Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Took a group to the Mill Stop Cafe based on the Yelp reviews. It was outstanding. It's one of those places you would likely never stop for judging from its outward appearance. However, all 6 of us thoroughly enjoyed our meal. The waitstaff and owner were very attentive and kept bringing different things for us to try. Everyone of us ordered twice as much as we needed just because it sounded so good. Let me say that the regular portions are very large. I had chiles rellenos, one beef and one cheese smothered in green chili. Excellent. Everyone left happy and full. If you're in Pueblo and hungry, check this place out. You won't be sorry you stopped.

I think the thrill of eating here is more nostalgic than .. ahem. Packs a crowd always. My lil one had her first sopapilla here. Chicken tacos on white. A bit soggy . Ask for the tomatillo and picadillo salsa's as the red is boring on flavor. Once you see that rice it's like a high school memory:) Five stars for service, hours and nostalgia good memories.

We decided to stop here after reading previous yelp reviews and were not disappointed. I ordered the beef stuffed sopapillas covered with green chili. It was very good. I had never had rice like what they serve. It was unusual but I enjoyed it. Our server was so nice too. If I ever stop back through I will eat here again. If you are craving Mexican food in Pueblo I would recommend eating here.

They have delicious food. And the employees have treated me well.

I'm a fan of the Mill Stop. On a week-long business trip, I used Yelp to find this place. From the moment I walked in I was impressed. I love family diners in general, and this one stood out. The customer service was top-notch. I ordered a dinner salad that was just okay... not expecting too much anyway. But I also ordered a relleno with a famous Pueblo Chili in it. This was delicious. The meal was pretty good overall, but it was the hospitality and the atmosphere that will bring me back next time I'm in Pueblo.

After reading the reviews on yelp, myself and 4 coworkers had lunch here. I had the chicken el borro with green chile. It was excellent and more food than I needed. Everyone enjoyed their meal and the service was great.

Want grease and commodity cheese? The Mill Stop is for you. Otherwise, stay away.

Some of the best regional Mexican food you can find in Pueblo. This isn't a sparkling cookie-cutter restaurant, but a blue-collar family run place that values good food over brand new tables.

You have to love a place where the owner is warming up your cup of coffee!!! So when in Pueblo Colorado - you are eating green chili with every meal! I had the Huevos rancheros. Rice, beans, eggs smothered in green chili sauce. The eggs were Basted perfectly. On top is the fried potatoes. The green chili was tasty, not spectacular but very good. I wasn't impressed with the rice - it is a very wet style. I would still highly reccomend this place. This place is like going back in time - in a good way!! Excellent customer service.

Well I have to say Yelp let me down on this place. The blame is really on the reviews of this place. I was really looking forward to eating here and as soon as I walked in I felt like maybe I should leave. It's an old Diner type place and has an awful smell in the air. Sat down and noticed about a handful of flies flying around, I spent a good deal of time guarding my food from them. Ordered the Large Combination, which is pretty much everything for 12 bucks. Food came quickly and my server was very nice. THEY DON'T SERVE ALCOHOL!!!! WHAT!!??!! Took my first bite and was immediately disappointed. The green chili taste like it came from a can and sadly was the only thing that had any real flavor. I've eaten at a lot of "Green Chili" Mexican Restaurants and Mill Stop Cafe is on the lower end of all my experiences. I really hate to leave a bad review, but hopefully I can prevent someone who has actually had good Mexican Food from making the same mistake. On a more positive note the free sopapilla was amazing!

Mill Stop is a Pueblo institution. I've eaten there for the past 20 years and am glad to say that nothing has changed. From the faded art on the walls to the people working there, it feels the same every time I go back. Mill Stop might not make traditional Mexican food, but it does make traditional Pueblo Mexican food. The green chili is thick and delicious. The portions are huge. The sopapillas are hot, greasy and free (and super tasty). The price is right. If you're in Pueblo and want a taste of authentic Pueblo-Mexican food, head over to Mill Stop. If you go on a weekend, be prepared to stand in line, which is usually in front of the door so you get blasted with cold air or hit by the door when someone comes in (it's part of the charm).

Yes, this spot definitely surpasses five stars when it comes to home cookin mexican food. My dad would take me here when I was a kid and now I take my son to enjoy the Pueblo tradition. You really can't go wrong with any choice on the menu. The spanish rice reminds me of how my grandma used to cook it. I recommend the entire menu!!!! No really..... It's that good! Try their special dip, I think it's call Poncho.

