Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

There is nothing Negative I can say about this place. I absolutely love their barbacoa and menudo! The tamales are also something good to eat. Come here at least once a week because its my favorite place to eat in wichita! Hubby and I love this place

I remember the first time I went to this restaurants; there were many locals packed into this small building I knew it would be good. This time around the restaurant expanded and opened the other side of the building, so it more spacious and able to fit larger groups. We ordered two pounds of Barbacoa with tortillas. It's also served with shredded cabbage and cilantro, onions, and lime. The meat was packed with flavor and extremely tender. The value is great and can feed 4+ people. They have a red and green sauce that I believe is homemade. Service could be better. Waitress got our drinks and brought the food and she never returned to fill the waters up.

If you're looking for local authentic mexican food that is actually good, then this place is the real deal. On my first visit I ordered the guisado rojos plate. The meat was flavorful, but not overwhelmingly spicy..just right. It was accompanied with a condiment plate of diced cabbage and cilantro, onion, sliced limes, and two table salsas, both being fresh and tasty! The beans and rice were near perfection as well. There was one waitress for the small dining room, but she was very efficient at her job and bi-lingual as well. I cant wait to go back and try more items from the menu.

Get the barbacoa tacos and the rice and beans...thank me later. Never in my life have I had something so amazing and wonderful and delicious and...I have dreams about these tacos. Use your spanish! They will appreciate it, but won't care if you habla ingles either.

This place is truly a hidden gem! I am going to write Guy Fieri and tell him to check it out. The huevos rancheros are to die for. The sauce is bright orange when you order it hot and it is absolutely delicious, not out of control hot- hot- just perfect!!! I don't know the name of the sandwich but it is a flat bread like sandwich with meat and cabbage and although it is very simple it is very good. Limited seating, but worth the wait.

This is my top 3 places to go try in KS period. There aren't that many taquerias around Wichita so I definitely recommend this. This gives off a hole in the wall type vibe with cheap prices and good portions. The first thing that I'd have to recommend is their popular gorditas. And noooo these aren't even close to how Taco Bell does theirs. HAHA! I loooove their red meat and their taco tray that is basically like a half pound of barbacoa with a tray of cilantros, onions, and limes. Simple but delicious! their portions will not fail you. I was totally full off four gorditas: red meat, two chicharrones, and cheesy pepper! Now let me rewind and tell you about these gorditas. These are similar to a Papusa which are masa based tortilla with fried beans, chicharron, and cheese all melted inside. The gordita is a similar masa tortilla that pockets the stuffing inside while it has a small slit opening to see the filling. For $2 these are so worth the try. I'm so jealous that we don't have these back home, or at least I haven't seen any YET! I can just sit down and keep eating these like nothing. The we have their highly popular taco-making entree. My gf recommended me to order this because I it's not only delicious but I get to make my own. Now I have to remind you that El Rancho does NOT serve carne asada so this may be a big deal to us Cali folks. We love our steaks back home! They specifically cater to making probably the best barbacoa around town. It really was great! the meat is shredded and marinated lightly but enough to taste the adobo-type mix. The hint of cumin and bay leaves all mixed with a light chipotle sauce had made this meat on point. Now idk if theres more or less to it, but their barbacoa is tender and moist. The experience of just scooping whatever amount into a corn tortilla and and topping it off with fresh onion-cilantro with a pinch of fresh lime! YUMMMM! LOVE IT! I will def be coming back for more the next time I'm in KS! Thanks MiMi!

This place refused to take our restaurant.com gift certificates that we had purchased less than a year ago. They said that numerous people have been bringing those in and that they didn't know where they had come from! They came from restaurant.com ! There was this meat on the menu called menudo, that we asked what it was , and she said there was no English word for it, but that she would let us try it... We tried it and it was not very good, and we got an uneasy feeling. We asked a customer about it and she said it is trite. I was like oh, stomach meat? Maybe the waitress could have discussed that before we ate it.

My visit to El Rancho is the first time I have legitimately had to regress to my high school Spanish to make an order in Wichita. Fortunately, if you can parse the phrase "Especialidad Del Rancho," you'll be fine, because you'll be getting barbacoa. Lots and lots of fatty, juicy, tender barbacoa, in proportions starting at the half pound and increasing from there. Served with tortillas alongside a plate of shredded cabbage, cilantro, onions, and limes, there's little else this restaurant needs to provide.
