Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

The fam had dinner at Palomino after my husband's graduation and we had some trepidation at first b/c the parking lot was packed. People were getting stuck in the mud of the neighboring field b/c the paved lot was so full. It turned out not to be a long wait so we were happy. Lots of other families were there after the grad. I had Stacked Enchiladas which is more like an enchilada casserole. It seemed to lack something like it needed sour cream or guac on top but was still good. It was actually quite tastier as leftovers. The rest of my group enjoyed their food too. The manager or owner was very nice & stopped at our table to ask why my brother in law was not eating. He had already finished and his plate was cleared away so we told him so. Nice man and nice place.

Food is good, service is horrible. Major decline in the last year. Management needs to pay attention to the reviews over the past year. Consistently rated as good food, bad service.
(2)Vicki M.
The food is good. Unfortunately, it's not consistent as far as spiciness. But, the waitstaff is awesome (Mitch!!) and the drinks are very good. Our regular hang out for Wednesday night happy hour!
(4)Suzanne B.
Dinner is served! We had an appetizer of chips and queso followed by chicken fajitas. Everything was fast, fresh, and delicious. Management was there to greet you when you came in and followed up after the meal to be sure everything was to our satisfaction. Our waiter, Sean, was outstanding. Truly went above and beyond to make it a good experience. We'd certainly recommend to friends.

OK I have given this place two chances. But before I go on my tirade let me say I have gone to the Greeley version several times and love it. Big Fan. So I was very excited that one would be opening more loser to home. I called one night to get a take out order. Just open, I know. Very busy, I get it. The little gal that answered the phone told me that she would send the call back to the bar to have them take the order. A couple of minutes goes by, and she picks it back up and answers the phone like its a new call. I tell her again that I would like to place a to go order. Back the bar I go. This happened 5 more times. 15 minutes later, I asked to speak with the Manager. I did manage to tell him my displeasure. So we decided to give them a second chance about two weeks later. This time the call goes back to the bar. Success. 2 sopapilla dinners and burrito plate. Get home, all excited. Open the the boxes and instantly get pissed. I have the picture to prove it. Both sopapilla's - 3" by 3". About the size of a donut. $10 bucks a piece. $3 per inch of food. The burrito was very good by the way. Enough. I have tried two restaurants in this area. The Boot and now Palomino. It' seems it should becoming a very nice and popular area for these businesses. Both have disappointed me greatly. Nordy's will have to expand soon if this is going to be the competition.

The food isn't bad, but $4 for guac and sour cream is nuts! Who does that? Oh ya...these guys.
(3)Britt E.
This place is sooo good! I will say its not authentic, but its still an amazing mix of flavors! They have spanish rice & white rice with cilantro lime. The meat is high-quality & marinated & grilled perfectly. Not much of salsa choices though. The Chipotle Crema Chicken Pocado is made with a wine sauce that is slightly spicy with onions & peppers. With black beans & sour cream sauce. BEST MENU ITEM! The wine sauce is superb~! The Citrus Grilled Chicken is amazing also! Also serves breakfast items all day. Will be returning again!
(5)Todd G.
For lunch time they weren't very busy. Service was slow and the server was a bit absent minded. Food was good but overpriced. Most everything on the lunch menu is $10.99 and up. I wish there was a Hacienda Colorado close by.
(3)Matt L.
Breakfast Burrito served all day long - enough said. Great place.
(4)Kathy S.
Disliked...enchilada sauce was not eatable and rest of food bland. Not impressed with waiter. Was driving so no margarita, maybe I should have...
(1)Lizzy R.
Sadly, not a fan. These are the reasons. The chicken chimi was super sweet, the rice was not good, the chips were slightly stale and not salted. The salsa wasn't bad but not memorable either. The beer was flat and they replaced it, offered to buy it and it was on our tab anyway. No bueno.
(1)Kyra W.
Good food, great service, bad horses.
(4)Brandi J.
I was excited to try it out but very disappointed. We waited forever for the food, they were chinchy on the Margs and we had to remind them about our app! They also brought us a marg we didn't order so very poor service. When our food came it was like warm at best and was not good at all. It ruined my night cause my stomach hurt after eating part of it! Save your time and money!

