Solid BBQ, tasty sides and lots of interesting Photographs on the walls

I'm in town about every other month and always drive thru for the rib dinner. It's a lot of good food for a low price. Sausage is very good too. I recommend this place.
(4)Jerry P.
I asked a local about this place and his reply was it is passable...Iguess I should have passes it by. The brisket was dried out and really looked like it had sat there a while. The onion rings were greasy and really not that good. The best thing I had here was the bbq sauce and pickels. My opinion even if you are craving bbq go to micky Ds and order a mic rib.
(2)Amy H.
This place is pretty tasty and you get a lot of food for the price, but it's not the best BBQ I've ever had. The biggest drawback for me is that everything is very sweet and I prefer smoky/tangy. Between us, we tried lots of things...my favorite was the burnt ends...very delicious and unusual. Ribs also very tasty as was the "slammer," a sausage stuffed with other meats and served hot dog style. As others have said, coleslaw was soupy and nothing to write home about, but the potato salad was very tasty. The potato wedges are uniquely seasoned with BBQ rub which gives them a delicious spicy sweet flavor -- very different and delicious. Worth a try.

We got into town from a long day of driving (Santa Fe to Salina) and were so happy with our meal at Hickory Hut. We had the beef brisket and pulled pork sandwiches and among us tried the baked beans, coleslaw, and french fries for sides. We got in just before the dining room closed, but everything we ordered was fresh and hot and delicious. The whole place was smoky, which we considered a good thing as it let us know the smokestack was on the premises and smoking away. The BBQ sauce was sweet but very tasty, and they didn't drown the meat in sauce, so we could use as much as we preferred. Also great was the little fixins bar, which included fresh jalapeno, chopped onion, and delicious pickle spears.

I had lunch here and got there before the lunch rush. Service was quick. You place your order, provided with number, pay, and then someone takes the food out to you. They, also, have a condiment bar with pickles, raw onions, jalapenos, pickle spears, BBQ sauce (mild and spicy) and other items. I had the Junior Beef Brisket (sliced) and the mild Polish Sausage. To my disappointment, the beef brisket was more like pulled brisket and not in actual slices. The brisket was dry and not as tender as I hoped it would be. The sausage was moist but very salty (and I tend to eat on the saltier side for my foods). But the BBQ sauce was tasty. Best BBQ I've ever had - Nope! Would I go back - YEP!

