Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. Don't be fooled by good reviews of this place. It's a basic Mexican place that is no where near authentic Mexican if you know what that is. Your choices are limited and the salsa is like katsup. It wasn't horrible but to call that Mexican food is really more extremely Americanized Mexican. I could have spent my $15 elsewhere. A large burrito is 2 taco shells morphed together. They use taco shells to make small burritos and fuse two shells together to make a big burrito. LOL! Wow - that's something that my 6 year old niece would do. I learned my lesson...should have walked when I saw the atmosphere. It reminded me of a 1950's soda shop that hasn't been cleaned.

Short and simple - the best damn green chili ever. I recommend the smothered burrito. Awesome! As for comments that this place is a dive - they are right, it is. But the green chili is to die for!

Be ready to eat, because you're getting huge portion here. Just your standard Mexican food restaurant just like your grandma would cook. The restaurant is a dive but those are usually the places you get the best meals at.

Best green chile in Colorado. Get the green chile smothered fries too. Great family run place that supports the local community. Breakfast cannot be beat for value. I love Rita's. I'm not sure why some DB's come to Rita's an expect the Ritz - bottom line is the food is good and made by Rita. You don't like it, head over to Taco Bell.

Rita's has been my gold standard for green and red chile throughout my life. It's a converted service station and has been Rita's for the past 30 years at least. It's family owned and run. And their recipes are closely guarded secrets. Make sure you bring cash because credit is not accepted. My suggestions: pork and avocado burritos smothered, and taco salad bowl smothered.

Ritas is a typical pueblo Mexican food place, it's fairly dirty inside and the staff is...well, let's just say the staff could be better. But despite all that ritas is one of my favorite places to eat, I love to buy pints of their green chile (green chile is a MUST if you eat here, I recommend the smothered monster burrito), I would be willing to say they make the best green chile I've had in pueblo so far. Anyway, if your looking for a lot of good, cheap Mexican food - put Ritas on your list.

I have been going to Rita's since I can remember. The Baca family makes some of the best green chili I have ever had. Rita and Rubin have always been wonderful, friendly people to chat with. The family is so nice and try to keep the same old feeling it's always had. I would recommend trying the empanada (extra crispy) smothered with green chili and their rice is some of the best spanish rice, even if you don't like rice much. I love going to Rita's whenever I'm in Pueblo!

Ugh. Rita's continues the plague of bad "Mexican" food here in Colorado. My buddies and I ended up at Rita's today when we found ourself in Pueblo when work sent us for mandatory training. Rita's happened to be close by and with 3.5 stars it was a gamble but one we decided to take. I felt like turning around the moment we walked in. The south entrance takes you through their storage area, and apparently the owner's kid's play area. It was a cluttered mess and very unprofessional. My second clue that Rita's was going to be a disappointment was that all the guests were blue haired white folks. The decor is straight out of the 60s. And there were flies buzzing around. All told it is one hell of a first impression. Pueblo is famous for their "Sloppers", and Rita's "Mexican food" utilizes the same technique... Drown everything with green or red chili. I had to really pay attention to realize that I had enchiladas, rice and beans under all the chili. The beans were awful, and the only thing worse than the beans was the rice. The beans were a soupy mess. Oh, and that instant "Mexican" rice from Lipton is better. My buddies really enjoyed their food. It might be time for some new friends, friends with taste.

Rita's is the fire! If you seek tasty mexican food with lots of green chili, look no further! I've been eating at Rita's for as long as I can remember. Many famous people have passed through on their journey's. My favorite dish has to be the tamale plate! I'd recommend it to everyone! Lol the atmosphere isn't as modern as some would like but I focus on the gratuity of the staff as well as my thankfulness for a home cooked meal!
