    After sampling a lot of what downtown Chicago has to offer this week, I decided to give the restaurant at my hotel a try - so I walked into Stetsons at the Hyatt Regency with few expectations and a hankering for seafood. I immediately liked the vibe - cheerful fire blazing, friendly staff, satisfied diners who looked like their needs were being well taken care of. Sitting at a table near the fire in the smaller dining area adjacent to the bar, I perused the menu and selected the barbecue eel sushi, then asked the happy-looking waiter what else he had in the seafood department. "Chilean seabass" he replied without hesitation. I selected the 5 oz sea-bass over the larger portion sizes, and it arrived very soon along with a slightly spicy but completely superfluous chimichurri sauce on the side. The sea-bass was delightful - perfectly flaky and moist with just the right amount of sear to it. I finished most of it before my sushi arrived! I was less impressed with the barbecue eel. Maybe there was nowhere to go but down after the sea-bass, maybe my unagi standards are astronomical as I live for eel, but it just didn't deliver for me in the freshness department. It was just ok. Service was excellent - especially the Chilean sea-bass recommendation which was spot on, so four stars in spite of the "meh" on the eel. I will be back for that sea-bass and get a bigger portion next time!

    Very nice restaurant with sophisticated ambiance. Good service. The food was good but not spectacular. The sushi was above average in taste and average in creativity and presentation - it does compare to a high quality sushi restaurant. We tried the Cap steak which I had seen several reviews rave about - personally I thought the steak was a too fatty. It wasn't tough chewy fat, but rather soft buttery fat - tasty but not texturally appealing. All in all a good experience.

    Bar tender was awesome, Deborah. A pleasure to speak with someone who loves her job. It shows. Food excellent! Chilean Sea Bass, asparagus, creamed corn, popovers and to start, kale Caesar salad with real anchovies! Why not 5 stars? In this price range it is what I expected. Will definitely be back. There is a lot on this menu!

    I had the pleasure of returning to the Hyatt Regency last week for business and catching up each night with friends at Stetson's. The sushi is amazing, but more important, the Stetson's Team rank at the top for customer service and helpful hospitality. A special call out to Debora. She has extraordinary IQ and EQ! Debora makes all of her guests feel like her best friends and is attentive to every detail. Please visit, you won't be disappointed!

    Delicious! I recommend the chimichurri sauce with the ribeye steak. The prime rib with the horseradish sauce is divine. Everything is overall a bit salty, but it is definitely recommended. Try the creamed corn!

    It was our last night in Chicago with our friend from Germany and we wanted to take her somewhere "fancy." This place fit the bill without being ostentatious. The hostess was friendly and welcoming. The dining room was cheerful yet elegant. Our waiter, Jose, was a knowledgeable and distinguished gentleman. He made several excellent suggestions that we followed, much to our satisfaction. The food was amazing! We started with the shrimp cocktail. The boyfriend and I split it. The shrimp were large, perfectly cooked, and flavorful. The sauce was a nice balance, not too spicy but definitely not bland. I had the filet mignon with sauteed spinach. The boyfriend had the ribeye steak with the asparagus. Our friend had the cap steak with whipped potatoes. We took Jose's suggestions for sauces. Every steak was cooked to order. The spinach was wonderfully seasoned. The asparagus had this marvelous horseradish cheese on it. Then for dessert was an apple pie with vanilla ice cream. So good. Cannot rave about this place enough. From beginning to end it was a fantastic experience and when we come back to Chicago, we will be coming back to Stetson's.

    Ok, so it was really hot and we didn't want to go very far (or at all) from the hotel. So we punted and crossed our fingers. And you know what, it was better that I expected. Service was good though can be a little overbearing. Too much pomp. But they were adept at handling an extra person we brought over with a "we'll figure it out for you" attitude that I did appreciate. The atmosphere is good too though the music piped in was too loud and a little strange. Go easy on it. As for the food, my dining companion though the steak was excellent. Nothing too over the top but good quality meat served right. Most intriguing was the sushi. It's overpriced, sure (hence the 4 stars) but two things make this memorable. First, BIG pieces of sashimi with high quality fish. The 9 piece sashimi was a BIG portion and much bigger than I expected. Add a roll on that and it was a very filling meal. The tale of two tunas (or something like that) was an excellent roll. Good preparation and fresh fish. Kudos on the sushi. But again, the cost is very high and it's not one of those places that I would pick as my "desert island" place in Chicago. That said, for a hotel, it was quite good and wouldn't hesitate to go back if staying there again. You won't be disappointed too if someone else is picking up the bill.

    I don't typically eat at restaurants inside hotels, but this one was recommended to me during my staff at the Hyatt while on business travel. The service, as expected, was very lovely. I had the rack of lamb for my entree, which melted in my mouse. The mushroom ragout was a delicious side - but a little too creamy for my taste, so be warned! Of course, expect to pay a lot to leave here full.

    Surprise, it was actually very good. I have been to virtually all of the top steak houses in Chicago (a tough job but somebody has to do it) and was planning on going to Chicago Firehouse this weekend until a fire changed my plans. Stetsons was not even on my radar but the Yelp reviews were solid so decided I would try it. I was not very hopeful, though, as it is hard to compete in the rarefied air of Chicago steakhouses and being in the Hyatt was strike two. As I mentioned, pleasantly surprised. Not the top Chicago steakhouse (that tier to me is RPM Steak, Benny's, Joe's and David Burke's) but comfortably in the next tier (Mastro's, Bavettes, Capital Grille). One big selling point is that they have a sushi bar, so we started with two sushi rolls. Both had very fresh fish and ample size. Spicy tuna was very good. Fiery hamachi roll was high quality ingredients but not fiery. Also had an order of crab legs, also very good. Not as good as Joe's, but more than enough for two people, easy to take out the meet and it was nice and tasty, not needing any butter. For an entree, I had the cap steak, which was great. The cap is the top part of the rib eye, which has a ton of flavor. You normally see it on the menu at Vegas' steakhouses but it is relatively rare (sorry for the pun) in Chicago and quality is very inconsistent. The cap was perfect here, cooked exactly as ordered, excellent flavor and marbling. Nice presentation also. We had whipped potatoes, which were not bad but nothing special. The wine list is presented on an iPad, which is consistent with the overall modern vibe of the place (not the old school steakhouse nor a typical hotel restaurant). Not only was the wine selection good and prices reasonable, there was more info on all the bottles than you would get in a written menu. Last thing, free valet parking, a nice surprise in Chicago. Overall, a very pleasant surprise that is worth going to again.

    A first I was a little nervous because the roll wasn't that good, but then my kale caesar salad arrived and it had a huge parmesan crisp and it was super good. Then since I was in Chicago I thought I would get a steak -- I ordered the 10 oz rib eye and a baked potato. The steak was the best steak I have ever had. It had a wonderful crust on the outside and cooked perfectly. I got the chimichurri sauce and it was really good but it overwhelmed the goodness of the steak so I just used a little throughout my meal. My baked potato was just a plain ole potato. The service was excellent, I liked that they had a guy standing on the side watching for anything you might need, a refill, clearing your table, etc. Overall an A++++ experience.

    Located in the Hyatt hotel this is a gem! 5 star service & 5 star food! For starters they bring warm popovers to your table. Cocktails are exquisite. Appetizers are generous. Hubby had the lamb chops & he was in heaven. He's a butcher & knows quality. I had sushi. It was perfect & not to salty as sushi can be. Dessert was A winning Nutella cake. The worst part was leaving this restaurant. The ambience was so warm & cozy. Can't wait to go back when in town!

    I don't know how I've been in Chicago for almost 9 years and I haven't tried this steakhouse! WAH. It's amazing! I really admit this might be the best steak in the city! My boyfriend and I had such a great time and enjoyed the food so much we want to come back again soon! Appetizer Grilled Octopus with apples.- what a great dish. I haven't had grilled octopus before but the flavor was very good. The texture takes some getting used to but overall very delicious. I'm glad I ventured out and tried something new. Main Dish Filet - This filet was done a perfect medium with a salt and pepper crust done to perfection! Inside was juicy and retained a lot of the good flavors. I paired this with Chimichurri sauce which added the perfect bite. Ribeye - boyfriend ordered this and also said it was the best steak he has ever had, wonderful marbling added to the flavor and the crust and doneness was perfect. They really know how to cook a good steak. He opted for the Applewood smoked bacon burbon sauce which was so soooooo delicious as well. Side Roasted Brussels Sprouts, Butternut Squash, Crispy Bacon - yum order this Dessert Opera Case - I would pass on this the texture was not what I expected a little tougher so I didn't enjoy this much. Overall can'y complain I was very full the service was top notch attentive and I really enjoyed the high quality and flavors of the food!

    I just embarrassed myself at this place. It was amazing... I'm in love with cap steak and the chimichurri sauce on the side was a wonderful complement, although definitely not needed. I also had the chopped salad with basil ranch and highly recommend. I don't even eat salads normally but the medley of ingredients are really nice, especially with the onion rings. We finished up with a blueberry compote that was out of this world. Wonderful all around! Beautiful restaurant, great service, excellent food. A little pricey but worth it. ($42/12 oz steak) I'm just so impressed with this place; a very nice surprise and I'm glad it was conveniently located in our hotel so that we could experience it.

    What a letdown! Heard great things about this place then this happened....Ordered sushi rolls and the manager comes over and tells us they are out of sushi rice! What kind of sushi restaurant runs out of sushi rice? Seriously? 9pm on a Sunday and you run out of sushi rice? Maybe just change the name to Stetson Steaks & Occasional Sushi? That would be more appropriate. So disappointed. You might want to call ahead and see if they have sushi rice before you get your mind set on sushi.

    Went here for dinner and it wasn't that crowded as I thought it would be. Our waitress was rude and she seemed like she didn't even want to be there. The only thing I like about this place was how tender and juicy my steak was. The veggies were bland, the soup was way too salty and it was boiling hot in the dining area. The over priced food doesn't help either.

    I do believe I felt like a sushi queen when eating at this restaurant. To truly make me happy, I don't need the frills of a waiter pulling the seat out for me or handing me a warm washcloth for my hands before my fancy meal. But, if it's going to be offered -- I'll take it. And with that, I give you Stetsons. Stetsons is part of the Hyatt Regency Chicago. Classy and filled with amazing sushi. My first "awe, yes" moment was when they passed out the warm, melt in your mouth bread. Woweewowwowwow. And from that point, I was pleased. The wine list? Pricey. The sushi rolls? Pricey. Everything was pricey. I don't usually splurge, but sometimes when you're a bit stressed and you need to unwind it doesn't hurt to spoil yourself. So, spoil yourself at Stetsons. I love sushi and this place really was top notch.

