Best SW cuisine in Colorado!!!!! We were there last evening for our first anniversary dinner and despite arriving past 8:30pm, the staff, and especially the truly wonderful owner Marina, were wonderful. The house salsa was a revelation arriving in copious quantities with clearly fresh ripe tomatoes and fresh flour chips. Our entrees were prepared with love, the adovada and rellenos were the best I have ever had! We are proud that our beloved Tri Lakes has such a great local establishment obviously run by people who truly care. We will be telling all our friends and returning often.

My wife and I drove up from Co Springs based on the Yelp reviews and were disappointed. The waitress was friendly and attentive, and the decor was fine (typical Mexican restaurant) but the food was average at best. Beans and rice were bland. Enchiladas were mediocre. Buffalo tacos were dry and bland. Instead of serving salsa, they served a bowl of chopped tomatoes and beans and onions that was fresh but bland and hard to dip into. If you want really good Mexican food, go to Crystal Park Cantina or La Lucha.

La Rosa is one of those places you really want to like, but something vital is missing. The good reviews were encouraging so we stopped in for some Sunday brunch. Our waitress was great and attentive, but the food left something to be desired. To start, we were given little plates of fruit and cornbread. The bread was very good, crunchy and sweet. Chips were fresh and the salsa was tasty. Then I ordered a cup of posole, and it looked amazing but something was missing flavor wise. I can't put my finger on it but it was bland. My Santa Fe omelet sounded great on the menu, but on my plate it was eggs, cheese, almost no jalapeño or other advertised components, and it was swimming in a red chile sauce that I couldn't bring myself to enjoy. It was very one note on the flavor, like straight chile and no other flavors. The green chile was just okay. My boyfriend ordered the rellenos but it was mushy, greasy, and overcooked. The waitress did offer to have it recooked because she noticed that he was struggling with it, but at that point we were ready to just be done. Again I really truly wanted to like this place, and the presentation was all there but the flavors fell flat and I left unsatisfied and disappointed. :/

Huge portions, warm decor, and friendly waitstaff. I really enjoyed my spicy chile relleno. It was so much food I couldn't finish it. My margarita was accidentally two margaritas as the server made too much and gave me the rest anyway, so I'm writing this with a pretty sweet buzz. I'll definitely go back for a filling and flavorful meal as soon as I can.

If you only dine at one place in Palmer Lake, make it La Rosa. Best. Mole. Ever. Terrific food, a wonderful selection of homemade chile sauces and a friendly, attentive team.

This place was terrific! I finally talked my husband into driving down from Castle Rock. A small, sort of quaint place that you just know is going to be yummy! Unfortunately, the whole crew (w/ the exception of hubby) ordered the special so I can't speak to multiple dishes. We had bison enchiladas in blue corn tortillas - so good but oh so rich. Hubby had a bean burrito w/ green chili that he said was fantastic - high praise indeed. We all cleared our plates while enjoying a delicious pint of margaritas. We will be back!

Hurrah! Returned after many months and food still good. Great space, friendly and knowledgeable wait staff, our server even let us taste the yummy Mexican liquor that was in our delicious and potent margueritas. Food is creative, fresh and tasty. Prices fair. Gratis salsa and chips fresh and good. What else could you ask for? Go now, you won't be sorry.

I can't believe I waited soooo long to visit this place. The food is great. They start out with chips and a salsa made of black beans, onion, tomatoes, cilantro and lime juice. The vegetable fajitas as well as pinto beans and rice were wonderful. Salt was a little over played but forgivable. Very accommodating staff in a small, intimate setting. My wife loved the margaritas and my bottled Corona was served with a small glass. Real classy touch. This IS my go to Mexican place starting now. Five stars.

I came to this restaurant based on the Yelp reviews, unfortunately the experience was very disappointing. Did not feel there was sufficient ambience, lights too bright no music etc. We were hoping the food would be good regardless....the food was not good at all. I had ordered the chili renellos (spelling), the flavor was bland, mushy and watery. It tasted like the frying oil had not been changed for sometime. Also ordered at the table were tamales which lacked favor and were bland. The server was pleasant but seemed to be tired and worn out. The restaurant smelled moldy and everything felt sticky, I think a bit of cleaning would not hurt. Overall experience, was this was hardly worth the drive.

i wished i had stopped at la rosa when i first saw this place over a year ago. Food is awesome and fresh. far from your run of the mill south Mex. margaritas are wonderful and fresh. the tequila list is extensive and the service was fantastic. this will become a staple monthly date night. People who run restaurants like this deserve the business. I wish more people knew about this place. if you don't live in palmer lake it can be a drive but WELL WORTH it. If they turned the front area into more of a REAL bar and served happy hour with small plates and did fresh to order guac they would kill it. Thanks Marina for your wonderful attentive service. the decor is warm and inviting and there is some decent local artwork.

