Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Great as usual..as good as u can get for the carnitas plate. Can't beleive this place out here in the sticks can compete with any mexican restuarants I've been to in any size and location of city.

So I have been living out east for roughly three years (vicariously through my bf for the first two and actually living here for the past year). I have been to Corona's twice and I must say that as much as I appreciate and crave good Mexican food, I can't say that Corona's fits the ticket. Both times I've been here I've found the food to be lacking. I have most recently had the shredded chicken burrito with beans and mild green chili. There wasn't much flavor in the seasoning in/on either the burrito or the chili. It was alright at best. I have been wanting to go back and give them a second try for a while now and I doubt I'll be back anytime in the next year. Thanks, but no thanks Corona's.

Sorry, but the ethnicity of this establishment must have moved back to Mexico. Margaritas are watered down to the point of believing there's no tequila in the drink. Service is by young people mostly concerned about their social life. The chips and salsa were enough to make me not order off the menu. Try the Happy Burrito in Bennett.

This place is so delicious! Their salsa and chips are awesome, their food I have no complaints about! I would warn you though, I like spicy things, but even the medium was a little too spicy.

The wait staff is AH-mazing here! Food is good, solid, standard Mexican food :) You have to save room for the fried cheesecake - uber delicious!

I'm going to have to bump it down 3 stars because the service has become terrible. The food is still good, but takes forever to get a table and get the attention of a waiter if you need refills or your check. Even if you call ahead to pick up your order, they're still don't have it ready when you arrive on time. Sign of poor management/supervision of staff.

Food is good, they don't take American Express, I would eat here more often if they did.

Traveling across country with my parents, we decided on some Mexican food--were in Colorado, after all, and this place looked like it was in the perfect spot, between the highway & campsite. The Positive: the food was fair-pretty good: Dad loved his beer-battered cod fish tacos, I loved the Mexican Pizza & deep fried jalapeño things (something like Zapatas?) & the ingredients in Mom's quesadilla (including grilled jalapeños, roasted green chilies, mushrooms, "Mexican Cheese, etc) were tasty; however, they really needed to grill/bake/fry, or whatever they do, longer as it was really soggy, even though we ate w/in 10min of receiving our order). The chips & salsa ( especially the salsa!) were great, but the chips needed some salt as they tasted completely salt-free! Most of the staff, especially the sweet guy at the front register who took our order, were super nice! Even the guests & the teeny-tiny bar (about 4 stools) in the back of the restaurant were nice, larger than life characters. There were 2, 2 seater high-tops just in front of the bar. It's a Friday night, and this joint was hopping, so the super long wait was understandable, BUT... The Negative: The communication between staff members fell within the not-so-hot range. About a 1/2hour after we were told our food would be ready (already having waiting outside in the hot strip mall parking lot for 40 minutes), we decided to have couple quick drinks while waiting for our order to finish; only a few more minutes, said the host. Now, so far so good, because I really don't mind waiting when everyone is so obviously slammed. I ordered 2 shots of their tip-top premium tequila for Mom--who hasn't had a shot since my sister's wedding in 2005, & a Negro Modelo for us to share. I waited patiently while the bartender waited for one of the registers/ordering screens to be vacated by a server so he could check the price of the shots as he didn't have them memorized. He kindly chilled my shots in his shaker when asked, then strained them into your standard-sized one ounce shot glasses, which would have been great had I asked for them neat (straight pour from bottle)...& here is my pet-peeve/the bone I must pick: I ask you, if I pour two ounces of liquor into a shaker with ice & shake/chill it, when I pour them out, will I be able to fit all of the liquid into two ounce glasses? No! I'll have something close to twice as much, depending, by the time I pour them 'cause when you shake/chill a shot it expands/is watered down through the chilling process itself. When I kindly pointed this out, he responded that he'd "poured heavy, putting 2.5 ounces in his shaker." Now, as you can imagine, it doesn't matter if he poured TEN ounces in his shaker, if he uses two, one ounce shot glasses as his receptacles, he won't ever be able to get an end result greater than two (watered down) 1 ounce shots! If he poured the correct amount in he should have made sure to pour all of it out. I didn't argue with him, or say all of the above out loud, I just sweetly & simply pointed out, while joking with the regular to my left, that when you chill two ounces of room temp liquor it won't fit into two one ounce shot glasses without their being quite a bit left over (which I PAID FOR) that's going down the drain. He didn't seem to understand, so I patiently tried wording it differently, but he interrupted me by snapping, "I've been bartending for 10 years," holding an insolent shoulder shrug pose, walking backwards away from me. I simply said "well, I bartended for 20," thanked him, gave him a too-generous 19% tip & went to sit at a high-top w/Mom. If he'd simply been courteous his tip would have been at least 100% more. A short while later, a server came by & informed us that we actually were not supposed to sit a the high-top as it was a server section, not part of the bar. Thankfully, she let us sit for another few minutes when she learned we were waiting for food. That WAS kind, as I get the section thing. See, I can forgive an ignorance of 3rd grade science, but taco with a side of snide just leaves a bad taste in my mouth. If you do go here, don't sit at the bar & you may get a chance at a decent-ey-ish meal & a pleasant dining experience. I know there are at least a few nice, competent employees--from a person ordering to-go's standpoint, at least. Still, I definitely believe employees are a strong reflection of an establishment's strengths & weaknesses. I worked for almost twenty years in Waikiki's bar & restaurant scene, doing everything from server to bartender, & then on up into management (in quick succession). I kept bartending even while managing as the income put me through college, exploring the world, buying a home & then graduate school. I apologize for the length of this review, & I believe it is the first negative one I've ever written, but he pissed me off.