    Nestled in the Hyatt, this place is a must try as their steaks and sushi are some of the best food I had in Chicago. Since we were dining as a family and everything is a la carte, we decided to order "family style" and shared the various items we ordered. Sushi - Definitely good quality as we enjoyed the Rainbow and Spicy Tuna rolls. We almost were tempted into ordering a 3rd roll as we waited for our steaks to arrive. On the rainbow, the salmon and tuna tasted fresh and extremely enjoyable. Spicy Tuna roll also was very good but wasn't as spicy as I'm use to in previous Spicy Tuna experiences. Steaks - Thanks Yelp for this one! The Ribeye was definitely the highlight of our meal. Cooked between medium rare and medium - the steak was tender, flavorful, and had a variety of temps to satisfy our group. The Porterhouse, while good, wasn't as pleasing as the Ribeye. The Porterhouse was cooked more on the rare side but the plate also already had lots of juice so some of the flavor was missing. Sides - asparagus with cheese - pass. Too much cheese and it had melted together that it was easy to just separate the asparagus from the cheese. Roasted mushrooms - good complement to the steak as well. If the mushroom side had just a little more sauce, it would've been awesome to spread atop the steak. Whipped potatoes - good complement to the steak. Almost like having a baked potato.

    Went for dinner with a friend to catch up, we did not have a reservation, but got right in. They have amazing pop overs!! Maria was our server and she was great. We shared some apps including the stuffed calamari. The stuffed calamari was not to our liking, with out question Maria removed it from our bill . . . nothing wrong with it, but it is an acquired taste with lots of chorizo sausage (not too spicy, just really different) The lobster cheddar bisque was divine. We tried some sushi too and that was fresh. For a hotel restaurant it is really good and unique. For that and the service from Maria they get 4 stars. If you are at the Hyatt try it. Not sure if they validate. Enjoy!

    Great steak, but the sushi aspect of Stetsons was clearly an afterthought. The maki was on par with a restaurant costing half the price. The rolls were small, uninspired, and even poorly constructed. The sashimi wasn't anything to write home about. It was the Chef's Selection but it contained the three most common types of fish- salmon, tuna, and yellowtail. The presentation of the maki and sashimi was underwhelming, and the only reason I mention the presentation is that the prices are the highest I have seen during my first month in Chicago- $19 for a california (king crab) roll, $17 for a spicy tuna roll, and $25 for the Chef's Selection of six pieces of sashimi. The sushi menu at Shaw's is reasonably priced and is much more extensive. To conclude, I would not recommend ordering sushi here. That being said, the bread, steak, sides, and dessert were delicious. The atmosphere and service was fantastic. Don't bother with the sushi and this is a great restaurant- I plan to return myself after trying out a few other steakhouses.

    Loved eating at the bar! Deb the night bartender during the week is stellar! The food was very good. My husband and I ate there 2 nights in a row at the bar. We both had the 10 oz Spencer filets, mashed potato and mac/cheese sides, sushi, and cocktails. We spent waaayyyyyy to much at the Chicago Chop House a few nights before, and this place was less than half the price and the food better. We will go back on the next stay in Chicago.

    I went tonight on a Travelzoo voucher and I have to say I expected an average meal at best. I typically have very low opinions of expensive restaurants at expensive hotels. I view them as a way to grab expense account dollars while putting out dog food. That being said, I had a wonderful meal tonight. Bread was excellent. Like a cheesy Yorkshire pudding. Octopus was flavorful and unbelievably tender. The ribeye was the finest ribeye I've ever had anywhere. It was like butter. And the service was great as well All in all, a spectacular meal and I highly recommend.

    Absolutely outstanding. Per the reviews of other Yelpers I tried the Cap Steak and it was perhaps the best I've had in my life. Cooked perfectly med rare. I also ordered a side of mushrooms (which are easily sharable for 2-3 people) which were also delicious. My colleague got a filet and mac & cheese. I was able to sample the mac and it was also very well executed. Would highly recommend, though beware the price tag that comes with the territory here.

    The only reason why I ended up here twice within 2 days was because it was conveniently located in the Hyatt Regency where I was staying for a conference. It was late both days and I was exhausted. The first night I had the fish. A 5oz. white seabass that is. And it was slightly lacking flavor. But was cooked well, so that it was nice and flaky. The side of wild mushrooms helped add to the flavor. Their popovers were very disappointing though. Very dry and hard. The second night I shared a bunch of sushi rolls with my co-workers. Although the sushi was good, it wasn't anything spectacular. These typical rolls could be ordered at a regular sushi restaurant at half of the cost. They could've also done better with the presentation. I mean that's what you pay the extra bucks for in a restaurant of this stature, correct? All of the rolls came out on two flat square plats just lined up against each other. There was nothing beautiful about it. Their desserts. I am a sucker for creme brulee. So if it's on the menu, I'm most likely going to go for it. The portion was pretty big. It was ok. I was only impressed by it's size. The server shows you photos of the different dessert options on an iPad which I think is a great idea. Eco-friendly and easy to change up when swapping out new dishes. However my suggestion is to hire a better food photographer or dress up the desserts nicer with more coloring. The photos didn't make any of the desserts look very appealing. And for the price and beautiful decor of this restaurant, I would expect some beautiful photos of food porn.

    We are at the hotel for a 4 day conference and on the last night we did not feel like grabbing a cab, fighting traffic, and standing out in the cold in any potential lines, so we decided to dine in at the hotel restaurant. Now after eating steaks all week, the last thing i wanted was another but i saw a 12oz filet that grabbed my attention. I have to say it was THE BEST steak I ate all week, and that is saying alot vs. the powerhouse steakhouse of Gene and Georgetti's from earlier in the week. The asparagus I have to say was not all to desirable, and the shrimp cocktail was $20 for 3 shrimp so that could have been done a little better IMO, however Id come back on the next convention in 2016.

    Service was the highlight, and that wasn't saying much. While roasting in the 80 degree space, had the worst Hendricks martini EVER, suffered unpleasant appetizer bread that was excessively over baked, sushi was sub-gas station experience... Rice was amateur, seaweed soggy, even K-rab in the Cali roll!!! The saddest part of the experience was that they had REAL wasabi, not the fake green garbage paste, and there was nothing delicious to enjoy it with. In a city like Chicago, the bar is way higher than they are recognizing. Go elsewhere!

    Service is great. Atmosphere is sexy. The quality of fish is mediocre but I found this to be the case at majority of mid-west sushi establishments. So if your seeking fresh fish, you may want to downward adjust your hopes while in Chicago.

    Sat at the bar and had two fantastic Maki rolls. What was even better than the sushi was the service provided by Deborah. She was so, so personable with each patron. It was a wonderful experience.

    This place was just okay. I have a feeling it would be better if our service had been better. We noticed many of the tables, including our own, waited a long time for food and one table even walked out. I'm not sure if it was the kitchen, our waiter or the restaurant as a whole. One of the other waiters made a comment about our waiter not really being the "a-team" so that probably added to it. The steak was just okay for the price, but I found the sushi surprisingly very good. The chimichurri sauce I found to be a little disappointing. I think for the price it's not great value, but many hotel steakhouses seem to charge a premium. Don't get me wrong, the food was all decent or better, but for the price I don't think it's particularly good value.

    Sorry but this place ain't worth the price. I ordered California Rolls for $19 & it was NOTHING special about it...they didn't even any special dipping sauce. I've had sooo much better for a fraction of the cost. The menu is limited but the drinks were decent. If u want good Sushi, try The Reel Club.

    Recently opened and in the lowest level of the Hyatt, the food and atmosphere here are both great. The menu contains a lot of standard "chop house" fare with some interesting surprises. The anchovy appetizer is unique and tasty. It doesn't tasty fishy at all and has a great mouth feel. I also tried their line of sushi. Narrow selection but all well done. Very friendly staff and management. The decor kind of feels like a Mortons.

    Although I'm not usually a fan of hotel restaurants, this one is exceptional! The one and only glitch to our evening was the parking. It would have been nice if when we made our reservation we had been told that you can valet park your car at the hotel and they will validate your ticket for up to three hours of parking. Nice! Free Parking for dinner in Chicago. A deal any way you look at it. Unfortunately the hotel is under some construction and the directions for picking up the car were a bit confusing but of course we did eventually get the car. Now onto the stars of the evening, the food and the service. Our waiter was awesome. He was super friendly, helpful and professional. We began our meal with the grilled octopus. While the small ends of the pieces were a bit charred the dish itself was excellent. The meat was not chewy but tender and delicate. The plate was well balanced, hitting all the right spots on one's palate, On our waiter's recommendation both my husband I ordered the rib eye steak. Both of ours were done to perfection. We ordered it medium rare and that was just how it came out, not overcooked and not still mooing. The meat had just the right amount of seasoning rubbed into it. You have your choice of sauces to go along with your meat. I chose the horseradish cream and my husband chose the applewood smoked bacon bourbon. I think that we both liked the horseradish cream a bit more, but you have to like that kind of thing. The other was good too but tasty more gravy like to me. As an added treat we were both given a sauce made with fois gras. This was the best sauce yet. It's not even on the menu as an option so I don't know if the chef was just trying out or what was going on. Other tables didn't get it. We both loved it so I hope they put it on as a regular option. As a side we had the asparagus. It was delicious. In spite of being in a hotel I would look forward to returning here.

    The food we ordered was tasty, but it was tiny portions. We had scallops and they were good, but we left still hungry. The lobster bisque was good at first, but it was so rich that I could not finish the bowl. Sushi was ok, not any better than a low-end sushi bar. Price was unrealistic given the quality and portions. There was a nice atmosphere, but we were there later when they were not busy and still had to wait a long time for waiter throughout our meal. The table next to us ordered the bisque and there was a wire in her soup. The manager didn't seem very nice or accommodating even though the customer was polite the whole time - almost made me want to speak up on behalf of the customer.