Love there food and the family. Great place and people.
(5)Cindy G.
I ate at the mill stop once and that was enough! I have had better frozen dinners than this swill! Perhaps Pueblo has been desensitized to food with flavor and are only concerned with quantity. The rice appeared to be regurgitated and they don't use real cheese. They use some sort of government crap. I took one bite and gave it back. Man, people, venture out of your disgusting comfort zone and try real Mexican food which is cooked with herbs and spices and not covered up with some awful green chile! One Star is too much!
(1)Samuel H.
My all time favorite restaurant! Food is consistently excellent. Service is excellent. I no longer live in Pueblo but I eat here whenever I can!
(5)Aravinthan R.
The mill stop cafe is as good as any historical monument in pueblo :). Let's face it, anyone living in pueblo knows that there is not much to do or see here. But the food scene is worth checking out here. The mill stop cafe tops the list here. If you are looking for a delicious authentic mexican restaurant with a homely atmosphere, this is it. Great food. Every time.

A local southern Colorado gem, very weird hours sometimes and usually packed. The chili is unique to CO and is made with some kind of roux thickener, unlike New Mexican style food. I ordered 'enchillidas with green chili' and they came rolled, stuffed with cheese and smothered in chili. Not diet food, I found myself barely finishing my meal in part because the portions were so large. Free chips and salsa to start and free soppopias with honey and cinnamon/sugar. $ cheap homestyle food. The Mill Stop is a must if you're in southern CO.
(4)Erica M.
Gem! Best green chile in town! Smothered sopapilla and enchiladas. Small place, nice staff and good food. Sopapillas with honey after your meal are simply amazing. Definitely coming back next time I'm in town.
(5)Mylee K.
The BEST, most INSANELY, out of control DELCIOUS sopapillas I have ever eaten! Sopapillas with honey are among my very favorite desserts and these at Mill Stop Cafe are over the top foodgasmic pockets of gold. Have to be eaten to be believed! Thank god this restaurant isn't in Denver or I would eat nothing else. My husband doesn't normally eat sopapillas and even he went nuts...said they were mind blowing. Their spicy guacamole dip sauce is unique and amazing, too! Really special, as is their fantastic pico de gallo. Their homemade refried beans are also delicious and my husband wishes we could have purchased extra to take home. I had bean tostadas and wasn't psyched about the Velveeta cheese on top. Husband's salad wasn't good, but he said his Mexican steak was delicious. This is a family owned place, is packed with locals, and the service is brilliant!
(4)Brendan L.
Go here! Eat here! Enjoy all the deliciousness and the great staff!!! I haven't been in town in 8 years and it is still as amazing as it always has been!!!

I thought places like this only existed in nostalgia novels and Lifetime movies. Owned by the son of the original owner and run with pride. You could eat off the floors in this place. Looks to have been here at least 50 years. Beef burritos were very good; enchiladas weren't my favorite, but the SOPAPILLAS!!! I've eaten probably thousands of sopapillas in my life and these are hands down the winners. Super friendly service too. If you're ever through Pueblo, make time.
(4)Cathy M.
Great family owned business great food and the absolute best service I have ever had. Always prompt and consistent. Welcoming atmosphere. Also one of the cleanest places I've seen!
(5)Bonnie L.
The red salsa they serve with their dinners is to LIVE for. The best best best ever. We brought one mini home and are enjoying it this evening with Tillamock cheese and chips. I NEED a gallon.
(5)Nick R.
Best place in Pueblo. We drive from Springs just for Mill stop!!! If you never been you are missing out.
(5)Kayla H.
Hands down the best Mexican food EVER! Green chile is to die for! Pork and avocado burritos are impeccable!
(5)Susan S.
We aren't from Pueblo so we had to trust Yelp to recommend a place with good Mexican food. You didn't steer us wrong. The Mill Stop is pretty tasty. Huge portions, really good green chile, which we liked better than the red. The best part, however, are the free sopapillas at the end of the meal. They serve them very hot and very fresh, with a big squeeze bottle of honey. This is food like you'd make at home. Very friendly service and you can't beat the prices. We will be back!
(4)Amanda K.
Found this hidden gem on Yelp and thank you whoever posted it. Had some of the best Mexican food that I have had in a long time. The portions were huge and the food was tasty. The chili rellenos were out of this world. The sopapillas can't be missed and the service was excellent. Must be a local kept secret because they were busy non-stop on a rainy Monday night. People were also coming thru for to go orders.
(5)Tricia B.
This is the best food in town. It is a must stop when driving through. I always plan my trips so I can make their open schedule. You will not be disappointed!!
(5)Ryan P.
First time here. The entire staff is so friendly and amazing. I had the chicken enchiladas which were excellent. The green chile sauce is so good. They continually fill your drinks. The piece de resistance are the sopapillas at the end. Everything is very good and the price was right!
(5)Ryan J.
Totally awesome!!!! Came here because of the reviews, it's a small cafe in a old strip mall but don't let that fool you! The employees are as nice as can be and the beef stuffed sopapillas I ordered were absolutely delicious smothered in green chili!! I will be back here every time I go through pueblo!!!
(5)Karl K.
The green chili and smothered burrito is why I stop here. Very tasty. Now living in Dallas I long for Colorado Mexican burritos with green chili. The Spanish rice recipe needs work but the rest of the food is great.