I am always skeptical of chains. We came here on a recommendation from a fellow authentic Mexican snob. This was a refreshing surprise. This place is best described as upscale Mexican. The salsa is flavorful and fresh. The chips are light, not greasy, and warm. The burrito was well presented with sour cream and guacamole. I ordered a side of their super hot green chili. It was flavorful but really not that hot. Services was perfect and the prices were in line with top of the line upscale Mexican. Is it authentic? No, but a good fusion for the American taste
(4)Christie L.
I ate here for lunch with a group of coworkers. We had been referred here to try the buffet, but none of us were very hungry, so we all ordered off the menu. I had the burritos and I, along with everyone else in the group, thought the food was just pretty average. Nothing to write home about. I wasn't given much sour cream and found myself wanting more just to try and add flavor to the dish. I see a lot of good reviews here, so maybe none of us ordered the "specialty?" With so much other good food in the area, it's hard to say we'll be back.
(2)Damien M.
$1.95 margaritas! Quick service, good food, I'm happy I came. Try the cheesy burrito, and the hot green chili.
(4)Bill E.
The 5 star rating may be a giving Palomino the benefit of the doubt, but we were pleasantly surprised by this place. We were there on a Sunday afternoon, and it was an afternoon where there were no events going on at the fairgrounds or nearby event center, so I recognize people may have a different experience on "event nights" Two things stood out: The food -- I'm sure people can argue whether or not it's authentic, but the chips/salsa, queso, chipotle tacos, and chicken tacos were all hits. Also, it was a great menu -- I could go back and keep trying different entrees on the menu. Frozen house marg was also good. Only word of caution -- the nearby farm supply center must have had a special on fertilizer, because the stench of it was wafting into the patio area. Next time I go, I'll get a table inside.

Great food, great service, great drinks!!! The people here make the restaurant all worth while !! My mother is from albuquerque and the surpasses old town! Ally was a great server and all the people are extremely nice!
(5)Katie F.
It appears that many Hispanics are the ones that write horrible reviews. NO this is not authentic Mexican food and I am at a loss as to why they expect this to be what they receive. This is American-Mexican food. Yes there is a significant different. I lived in Albuquerque and experienced real Mexican food all over the place and missed my American-Mexican. I love love love this place and when I couldn't find restaurants like these in NM I missed them terribly. Breakfast burritos - yum yum! The Palomino burrito - fabulous. My guy always gets Chiles Rellenos at every Mexican restaurant he goes to and he said these were the best he has ever had. He does not get the fried ones. I personally love the salsa... one woman said anyone can smash tomatoes and onion in a dish with a lot of salt. Apparently I like simplicity ;) I have eaten there for dinner, for lunch, ordered out and so on.I have had great luck here and will be back. *Lunch - they have a buffet of quite a few things. My fiance tried it and was happy.
(5)Kae C.
My husband and I have eaten there several times. Most of the time it has been 5 star. We are late night diners so it's really hard to find a good place to go, but we have been so impressed that we take all of our out of town guests there. (Try finding another good place to go to in this area.) There have been times when we had to grab our own silverware but the food is really good!
(4)John S.
New in town and wanted Mexican. The reviews mostly said pretty good food and bad service and that was my experience too. I thought I could avoid to service problem by sitting at the bar solo but unfortunately one poor girl was attempting to wait on the dozen people at the bar plus the dozen tables in the bar room plus mix drinks for the whole restaurant. So that's not her fault, that's poor management. She was holding up pretty well, only broke one bottle of wine while I was there. Now, the food. I ordered the "stacked enchiladas" and if you have ever been to a Taco Bell (fast food mex - don't know if you have them in CO) but it tasted exactly like their "encharito", which I don't think they make anymore, but I used to like them so dinner was OK, no better nor worse than the fast food Taco Bell. The chips were like Tostito brand from a bag and the salsa was just passable. I'm admittedly spoiled by some good mex food in home state of California, but I've also had good mex as far away as Chicago. So, a 3 star average food knocked down to two stars for management short staffing the place.

I am usually the person who understand you typically have restaurant reveiws that are either over the top or someone just needing to complain. I have been in the customer service field for a long time and know the importance of being open minded. If I was reviewing this restaurant for just the food; the food and flavors were great. Our service was a different story. As we were seated we were given chips and salsa. Noticing we did not have napkins or silverware, we immediately asked for napkins, WE immediately asked for them. Our server delivered our drinks and asked if we needed anything else. We once again asked for napkins and silverware. Our food was delivered, my husband's beer was empty at this point..The person delivering our food asked if we needed anything. We once again asked for napkins and silverware. We waited over 5 minutes then grabbed the manager and asked for napkins and silverware. He came to our table, beer bottle still empty we decided to wait and see if anyone asks my husband if he would like another beer. Nothing. The manager hands us our utensils. Our server immediately comes over and asks how the food is. I tell her i haven't had time to try it since i just got my utensils. She still doesn't ask my hubby about another beer. We ate our food, very tasty, got our bill, payed and left. Btw.. i had one amazing margarita. Kudos to the bar. Boo on the service.