    This place brings "expense account dining" to the next level. The service was fabulous, but the prices were outrageous for what to you got. $40 for a crappy skirt steak with no sides? A damned baked potato was like $10. You could break a $100 meal with no sweat. For that price I can think of 10 better restaurants within spitting distance. Most importantly, I was not impressed by the quantity or quality of the food. Won't be back.

    I'm so glad i bought this travel zoo voucher. This experience was everything. Quite pricey, but i believe it's so worth it. The service from the wait staff was impeccable. The food was so fresh and tasty. I loved the drinks as well. I'll definitely return even without a voucher.

    So tonight was a wonderful experience. Absolutely flawless meal, the asparagus was cooked perfectly tender... I mention that because if u look at the size of the asparagus you'll see its quite thick. When it was served I feared it would be tough and stringy... Not so! It was as tender as delicious as baby asparagus. Now that is a feat I would love to learn! I can honestly say in all my fine restaurant meals I have never experience that in asparagus of that size. The ribs were spectacular, I ate about half without no sauce (it comes on the side). Very tender and flavorful. The sauce adds a zing that any wasabi lover can appreciate. Sooo... Even with the limited combinations of sushi, I would come back... But limit the sushi to an appetizer versus my entire meal. Tomi. Last night was the sushi bar... I gave it 3 stars... The above is the main restaurant. The sushi is fresh and created well. The menu of different items is VERY limited... At most a dozen choices. Table separation was poor and noise level high. Overall "meh" I. Likely wouldn't return.

    Upon arrival, I was immediately greeted by a friendly and accommodating hostess. Afterwards, I found myself awaiting the arrival of a server. My dining experience more than made up for the initial wait, however, and I wouldn't dare visit Stetsons without requesting my waiter, Raul. Raul and Stetsons' Sommelier made my dinner one of the best I've experienced in a long time. The well-prepared local fare was exceptional as well. Kudos on a job well done!

    By far!! The best place to eat while visiting Chicago!! We stayed at Hyatt and stumbled into this place after a late check in!! Boy were we In for a treat!! From the wine selection to the wonderful bread they bring to the table it was amazing!! Our waiter was top notch and clearly a Chicago native!! The steak was spectacular the spinach phenomenal and the Mac and cheese simply delightful!' I am already planning a trip back with a special friend!! Love it love it love it!! I will be forced to stay at the Hyatt just to go to this place!!!

    This place is so gruesome it borders on being a life mistake. There is a persistent noise in the restaurant, something akin to a jet engine flying overhead or the rumble of an oncoming earth quake. At first we thought it was a white noise machine and then we thought it was the air vents. We never did figure out the source of the noise. But the noise did make for interesting dinner conversation. We figured out that the closer you brought your head to the table the better the other people at the table could hear you. So when someone wanted to talk, they lowered their heads and shouted and we would lean in to hear. It got old fast. Real fast. Half way during the meal, we all just gave up and ate in silence. Two other issues that should not have happened considering the very, very high prices is that the waiter kept filling my class with water when it was half filled with expensive sparkling water. I told him about it. I said "That's sparkling water" and he replied "Jes, the dog she is Tuesday" or something. The second problem was that my steak was covered in something. I think it was butter, which I don't eat. I'm sure. It was something dark-ish. It's steak. Don't put anything on it, fight the urge, or, if you can't do that, put it on your own $50 piece of meat.

    If you go for no other reason you need to go to say hi to Deborah the bartender. She makes everyone feel at home and makes sure no one sits at the bar alone. Oh and the popovers. And the sushi. And the steak. I'm not a big fan of hotel restaurants but this one is worth it.

    The sushi here is decent although not the best I've had. The fresh rolls they give you when you first arrive are delectable. They also give you a warm towel, which seems excessive but classy. We enjoyed the beet and goat cheese creamer brûlée appetizer - it was different and combined great flavors. My real issue with this restaurant is that it is woefully overpriced.

    My wife and I and another couple went in here last Thursday for dinner. There was no difficulty getting a reservation at the time we wanted, so that was a plus. That was about one of the only highlights of the dinner, though. We went in because we had bought the Travelzoo deal that was a cocktail/person, 2 apps, and an entree per person (up to $48). Overall, I think the cocktails were pretty good. Nobody seemed to have any complaints on the drinks. I had two glasses of a white wine (Pinot Blanco?) from Italy which was pretty good--though not the largest pour I've seen for that price point. The food was another matter. For appetizers we got the mussel dish and the grilled octopus. The mussel's were ok, but the octopus was TERRIBLE. It was so chewy and nearly burnt to a crisp. It was borderline revolting. The waiter comped us on the bill for it because it was that awful. For steaks, I got the Ribeye, two others got the filet, and my wife got the skirt steak. she liked hers, but I have definitely had better Ribeyes before. Mine was pretty tough and fatty. It was cooked to medium rare, but it was not very well seasoned, which, a good steak doesn't need, but this, in my opinion, was not a very good steak. For accompanying sauces I got the applewood bacon and bourbon sauce (meh) and the chimichurri (sp?). For dessert we got the passion fruit tart-thing and the pineapple cake. Both were pretty good. The tart was, well, tart. And the cake was sweet, so they helped to balance each other out. Without the deal, however, I want to say this would have ran us (pre-comp for the octopus) around $380 before tip, so you're looking at somewhere around $455 when all is said and done. That's, what, almost $115/person for dinner (with drinks, so that kind of makes up for a little of it). But still, it was not worth the price. With a lot of other places to eat out in the city, this would be nearly at the bottom of my list. Sorry, Stetsons.

    I ordered the broiled chicken with a side of grilled asparagus. They were accommodating in my request to not use any seasoning other than pepper. The chicken was tasty and cooked perfectly. I say at the sushi bar and watched the chefs make rolls as I ate. Everyone was very warm and attentive. Their sushi in my opinion is overly priced. I've never seen a California roll over $20 before. Overall I think it's a restaurant that delivers good food but not worth the price points.

    I am never thrilled about hotel restaurants, but vice come the learn that there's quite a few really good franchises worth mentioning. Today's choice is one of them. I've become too critical of steak due to the grill I have at home, the good quality of steaks and humbly, the cook. I like to order NY Strip, why? Because I like something between a fatty ribeye and a drier filet mignon. I've had in my life extraordinary of each and I have a good comparison benchmark. Today I had a really nice NY strip cooked as I asked for. Better than any other place, not really! But really good. Service was absolutely great! The environment great, dessert great. I will come back? Probably yes!

    Not overly impressed. I'm staying at the Hyatt for a work meeting and didn't feel like venturing too far so I picked this restaurant for its location. The food was decent. I ordered the chopped salad to start and the skirt steak medium rare with chimichurri sauce. Salad was pretty good but the steak had absolutely no flavor to it, although it was cooked to a perfect medium rare. The chimichurri sauce was very dry and mostly just chopped up basil without much oil or anything else to it. Blah- not impressed for the price. So the main problem was the service. The service was AWFUL! I'm not extremely picky, as long as the server is prompt with a smile I'm happy! Well I sat for about 15 minutes before even getting a menu. I saw someone else get sat and called to the short brunette hostess who sat the other lady and asked for a menu. She looked at me, made a face, and then walked away. Another 5 minutes goes by and I see a waiter and ask for a menu. He drops it off and walks off.. No hello, no can I get you a drink, nothing. So then I notice there is no wine menu, just food. Another 5 minutes and I finally get a wine menu. At this point I should have got up and walked away. Finally my server comes back and gets my drink and food order. From this point things went a bit smoother but the good first impression was already lost. I was never asked if I wanted a second drink or if I wanted to see a dessert menu. After I paid, as I was still filling out my copy, the waiter comes by and grabs his copy and walks off. Not even a thank you! I left a 20% tip only because I used to wait tables in college and I felt bad leaving anything less but it certainly wasn't deserved. As I'm walking out my server walked right by me without a smile or thank you! I will not be recommending this to my company for any future meetings.

    This was a nice, upscale steak house that actually had really good sushi. The sushi might be the best part and I could see myself coming back just for the sushi bar. The steak was good, but not great. The sides were also good but not great. At these prices, I expect great. The worst part of the experience was the service: it was polite but very slow. I don't know if it was just our waiter, but there were a lot of tables that just had no food on them. We waited a long time for our drinks then a long time for our appetizers. We weren't in a hurry, but we were hungry. They need to get things out faster.

    We decided we would sit at the bar to hopefully get served quicker (only wishful thinking!). My dad frequents this place when he's on business so the bartender remembered him which made us feel more welcome. They have homemade potato chips that are absolutely fabulous! I had the skirt steak that was average at best, but i can be quite a steak snob. My dad had the filet that was delicious. Good atmosphere and friendly service. Just stay away from the skirt steak!

    At best average for the price . They boast a great prime rib and mine was raw and flavorless. I could barely cut through it without hacking at it . The lobster bisque is another story, that shit was awesome !! The wait staff was very good, the manager even came up to us and asked us what we thought. I told him the truth and he asked me why i didnt ask for something else ? I should nt have to ask for something else when i wanted prime rib !! I would go back for a bowl of soup thats about it

    We had dinner here because we were tired and didnt want to leave the hotel. What a treat! Stetsons had a great menu with lots of choices. I got the chilean sea bass with brussels sprouts, and my friend got the salmon and california roll. They had lots of sushi available, but I was afraid to order it from a steak house! Maybe next time;-) They also had a great wine list, and the ambiance was magnifiscent. I liked watching the kitchen antics from our table...super cool!

    My wife and I were in the area and really wanted sushi so we stopped in based on the strong reviews. If you're looking for an authentic sushi experience this is definitely not it. The food tasted great though it was a little lacking in personality. There are about 8-10 different sushi rolls and an equal amount of sashimi/nigiri. Pretty standard options across the board. Nothing with real wow factor. Admittedly I kind of expected this to be the case going in given its a steakhouse and that its in the Hyatt. But as I said, we were nearby and really wanted sushi. The atmosphere was a little stuffy, kind of mid-upscale steakhouse vibe. The waitstaff was very friendly but all they offered in knowledge about the menu was "very good." Everything was very good. That being said, everything was very good though if you have time or the desire to seek out a legit sushi joint elsewhere in town I would recommend doing so. If you are nearby and just want some sushi you won't be disappointed with what they serve you. Just temper your expectations and remember it's a steakhouse that serves sushi and not a proper sushi bar.