I had a dream about Pueblo food last night and the Mill Stop popped into my head. The Mill Stop is is one of Pueblo's great places to eat. Its a fantastic gut filling place where a steel worker would come after a couple of a cold beers and a great meal. The Mill stop is another pueblo institution that does not get it's proper place in the big picture, as it's off the beaten path location hides its greatness. They have some awesome green chili. You can get it with about everything here. My suggestion is to get the pork stuffed sopapillas smothered with green chili. Or a burrito covered in some of that green goodness. Or come for breakfast and get your huevos covered with green chili. Starting to see a trend? The Mill Stop makes some damn good green chili. And the honest workingman's food here will make your stomach a happy camper. This is a hidden gem in Pueblo's pool of authentic Southwestern Mexican food joints.
(4)Sam L.
This is my favorite place to eat in Pueblo. The owners and staff are incredible people and make you feel at home at the Mill Stop. Their stuffed sopapillas are some of the Mexican food that I've ever had. A definite must if you're traveling through Pueblo. It's located on the south end of town, right off of I-25. The neighborhood isn't the best and the restaurant itself is a pretty small hole in the wall diner, but the service is great and the food can't be beat.
(5)David C.
Friendly service and good sopapillas, but the entrees were pretty greasy. Not really worth the wait for a table.

My wife and I had not eaten at the Mill Stop for approximately 7 years. We decided on there for breakfast and were quickly and courtesly seated. The restaurant had not changed over the past seven years in my memory. We both looked at the menu and our waitress Vanessa quickly and very nicely took our order. I ordered the huevos rancheros, eggs over medium with medium green chile and flour tortillas and my better half ordered two egg breakfast with scrambled eggs, sausage patties, hash browns and toast. Our orders came out in about ten minutes and Vanessa asked if we needed anything else. I was amazed by the portion size and tastiness of the green chile. Not too much hot, just the right amount. The eggs were cooked perfectly and the potatoes where cooked nicely. My only dig was the rice was good as well but there was not enough compared to the other ingredients. At just the right moments Vanessa appeared with a fresh tortilla or coffee. My wife enjoyed her breakfast but did not expand as I have. Great food, great service by Vanessa. I think we will not wait another seven years to come back.

Great Mexican comfort food! Service is quick, consistent, and reliable. I personally like the cheese they use and authentic diner feeling. Always disappointed in days and hours of operation.
(4)Steve M.
If you're open to southern Colorado or northern New Mexico food and culture, you will enjoy this landmark Hispanic diner. Delicious red and green chile. Many menu choices that are authentic to this area. The cheese enchiladas, chicken on white tacos, and avocado pork burritos are my favorites. Been enjoying this stuff for 30 years. For breakfast, they serve pancakes and breakfast burritos, or the full lunch / dinner menu.
(4)Stephanie S.
You want yummy Mexican food? AVOID THIS PLACE! Seriously, stay away! Low quality food thats bland and just gross. I could legit poop out better food than what they serve here. Ive had the burritos, stuffed sopapillas and the tacos. All terrible! The rice here is like seriously a disgrace to Mexican food! Its watery and tasteless! Nothing here is delicious plus the place itself seriously needs a deep clean. Only good thing is its all family here. I know if you ask a Puebloan where to go, some will say here. Dont listen, that person has probably never tasted good quality food. Over and out!

Flautas smothered in green chile. My favorite meal in the world. Seriously the entire world.
