    Pros: Homemade chips, really good fresh refried beans, decent margaritas, house-made chile rellenos (which were not whole chiles and just ok, so it balances out that they weren't pre-packaged), pleasant service (table service at dinner, counter service at lunch); good red chile (which is a rarity in Pueblo, the Green Chile Mecca). Also props for traditional Mexican music, which might be a little trite, but makes for much better ambiance than any radio station. Cons: Apart from the relleno not being a whole stuffed chile pepper,I don't really feel like complaining about anything here because it really was one of the better experiences I've had with Mexican restaurants in Pueblo. Jorge's used to be great, but service and food have slipped a lot in the last few years. Mi Ranchito is certainly a contender. But Papa Jose's is my new go-to.

    This is definitely not your typical restaurant, I felt kinda dumb because I didn't know we order at the counter or grab our own drinks lol, but once I figured to out it was a good experience... The food is not traditional Mexican its more of a New Mexico style ... It was good. I ordered the green Chile chicken enchiladas and rice. I can say I was impressed it was good decent food. I go there once a week now me and my bf enjoy the food fast service and you do it all yourself for the most part so no waiting on anyone else it's nice!

    I had not been in here until I had lunch with colleagues recently. It is down the street from our Pueblo office and I will definitely be back. I give it four stars for what it is -- a deli style (order at the counter) Mexican restaurant. Nothing fancy or pretentions, but excellent food at very reasonable prices -- and friendly service to go with it. It makes a modest appearance from the street, but it is worth trying.

    Five stars for a friendly server and location on historic Union Avenue hence the gist of the crowd are friends/family and don't know anywhere else to go'ers! Food was disappointing as far as the norm local faves. Get your GPS on and head over to Jorge's in Bessemer or Mi Ranchito on the S.Side for some decent Pueblo Mexican food.

    I love this place. It's a little funky to order here at lunch (order at the counter, be sure not to wait in line before grabbing a menu - read it in line), but worth it. Great food, quick service, and very nice folks. Highly recommended.

    After reading the reviews on the web about this place, we decided to stop in Saturday night. We were seated right away,but when asked if we could sit at a bigger table, we were told those are reserved. OK fine. We took a tiny table against a wall. After ordering chips and salsa, margaritas and receiving menus we settled in to enjoy ourselves. Hold on!!, our chips were obviously NOT home-made, definitely came from a bag. After the first taste they were soggy from humidity or something and the salsa also not homemade. Tasteless and bland. They too were tasteless and watered down, if there was tequila in it, I couldn't tell. We were not impressed at this point. We discussed the reviews we had just seen and compared what we had just tried with them, not happy at all. The waitress never returned to take a food order after a good 15 min. She was to busy chatting with whoever was in the kitchen, I could see her and made eye contact several times, but to no avail. We finally decided to leave. Even when we stood up to do so, you would think this action could have prompted her to come see what the matter was! NO!!, she just stood there watching us. My husband went up to pay for the drinks and told the cashier how we felt, she casually said, " Do you want to talk to the owner? He's standing right here." I had noticed the man she was referring to and wondered why he didn't do anything about unhappy customers, but again-no. As we left the restaurant a group of 6-7 women were about to enter. We told them about what had just happened, they too said they were first timers. Ultimately as we got in our van they turned around and walked away. I can not, in all honesty, recommend this restaurant to anyone!!

    Good service poor excuse for food. The queso was straight from a local concession stand. The chili relleno was a can of green chilis wrapped in a tortilla and deep fried. The enchiladas were covered in soup. This is not what I would even consider a restaurant, but a bad Mexican concession stand.

    Let me say right away that the staff was great. But this is just a 3 star restaurant. We were passing thru Pueblo and looked up Mexican restaurants and saw nothing but good reviews. However as soon as we walked in the door we (and everyone after us) did not know we should go straight to the counter to order, then find a table. Very confusing and one family walked out when they weren't seated. The menu wasn't special but for a casual type of restaurant they had good options and good pricing. My green chili plate was good size for the price, nice heat, but somewhat bland. My boyfriends taco plate left a lot to be desired. Not much flavor in the meat and not a lot of food for the price. But with a side of very good homemade salsa. His son had the kids meal cheeseburger and fries and the fries were clearly made in house and he enjoyed them. Overall I would say you get what you pay for. Not bad just nothing special. If passing thru Pueblo again we will try some place else.