Always good, best ribs around. We drive across town to eat here when "Brand X" BBQ is right up the street.
(4)Robert B.
Now for Salina standards, it's probably pretty good. It's been awhile since I've actually been there, but they've been there forever. I thought it was a bit pricey for what you get, but bbq can be expensive. If you've got the time, drive to Smolan and eat at the BBq restaurant in the old high school it's a buffet, so you'll definitely go away stuffed. And it is good!!!
(2)Michael W.
Only BBQ place worth going to in this town. Local and very good.
(5)Michael H.
Great Bbq. Burnt ends were excellent.
(3)Mike M.
Burnt ends were pretty good. Came with half chicken, huge. Bean were very good, nice smokey flavor. Slaw was wonderful, not a lot to it but lotsa flavor. Eerie quiet atmosphere.
(3)Stephanie T.
Great restaurant! Would definitely eat here again. The lady at the register was so nice and the food is exquisite. Tip: They offer military discount.
(5)Dimas H.
The best bbq joint! Went to hog wild yesterday, that was gross...hickory hut has the best burnt ends and brisket!haven't tried the rest yet, but definitely will be back
(5)Moe A.
Beef brisket sandwich hits the spot great flavor 4 out of 5 just because it's a bit pricy
(4)Elysse A.
Only four stars because I'm a southern bbq snob and kansas is a bit too far from the mason dixon for me. That being said, the beans are the best I have ever had! while they could have had more of a kick, they were so sweet i had images of honey combs dancing in my head while i ate them. So worth the stop!
(4)Kent M.
This really not a fair judgment as we had a late lunch 3p so probably did not get best test. We both had a hot link, I also had 3 pork ribs. They were both real good, and dryer as I prefer always. Friend had a sandwich and said was good. We plan to stop again. Fresh jalapeños available at condiment counter so I was impressed positive. Thanks folks. Will try you again.
(3)Andrew M.
French fries, potato wedges, and sweet potato fries are good. Burnt ends, ribs, and pulled pork weren't tender but were flavored well. Bbq sauce is a good consistency but forgetful in taste. Sweet tea was syrupy and too sweet (and I'm from the Southeast).
(3)Harrison S.
Great food, good prices, really nice people!
(5)Spencer D.
Can't go wrong with anything at Hickory Hut! Burnt Ends are hard to come by sometimes, so don't go their with only those in mind. Stick with their normal fries, but definitely get the sauce they give out with their sweet potato fries and you will not be disappointed! Their slaw is average at best so stick with beans or potato salad.
(5)Jeff H.
Found this little gem while searching Yelp and it was delicious. Walking into the restaurant you know they focus on one thing and one thing only and that is their BBQ. I had the 2 meat plate with the Pulled Pork and Burnt Ends. The Pulled Pork was delicious and worth 5 starts. The reason I rated Hickory Hut 4 stars was for two reason 1) the Sweet Potato Fries are OK and I wish there was something green to pair with the massive amounts of meat they provide. If you are looking for a good BBQ joint, stop into this spot!
(4)Rich R.
Was really looking for the burnt ends, but they were out. Tried the pulled pork and wasn't disappointed. Good prices, great BBQ, and unbelievably wonderful baked beans!
(4)Ashley W.
My mom and I stopped at Hickory Hut on or way from CA to VA. This place definitely hit the spot and everything from the pulled pork and chicken to the sweet potato fries, baked beans and toast were amazing! It was worth going out of our way for :) Way to go Hickory Hut... You showed us what Kansas BBQ is all about!
(5)Justin H.
Always stop here driving to or from Colorado. Great BBQ. Ribs are big. Get the party potato as a side if they have it.
(5)Lindsey I.
I would say this is the best bbq in town. Maybe not the best ever. Also closer to a $$ than $. Brisket is good. Love the ribs. But you should always get a Sainte fe spud. They are great!
(4)Diana L.
We were traveling through town on our way home to Michigan and we really wanted to experience Kansas BBQ. We got online and Hickory Hut came up as top pick/best rated in this area. Not sure if we had too high of expectations based on the reviews we read, but we were not impressed. First of all, many commenters said the "service was excellent" and we were confused by this because you go to the counter and put in your own order, and get all of your own condiments, napkins, plasticware, and drinks yourself. Not that this bothers us in any way, we just had no contact with service other than a lady came up to our table one time after another lady delivered our food, and asked if everything was ok. We ordered the family sampler and indeed the portions are rather large, but we felt the food was luke warm, and the flavor was very average. Their hot sauce is called "extreme" and my husband said its more sweet than it was hot. Overall, we were disappointed. We did get there 20 minutes before the dining area closed, so maybe we got the leftovers that were just being kept warm at the end of the night, but this is unacceptable. Also, their website says they are open until 9:00, but beware, the dining room is only open until 8:30 and their drive thru is open until 9:00pm. On a positive note, their dining area was very clean. Unfortunately, we pulled over hoping to experience awesome Kansas City BBQ...we are still looking.

Some darn good Que. Brisket - perfect smoked flavor, tender to the pull and very flavorful with little fat noticeable. Pork - pulled pork was darn good also. Great flavor all by itself. Sausage - we got the Spicy and it had a pretty good kick to it. It was a little different than I am used to in that it is small sauge links, not the large links you might be used to. Ribs - very tasty as well. Came with a little caramelized sauce on them that added just a little crunch. Very tender fall off the bone. Sauce - had their normal sauce and just note it is a little sweet. Not in a bad way, but it is a sweet variety of sauce. Cole slaw is very good. Baked Beans are good, not great, but very good. They too are sweet. Potatoe Wedges are very surprisingly good. They use a seasoned salt. Prices are actually very reasonable for Que.... All in all, great place to stop. NOTE - it is very small inside. When they are busy, hard to find a seat.... ANOTHER GREAT --- had a drive thru, don't know if it is really operational, but DAMN, Drive Thru Que ---- wish they had this in California

what a nice surprise! Absolutely delicious ribs, potato salad, and beans with a side of Texas Toast. Food that took TIME to make. Delicious ice cold pickles. Clean, pleasant surroundings with interesting wall decor. Skip the coffee, weak and only powdered creamer..yucky.
(5)Maya K.
Get the burnt tips! Had a great meal here on a long drive. Friendly staff, kid friendly place, delicious food.