    I don't usually like hotel restaurants but the sushi at Stetsons is pretty good. And yes I ordered sushi at a steak + sushi place. Someone else at the table had the filet mignon n they said it was great too. Pricey for a simple sushi roll but I will be back when in the mood to splurge on some expensive sushi. The service n the quality/taste of the food was great.

It's inside the Hyatt. a great location to walk around and shop) INTERIOR: 5/5 (it's very nice and spacious) CUSTOMER SERVICE: 5/5 (the waitstaff is phenomenal and friendly... as they should be when you're paying a decent amount at a restaurant like this) CLEANLINESS: 5/5 (they are also attentive. if you drop a utensil, someone WILL see it and replace it immediately. love that) QUALITY OF FOOD: 4-5/5 TASTE OF FOOD: 3.5-4/5 ---------- (**note: I rate each eatery relative amongst its type/range in THAT city. So, no, I'm not rating this restaurant compared to Alinea or some Michelin-star restaurant. I rate it and analyze it's component qualities (above) from 1-5 compared to other eateries with similar food type, aura, and price range) I can't say their meats are as delicious as Lawry's (Chicago) or Daniel's Broiler (Seattle). I would say Pete Millers is actually slightly better in taste, though the QUALITY of the food, aura, and customer service is better at Stetson's (not that Pete Miller's offers cheap or low quality cuts; they don't! It's just not as "high end" or boutique and picky with their meats as Daniel's Broiler, Stetson's or Gibson's will be). Gibson's is about on par or perhaps better in taste than Stetson's, though they both offer high quality meats. I feel that Stetson's and Chicago Cut are about on par. My best friend strongly prefers Chicago Cut, but I actually feel that Chicago Cut is also just above average and overhyped. Stetson's is great for the aura/atmosphere, presentation, and customer service. Everyone is dressed nicely, and there is a large and attentive waitstaff. They notice everything about you. They always notice if you drop something that second, and someone is always there to pick up the napkin or utensil FOR you. That's attentive! During the middle of the meal, someone comes by with adorable sorbet in a mini ice-cream cone. It's a wonderful surprise and nice detailing. Everything Stetson's does in the dining experience makes it so you can't walk away tipping anything less than 20%. We tipped 25%, which is good for them, because our bill was around $500. They have a knowledgeable staff and sommelier, which I always appreciate. I appreciate when any place takes pride in their expertise by carefully hiring individuals who will represent them well. I wasn't disappointed by their Riesling or Moscato (I usually am disappointed by most restaurant's Riesling choices, which are usually on the sour side not sweet). There's not a long wait here, it is a large establishment. You may wait 10-15 minutes sometimes, but that's not long. While I do give Stetson's a pretty good review, it is mostly rated in the dining experience and quality of food and presentation. The taste is just above average. I would recommend other places to keep in rotation with Stetson's, like Lawry's, Joe's, Gibson's, Chicago Cut, etc.

    After a long day at a customer site, and a hot day in the 90+ degree heat, I decided to treat myself to a good meal. I went with their "summer special" ... soup or salad + entree + dessert. I went with the salad, which was tasty. By some standards there was too much tasty creamy vinaigrette dressing, but I gobbled it up just the same. I went with the prime rib for the main course, which came au jus with asparagus and mashed potatoes. This is a really kind of classic steakhouse dish, and it was done well. The prime rib had to be one of the best seasoned pieces of prime rib I've had, even if the cut of meat itself wasn't the best (a little fatty and some gristle.) I ate my veggies, which were also appropriately seasoned and then settled into dessert. And the dessert is what went from five stars to four. The dessert was a "mojito cheesecake." Cheesecake seems to be a thing they do with various flavors. There was a bourbon cheesecake advertised as a prior special, but last night they had the mojito. It tasted like toothpaste. There is no good way to say it. It just wasn't my thing. It was Aqua-Fresh flavored cheesecake. The service was good and is what should be expected for a place of this caliber. The Old Fashioned I had was also good; no "mushed up" fruit, just a solid, flavorful drink.

    This place was outstanding , the staff and service where equally outstanding. the one thing outside of the food (which was the best) was the tenure of the staff at this place , almost every staff member that I came across had over 20 years service , says a lot for the Hyatt , the restaurant and the people.     We had the grilled calamari, mussel pot and several sushi items. The rainbow roll was excellent, and I loved the firey hamachi roll. Slightly disappointed with our server, as he seemed to be going through the motions while we witnessed other tables being offered special items and clearly cared more about the patrons. 5 / 5 on food. 3.5 / 5 on service.

    Food was just ok. We ordered 4 filet mignons, sushi, octopus and only the octopus was really good. We had a lovely waitress but when we tried to voice our opinion to the manager he was completely unprofessional. I doubt this place will last long if the manager stays the same. Go elsewhere for your steak and sushi.

    Horribly horribly overpriced. I have had sushi at very fine places all over the country. This place charges 2 to 3 times what an order (2 pieces) of sushi should typically cost! They play the "per piece" pricing game. Realty? It's a gimmick. We ordered Yellowtail sushi, they brought us sashimi. A very simple tuna cut roll was $20. Sushi was of good quality, but nothing memorable. My wife and I had 2 drinks and a few orders of sushi and, with tip, it was $200. Why must all hotel restaurants rape you? Adios.

    I was really impressed with this restaurant! I often take clients out to dinner in Chicago at the usual suspects of steak houses, but gave this one a try on my own because of the deal through TravelZoo. The ambiance, food, and service were all great. We had the grilled octopus, ribeye, mixed seafood grill, and roasted mushrooms. Everything was top-notch, especially the freshness of the seafood. The only complaint is that the wine pours (by the glass) are quite small as compared to the competition.

    Disappointing.. took over an hour and a half for our steaks that maybe took 5 mins to cook. We asked for medium rare and came bloody. Ordered a side of spinich and it was very sour. Not sure why as I love spinich ans cook it often. Server never came around to even let us know it would take awhile. We had to grab someone and ask about our food. Two of us ordered wedge salads that were both totally different with different dressings. Manager was gracious and apologetic but it didn't make up for the food. Too bad its a pretty place.

    Just a quick review. Food and atmosphere are very good. Way over priced for what it is though, even for downtown Chicago...Maybe for a date night, or trying to impress a client. But downtown has a lot more options with way better views of the river, and lake, for much less.

    Stetsons Modern Steak + Sushi is located in the Hyatt Regency. We ate there because it was raining and we didn't want to venture out, but we were pleasantly surprised to find that it is a very good restaurant with a good selection of options, even for my vegan wife, who does eat sushi. The drinks are a good pour, the salads were very good with fresh greens, and the entree's were excellent. Our waiter was very good and checked in on us often enough to be efficient but not so often that he was annoying. I recommend this restaurant.

    We stayed at the Hyatt Regency in Chicago, and we were starving after a long day of walking. We were a little hesitant to try this sushi place, coming from Hawaii, and having GREAT sushi back home. But to our surprise, the sushi made right in front of us was so great. Not only was it fresh, and made with TLC, every bite so soft and full of flavor. The Sushi Chefs were friendly and kind. You can see how much care they put into making the sushi and serving their food as art!

    We were staying at the Hyatt regency hotel and it was snowing & cold outside so we decided to stay in the hotel for dinner. I had found an amazing deal on travelzoo for dinner for 2 for $75 so it was a no brainer. What a smart choice! Making the reservation was easy with open table. We were seated immediately upon arriving by the pleasant hostess. The food was divine. The popovers were so amazing my bf and I each had 2 of them then requested some to go (and I'm not a big carb eater at all!). They tasted like moist cheesy flaky croissants. In fact I just had one for breakfast :) the grilled octopus was good sized and unique. It had a very strong charbroiled flavor mixed with a citrusy sauce & was served with Granny Smith apples. I enjoyed it but my bf said it had a strong seafood flavor. The cap steak (if you've never had this cut of steak you MUST try it) and ribeye were incredibly flavorful and very tender. Large portions for the price. The choice of sauces were diverse and complimented the meat well, although the steaks were so delicious I didn't feel they even needed anything. Our server Jose was very attentive & considerate without being obtrusive or annoying. I was nursing my drink and he noticed so offered to bring me something else if I wasn't satisfied with it. He was great and really made the evening special & enjoyable. We were celebrating our anniversary and he brought out a cute desert for us. A great dining experience. We ate at kuma's corner, girl & the goat, xoco, purple pig, siena tavern, and the palm and this was our favorite. Would definitely go there again next time we're in Chicago.

    Over the previous twelve months my co-worker and I have been in Chicago for training on 10 occasions. We ate at many different Chicago steak houses, some by previous experience and some by reputation or recommendation. We found that far too many of these restaurants are trading on their past rather than the meal they are serving today. We ate at Stetson's first in February when the weather made us not want to leave the hotel. The meal and service were fantastic, and this when they were packed to the limit and then some. This latest visit, while not quite such a hectic night, was still busy and still excellent. The Caesar salad with fresh anchovies was fresh, crisp and flavourful and I appreciated that it was not dripping in dressing but had just the right amount to accentuate and not drown. The ribeye was fantastic and everything I expect and demand of a Chicago steak. It was properly cooked and had just the right amount marbling for a ribeye and was tender and delicious. The service was just right, they were there without hovering and never made us feel rushed. We enjoyed our desserts and after dinner drinks and coffee and called it an excellent evening and experience. We only had one negative comment to relate: While we are not quite sure what the spread/relish is which they serve to accompany the pop-overs (which are very good) is, it has an unpleasant taste and looks worse and none of the three of us found it in anyway palatable. Was it expensive, of course it was! An a la carte menu in a hotel (or any restaurant) in Chicago. Would you expect anything else? We are received our monies worth and would definitely return whether we are staying at the Hyatt or not.

    Actually ate here two days in a row. I was in town for a conference at the Hyatt and enjoyed it so much I couldn't justify the hassle of going somewhere else to eat the same type of animals and drink the same type of brown things. The filet was amazing. It's not the best filet I've ever had, but I enjoyed it thoroughly. The second night I had the New York Strip. Also great. The first night, my colleague and I ate at the bar. The bartender was very friendly and helpful. The second night, we ate at a table where the waitress was really trying to sell us on the ox tail. No tail for us. I mean who eats the tail? Anyway, the creamed corn was ok....was promised the best on all of Chicago. It's not bad, but Joe's still has that title. The second night we shared the whipped potatoes. That there was some good eatin. I wish Hyatt's weren't so expensive, because I don't stay there very often, but I'd do Stetson's again.

