Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. I don't care what anyone says, I LOVE the Anchor. Is it authentic? I don't know. But I do know it's awesome! The chips and salsa are literally to die for, I could eat a truckload. And their pork burritos make me rue the day I became a vegetarian. As Paige C. said, the portions are ginormous, so make sure you're really hungry or you have something for lunch the next day. The buffet is by far the best option--you can make your own burritos and tacos and the salad bit has a nice variety as well. I will agree with others that the service can be a bit inattentive at times, especially when they are busy. Another downside is the fact that they are closed on Sunday and during the week they close at 2 for a few hours. Lame. Anyhow, the Anchor is by far the best mexican in Hutchinson and it's a fun night out if you're in the mood for talking and drinking.

The Anchor Restaurant has so much to like-- taste, affordability, speed, friendly environment, history. Whether your interest is entrees or buffet, you'll be happy here.

If you are looking for a wide variety buffet of Mexican food, then this is the place for you! The new edition on the north side of the restaurant is very nice and the place has an atmosphere unequaled by any other Mexican restaurant in town due to its lengthy lifespan. The place can get very crowded at which times I have experienced the servers forgetting that I was even there, letting my water glass run dry with only dreams of being refilled.

Great food. Fun fun atmosphere. A great go to with out of town guests.

I used to eat here as a kid, so when I visited here again after about 20 years, I was excited to try this again. I talked it up to all my friends who were with me and we sat down in anticipation. My friends spent the nite sick. I figured they were big babies; I didn't get sick. So I went back again a few months later (on another visit). This time, I got sick. I chalked it up to a late-in-the day buffet and that it might've been the flu. Who knows? I love their chips, tomato salsa, burritos and enchiladas! Yum! Went back again with my husband a few months later and we both got sick. Anchor's Away (their take-out store at another location, another kitchen) has always been great but I won't go back into the main restaurant again unless it's just for a beer. Bottled. No glass. It breaks my heart. My grandpa and I used to sell them tomatoes and habanero & jalapeno peppers from our truck farm.

Anchor Inn was a staple restaurant for my family and my friends when I was in high school. I remember eating myself sick on orders of chips (oh my god those fried flour chips) and tacos a la carte. It's been over twenty years since I graduated from high school, and I recently took a trip back to Hutch to visit the Cosmosphere with my partner. I'd planned to dine at Anchor, and was absolutely crushed, seriously devastated, when I discovered they were closed on Sundays. I pulled myself off the sidewalk, though, and resolved to come back on Monday. Which we did. We got there very early for dinner and so had our pick of seating. I was overwhelmed by the new expanded area, so we sat in the old middle area that I remembered. We placed our order and I sat in nervous anticipation. Would it be as good as I remembered? Was nostalgia clouding my judgment? The food arrived and my expectations were fulfilled. It was just as good as I remembered. Maybe even better. My partner was amazed at how good the food was--he even liked the rice and beans! The flour tortilla chips (they use them to make the tacos, too) alone are worth the three-hour drive from Lawrence. The combo meal (one taco, one enchilada, one tostada, rice, and beans) is plenty enough for two, but then you won't have leftovers. I'm docking Anchor a star because of that closed-on-Sunday heart breaker. Okay, fine religious reasons blah blah blah, but hire some freaking atheists or something. I'd have eaten there both days of my visit if I'd had the chance. This is not some fancy-pants nouvelle cuisine. This is greasy, fatty, heart-attack-inducing chow. You don't eat at Anchor Inn for its nutritional value, you eat there to feed your soul.

Another regular in our dining out rotation, this family owned restaurant seems a little tired as of late. I actually used their catering for my wedding, and they were very reliable and reasonably priced, but when eating in their restaurant, much of the food seems too greasy, rewarmed, etc. The portions are absolutely gluttonous and the buffet is cheap at 7$ The cold beer in frosty mugs really can't be beat though! The service is always fantastic. The new dining room is spacious and looks clean, but the rest of the place needs serious updating. Overall, I've probably grown tired of this place despite the cravings it created after I moved away from home.
