Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

This place never disappoints me. Clean. Fast. Delicious. Friendly staff. Fixed me up a burrito to go today that was perfect for what I wanted. They add all the extras the way you want. And all are fresh ingredients. Today I had the queso Diablo burrito. Not too spicy at all. It was quite nice but not nearly as good as some others I've created there. Queso had some pleasant heat in it too.

Consistantly good and quick Mexican food. Step or 2 up from Taco Bell. Its Subway for burritos.

Standard Qdoba.. popular student spot because of its close proximity to campus. Sometimes the meat seems a bit on the dry side. Place is mostly clean and organized. .

My favorite Qdoba in Lexington. The portions are big and the price is right. It is Mexican fast food. Burritos, nachos, tacos, and more. They also have a frequent buyer program where when you buy 10 entree you get the next one free. Bonus: Thursday thru Saturday starting at midnight, they serve breakfast burritos and quesadillas. Highly recommend.

Menu is more creative but lacks the focus on quality ingredients that chipotle has. The queso is prob my favorite of any Mexican restaurant and the poblano pesto is very tasty. Aside from those two specific items the rest seems to be a bit lacking when compared to chipotle.

I love this restaurant because it can accomodate most diets. The meats are really good, I always choose the chicken, although I've tried all of them. I love their pico de gallo, its very fresh tasting, as is their guacamole. My favorite dishes are the chicken nachos and the chicken taco salad. Not a huge fan of their flour tortillas, they are kind of gummy. Overall, a great place to eat, I've been going there for years!

This place got me through a rough semester at UK it's yummy and cheap and accepts plus account. I go for the naked chicken queso burrito with yummy corn salsa works every time!

When I read that this bland chain got the best Mexican rating in Lexington I had to jump in. Folks this stuff is barely a step above Taco Bell and the school cafeterias in the southwest often make better burritos.

Food was pretty good restrooms filthy food handlers using poor habits for preparation would be a last resort in Lex!