    We came to town to celebrate my daughter's birthday. Arriving to town in the middle of rush hour and relying on the GPS from the phone which sent us to every Hyatt corporate office rather than the hotel, we were hungry and cranky. We decided that we didn't want to leave the property and would have dinner at one of the spots here. The girl that checked us in mentioned that Stetsons was recently remodeled, had a new menu and it was delicious. I was in the mood for sushi so we gave it a try. The whole experience was FANTASTIC!! The sushi was good and fresh, not the best I've ever had but it hit the spot. The salads were delicious, I had the Caesar and my wife had the chopped and she just raved about the dressing on hers. Our main courses were just as good, I had the grilled octopus, my wife had the scallops and my daughter the petite fillet. Everyone loved their dish. If you're here in the area, this place is a hit and worth checking out

    I just embarrassed myself at this place. It was amazing... I'm in love with cap steak and the chimichurri sauce on the side was a wonderful complement, although definitely not needed. I also had the chopped salad with basil ranch and highly recommend. I don't even eat salads normally but the medley of ingredients are really nice, especially with the onion rings. We finished up with a blueberry compote that was out of this world. Wonderful all around! Beautiful restaurant, great service, excellent food. A little pricey but worth it. ($42/12 oz steak) I'm just so impressed with this place; a very nice surprise and I'm glad it was conveniently located in our hotel so that we could experience it.

    What a letdown! Heard great things about this place then this happened....Ordered sushi rolls and the manager comes over and tells us they are out of sushi rice! What kind of sushi restaurant runs out of sushi rice? Seriously? 9pm on a Sunday and you run out of sushi rice? Maybe just change the name to Stetson Steaks & Occasional Sushi? That would be more appropriate. So disappointed. You might want to call ahead and see if they have sushi rice before you get your mind set on sushi.

    Went here for dinner and it wasn't that crowded as I thought it would be. Our waitress was rude and she seemed like she didn't even want to be there. The only thing I like about this place was how tender and juicy my steak was. The veggies were bland, the soup was way too salty and it was boiling hot in the dining area. The over priced food doesn't help either.

Without the deal, however, I want to say this would have ran us (pre-comp for the octopus) around $380 before tip, so you're looking at somewhere around $455 when all is said and done. That's, what, almost $115/person for dinner (with drinks, so that kind of makes up for a little of it). But still, it was not worth the price. With a lot of other places to eat out in the city, this would be nearly at the bottom of my list. Sorry, Stetsons.

    I ordered the broiled chicken with a side of grilled asparagus. They were accommodating in my request to not use any seasoning other than pepper. The chicken was tasty and cooked perfectly. I say at the sushi bar and watched the chefs make rolls as I ate. Everyone was very warm and attentive. Their sushi in my opinion is overly priced. I've never seen a California roll over $20 before. Overall I think it's a restaurant that delivers good food but not worth the price points.

    Recently opened and in the lowest level of the Hyatt, the food and atmosphere here are both great. The menu contains a lot of standard "chop house" fare with some interesting surprises. The anchovy appetizer is unique and tasty. It doesn't tasty fishy at all and has a great mouth feel. I also tried their line of sushi. Narrow selection but all well done. Very friendly staff and management. The decor kind of feels like a Mortons.

    If you go for no other reason you need to go to say hi to Deborah the bartender. She makes everyone feel at home and makes sure no one sits at the bar alone. Oh and the popovers. And the sushi. And the steak. I'm not a big fan of hotel restaurants but this one is worth it.

    Very nice restaurant with sophisticated ambiance. Good service. The food was good but not spectacular. The sushi was above average in taste and average in creativity and presentation - it does compare to a high quality sushi restaurant. We tried the Cap steak which I had seen several reviews rave about - personally I thought the steak was a too fatty. It wasn't tough chewy fat, but rather soft buttery fat - tasty but not texturally appealing. All in all a good experience.

    It was our last night in Chicago with our friend from Germany and we wanted to take her somewhere "fancy." This place fit the bill without being ostentatious. The hostess was friendly and welcoming. The dining room was cheerful yet elegant. Our waiter, Jose, was a knowledgeable and distinguished gentleman. He made several excellent suggestions that we followed, much to our satisfaction. The food was amazing! We started with the shrimp cocktail. The boyfriend and I split it. The shrimp were large, perfectly cooked, and flavorful. The sauce was a nice balance, not too spicy but definitely not bland. I had the filet mignon with sauteed spinach. The boyfriend had the ribeye steak with the asparagus. Our friend had the cap steak with whipped potatoes. We took Jose's suggestions for sauces. Every steak was cooked to order. The spinach was wonderfully seasoned. The asparagus had this marvelous horseradish cheese on it. Then for dessert was an apple pie with vanilla ice cream. So good. Cannot rave about this place enough. From beginning to end it was a fantastic experience and when we come back to Chicago, we will be coming back to Stetson's.

    Ok, so it was really hot and we didn't want to go very far (or at all) from the hotel. So we punted and crossed our fingers. And you know what, it was better that I expected. Service was good though can be a little overbearing. Too much pomp. But they were adept at handling an extra person we brought over with a "we'll figure it out for you" attitude that I did appreciate. The atmosphere is good too though the music piped in was too loud and a little strange. Go easy on it. As for the food, my dining companion though the steak was excellent. Nothing too over the top but good quality meat served right. Most intriguing was the sushi. It's overpriced, sure (hence the 4 stars) but two things make this memorable. First, BIG pieces of sashimi with high quality fish. The 9 piece sashimi was a BIG portion and much bigger than I expected. Add a roll on that and it was a very filling meal. The tale of two tunas (or something like that) was an excellent roll. Good preparation and fresh fish. Kudos on the sushi. But again, the cost is very high and it's not one of those places that I would pick as my "desert island" place in Chicago. That said, for a hotel, it was quite good and wouldn't hesitate to go back if staying there again. You won't be disappointed too if someone else is picking up the bill.

    After sampling a lot of what downtown Chicago has to offer this week, I decided to give the restaurant at my hotel a try - so I walked into Stetsons at the Hyatt Regency with few expectations and a hankering for seafood. I immediately liked the vibe - cheerful fire blazing, friendly staff, satisfied diners who looked like their needs were being well taken care of. Sitting at a table near the fire in the smaller dining area adjacent to the bar, I perused the menu and selected the barbecue eel sushi, then asked the happy-looking waiter what else he had in the seafood department. "Chilean seabass" he replied without hesitation. I selected the 5 oz sea-bass over the larger portion sizes, and it arrived very soon along with a slightly spicy but completely superfluous chimichurri sauce on the side. The sea-bass was delightful - perfectly flaky and moist with just the right amount of sear to it. I finished most of it before my sushi arrived! I was less impressed with the barbecue eel. Maybe there was nowhere to go but down after the sea-bass, maybe my unagi standards are astronomical as I live for eel, but it just didn't deliver for me in the freshness department. It was just ok. Service was excellent - especially the Chilean sea-bass recommendation which was spot on, so four stars in spite of the "meh" on the eel. I will be back for that sea-bass and get a bigger portion next time!

    Bar tender was awesome, Deborah. A pleasure to speak with someone who loves her job. It shows. Food excellent! Chilean Sea Bass, asparagus, creamed corn, popovers and to start, kale Caesar salad with real anchovies! Why not 5 stars? In this price range it is what I expected. Will definitely be back.     Delicious! I recommend the chimichurri sauce with the ribeye steak. The prime rib with the horseradish sauce is divine. Everything is overall a bit salty, but it is definitely recommended. Try the creamed corn!

    Surprise, it was actually very good. I have been to virtually all of the top steak houses in Chicago (a tough job but somebody has to do it) and was planning on going to Chicago Firehouse this weekend until a fire changed my plans. Stetsons was not even on my radar but the Yelp reviews were solid so decided I would try it. I was not very hopeful, though, as it is hard to compete in the rarefied air of Chicago steakhouses and being in the Hyatt was strike two. As I mentioned, pleasantly surprised. Not the top Chicago steakhouse (that tier to me is RPM Steak, Benny's, Joe's and David Burke's) but comfortably in the next tier (Mastro's, Bavettes, Capital Grille). One big selling point is that they have a sushi bar, so we started with two sushi rolls. Both had very fresh fish and ample size. Spicy tuna was very good. Fiery hamachi roll was high quality ingredients but not fiery. Also had an order of crab legs, also very good. Not as good as Joe's, but more than enough for two people, easy to take out the meet and it was nice and tasty, not needing any butter. For an entree, I had the cap steak, which was great. The cap is the top part of the rib eye, which has a ton of flavor. You normally see it on the menu at Vegas' steakhouses but it is relatively rare (sorry for the pun) in Chicago and quality is very inconsistent. The cap was perfect here, cooked exactly as ordered, excellent flavor and marbling. Nice presentation also. We had whipped potatoes, which were not bad but nothing special. The wine list is presented on an iPad, which is consistent with the overall modern vibe of the place (not the old school steakhouse nor a typical hotel restaurant). Not only was the wine selection good and prices reasonable, there was more info on all the bottles than you would get in a written menu. Last thing, free valet parking, a nice surprise in Chicago. Overall, a very pleasant surprise that is worth going to again.

    A first I was a little nervous because the roll wasn't that good, but then my kale caesar salad arrived and it had a huge parmesan crisp and it was super good. Then since I was in Chicago I thought I would get a steak -- I ordered the 10 oz rib eye and a baked potato. The steak was the best steak I have ever had. It had a wonderful crust on the outside and cooked perfectly. I got the chimichurri sauce and it was really good but it overwhelmed the goodness of the steak so I just used a little throughout my meal. My baked potato was just a plain ole potato. The service was excellent, I liked that they had a guy standing on the side watching for anything you might need, a refill, clearing your table, etc. Overall an A++++ experience.

    Located in the Hyatt hotel this is a gem! 5 star service & 5 star food! For starters they bring warm popovers to your table. Cocktails are exquisite. Appetizers are generous. Hubby had the lamb chops & he was in heaven. He's a butcher & knows quality. I had sushi. It was perfect & not to salty as sushi can be. Dessert was A winning Nutella cake. The worst part was leaving this restaurant. The ambience was so warm & cozy. Can't wait to go back when in town!

