Vacationing in the south since leaving it almost a decade ago, my wife & I were searching for some southern BBQ in the area near my parents house without traveling far. I had found a listing for "Big Mamas BBQ" and headed out, site unseen. guessing at the address, with no signs for Big Mama's we decided it must have been renamed to this place. The banner hanging on the ceiling proclaiming "Big Mamas Sandwiches" cinched it. The Dug Out is a culturally diverse affair, with southern comforts( BBQ ribs, fried chicken, greens) sharing the menu with bulgogi and Korean pot stickers. The clientèle was equally diverse with off duty soldiers from the nearby Army base in their civvies doing a 2 step on the dance-floor, combined with the group of old-timers sitting at the bar sipping beer from bottles and yelling at sports on the TV. The food was very tasty and what I desired for of my meal that evening. I was happily surprised with the portion sizes; whatever the Korean "Big Mama" can stuff in to a take out container. I was most satisfied with the rice and gravy(red eye gravy with tasty, long cooked, pork bits infusing it). The beef barbecue ribs( I really wanted pork ) could have been cooked longer as they weren't really fall apart tender, but they did come off the bone without much fuss. The smokiness of the ribs was perfect & the sauce( applied only after cooking ) was nice and tangy with a spicy Korean kick. My substantial leftovers were left for my family with assurances that they would not be disappointed, which was later confirmed when, going back for just one last nibble of the bulgogi in the fridge, opening the take out container the remaining portion was discovered to be substantially less significant than last observed, a family member secretly snacking on the remains at some unknown and unannounced time.