(3)Presto F.
We have been waiting for our food forever!!!!!!!! Over an hour we have waited only seeing our waitress twice!!! The food is great but the service sucks!!! UPDATE: I would like to clarify that the service was good but the wait for our food was horrible. The food turned out amazing however!!!
(3)John G.
Restaurant management is very good, as is the food. The friendliness of the bartenders (assuming your sitting at the bar), is lacking (with a few exceptions). Overall, good location for business travelers. Very good food. Good management. Bartender service quite average.
(3)Tyler T.
Average food. Had the chili rellenos and the portion was small. Tasted good but the service was also kind of slow. Just average Mexican food.
(3)Lisa H.
Service was good, the waitress was attentive. The shrimp tacos extremely tasty. Green chile better than average. If it hadn't been so cold in there we might have given it a 5.
(4)Alden C.
Palomino is an ok place to go to get Mexican food but I will say that it is very Americanized Mexican Food for sure. I ordered two burritos, one for lunch and one for supper. While the food was decent I knew that I wouldn't be an advocate for the place based on their Americanized version of food. As far as spice goes it is all kind of... eh. It has a little bite but you know they are hesitating because someone might not be able to handle it. I ordered a margarita which was again just ok. Not a very big glass for my drink, despite the large portions of food. Atmosphere is kind of nice but still, staff was friendly but sometimes a bit slow. Again... all of it was just kind of eh.
(3)Brent S.
I admit it, I'm very biased toward Sonoran style Mexican food. I think Palomino is one of the better places in the area, and I've been to at least eight other local places. Overall, their Sonoran style tacos are on target, and their beans and rice are good. Other key elements: Chips/salsa good Beef turnover was surprisingly good. Queso dip good. Enchiladas are average. Guacamole was good. Restaurant was clean. Service was acceptable. I'll be returning.
(3)Todd S.
Good thing I filled up on tea... again disappointed by Mexican food in Colorado. Had tequila lime chicken, with avocado. Avocado slice was brown and smaller than a pinky finger - gross. Chicken undercooked. Won't be back ... Better luck to you. salsa and my margarita were tasty...wish they had better chips.
(1)Cindi P.
We are always on the lookout for good mexican food, so we tried this place a few nights ago. It was so-so. The food was good and the atmosphere was nice, but the service was terrible, and it ruined our visit. It wasn't that the server was bad, it just seemed like the entire serve staff was stretched very thin - our server was tending 6 tables that we could see, and seemed to have more outside of our view. That's too many to do a good job. We waited 15 minutes to get our waters, and longer still to get the bar drinks we ordered. Our food didn't take long and it was tasty, but the portions were considerably smaller than what we are used to at similar restaurants (no leftovers?!), especially for the price ($17 per plate). Additionally, the appetizer we ordered came out with our meals, so we only picked at it - not really an appetizer at that point. We won't be going back - we can find good food at places with faster/more attentive service.
(3)William A.
Went for the lunch buffet, decent options on the Mexican food -- nothing special that I haven't setup at home for home-made taco/burrito night. What was really good was the chili-lime carved steak at the end of the line and the desert options -- I would definitely go back and just do the buffet over and over again for that. Good quantity of food for the price.
(3)Warren S.
We've been here several times and have always enjoyed it. The food has been quite good and the service just fine. We've usually been in for an early dinner when they have happy hour prices and it is less busy, which is how I like it. The servings are quite large, but it's good, so I can't really help myself from eating it all, anyway.
(4)Steve K.
Food was unimpressive...salsa tasted like spicy pizza sauce. Chips out of a big bag from Costco. Seriously bad service. Our waitress was training someone and didn't write down our order...had to come back to confirm the order while mentioning "brain fart". Wait help didn't come by again until we flagged them down for the bill. It was 8 pm on a Tuesday and the place was 15% full. Pass on this place.
(1)Lori S.
Stopped here after walking out of The Boot Grill because we couldn't get service at 4:00 pm on a Saturday. Palomino has amazing service and the best Spanish rice.