    I don't know how I've been in Chicago for almost 9 years and I haven't tried this steakhouse! WAH. It's amazing! I really admit this might be the best steak in the city! My boyfriend and I had such a great time and enjoyed the food so much we want to come back again soon! Appetizer Grilled Octopus with apples.- what a great dish. I haven't had grilled octopus before but the flavor was very good. The texture takes some getting used to but overall very delicious. I'm glad I ventured out and tried something new. Main Dish Filet - This filet was done a perfect medium with a salt and pepper crust done to perfection! Inside was juicy and retained a lot of the good flavors. I paired this with Chimichurri sauce which added the perfect bite. Ribeye - boyfriend ordered this and also said it was the best steak he has ever had, wonderful marbling added to the flavor and the crust and doneness was perfect. They really know how to cook a good steak. He opted for the Applewood smoked bacon burbon sauce which was so soooooo delicious as well. Side Roasted Brussels Sprouts, Butternut Squash, Crispy Bacon - yum order this Dessert Opera Case - I would pass on this the texture was not what I expected a little tougher so I didn't enjoy this much. Overall can'y complain I was very full the service was top notch attentive and I really enjoyed the high quality and flavors of the food!

    I do believe I felt like a sushi queen when eating at this restaurant. To truly make me happy, I don't need the frills of a waiter pulling the seat out for me or handing me a warm washcloth for my hands before my fancy meal. But, if it's going to be offered -- I'll take it. And with that, I give you Stetsons. Stetsons is part of the Hyatt Regency Chicago. Classy and filled with amazing sushi. My first "awe, yes" moment was when they passed out the warm, melt in your mouth bread. Woweewowwowwow. And from that point, I was pleased. The wine list? Pricey. The sushi rolls? Pricey. Everything was pricey. I don't usually splurge, but sometimes when you're a bit stressed and you need to unwind it doesn't hurt to spoil yourself. So, spoil yourself at Stetsons. I love sushi and this place really was top notch.

    This place brings "expense account dining" to the next level. The service was fabulous, but the prices were outrageous for what to you got. $40 for a crappy skirt steak with no sides? A damned baked potato was like $10. You could break a $100 meal with no sweat. For that price I can think of 10 better restaurants within spitting distance. Most importantly, I was not impressed by the quantity or quality of the food. Won't be back.

    Nestled in the Hyatt, this place is a must try as their steaks and sushi are some of the best food I had in Chicago. Since we were dining as a family and everything is a la carte, we decided to order "family style" and shared the various items we ordered. Sushi - Definitely good quality as we enjoyed the Rainbow and Spicy Tuna rolls. We almost were tempted into ordering a 3rd roll as we waited for our steaks to arrive. On the rainbow, the salmon and tuna tasted fresh and extremely enjoyable. Spicy Tuna roll also was very good but wasn't as spicy as I'm use to in previous Spicy Tuna experiences. Steaks - Thanks Yelp for this one! The Ribeye was definitely the highlight of our meal. Cooked between medium rare and medium - the steak was tender, flavorful, and had a variety of temps to satisfy our group. The Porterhouse, while good, wasn't as pleasing as the Ribeye. The Porterhouse was cooked more on the rare side but the plate also already had lots of juice so some of the flavor was missing. Sides - asparagus with cheese - pass. Too much cheese and it had melted together that it was easy to just separate the asparagus from the cheese. Roasted mushrooms - good complement to the steak as well. If the mushroom side had just a little more sauce, it would've been awesome to spread atop the steak. Whipped potatoes - good complement to the steak. Almost like having a baked potato.

    Loved eating at the bar! Deb the night bartender during the week is stellar! The food was very good. My husband and I ate there 2 nights in a row at the bar. We both had the 10 oz Spencer filets, mashed potato and mac/cheese sides, sushi, and cocktails. We spent waaayyyyyy to much at the Chicago Chop House a few nights before, and this place was less than half the price and the food better. We will go back on the next stay in Chicago.

    Went for dinner with a friend to catch up, we did not have a reservation, but got right in. They have amazing pop overs!! Maria was our server and she was great. We shared some apps including the stuffed calamari. The stuffed calamari was not to our liking, with out question Maria removed it from our bill . . . nothing wrong with it, but it is an acquired taste with lots of chorizo sausage (not too spicy, just really different) The lobster cheddar bisque was divine. We tried some sushi too and that was fresh. For a hotel restaurant it is really good and unique. For that and the service from Maria they get 4 stars. If you are at the Hyatt try it. Not sure if they validate. Enjoy!

    Great steak, but the sushi aspect of Stetsons was clearly an afterthought. The maki was on par with a restaurant costing half the price. The rolls were small, uninspired, and even poorly constructed. The sashimi wasn't anything to write home about. It was the Chef's Selection but it contained the three most common types of fish- salmon, tuna, and yellowtail. The presentation of the maki and sashimi was underwhelming, and the only reason I mention the presentation is that the prices are the highest I have seen during my first month in Chicago- $19 for a california (king crab) roll, $17 for a spicy tuna roll, and $25 for the Chef's Selection of six pieces of sashimi. The sushi menu at Shaw's is reasonably priced and is much more extensive. To conclude, I would not recommend ordering sushi here. That being said, the bread, steak, sides, and dessert were delicious. The atmosphere and service was fantastic. Don't bother with the sushi and this is a great restaurant- I plan to return myself after trying out a few other steakhouses.

    I don't typically eat at restaurants inside hotels, but this one was recommended to me during my staff at the Hyatt while on business travel. The service, as expected, was very lovely. I had the rack of lamb for my entree, which melted in my mouse. The mushroom ragout was a delicious side - but a little too creamy for my taste, so be warned! Of course, expect to pay a lot to leave here full.

    I went tonight on a Travelzoo voucher and I have to say I expected an average meal at best. I typically have very low opinions of expensive restaurants at expensive hotels. I view them as a way to grab expense account dollars while putting out dog food. That being said, I had a wonderful meal tonight. Bread was excellent. Like a cheesy Yorkshire pudding. Octopus was flavorful and unbelievably tender. The ribeye was the finest ribeye I've ever had anywhere. It was like butter. And the service was great as well All in all, a spectacular meal and I highly recommend.

    Absolutely outstanding. Per the reviews of other Yelpers I tried the Cap Steak and it was perhaps the best I've had in my life. Cooked perfectly med rare. I also ordered a side of mushrooms (which are easily sharable for 2-3 people) which were also delicious. My colleague got a filet and mac & cheese. I was able to sample the mac and it was also very well executed. Would highly recommend, though beware the price tag that comes with the territory here.

    The only reason why I ended up here twice within 2 days was because it was conveniently located in the Hyatt Regency where I was staying for a conference. It was late both days and I was exhausted. The first night I had the fish. A 5oz. white seabass that is. And it was slightly lacking flavor. But was cooked well, so that it was nice and flaky. The side of wild mushrooms helped add to the flavor. Their popovers were very disappointing though. Very dry and hard. The second night I shared a bunch of sushi rolls with my co-workers. Although the sushi was good, it wasn't anything spectacular. These typical rolls could be ordered at a regular sushi restaurant at half of the cost. They could've also done better with the presentation. I mean that's what you pay the extra bucks for in a restaurant of this stature, correct? All of the rolls came out on two flat square plats just lined up against each other. There was nothing beautiful about it. Their desserts. I am a sucker for creme brulee. So if it's on the menu, I'm most likely going to go for it. The portion was pretty big. It was ok. I was only impressed by it's size. The server shows you photos of the different dessert options on an iPad which I think is a great idea. Eco-friendly and easy to change up when swapping out new dishes. However my suggestion is to hire a better food photographer or dress up the desserts nicer with more coloring. The photos didn't make any of the desserts look very appealing. And for the price and beautiful decor of this restaurant, I would expect some beautiful photos of food porn.

    We are at the hotel for a 4 day conference and on the last night we did not feel like grabbing a cab, fighting traffic, and standing out in the cold in any potential lines, so we decided to dine in at the hotel restaurant. Now after eating steaks all week, the last thing i wanted was another but i saw a 12oz filet that grabbed my attention. I have to say it was THE BEST steak I ate all week, and that is saying alot vs. the powerhouse steakhouse of Gene and Georgetti's from earlier in the week. The asparagus I have to say was not all to desirable, and the shrimp cocktail was $20 for 3 shrimp so that could have been done a little better IMO, however Id come back on the next convention in 2016.

    Service was the highlight, and that wasn't saying much. While roasting in the 80 degree space, had the worst Hendricks martini EVER, suffered unpleasant appetizer bread that was excessively over baked, sushi was sub-gas station experience... Rice was amateur, seaweed soggy, even K-rab in the Cali roll!!! The saddest part of the experience was that they had REAL wasabi, not the fake green garbage paste, and there was nothing delicious to enjoy it with. In a city like Chicago, the bar is way higher than they are recognizing. Go elsewhere!

    I'm so glad i bought this travel zoo voucher. This experience was everything. Quite pricey, but i believe it's so worth it. The service from the wait staff was impeccable. The food was so fresh and tasty. I loved the drinks as well. I'll definitely return even without a voucher.

    This place was just okay. I have a feeling it would be better if our service had been better. We noticed many of the tables, including our own, waited a long time for food and one table even walked out. I'm not sure if it was the kitchen, our waiter or the restaurant as a whole. One of the other waiters made a comment about our waiter not really being the "a-team" so that probably added to it. The steak was just okay for the price, but I found the sushi surprisingly very good. The chimichurri sauce I found to be a little disappointing. I think for the price it's not great value, but many hotel steakhouses seem to charge a premium. Don't get me wrong, the food was all decent or better, but for the price I don't think it's particularly good value.

    The sushi here is decent although not the best I've had. The fresh rolls they give you when you first arrive are delectable. They also give you a warm towel, which seems excessive but classy. We enjoyed the beet and goat cheese creamer brûlée appetizer - it was different and combined great flavors. My real issue with this restaurant is that it is woefully overpriced.

