But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Great little Mexican restaurant- until they closed... They still have a location open in Madison. The "brown salsa" is divine. I'd drink that stuff from the bowl.

The service is very much lacking here. But the food is very good and consistent and the salsa is awesome! This is family-friendly and it gets pretty loud in there, so if you're looking for a romantic dinner, this place ain't it! We go here with our seven year old and with other large family dinners and it suits us just fine. Hands down the best Mexican food in Covington! Dinner for 2 ran us about $30 with tip and a beer. Not bad! Easy to get to and they will do take out. The cheese dip is fantastic and their margaritas are phenomenal! In fact, I would go there just for those! They will also sell containers of their salsa for pretty cheap! Desserts are pretty standard and decent. We go here about once a month when we get the craving!

I was visiting from Chicago and stopped in despite the lady's review that was upset that her child didn't get happy birthday sung for them. The wait was minimal, the food was great, the wait staff was courteous, and I have no complaints. Of course I have traveled all over the world and have been to some great restaurants and some really bad restaurants. When reviewing this one, bear in mind it is a Mexican restaurant in a shopping center off of the highway. With that in mind, this restaurant is 5 stars for my visit.

Pacos is my favorite mexican in Covington. They have the best sweet tea, great quesos and decent service. It gets pretty shotty on karaoke nights though, watch out.

First let me say that when you arrive this place is usually very busy and you might have to wait. If it is Friday or Saturday night, a wait is on the agenda for your and your party. There is not a place to wait that is out of the way and comfortable. You pretty much have to stand in the doorway area. Having said that, the food is usually pretty good for a small town. The portions are ample and on most occassions pretty fresh. There are two things that will drive you crazy about this place: the wait time for your food and the HORRIBLE service. I have no idea how many times we have eaten there over the past few years because the food is good and it is just around the corner. Locals love to meet here and visit, relax, and just hang out. After the last two experiences, I doubt that we will go back. I have friends in another state that has a mexican restaurant and I know that it does not take and hour or even forty five minutes to make fajitas and two tacos. They were not busy and several tables received their food before we did. We were continually told that our food was coming. This has happened in the past but we continued to overlook it due to the locale and the food. The staff ALWAYS acts like they are doing you a favor to get you anything. We have spoken to managers and they run back to try to figure out what the problem iswhere in the world is their food and we always get what I call a "deer in the headlight" look. I am very sad to say that we will probably not try again. The last time was in April, we went during the week to celebrate my daughter's birthday. They usually make a celebration out of a birthday. We told them and they forgot. We asked again and they said that they were coming. Three other birthdays around us were recognized. We finally gave up and just paid and left. When asked how our dinner was, we explained, and like every other time that we had a problem we got, "sorry". This could be a fabulous place if someone actually cared about the customer.

That authenticity just comes with it's own issues of people who were raised with no standards of food safety and unfortunately are the ones cooking your food. I used to love the place.. they do offer some unique recipes, I am totally hooked on the Chipotle Salmon.. I'm still going to give them the benefit of the doubt..because the food is that good.. but I will monitor my food closer when I go

Hard to say what happen at Pacho's...we at one time dine there once or twice a week. Not anymore! We drive on by now.We tried it again 4 different times and walk out the last 2 times.. Maybe it's us.. No more Pacho's for us.. not even if you were paying ....I gave a one rate because it's has to have at lease a 'one' to rate You,might like the place..

We were visiting friends in the area and we always stop by Pachos for a quick lunch. This is your standard Mexican fare and is not the most inventive, but every time we have come here it is well prepared and the service is attentive. The place has very good prices as well.