(4)R W.
We stopped in here tonight to try it out. The place was very busy for a Thursday night as the parking lot was full. We were seated quickly which was a plus. The food and marg's we had were very good. Also liked the chips and salsa that were fresh and flavorful. The biggest let down was our waitress, a high school aged girl that was not attentive enough and seemed to have too many tables to handle. Most of the staff seemed like young high school age kids which in my opinion seemed questionable for an upper scale Mexican restaurant. Prices are on the high side for most everything on the menu. The food was good but the service and prices get lower marks.
(4)Matt T.
Stopped in for lunch...ordered the buffet. Food was warm, not hot, but the quality of it seemed good. A nice mexican style take on lasagna was my favorite on the table. Service was good and friendly. It is Americanized but that is who their customer base is...if every dish was super spicy they'd walk away....overall, it was ok. ...just nothing to go out of your way for.
(3)Ashlee H.
I took a few colleagues to Palomino for dinner the other night and I wasn't at all impressed. If you like "American Mexican" food, then you might enjoy this place. The Spanish rice tasted like I could have made it from a Rice-a-Roni box. The chicken taco was OK, not great. The chicken didn't taste like anything special, nor did it seem to be seasoned much at all. The chips were adequate at best and the salsa didn't have much flavor. The best part of the experience was probably the margarita. I hate to be so brutal, but I probably would not go back to this restaurant.
(2)Shawn C.
My wife and I went to dinner here with my parents, siblings, and another couple. We were a group of 8 and had exceptional service. The margaritas were fantastic, especially their signature margarita. Several of us shared bites of what we ordered and everything I tried was very good. We will be returning the next time we return to Colorado to visit our family.
(4)Steph P.
Update - Food is still good. Now if they will quit serving minors and get their liquor license back that would be good.
(3)Brooke F.
This location currently opened in Loveland. I have been to their Greeley/Evans location previously and both times it was so good! I went to the Loveland location recently after it opened. My husband and I love good Mexican food and are always searching out for new places to try. The service was good and the food was fantastic. I will definitely be back!
(5)Timothy K.
Had lunch here a while ago, since its near my work. The food was quite good and a higher quality somewhat upscale take on the typical Mexican fare. Pretty friendly service too. Ill definitely be back.
(4)David V.
Not recommended. Food mediocre at best. Service spotty. Our waiter didn't write anything down and totally messed up our order. My granddaughter ordered a hamburger and got a hokey puck between two buns. We walked out.
(1)Lisa R.
Food was not good. But then again, I have high standards for Mexican food because I know what it should really taste like. I love authentic and hate imitations. That's what I get from this place. I had shrimp, rice and beans. All was not great. Drinks are alright. You can tell a good Mexican restaurant by the salsa!! .... which sucks here, anyone can put some tomatoes, onion and tons of salt in a dish.
(2)Carrie S.
We dined at the restaurant twice..two days in a row; we liked it so much!! The margaritas are awesome, especially the Sangrita!! The guacomole app etizer was very large, plenty for a family of four! The service was great both times!! Love it and would be there more often if I didn't care about my waistline!
(5)Del A.
Nothing special about this place at all. Slow service (and it was not a busy night), average marg (so average that I switched to beer after my first), bland, boring, totally gringo food. Won't be back.
(3)Jim A.
Have dined here at the Palomino twice since it opened. The food is a bit above average with their own twist on some of my favorites. We had a small problem with our order coming out in a timely fashion last visit but they realized it before we had to say something and offered us free dessert. We took them up on it and had the dessert nachos. I'll be having those on every future trip. Very good but a huge plate of them, so save room. They even gave us a gift certificate for our next visit due to the delay. The service has been good both times. Expect a wait on weekends at dinner time. Prices are a little bit higher here but not unreasonable.
(4)Bridget M.
Went in with 6 people on lunch thinking they would be able to accommodate us being across the street from a conference center. They only had two servers working so the wait would have been 25-30 minutes which is all the time we had. Very disappointed cause I love their food but wasn't able to enjoy it. :( (Love the Greeley one though!)
(1)Natalie S.
My husband & I went there for the first time lastnight and it was delicious!!! Service was amazing and even the manager introduced himself. We will be back forsure! It's cozy in there and I invite others to check it out:)
(4)Terry M.
Finally after 7 years living in the Front Range, good Mexican food & margaritas all reasonably priced! Like dining in the bar, Bella is the best! And patio dining is great. And they actually have "hot" green chile by request. They have our business as long as nothing changes!