    So tonight was a wonderful experience. Absolutely flawless meal, the asparagus was cooked perfectly tender... I mention that because if u look at the size of the asparagus you'll see its quite thick. When it was served I feared it would be tough and stringy... Not so! It was as tender as delicious as baby asparagus. Now that is a feat I would love to learn! I can honestly say in all my fine restaurant meals I have never experience that in asparagus of that size. The ribs were spectacular, I ate about half without no sauce (it comes on the side). Very tender and flavorful. The sauce adds a zing that any wasabi lover can appreciate. Sooo... Even with the limited combinations of sushi, I would come back... But limit the sushi to an appetizer versus my entire meal. Tomi. Last night was the sushi bar... I gave it 3 stars... The above is the main restaurant. The sushi is fresh and created well. The menu of different items is VERY limited... At most a dozen choices. Table separation was poor and noise level high. Overall "meh" I. Likely wouldn't return.

    Upon arrival, I was immediately greeted by a friendly and accommodating hostess. Afterwards, I found myself awaiting the arrival of a server. My dining experience more than made up for the initial wait, however, and I wouldn't dare visit Stetsons without requesting my waiter, Raul. Raul and Stetsons' Sommelier made my dinner one of the best I've experienced in a long time. The well-prepared local fare was exceptional as well. Kudos on a job well done!

    By far!! The best place to eat while visiting Chicago!! We stayed at Hyatt and stumbled into this place after a late check in!! Boy were we In for a treat!! From the wine selection to the wonderful bread they bring to the table it was amazing!! Our waiter was top notch and clearly a Chicago native!! The steak was spectacular the spinach phenomenal and the Mac and cheese simply delightful!' I am already planning a trip back with a special friend!! Love it love it love it!!     This place is so gruesome it borders on being a life mistake. There is a persistent noise in the restaurant, something akin to a jet engine flying overhead or the rumble of an oncoming earth quake. At first we thought it was a white noise machine and then we thought it was the air vents. We never did figure out the source of the noise. But the noise did make for interesting dinner conversation. We figured out that the closer you brought your head to the table the better the other people at the table could hear you. So when someone wanted to talk, they lowered their heads and shouted and we would lean in to hear. It got old fast. Real fast. Half way during the meal, we all just gave up and ate in silence. Two other issues that should not have happened considering the very, very high prices is that the waiter kept filling my class with water when it was half filled with expensive sparkling water. I told him about it. I said "That's sparkling water" and he replied "Jes, the dog she is Tuesday" or something. The second problem was that my steak was covered in something. I think it was butter, which I don't eat. I'm sure. It was something dark-ish. It's steak. Don't put anything on it, fight the urge, or, if you can't do that, put it on your own $50 piece of meat.

    We decided we would sit at the bar to hopefully get served quicker (only wishful thinking!). My dad frequents this place when he's on business so the bartender remembered him which made us feel more welcome. They have homemade potato chips that are absolutely fabulous! I had the skirt steak that was average at best, but i can be quite a steak snob. My dad had the filet that was delicious. Good atmosphere and friendly service. Just stay away from the skirt steak!

    At best average for the price . They boast a great prime rib and mine was raw and flavorless. I could barely cut through it without hacking at it . The lobster bisque is another story, that shit was awesome !! The wait staff was very good, the manager even came up to us and asked us what we thought. I told him the truth and he asked me why i didnt ask for something else ? I should nt have to ask for something else when i wanted prime rib !! I would go back for a bowl of soup thats about it

    We had dinner here because we were tired and didnt want to leave the hotel. What a treat! Stetsons had a great menu with lots of choices. I got the chilean sea bass with brussels sprouts, and my friend got the salmon and california roll. They had lots of sushi available, but I was afraid to order it from a steak house! Maybe next time;-) They also had a great wine list, and the ambiance was magnifiscent. I liked watching the kitchen antics from our table...super cool!

    Although I'm not usually a fan of hotel restaurants, this one is exceptional! The one and only glitch to our evening was the parking. It would have been nice if when we made our reservation we had been told that you can valet park your car at the hotel and they will validate your ticket for up to three hours of parking. Nice! Free Parking for dinner in Chicago. A deal any way you look at it. Unfortunately the hotel is under some construction and the directions for picking up the car were a bit confusing but of course we did eventually get the car. Now onto the stars of the evening, the food and the service. Our waiter was awesome. He was super friendly, helpful and professional. We began our meal with the grilled octopus. While the small ends of the pieces were a bit charred the dish itself was excellent. The meat was not chewy but tender and delicate. The plate was well balanced, hitting all the right spots on one's palate, On our waiter's recommendation both my husband I ordered the rib eye steak. Both of ours were done to perfection. We ordered it medium rare and that was just how it came out, not overcooked and not still mooing. The meat had just the right amount of seasoning rubbed into it. You have your choice of sauces to go along with your meat. I chose the horseradish cream and my husband chose the applewood smoked bacon bourbon. I think that we both liked the horseradish cream a bit more, but you have to like that kind of thing. The other was good too but tasty more gravy like to me. As an added treat we were both given a sauce made with fois gras. This was the best sauce yet. It's not even on the menu as an option so I don't know if the chef was just trying out or what was going on. Other tables didn't get it. We both loved it so I hope they put it on as a regular option. As a side we had the asparagus. It was delicious. In spite of being in a hotel I would look forward to returning here.

    The food we ordered was tasty, but it was tiny portions. We had scallops and they were good, but we left still hungry. The lobster bisque was good at first, but it was so rich that I could not finish the bowl. Sushi was ok, not any better than a low-end sushi bar. Price was unrealistic given the quality and portions. There was a nice atmosphere, but we were there later when they were not busy and still had to wait a long time for waiter throughout our meal. The table next to us ordered the bisque and there was a wire in her soup. The manager didn't seem very nice or accommodating even though the customer was polite the whole time - almost made me want to speak up on behalf of the customer.

    Sorry but this place ain't worth the price. I ordered California Rolls for $19 & it was NOTHING special about it...they didn't even any special dipping sauce. I've had sooo much better for a fraction of the cost. The menu is limited but the drinks were decent. If u want good Sushi, try The Reel Club.

    I am never thrilled about hotel restaurants, but vice come the learn that there's quite a few really good franchises worth mentioning. Today's choice is one of them. I've become too critical of steak due to the grill I have at home, the good quality of steaks and humbly, the cook. I like to order NY Strip, why? Because I like something between a fatty ribeye and a drier filet mignon. I've had in my life extraordinary of each and I have a good comparison benchmark. Today I had a really nice NY strip cooked as I asked for. Better than any other place, not really! But really good. Service was absolutely great! The environment great, dessert great. I will come back? Probably yes!

    Not overly impressed. I'm staying at the Hyatt for a work meeting and didn't feel like venturing too far so I picked this restaurant for its location. The food was decent. I ordered the chopped salad to start and the skirt steak medium rare with chimichurri sauce. Salad was pretty good but the steak had absolutely no flavor to it, although it was cooked to a perfect medium rare. The chimichurri sauce was very dry and mostly just chopped up basil without much oil or anything else to it. Blah- not impressed for the price. So the main problem was the service. The service was AWFUL! I'm not extremely picky, as long as the server is prompt with a smile I'm happy! Well I sat for about 15 minutes before even getting a menu. I saw someone else get sat and called to the short brunette hostess who sat the other lady and asked for a menu. She looked at me, made a face, and then walked away. Another 5 minutes goes by and I see a waiter and ask for a menu. He drops it off and walks off.. No hello, no can I get you a drink, nothing. So then I notice there is no wine menu, just food. Another 5 minutes and I finally get a wine menu. At this point I should have got up and walked away. Finally my server comes back and gets my drink and food order. From this point things went a bit smoother but the good first impression was already lost. I was never asked if I wanted a second drink or if I wanted to see a dessert menu. After I paid, as I was still filling out my copy, the waiter comes by and grabs his copy and walks off. Not even a thank you! I left a 20% tip only because I used to wait tables in college and I felt bad leaving anything less but it certainly wasn't deserved. As I'm walking out my server walked right by me without a smile or thank you! I will not be recommending this to my company for any future meetings.

    This was a nice, upscale steak house that actually had really good sushi. The sushi might be the best part and I could see myself coming back just for the sushi bar. The steak was good, but not great. The sides were also good but not great. At these prices, I expect great. The worst part of the experience was the service: it was polite but very slow. I don't know if it was just our waiter, but there were a lot of tables that just had no food on them. We waited a long time for our drinks then a long time for our appetizers. We weren't in a hurry, but we were hungry. They need to get things out faster.

It's inside the Hyatt. a great location to walk around and shop) INTERIOR: 5/5 (it's very nice and spacious) CUSTOMER SERVICE: 5/5 (the waitstaff is phenomenal and friendly... as they should be when you're paying a decent amount at a restaurant like this) CLEANLINESS: 5/5 (they are also attentive. if you drop a utensil, someone WILL see it and replace it immediately. love that) QUALITY OF FOOD: 4-5/5 TASTE OF FOOD: 3.5-4/5 ---------- (**note: I rate each eatery relative amongst its type/range in THAT city. So, no, I'm not rating this restaurant compared to Alinea or some Michelin-star restaurant. I rate it and analyze it's component qualities (above) from 1-5 compared to other eateries with similar food type, aura, and price range) I can't say their meats are as delicious as Lawry's (Chicago) or Daniel's Broiler (Seattle). I would say Pete Millers is actually slightly better in taste, though the QUALITY of the food, aura, and customer service is better at Stetson's (not that Pete Miller's offers cheap or low quality cuts; they don't! It's just not as "high end" or boutique and picky with their meats as Daniel's Broiler, Stetson's or Gibson's will be). Gibson's is about on par or perhaps better in taste than Stetson's, though they both offer high quality meats. I feel that Stetson's and Chicago Cut are about on par. My best friend strongly prefers Chicago Cut, but I actually feel that Chicago Cut is also just above average and overhyped. Stetson's is great for the aura/atmosphere, presentation, and customer service. Everyone is dressed nicely, and there is a large and attentive waitstaff. They notice everything about you. They always notice if you drop something that second, and someone is always there to pick up the napkin or utensil FOR you. That's attentive! During the middle of the meal, someone comes by with adorable sorbet in a mini ice-cream cone. It's a wonderful surprise and nice detailing. Everything Stetson's does in the dining experience makes it so you can't walk away tipping anything less than 20%. We tipped 25%, which is good for them, because our bill was around $500. They have a knowledgeable staff and sommelier, which I always appreciate. I appreciate when any place takes pride in their expertise by carefully hiring individuals who will represent them well. I wasn't disappointed by their Riesling or Moscato (I usually am disappointed by most restaurant's Riesling choices, which are usually on the sour side not sweet). There's not a long wait here, it is a large establishment. You may wait 10-15 minutes sometimes, but that's not long. While I do give Stetson's a pretty good review, it is mostly rated in the dining experience and quality of food and presentation. The taste is just above average. I would recommend other places to keep in rotation with Stetson's, like Lawry's, Joe's, Gibson's, Chicago Cut, etc.

