Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

This was our 3rd time there, the food was very good and the service is getting better..we had a newer waitress and she did a good job of checking to make sure we were doing good a few times.. We'll be back again..

Absolutely love the food and wait staff. We have been here several times. Tonight the owner/manager picked up our bill of $45 and credit card, waitress returned it and he had charged $55. Which may have been an accident but he avoided our table...not what one would expect from an owner/manager. Sad we won't be back.

Service is hit or miss. There is one lady that is awful as a server and should be a cleaner and seater. Food is really good, our go to's are the steak fajita burrito, the nachos, and the Carne Asad y mas. And to drink are the michelada 's. But if we see the one server we are talking about going somewhere else. They shouldn't charge more for beans and rice. And you shouldn't have to tell them you want the grilled jalapeño on the Carne Asad y mas since it "supposibly" comes with it.

There aren't many restaurants in downtown Johnstown, so it is nice to have what appears to be another solid dining establishment there. I have been here several times while visiting my parents. The food, for the most part, seems to be pretty good. I have had many different chicken dishes, as well as the Azteca soup and the taco salads - which are sized perfectly by the way. The chips and salsa are fairly good as well. The service here seems to go from fairly attentive to frazzled. Last week while I was there, our drinks came in weird order. I ordered a Sprite, my Dad ordered a Dr. Pepper and my mom ordered a margarita. I got my Sprite right away, we waited a few minutes for the margarita which was too be expected - but we waited for quite a while to get the Dr. Pepper which was really odd. After that, we got our food fairly quickly and received better service. The pricing is pretty standard - a fair price to pay for what you receive. The decor is very standard as well - what you'd expect to find in a Mexican themed restaurant. They also have several TV's - so no matter where you're sitting you can generally see one of them - which is nice. All in all, this is a pretty good place. I'll say it again, it's nice to see another solid dining establishment in downtown Johnstown. I hope they're here to stay!

The best fish tacos I've had around Northern Colorado. It's a small place but friendly service.

The best Mexican food ever!!! My husband and I go there at least once a month, maybe more. Everything on the menu is delicious and authentic. Not just tacos and burritos, there are many items on the menu I had never heard of until I went there, but each new thing I try is even better than the last. The best part is they are very reasonably priced with a huge dinner entree priced at $9.99. Awesome food, awesome service. Highly recommend if you want good authentic food!

This restaurant recently opened in the Johnstown shopping center where "Chicago Times" was located. So far, we are nothing but happy with the place and it's awesome to have a choice versus Santiagos or the other Mexican restaurants in the area; my last few trips to Santiagos have been underwhelming. The wait staff is friendly, the food is good or excellent and the environment is nice; they did a good job remodeling. I'm happy to have a local place serving fish tacos! The only drawback is that it can get crowded; there's no waiting area so people wanting a table cluster by the door or by the tables near the door. The fact there is a line is I guess a good thing...

We went tonight after seeing their Facebook advertised special of $8.99 endless enchiladas - advertised as a Wednesday night special - only to be told that their special is "lunchtime only" - I k we this to be wrong but Downtown Johnstown is a cellphone signal black he for us - so I could not bring up the special ... Oh well - at least we're in happy hour I thought .... WRONG - when the bill arrived it was almost $47 for 2 margaritas each and two shredded beef burritos ... We questioned the price of the drinks and were told they did not have any happy hour "in a long time" ... Hmmm ... Very interesting. Ajuua Jr's is not advertising honestly and I would not recommend you dine with them unless you expect to pay el-primo prices. Service was, as usual - lack-luster. The food is tasty - if overpriced when expecting to avail yourself of their advertised specials. Not a "cheap night" - but as long as service and price aren't your thing, this is a "fine Mexican restaurant" -- Note the quotes.

Is it possible to give this place no stars?!?!?! Horrible food and terrible service. We were the only table it there. It's pretty bad when both of the cooks are standing out watching the Bronco game and the only thing you can hear cooking is the microwave. We ordered fajitas and they came to the table uncooked and cold. The Heath dept. should be checking this place out.

Awful...the two other Mexican places are much better. Bad food and bad service. Although, good service would not have excused their bad food.

I can't believe I haven't written a review yet for Ajuua. We have been here several times with family and friends. The staff is amazing. The food is GREAT (I usually get the cheese enchiladas but i've explored other options and it's never been disappointing). The prices are fair. The only reason why I didn't give Ajuua 5 stars is because they need more vegetarian options!!
