Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

The food is fantastic. If you're passing through Trinidad, you must stop at Mission at the Bell. Mission is dishing up fresh, homemade, legitimate Mexican fare. It pains me that this place isn't in Denver or Santa Fe - it could double its prices and its tables would be packed every Friday and Saturday night. As it is, Trinidad is crazy-lucky to have this gem in the bottom floor of the unassuming Bell Block building. I highly recommend the Bell trio, which will involve you having the best chile relleno of your life, accompanied by a tamale and enchilada and smothered in plate-licking red chili. Let's talk more about the chile relleno. A giant relleno, perfectly fried, crispy, not greasy, and stuffed with happiness. As a connoisseur of Mexican combo plates, I find that the chile relleno is often the filler, forgotten, ugly step-child of the combo plate. At Mission, the chile is the star, boasting tender chile flesh and some sort of flavored crack they've stuffed inside. Having said that, the tamale and enchilada were divine. Nothing was frozen - everything was fresh. The entire plate was covered in flavorful and spicy red chili and topped with a fresh scoop of guacamole. The interior of Mission is humble and comfortable: old booths and banquet seating reminiscent of your cousin's wedding. But seriously, who cares. The food and the liquor are plentiful and the service is superb. Get thee to Mission. NOW. P.S. I've reviewed the two lower reviews on this restaurant and suspect they were written by those with substandard palettes ("improve the salsa by making it more like pico de gallo") and some person who couldn't handle his order of extra-spicy.

They have fideo! It's really good, too. In fact, everything we had was delicious. House margaritas were more expensive than we expected, but Trinidad is also just unusually expensive. Highly recommended!

Um yah where are you...no answer on phone etc...out of business? We looked for you-not there. We called and number not available. Food must not have been that good.

I am too gringo for this place. Don't get me wrong, the food is great, it is just too spicy for me. I ordered a mild burrito, and my mouth was on fire. I must have gone through 6 glasses of iced tea (good tea) trying to put out the fire. If you like your Mexican food spicy, this is the place for you.

This is absolutely my favorite Mexican food restaurant of all time, and I've tried a lot of places. The green chili is amazing, but be prepared for a lot of spice. I usually like hot chili, but their hot is too hot for me, so I go with medium instead. All of their food is positively amazing and I'd highly recommend this place to anyone looking for good Mexican food, or just looking for a place to eat in Trinidad. Service is great and very fast.

Had lunch with a very large group today. The staff was very attentive and the food was fine. It seems as though it is a bit of a challenge to find any beer on draught in this town. So wondering if it has something to do with liquor laws in Colorado. Anyway... That would defintely be a way to add 1 star to the rating. Another suggestion is to improve the salsa by making it more like pico de gallo. Regardless, this is an okay place for lunch.