What an awesome find. We randomly drove south tonight for dinner, and found this gem. Being from a small town, this place and town had us feeling very comfortable. Cute atmosphere, good margaritas, and seriously great food. The special was a bacon wrapped meatloaf, absolutely sublime. Wife's fajitas were equally great, and the chocolate creme brûlée was awesome.

La Rosa is fantastic! I heard about La Rosa through some friends and I'm so grateful for the recommendation, my husband and I now have a new favorite place. I had the chicken mole, which was amazing, and typically is a dish that lets me down at other places. This was delicious and I can't wait to try everything else on the menu. I highly recommend La Rosa!!

I have been looking for the best southwestern dining in Colorado for more than 14 years. For some time I thought I had found it at Crystal Park Cantina in Manitou Springs, La Rosa Southwestern Dining has become my new favorite. The combination of 1. Home like ambiance + 2. Excellent service + 3. Fantastic entries like the tuna tacos we just had, honestly the best Mexican seafood I have experienced.

Amazing food, great service & lovely all-around! The owner, Marina is always around to check in on guests & is super friendly! Small, but good wine selection & great margaritas! Haven't tried the tequila flights yet, but seem to be very popular! The Shrimp Ceviche app is YUMMY; the Shrimp Diablo if FIREY! We've been several times since moving to Larkspur in Nov. 2012 & have NEVER had a bad meal! LOVE it!

La Rosa rocks! As anyone who's ever lived or spent time in New Mexico can tell you, Mexican food in Colorado sucks. Greasy hamburger-filled burritos smothered in nasty yellow slime that someone has the nerve to call "green chile"; you know the drill. Well, La Rosa is the real deal! Beautiful red and green chile, slow-simmered and complex with the perfect amount of heat. Marina, the owner/chef, is the real deal as well. NM-born and raised, she is gracious, attentive, and knows how to bring the flavor. Give this place a shot! It's worth the drive from Denver or the Springs.

So far, fantastic! Real New Mexican food made with love by Marina. Not open for dinner, yet as there is a hold-up with the liquor license. The breakfast relleno and the breakfast tamale were both fabulous, and I loved both the red and the green chilis. The green chili is traditional Mexican chili verde without thickener. We also enjoyed the tasteful decor. Worth the trip to Palmer Lake!

WOW!! That is all I have to say is WOW! I had such a good time enjoying the wonderful food and atmosphere that it was difficult to find the words to say just how good La Rosa is! I had dinner here before and loved it and came back for my first brunch today. It was amazing! I could not decide between the tamales and fish tacos - so they suggested that they make me a special brunch plate of both!! To be honest - they gave me so much food that it was really two meals for the price of one and they even subtracted the cost of of one less egg which I requested (so it was really two meals for less than the price of one! - I made up for it with my tip- a very well deserved tip!!). Enough cannot be said about the food here. The owner is from N.M. The food is over the top! And so is the service. And the drinks too - wow! One of the best margaritas that I have ever had. They specialize in tequilas and do tequila flights as well. They also exhibit artwork for sale by local artist. The one thing that I like the best about La Rosa is that when you come in, it feels like coming home or to a good friends house for a good meal, laughter and company. Most highly recommended!!!

We've been here many times, lunch & dinner and it's never let us down! Food, margaritas, service and atmosphere are great. We usually take guests, one from Tucson said "this was the best burrito I've ever had", our son-in-law (who has been in restaurant business for 30+ years) couldn't believe it wasn't packed! Can't wait til Wednesday when we return to celebrate my mother's 91st birthday!!

Probably 3.5 stars. Above average, fresh Mexican fare. Ambience: Big place with lots of rooms. Typical south-western decor with a cantina feel about it. Service: Very good. We went for lunch and we got our food pretty quick. Our waiter was intent on making sure we enjoyed our meal and had everything we wanted. Food: Not your usual Mexican from around here. Much fresher and more inventive for the most part. I had the Pork abodaba which was very spicy and served with home-made (well, not canned certainly) refried beans, lettuce and a fresh flour tortilla. I like spicy and this was right on my limit, so it could have benefited from the addition of a side of cotija, queso fresco or sour cream to mix and reduce the heat a little. My friends had other dishes which looked great and they all polished them off. Price: A little pricey, but worth it for not having the typical disappointing Tex-Mex mush you so often get around here. I'd be happy to go back there if I were in the neighborhood.

Went here for a birthday lunch. Their chips and salsa were quite good. I asked for a plate not on the menu, because I wanted to try a couple of things. Got a tamale and a chicken enchilada. Both wonderful, and I finished, wanting to come again! I highly recommend this place! Nice atmosphere, good food, good service. They blessed me with a dessert, the flour-less chocolate cake. Yum! Very good! Would order it all again.

We just had a wonderful lunch at La Rosa. The service, food and ambiance was great. The chef came out to explain the specials and was very accommodating when special requests were made. I had the combo lunch - a soft taco, salad and soup - all were wonderful and served with beans and rice. My husband really enjoyed his chili rellenos. We will be back and will bring friends. The food is fresh, interesting and extremely good.