Visited Corona's in Strasburg after my grandson's Legion team got kicked by the locals. Never been to this 1,000 population town before. Food was outstanding! The Margarita (14 oz) was so good and big I took a pix for my Facebook profile photo. The marinated carne asada (steak) was so delicious we re ordered additional side dishes. The Churros desert (with ice creme) was yummy. Our token vegetarian in the group did not go hungry either. I've got to figure out how to get back to this town. Oh yes, the "Comanche Crossing Museum" was interesting too. Jim Greeley, Colorado

The salsa was just " ok" and tasted primarily like tomato sauce. Steak and avocado burrito was good. I have had better Mexican food, but not bad for a small town.

After a year in London spending every Tuesday out eating Mexican, I was not apprehensive, but certainly curious to see what I would think of Coronas when I went for Tequila Tuesday. I've been there many times before with my family, who live one town over. Coronas as pretty darn near perfected the art of Tex-Mex: everything is smothered in amazing sauces and cheese, and huge portion sizes, I'm always a fan of the enchiladas, though the tamales and burritos are very good too. They have a choice of salsas (mild, medium, hot) as well as a green chili sauce that goes great on many of their dishes. The chips and salsa that start every meal add a little kick and take the edge off while you wait for an overwhelming potion of Mexish food. The margaritas are great: the "small" starts from $5 and the large, a bit like a swimming pool, begins from $8. They have a wide selection of tequilas, both regular and top shelf, including Don Julio, Cabo Wabo, and others. As a budding tequila connoisseur, I can't ask for more in the tequila range, especially in such a small community -- there were plenty of places in London with fewer choices. The service at Coronas is always good, served with a smile and a conversation, and the locals are known and remembered by the servers. It's always a nice feeling to come back after a while and still feel at home. That's what Coronas does: it's a family-run local business that makes you feel at home. It adds diversity to the restaurant options in the I-80 corridor, and will always hold a place in my heart for that reason.

I tell you what, for being in Strasburg you could do A LOT worse. The service is good...even if the place can get quite busy. The margaritas are good, the combos are pretty good as well. The gorditas are pretty freakin' tasty...remind me of how my G-ma made them. The green chili is addictive...especially covering a shredded beef burrito. The thing that was strange to me is the mixed vegetables in the rice...I'm used to veggies being in rice....peas and corn...but carrots and lima beans? Oh well, I eat it...and it's still good. Go here and enjoy...the nice girls in the staff will take care of you!

