Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

I love coming to this Chipotle (the only one we have in Summit ha). I tend to visit at least every two weeks if not once a week. Always a good choice, and I think somewhat healthier than other fast food place in the county.

It was very good but they ran out of chicken. I got steak instead which was kinda tough. I'd eat it again though. Burritos are huge!

Food is good because it's Chipotle of course. Staff was less than good. One girl didn't even respond to me when I requested guacamole. I guess it wasn't her job - she just looked at me and moved onto the next in line. I had to repeat myself to the cashier to get the guac. The gentlemen in front of me was a firefighter and was annoyed at being charged for additional toppings. Then I overhear the cashier tell him that they no longer offer discounts to firefighters only police! How sad.

Girls are very nice, always have what I like in the menu, nice place near the river. Lots of locals in this place.

The staff and customer service at this particular location were on point when I was passing through town during mid-July 2013. I am obsessed with Chipotle so I eat at any nearby branch I can find when traveling. What made this place great is that the veggies, the rice and the salsas were really flavorful and marinated well. Sometimes the batches don't always come out that great-- this place was on par in every area. I hope it stays that way upon my next visit. Great job. I recommend this place if you are looking for quick tasty Mexican style food in the form of taco or burrito. They don't have nachos but there are chips and salsa options. I think the prices are decent at this franchise, depending on what you order. This is what I would consider higher up on the fast food chain- so you are not going to find the $1 value meal. Expect a meal to range from $5 - $10.

Ok, 4th time is a charm when it comes to this store...our most recent visit brought me the customer satisfaction that I have been longing for. I ordered a quesadilla, yet again and everything was to my liking...I dropped them a star since its such a busy place and a mad house it's a bit of a distraction to eat there...loud and bustling! Although not bad it just made it hard for me to give it a 5 star review...so sorry Charlie!

The food tasted ok but I thought the guack was overpriced and even though the staff was very friendly, whoever served me rolled my borrito like a dingus.

We were on the road from Denver and stopped on our way out West to be greeted by super nice boys that only wanted to please us. They were sweet and wished us a great trip! The food rocked too!!!

Worst chipotle i had ever gone to. They cared more about moving the line fast rather than making me a quality burrito. The steak was cold and red inside, and the rice was extreemly dry and crumbly. Next, the guy asked what salsa, and i said hot, and he imediatly puts on medium and slides it down and it was wrapped before i could even tell them they messed up. For being one of the only chipotles in colorado, you think it would be decent.

it's Chipotle. So obviously the food was great, and the line moves fast. Oh wait, the line didn't move fast. This was quite possibly one of the slowest chipotle locations I've ever been to. They should checkout the two locations downtown in Denver and take notes.

It is chipotle Mexican restaurant. what do you expect can go wrong. Steam-fill -stuff- roll -wrap and pay pay. They he keep it clean the tucked away. Nice seating a ear shout from the Blue river or in side windows.

Nice, clean, well lit Chipotles. They move an amazing amount of people through here, so don't worry about the line!

Good... Because it's Chipotle... And good because the guy at the end of the line where you pay (employee) had a smile on his face and was very friendly! Also, we had an employee check on us during the meal. Fast, fresh, and easy to get to!

How can I go on a trip and not find a Chipotle. Tucked into a mall just close enough to I70 to turn off of or hit just before you get on the highway. About half way between Steamboat and Denver, was a great place to stop and take a car break. Just the same as all the others and just as good.

We are big fans of Chipotle. We love the freshness of their food and the choices you have. This Chipotle is amazing, however. Whenever we have been here there has been a huge line. That isn't a problem, though, because their service is amazing. If the line is to the door, you will only have to wait for 5 minutes, I promise!

New staff, smaller servings with a higher price is not a good combination, guacamole was cold and watery and they gave me the smallest barbacoa serving on the planet.

There was no line so I expected good service.. However the workers were very rude and pushy. The food tasted fine (although smaller than usual portions, hastily scooped) but the interactions with the staff made me leave with a bad taste in my mouth. Not coming back, I can wait till I get to Denver..
