Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Good food, big portions. I had the Carne Asada burrito -- twice. Very tasty. The experience would be improved if they had more and better condiments, like at Taco Cabana (e.g., San Antonio): the jalapeno slices were buried beneath a bunch of mildly spicy carrots that were a poor substitute, the salsa was watery, and Taco Cabana offers various forms of pico, salsa, and spice (e.g., cilantro) to customize your meal.

Real Mexican street tacos. Never thought I'd see that in flyover land USA. Open 24 hours, this is great for a meal after getting out of work at 2 in the morning. Carne asada and marinated pork are my favorite. Refried beans and Spanish rice are okay, kinda bland. Tacos are in a double corn tortilla, with guac and chopped tomato, onion, and cilantro. One time only have I had to have flour tortillas instead. I prefer the corn.

Pancho's is pretty darn good. That it's open 24-7 makes it much better. Instead of being like a typical fast food Mexican or tex-mex, Pancho's is more like an actual Mexican restaurant with a drive-thru window. The flavors are much more authentic. The first time I went something in my meal was giving off a scent like an ash tray, but I was convinced to go back and I'm glad I was. The nachos are huge and delicious, the quesadilla is huge. The smothered carnitas burrito has quite a kick to it. The "rolled tacos" are basically taquitos. The guacamole is blended to to a paste-like consistency so don't expect it to be chunky. I will be eating at Pancho's again and exploring more of the menu. I recommend you do, too.

Horrible experience! I wouldn't give them a star if that was an option!! This was my first time here, we had a larger order today and of course we didn't get everything! When we first came back they said they wouldn't do anything and then they FINALLY stated they would redo it correctly and take it out of the cashier's check who messed up!! The guy had a major attitude and I don't even trust eating that food now...no thanks!! Good customer service goes a long way jack ass!!

They have the best burritos with loads of meat. Made fresh every time we order. We also really enjoy the breakfast burritos and make sure you get there sauces all of them are good.

Descent food, nothing amazing. No cheese on several entrees that strikes me as odd (like tacos.) Salsa is very watery and lacks flavor. Upside: drive through, portions are huge, and they are open 24 hrs.

Made while you wait. Grilled Fajita Chicken burrito is filled with lots for grilled veggies, chicken, beans. Just add a most awesome pico-de-gallo and green tomatillo sauce. Chips and hot sauce of So good. I am a tough critic for Mex. today was first visit, will be back tomorrow for more of his huge menu.

Great Mexican food! Had fish tacos, chicken chimichanga, and crunchy bean burritos. Good, friendly service. Best Mexican food in Salina.

Best Mexican food in town! The food is made when you order it and the staff is always friendly. I have never had anything here I haven't liked. The #16 is my favorite though. LOVE PANCHOS!

I was dubious about what I'd heard about Pancho's--which was that it was great--but it really delivered. I had the carnitas plate. The food was delicious, with homemade taste, for a very reasonable price. The pork was tasty, crispy, and soaked up the great salsa selections provided. Hands down, this was some of the yummiest Mexican "street food" I've ever had -- in the middle of Salina, Kansas! Definitely worth the stop -- don't let appearances fool you.