Was in Kansas in April for a concert. I googled "places to eat" and this place showed up. Didnt have to drive far because the restaurant was across the street from my hotel. I couldnt decide what to order. The lady that worked there was polite and patient. She kindly suggested a few items I should try. I ordered the ribs, pulled pork and the Sante Fe potatoes. The ribs were moist and fell off the bone easily. The pulled pork was alright. The potatoes was the best thing out of the three things I tried. Dont remember what was in the potatoes, but it was yummy.

When I first walked into the Hickory Hut I thought I was walking into a doughnut shop. There were so many cops eating there. :o) Joking aside, I was on a drive from Denver to OKC and this was the only place along the route that I could find that intrigued me. And as roadside restaurant this place is not too bad. But as a highly suggested place to eat Q in the holy state of Kansas, it is a disappointment. I ordered the burnt ends. What I received on my plate was yesterday's left over brisket re-cooked in the Hickory Huts over sugary BBQ Sauce. Burnt ends are supposed to be caramelized, bark covered chunks of the deckle end of the brisket. What was on my place was tough, kibble like pieces from a brisket scraps leftover from the previous day. It was just awful, embarrassing actually for a place with their renown reputation. On the plus side the spicy hot link was tasty, but without character. The ribs were meaty and cooked too perfection. BUT, everything is slathered with their overly sweet sugary bbq sauce. The sauce has no character or taste profile beyond the cloying sweetness. In short, if you are hungry for a hearty place of meat on I-135 around Salina, check this place out but bring lower expectations than I did, and you may be more satisfied than I was. BTW, I am a certified Kansas City Barbecue Society competition judge. I burn about 2 cords of hardwoods every season in my smoker at home. I know Q and this place was just disappointing.