    My husband grew up in Pueblo and loves this place, and so do I! We are in Colorado a LOT, and every time we are in Pueblo, we just have to stop in to Papa Jose's and get some good spicy green chili and some delish Colorado-Mex eats! Papa Jose's has awesome crave-able greasy-spoon Mexican food with lots of cheese and beans and salsa...yum! They also have totally potent margaritas (one does it for me!) and yummy sopapillas for desert. This is really the stuff of dreams. If i lived in Pueblo this would be my hangover hotspot, my latenight hangout, and my " don't feel like cooking" mecca. Here's one little tip - if you are wanting spicy green chili, go with the hot. The medium is pretty darn mild (but still yummy!). Fun fact: this place is also mentioned in my bible...the book "Road Trip USA"! Anyone who knows that book knows that the author is dead on, and so am I!

    My wife and I stepped into this restaurant seeking shelter from the hot sun and strong winds that ar the trademark of the Pueblo area. The thought of chips, salsa, cold beer and air conditioning was hard to resist, and this small shop looked like a good place to hide out. Unfortunately, the food was not quite up to our liking. The basket of chips contained a 50/50 mix of stale chips, and the salsa tasted like glorified tomato sauce. When we asked for something spicier, our server said that what we had was as hot as it gets. We decided to order the flautas appetizer and determine if we should order a full meal based on this appetizer. They were okay, and came with a good helping of sour cream and guacamole, but without some good salsa, they were just mehhh.

    This place is the best! Great service and great food. Coming from San Antonio I have been looking for some good Mexican food and they have delivered...had some good ole menudo and a taco, my hubby had the #1 combo n he tried the abodada soft taco and the little one had bean and cheese burrito that he loved....you have got to try this place if you're in Pueblo....

    This is the best place for Mexican Food in Pueblo, and beats all places in Colorado Springs. I used to make the drive a couple times a week for the # 1 Combo. The prices are great & the staff is like your extended family :) You will always have great service here!! Everything is good but I especially recommend you try the shredded beef. I get it in a taco with a deep fried flour tortilla, it's AMAZING. The Cheese enchilada's are also a wonderful treat. You will probably want to buy some green chili to take home with you. I'm a sissy but luckily they have a mild as well! Save room for dessert because you will adore the sopapilla's here! The perfect end to a perfect meal! If you have not tried it - GO NOW you're missing out until your life includes Papa Jose's! If I could open one where I live now I would :)

    On the spur of the moment, we stopped for dinner and we weren't disappointed! Going out is the exception for us, since we have been disappointed in other places, regardless of city. My wife had the Mini-Combo. It was good, freshly prepared, and still plenty of food, in spite of its name. My choice, for a change, was the Mexican Hamburger, two quarter-pound patties (slightly over-cooked) open face on buns, covered wth very good medium green chili. They don't call it a slopper, but that's what it is! I like Papa Jose's since they have a good selection of beers, and one of my favorites, Dos Equis Amber. The "slopper" was very filling so we decided to skip the sopapillas. We regretted that when we saw a neighboring table enjoying theirs!

    You know when you have a craving for traditional Colorado Mexican cooking? The kind where the enchiladas are smothered in red gravy and the refried beans are a creamy, salty base for lots of cheese and sauce? I was walking down Union Ave. in Pueblo recently and all of a sudden I got the heady aroma of fresh-made corn tortillas. That's when my mind went to all those traditional meals. Sure enough, Papa Jose's makes their own chips (and probably their own corn tortillas, too), so just walking in or near the place makes you crave some chips and salsa, then a traditional enchilada. And that's just what I had, but it was even better than I imagined it would be. Sometimes those kinds of enchiladas are flat and chewy. Not here - the corn tortilla was light and there was just enough cheese and it was cooked just right. The flavor of both the corn tortilla and the red-brown chili gravy were sensational - very well made. I gorged on the homemade chips and the very tasty salsa - more tomatoes than chiles, but still addictive. Papa Jose's does this kind of Mexican food proud.