Came here because of the good reviews on yelp, don't believe everything you you read. The margaritas were too big and too expensive, the food was just average. Will not return.

This place is just okay. The food is good, but it's something that you can get at any restaurant. There isn't anything exceptional about it and I think it gets decent reviews simply because there aren't any other options for Mexican food anywhere nearby. The waitstaff is very friendly and the food is just average. It's okay if you're in the area, but definitely not worth the drive if you're headed from town.

WELL Jennifer I beg to differ! This place is not only over priced for being in un-incorporated Adams County but the service is the worst I have ever had! My wife and my two daughters have been there several times. We have lived here for over 10 years. It takes about 40 minutes during dinner to get a meal! That is way too long, plus lunch takes about 25. The green chile is good along with the beans; meaning you can have a great smothered burrito of any they offer. The salsa has too much cumin, the tacos and tostados have no flavor, plus too soggy! Where have you been eating? The daughter (of Coronas) has an ice-cream shop in Bennett that is totally awesome! Try it!!!! To Jennifer M. from a Mexican American who knows great Mexican food. I'm very happy with the things in my life. You don't know me so don't judge me! Corona's is OVER PRICED for the portions! I said the green chile is great but the service is POOR! I live here in Strasburg and have been there several times but haven't been for a while because the service never changes, slow...... It's ok if you want to gorge yourself with chips and salsa for 40 minutes or longer. I usually don't have that kind of time!

My all time favorite Mexican Restaurant! And I have TRIED many of em'! Of all the places to find this little Gem...Strasburg CO. I visit this little town about once a month, having many family members in the area. The chips and salsa are top notch, warm chips , salsa that does not have too much of one thing...namely onions! My favorite dish is the Steak and Avocado burrito. It is smothered with tasty green chili, and you have a choice between hot, medium, or mild or a mixture of them. All beverages (not alcoholic) are served in extra large glasses, so you never run out. The Margaritas are good too! I have always had great service here. Most importantly, they have always treated my gramma, a more than frequent diner at Corona's with kindness and respect. Prices are very reasonable! I have not dined at the new location in Broomfield, but will try to get up there as soon as I can!!

There aren't a whole lot of choices that I've found when it comes to Mexican food in Broomfield, CO, so I was excited when this place opened down the street from me. If you want to eat at this place for dinner on the weekends, you can expect to wait for a little while. This place does as excellent business, and for good reason. Not sure why some of the reviews explain that Corona's is overpriced, because I sure don't agree. I went into Corona's less than a week ago with my fiance and our dinner was $13 and change. To me that's pretty hard to beat. I've been in Corona's probably about 7 times by now, and always had excellent service. I've never had to wait from than 15 minutes for food, even on busy weekend nights. The food has always been above average, so the overall experience is hard to beat. Low prices, decent food, good staff, and quick service. What more do you want.

A coworker and I ate at Corona's yesterday, it was horrible. My chimichanga tasted like a turkey pot pie with chili on top of it (it was supposed to be carnitas). And my coworkers food was awful as well. On top of it we both got very sick last night, when I called the restaurant today to inform them the only response they had was, okay thanks. I will never go there again.

Ate at Corona's last night and loved it! The food was delicious and the waitress was knowledgeable about ingredients: when she found out I didn't eat meat she double-checked my whole order to make sure it was all veggie-friendly. Our food came out in a timely manner, and all of the staff were super friendly. I heartily recommend this restaurant!

My husband and I live in Aurora, and love to make the drive to both of the Corona's locations, and enjoy the yummy food. We are always treated so nicely, and the food is so fresh, and delicious! The staff is friendly, the resteraunt has done so well that it expanded, and also opened a 2nd location! Whenever we have family visit from out of state, one night on our agenda, always includes the drive to eat at Corona's. I highly recommend it, and also would like to comment that some people are never satisfied with anything in life, and to base an opinion on one negative one is not smart. Only you will know what its like, if you go. We love Corona's! :)