Great bbq. Had the slammer which is rummored to be the best by the locals. Split sausage covered with briskit. Kinda a fancy chilli dog but WAY better. Sweet potato fries were average but not a big fan to begin with. Highly recommend to friends and family
(4)Dave G.
Awesome BBQ, Burnt ends- The Best, brisket & pulled pork, outstanding ! ! ! Nothing like K BBQ Intense sauce & hot sauce make the experience Outstanding. Crispiest, HUGE onion rings & lip smack ' n sweet potato fries mad this a memorable experience that will need to be repeated on our next trip down I-70.
(5)Jaime G.
I always enjoy everything, never any complaints on the food. Sometimes they can be busy. Long lines and it's hard to get a seat with large groups. I always call in a take out order, problem solved! LOVE the sausages made from scratch! Beans are the bomb! You can't go wrong with anything on the menu.
(5)C S.
A local recommended this place as having good barbecue. There was nothing about any of the items I tried that would ever draw me back to this place. I tried sausage, brisket, ribs, onion rings, sweet potatoes fries, potato salad, sauce and baked beans.
(2)Natalie B.
Hands down my favorite BBQ place. I live in KC but haven't found anywhere that can satisfy my BBQ cravings even half as well as Hickory Hut. The owners are really friendly and service is quick. Portions are large and a great price. I usually get the beef or pork sandwich with baked beans and potato salad or the Santa Fe spud. All are delicious with lots of flavor. The only drawback is that you smell like barbecue the rest of the day, but is that really such a bad thing?
(5)Karl B.
Best Bbq in town!!! Highly recommend the slammer sandwich with a sante fe spuds and hot sausage link. Holy cow good. And all the pickles you can eat.
(5)Brad S.
I would say average. Brisquet was more like pulled pork. Portions huge for price. Sauce tasteless? A good value but no 5 star place. Maybe I should have ordered ribs?
(2)Shawn K.
The only reason I would have been in Kansas would be a specific reason...but I was there for the better part of a month for job training with my current employer which is also based in Salina. Being from the east coast, I like to think I have a good taste for BBQ. On recommendations from peers who are locals and google, Hickory Hut topped the list. One night, I decided to try it. conveniently, they have a drive thru...how drive thru BBQ would taste, well, I got back to the room, and started eating...the aroma was amazing! the brisket was tender and well smoked, the baby back ribs were falling off the bone, and the corn bread was really tasty. I'm a sucker for a good piece of corn bread. the service was friendly, their speaker box wasn't working so they had someone outside taking the orders. she was very accommodating as it was my first and probably only time in Kansas. it wasn't too pricy but for the price, I was very satified. If I get back there, I would most certainly return to the Hickory Hut.
(4)Michael L.
Staying over night and had dinner. Burnt ends and briskit. Wow great and the beans and sweet potato waffle fries were great as well. I would definately go again. Not fancy but not without atmosphere. Nice smoke and sauces.
(4)Jen D.
This is wonderful BBQ! Service was friendly, they didn't grumble that we came in 15 minutes before closing time. A ton of delicious food for the money you pay. We had the two meat plates- ribs were falling of the bone. Delicious! Also tried the brisket and pulled pork with both sauces. Very good. The slaw tasted fresh and sweet. My only regret is we discovered this place 400 miles from home on a road trip !
(5)Summer D.
I love this BBQ! They have everything: ribs, pulled pork, sausages, chicken, Burnt ENDS, brisket. Not to mention coleslaw, fries, beans etc. There is tons of daily speicals. I had a rib basket for lunch for only $8.00 came with one side of choice and a drink. And there where 6 ribs. YOU Wont go away hungry. and if you do then it is your own fault for not eating there great food.
(5)J G.
3 1/2 stars as I was told the best around. Pretty good, but ribs were a little over done and brisket comes chopped up. I. Had them leave sauce off the brisket them added my own and think that is best. Obviously popular, but would not win any completion.
(4)Bill B.
We love good bar b q and this restaurant was just a short distance off the Interstate. The time to go is early dinner as there are no large crowds nor waiting. The bar b q is very good and you can smell the smoke as meat is being barbecued right on the premisses. We don't cost all our meats with a sauce that we not yet tasted therefore we always order with the sauce on the side. Great place to stop.
(4)Buck C.
Stay away from the Burnt ends. The ribs are amazing. I travel all over the country for my job and it must say these ribs rank right up there.
(5)Lydia G.
Food was great. Prices also great. service - meh. I mean I wasn't offended or anything but not impressed.
(4)W B.
Very good BBQ. Pulled pork is good. Beans are excellent. Potato wedges are seasoned and very good. Ribs are tender and very tasty. Hot link is not hot to me, but still good. Small place, with parking lot that is always full. Sports memorabilia all over the walls with some pretty neat stuff. Only second to Oklahoma Joe's for BBQ in Kansas.
(5)Reed N.
I had the sampler platter, which included 4 meats and 4 sides for $20. I did not eat in the evening... just a couple of fig newtons. So if you try this platter you BETTER be hungry. The platter included chopped brisket & pork, a hot link, and two complete ribs [which is actually 4 bones... 2 loin and 2 spare]. The meats were all good. They could use a little more smoke. The seasoning was very good, with just a hint of sweetness and some herbs notes that you usually don't find through all the other rub spices. Sauce was truly not necessary, but if you did opt for it think KC Masterpiece... sweet with celery... that is what I always said when tasting KCM sauce. The fries were great. No perfect, but pretty darn good. The potato salad was also a hit with me. The beans were OK... nothing special at all. The slaw was soupy but tasty and crispy... not my favorite style but that taste and texture was there. I never touched the Texas toast. It looked perfect, but you gotta save room for all the other goodies. They had a little side area were you could get pickles, peppers, onions, and other condiments. They also served Diet Dr Pepper... a BBQ must have.
(4)Ariana A.
I've been here two times on my way to Missouri with my Americorps NCCC group... and OH MY GOSH it was amazing both times. It's a real dive atmosphere with home style bbq. I have ordered the pulled pork sandwich, beef sandwich, side order of beans (with DELISH franks inside), and a side of fries (mmm mmm good). For the price, the food is amazing. At first I wasn't expecting too much but man was I DEAD wrong. Stuffed my face both times and will do it again if I ever cross through Kansas again.
(4)Mark S.
Passing by on I-35 and stopped for lunch. Decided to stick with the good stuff by skipping the plates with sides and ordered a half slab of ribs with iced tea for $16. Received 10 huge, juicy, tender, well seasoned ribs shortly after placing my request at the order window. The homemade pie slices on display looked great, but I left stuffed after eating six of the ribs. Managed to snack on the remaining four during my trip back to Dallas. I would definitely stop and eat here again.
(4)Kyle T.
It was not very good. The sauce was OK the ribs had a taste of chili. They had a smoker outside, but the meat did not taste like it was smoked. It may be good for locals or Kansas bbq...but I was not impressed.
