest of us were looking forward to sushi coming out any minute later. FF to 5 minutes later as we urged the other two to feel free to start with out us, then on to 10 minutes later as we implored them to eat before their food got cold, then 20 minutes later as they started eating. Finally our sushi arrived and we started eating. Let me also say that during this time the restaurant began to fill up and we watched several tables get sushi and other food items before us. We did order A LOT of sushi and once we got it, it really wasn't bad I will give them that but waiting 20 minutes is completely unacceptable. We capped the night off with a complete charlie foxtrot of a check situation in which we received a bill that was a mix of items some our and some not. All in all, the sushi itself wasn't terrible I am just not sold on the service.

I recently had the occasion to visit Hinode, and my co-diners and I all had a great time and some excellent food. The sushi isn't the best I've ever had, but it is quite satisfying. I couldn't resist ordering the fried Shumai, which in my experience is pretty hard to find. Hinode's were very good, if a little less crispy than I've come to expect. Service was excellent (the restaurant was nearly empty) and the atmosphere was nice. Sitting outside looks like an awesome option as the weather improves. It is worth noting that none of the staff nor the patrons were of an Asian persuasion, in sharp contrast with many other such establishments. Perhaps as a result of this, the music playing in Hinode is not what you'd expect in a Japanese restaurant! ;) I look forward to returning to Hinode to try some of their non-sushi cuisine! As another reviewer mentioned, the sushi selection isn't enormous (if you don't count the 4 or 5 different kinds of California rolls!!) so I may find myself branching out on my next visit. P.S. If you can't walk to Hinode, use the nearby Carroll Creek Deck to stow your car before enjoying your meal. Parking is $1.

Waited ten minutes before anyone acknowledged my existence here. There was no hostess so I sat at the bar and watched the bartender and sushi chefs go out of their way to not look at me. Finally I asked one of them if they had the spicy pink lady roll. He said no and walked away. There were only five people there so there was really no excuse. I gave my sushi paper to a chef and he took it, then left it at the cash register. I waited for five minutes. Still didn't have a drink so I gave up nd left. I've heard they have good food but I'll never know.

We went here for my birthday and it was alright. The atmosphere is wonderful, either inside or outside. I did enjoy the sushi and everything tasted very fresh, although a little expensive for going every day. We also ordered entrees and that's where they went downhill. My sea bass was very fishy tasting and the sauce was incredibly salty. My husband and sister ordered the filet which they ordered cooked at different temps. The waiter had no idea which was which and honestly, neither did they once they cut into them...they were exactly the same. They did not refill our drinks and took forever to bring out my birthday cake that my husband had brought for us to enjoy. Overall, it was nice to try to satisfy my curiosity but I doubt we'll return because of the lack of amazing food for the price.