    This place is great. Here for business and needed a little relaxation with great food and great service. Definitely a must. My steak was cooked perfectly and the salad had homemade dressing. The sides were perfect.

    My wife and I were in the area and really wanted sushi so we stopped in based on the strong reviews. If you're looking for an authentic sushi experience this is definitely not it. The food tasted great though it was a little lacking in personality. There are about 8-10 different sushi rolls and an equal amount of sashimi/nigiri. Pretty standard options across the board. Nothing with real wow factor. Admittedly I kind of expected this to be the case going in given its a steakhouse and that its in the Hyatt. But as I said, we were nearby and really wanted sushi. The atmosphere was a little stuffy, kind of mid-upscale steakhouse vibe. The waitstaff was very friendly but all they offered in knowledge about the menu was "very good." Everything was very good. That being said, everything was very good though if you have time or the desire to seek out a legit sushi joint elsewhere in town I would recommend doing so. If you are nearby and just want some sushi you won't be disappointed with what they serve you. Just temper your expectations and remember it's a steakhouse that serves sushi and not a proper sushi bar.

    I don't usually like hotel restaurants but the sushi at Stetsons is pretty good. And yes I ordered sushi at a steak + sushi place. Someone else at the table had the filet mignon n they said it was great too. Pricey for a simple sushi roll but I will be back when in the mood to splurge on some expensive sushi. The service n the quality/taste of the food was great.

    After a long day at a customer site, and a hot day in the 90+ degree heat, I decided to treat myself to a good meal. I went with their "summer special" ... soup or salad + entree + dessert. I went with the salad, which was tasty. By some standards there was too much tasty creamy vinaigrette dressing, but I gobbled it up just the same. I went with the prime rib for the main course, which came au jus with asparagus and mashed potatoes. This is a really kind of classic steakhouse dish, and it was done well. The prime rib had to be one of the best seasoned pieces of prime rib I've had, even if the cut of meat itself wasn't the best (a little fatty and some gristle.) I ate my veggies, which were also appropriately seasoned and then settled into dessert. And the dessert is what went from five stars to four. The dessert was a "mojito cheesecake." Cheesecake seems to be a thing they do with various flavors. There was a bourbon cheesecake advertised as a prior special, but last night they had the mojito. It tasted like toothpaste. There is no good way to say it. It just wasn't my thing. It was Aqua-Fresh flavored cheesecake. The service was good and is what should be expected for a place of this caliber. The Old Fashioned I had was also good; no "mushed up" fruit, just a solid, flavorful drink.

    This place was outstanding , the staff and service where equally outstanding. the one thing outside of the food (which was the best) was the tenure of the staff at this place , almost every staff member that I came across had over 20 years service , says a lot for the Hyatt , the restaurant and the people. I walked away with a very warm feeling and was humbled. Good job Hyatt !!!! and a special shout out to Deb and Juan , thank you so much !!!!

    We had the grilled calamari, mussel pot and several sushi items. The rainbow roll was excellent, and I loved the firey hamachi roll. Slightly disappointed with our server, as he seemed to be going through the motions while we witnessed other tables being offered special items and clearly cared more about the patrons. 5 / 5 on food. 3.5 / 5 on service.

    Food was just ok. We ordered 4 filet mignons, sushi, octopus and only the octopus was really good. We had a lovely waitress but when we tried to voice our opinion to the manager he was completely unprofessional. I doubt this place will last long if the manager stays the same. Go elsewhere for your steak and sushi.

    Horribly horribly overpriced. I have had sushi at very fine places all over the country. This place charges 2 to 3 times what an order (2 pieces) of sushi should typically cost! They play the "per piece" pricing game. Realty? It's a gimmick. We ordered Yellowtail sushi, they brought us sashimi. A very simple tuna cut roll was $20. Sushi was of good quality, but nothing memorable. My wife and I had 2 drinks and a few orders of sushi and, with tip, it was $200. Why must all hotel restaurants rape you? Adios.

    I was really impressed with this restaurant! I often take clients out to dinner in Chicago at the usual suspects of steak houses, but gave this one a try on my own because of the deal through TravelZoo. The ambiance, food, and service were all great. We had the grilled octopus, ribeye, mixed seafood grill, and roasted mushrooms. Everything was top-notch, especially the freshness of the seafood. The only complaint is that the wine pours (by the glass) are quite small as compared to the competition.

    Disappointing.. took over an hour and a half for our steaks that maybe took 5 mins to cook. We asked for medium rare and came bloody. Ordered a side of spinich and it was very sour. Not sure why as I love spinich ans cook it often. Server never came around to even let us know it would take awhile. We had to grab someone and ask about our food. Two of us ordered wedge salads that were both totally different with different dressings. Manager was gracious and apologetic but it didn't make up for the food. Too bad its a pretty place.

    Just a quick review. Food and atmosphere are very good. Way over priced for what it is though, even for downtown Chicago...Maybe for a date night, or trying to impress a client. But downtown has a lot more options with way better views of the river, and lake, for much less.

    Stetsons Modern Steak + Sushi is located in the Hyatt Regency. We ate there because it was raining and we didn't want to venture out, but we were pleasantly surprised to find that it is a very good restaurant with a good selection of options, even for my vegan wife, who does eat sushi. The drinks are a good pour, the salads were very good with fresh greens, and the entree's were excellent. Our waiter was very good and checked in on us often enough to be efficient but not so often that he was annoying. I recommend this restaurant.

    We stayed at the Hyatt Regency in Chicago, and we were starving after a long day of walking. We were a little hesitant to try this sushi place, coming from Hawaii, and having GREAT sushi back home. But to our surprise, the sushi made right in front of us was so great. Not only was it fresh, and made with TLC, every bite so soft and full of flavor. The Sushi Chefs were friendly and kind. You can see how much care they put into making the sushi and serving their food as art!

    We were staying at the Hyatt regency hotel and it was snowing & cold outside so we decided to stay in the hotel for dinner. I had found an amazing deal on travelzoo for dinner for 2 for $75 so it was a no brainer. What a smart choice! Making the reservation was easy with open table. We were seated immediately upon arriving by the pleasant hostess. The food was divine. The popovers were so amazing my bf and I each had 2 of them then requested some to go (and I'm not a big carb eater at all!). They tasted like moist cheesy flaky croissants. In fact I just had one for breakfast :) the grilled octopus was good sized and unique. It had a very strong charbroiled flavor mixed with a citrusy sauce & was served with Granny Smith apples. I enjoyed it but my bf said it had a strong seafood flavor. The cap steak (if you've never had this cut of steak you MUST try it) and ribeye were incredibly flavorful and very tender. Large portions for the price. The choice of sauces were diverse and complimented the meat well, although the steaks were so delicious I didn't feel they even needed anything. Our server Jose was very attentive & considerate without being obtrusive or annoying. I was nursing my drink and he noticed so offered to bring me something else if I wasn't satisfied with it. He was great and really made the evening special & enjoyable. We were celebrating our anniversary and he brought out a cute desert for us. A great dining experience. We ate at kuma's corner, girl & the goat, xoco, purple pig, siena tavern, and the palm and this was our favorite. Would definitely go there again next time we're in Chicago.

    Over the previous twelve months my co-worker and I have been in Chicago for training on 10 occasions. We ate at many different Chicago steak houses, some by previous experience and some by reputation or recommendation. We found that far too many of these restaurants are trading on their past rather than the meal they are serving today. We ate at Stetson's first in February when the weather made us not want to leave the hotel. The meal and service were fantastic, and this when they were packed to the limit and then some. This latest visit, while not quite such a hectic night, was still busy and still excellent. The Caesar salad with fresh anchovies was fresh, crisp and flavourful and I appreciated that it was not dripping in dressing but had just the right amount to accentuate and not drown. The ribeye was fantastic and everything I expect and demand of a Chicago steak. It was properly cooked and had just the right amount marbling for a ribeye and was tender and delicious. The service was just right, they were there without hovering and never made us feel rushed. We enjoyed our desserts and after dinner drinks and coffee and called it an excellent evening and experience. We only had one negative comment to relate: While we are not quite sure what the spread/relish is which they serve to accompany the pop-overs (which are very good) is, it has an unpleasant taste and looks worse and none of the three of us found it in anyway palatable. Was it expensive, of course it was! An a la carte menu in a hotel (or any restaurant) in Chicago. Would you expect anything else? We are received our monies worth and would definitely return whether we are staying at the Hyatt or not.

    Actually ate here two days in a row. I was in town for a conference at the Hyatt and enjoyed it so much I couldn't justify the hassle of going somewhere else to eat the same type of animals and drink the same type of brown things. The filet was amazing. It's not the best filet I've ever had, but I enjoyed it thoroughly. The second night I had the New York Strip. Also great. The first night, my colleague and I ate at the bar. The bartender was very friendly and helpful. The second night, we ate at a table where the waitress was really trying to sell us on the ox tail. No tail for us. I mean who eats the tail? Anyway, the creamed corn was ok....was promised the best on all of Chicago. It's not bad, but Joe's still has that title. The second night we shared the whipped potatoes. That there was some good eatin. I wish Hyatt's weren't so expensive, because I don't stay there very often, but I'd do Stetson's again.

    We came to town to celebrate my daughter's birthday. Arriving to town in the middle of rush hour and relying on the GPS from the phone which sent us to every Hyatt corporate office rather than the hotel, we were hungry and cranky. We decided that we didn't want to leave the property and would have dinner at one of the spots here. The girl that checked us in mentioned that Stetsons was recently remodeled, had a new menu and it was delicious. I was in the mood for sushi so we gave it a try. The whole experience was FANTASTIC!! The sushi was good and fresh, not the best I've ever had but it hit the spot. The salads were delicious, I had the Caesar and my wife had the chopped and she just raved about the dressing on hers. Our main courses were just as good, I had the grilled octopus, my wife had the scallops and my daughter the petite fillet. Everyone loved their dish. If you're here in the area, this place is a hit and worth checking out