(5)Annette C.
Excellent service from Maggie, the food was really good and has a bit of a twist-pasta. Nice atmosphere too. I would recommend this place highly. We will be back.
(5)Marie E.
Food: Shredded beef burrito was "muy bien" and big enough to take half home for a nice lunch the next day. Chips and salsa were just right. Not too spicy and the chips tasted fresh and crispy. Server: Really nice with a sense of humor! I was laughing when we bounced jokes off each other. She was great in ensuring drink refills and when I spilled my drink, she cleaned it promptly. Decor: Upscale Mexican. Very nice without being "kitschy" and overdone. Menu: Wide selection. I had a hard time deciding what to get. Pricing: It's a little high but the food and service is worth it.
(4)Viroopa V.
I wish I had known about this place earlier because if I had I wouldn't have tried the other Mexican places in Loveland, which in my opinion are terrible in comparison. Is this restaurant the best Mexican food I've had? No, but did it have some unique characteristics that left a good after memory? Definitely, yes. First, chips and salsa were OK. Chips were nothing special and salsa seemed like it was the medium spicy kind from Tostitos. Main entree were carnitas tacos on lettuce wraps. This is why I would give this restaurant four stars. The lettuce wraps were delightfully crisply enough to act as replacements for hard taco shells. I originally thought the tacos were going to be tough to eat but had no problem. Also, carnitas were perfectly cooked. They were still moist yet dry enough that you could taste a crunchy flavor. This was much better than the carnitas at Chipotle. Also, why don't more restaurants offer lettuce wraps as a substitute for taco shells? Beans were terrible. Didn't eat any and the chili in a chip bowl was unique but would make that served hotter. Mexican rice was good but would have preferred brown rice and they didn't have any (probably should have this option for a restaurant). Sour cream was really thick. It tasted good but speculating that it was a high fat option. They should look into having a low fat option as well.
(4)Kelly P.
Went here after the Goodguys car show. I had the poblano enchiladas and they were pretty good. My husband had the fish tacos and enjoyed them. My father in law had the bacon wrapped shrimp and would order it again. Overall satisfactory but nothing I would go out of my way for. Good guacamole. It was our server's second day and she did very good. Overall a good experience!
(4)Dan M.
One of the worst mexican grills around. The food was not true Mexican. It lacked Actual mexican taste. The menu was not what you would expect for a mexican restaurant. The quacamole was more like paste or baby food. It wasp remade by another vendor. Their prices were high for what you got. It costs us 40.00 for two that with only lemonade and ice tea.
(2)T N.
This was my second time trying this place & it was excellent, the first visit our waiter wasn't great & I had fish tacos get we're pretty good, today I ordered chicken enchiladas with a poblano cream sauce & they were amazing. The chips & salsa were good & my husband ordered the top shelf burrito with ground beef & it was also good, margaritas were good as well. This is officially my favorite Mexican restaurant here in co, good Mexican is hard to come by here! Yay!
(5)Mike E.
In town for the evening and this was recommended for family dining by the hotel where we were staying. We had a party of nine (4 adults & 5 kids) and they got us seated right away. Food was good and service was great!! Nice atmosphere.
(5)Stacey C.
I am only giving this place a one star because I have to give it one. Service was beyond horrible. As soon as we were seated we asked for itemized bills (for work). We had a reservation, got sat 20 minutes later and then waited an hour and a half for food. They messed up our order and one person waited while the rest of us ate, even when her food was delivered 15 minutes later no apology or compensation was offered. Then we didn't get our itemized bills and the manager acted like we asked for the world and said we couldn't get them. Food was mediocre, service was awful enough to never return or recommend.
(1)Mike S.
This one was tough to choose between 4-5 stars, so I'll break down my grading system: Management (5.0*): Greeted me the second I stepped foot into the restaurant. Service (4.5*): Few mistakes, great hustle and very friendly. Ambiance (3.0*): More of an upscale Mexican Restaurant, very solid customer flow, but it's missing live music or something to set the tone. Chips/Salsa (3.5*): Usually my dictator of Mexican restaurants, but I'll let it slide this time... Needs more of a kick and more cilantro. Margarita (4.5*): Very good! Perfect flavor and just enough alcohol. Chili Lime Chicken Tacos (3.5*): good, but nothing I'll remember. A bit dry and lacking some flavor.
