    Service and food are average. The chipotle chicken was bland and in some thick sauce, nothing what the menu described. They charged $2.50 more to substitute vegetables for rice and beans, which was a mistake. They were drenched in oil and cooked to a crisp. Not impressed.

    Pretty good hole in the wall Mexican restaurant in Elizabeth, CO. I've been in several time over the years and never had a complaint. They were very accommodating for our large group, while the food didn't come out quickly, everything was hot when it got to us. I'd rather wait for my meal than be served something I had to send back anyway! I wouldn't hesitate to take family and friends there if I was in the area.

    My chicken was cooked to death. I don't know why so many places think chicken and eggs can be cooked indefinitely. I had a chicken Cesar salad (or something like that). It would have been good, but no moisture left in the chicken. I know chicken and eggs can have salmonella, but this is no excuse to abandon all attempt at proper cooking. Otherwise, it seems like a nice place. Waitress was good. The other people in my party were satisfied with their meals.

    Not what I was expecting. Beef isn't steak at this restaurant and the Carne Asada was not a very big piece of meat. I ordered the lunch special beef quesadilla. It was soggy and I don't consider it real Mexican food. The food came out fast though! The waitress didn't seem to want to be there but I didn't really care this time. The waiter, on the other hand, was kind and seemed happy. The place isn't bad but...not up to Mexican standards.

    My wife and I eat here often. We have never had a meal that wasn't great. My wife's favorite is the Carne Asada. There are so many good things on the menu that I can't pick a favorite. Everyone that works there is always very very nice and they are always very prompt and professional. There are two Mexican restaurants in Elizabeth, the other one is ok but not nearly as good as this place. This place, Buzzards and the Asian place give you some very good options in a pretty small town.

    Some of the better mexican food around. Ever since moving from Dallas, finding adequate mexican food has been tough. Some family took us here and I was impressed. VERY extensive menu. Between the chicken flautas, seafood enchiladas, and chile relleno at our table, all was very good. They also have coconut and other flavored candies they bring with the bill. I plan to check out the Aurora and Castle Rock locations and compare.

    How lovely to find such a place in Elizabeth. The food is great and very reasonably priced. The portions are huge and the staff seems as if they really are glad you're there! I visit once a week and would highly recommend.

    One of the first things we did when we moved here from Southern California was to find a decent Mexican restaurant. Surprise! Little Elizabeth, CO had one. One of our favorite spots to eat and to take out-of-towners. We've never been disappointed. The service and atmosphere are nice. My only complaint is the food is generally too salty for me, but spouse loves it.

    Excellent service, food and margs! A bit pricey but worth it! Relleno's actually crispy and not soggy. Homemade beans to die for. Large size plates and just the nicest staff! Felt valued and that they appreciated my business.

    Waiters are always very friendly, service VERY fast. Salsa and margaritas are very good. Great plates with excellent variety. We are here about twice a month and never disappointed. Definitely worth a try!

    I like this place a lot. They have recently updated their menu...the one you hold in your hand. Same great food. Hard to tell if they have new items as all my favorites are still there. All their meals are great! Top quality food, large groups or couples, and I see people getting take out. This is a full sized restaurant with good flow. Something a restaurant needs to be able to offer good food consistently. Check them out for the first time or return once again. You will have a great meal!

    Our quest continues for a good Mexican restaurant in Colorado - a local recommended we try Guadalajara's . I have to say this is the most authentic/traditional looking Mexican restaurant. It's clean and the server and staff were friendly. What is it with salsa in Co tasting like marinara sauce? Do they add Italian seasonings to it? This is the best and spiciest so far with a hint of marinara flavoring. The chips were warm but mediocre - probably out of a bag that was left open all night - they should kick it up a notch and make their own chips. We ordered the grande margarita - it was definitely grande in size! It's probably a mix but after a few sips it doesn't matter and the salsa is getting better too! I ordered the lunch special - 2 beef tacos with rice and beans and the man ordered the lunch combo - cheese enchilada and beef taco What a disapointment - we could have gone to Taco Bell and eaten the same ground beef tacos in a hard shell - the man said the cheese enchilada was bland - the refried beans and rice were okay. I'm thinking the locals like this place because it's the only Mexican place in Elizabeth - my advice - eat at Taco Bell and save yourself some money. The quest continues!

    this place is seriously yummy! The servings are HUGE and super delicious. Split a bowl of tortilla soup (grilled chicken made this awesome) and the veggie enchiladas (is my new fav) with the hubby and thank goodness we didn't order more cause we couldn't even finish this together?!! Then the caramel filled churros. Mmmm. I can't believe this taste is in this little town in CO?!

    I had been noticing Guadalajara Family Mexican Restaurant in Elizabeth, CO for a while. Mostly, I noticed they seem to be fairly busy. I had lunch here today and it was very good. As a matter of fact, it was considerably better than the last couple times I ate at the Guadalajara in Parker. The chips and salsa were nice. The house salsa had a deep smokiness to it, and the chips were fine. I remembered to ask for the pico de gallo salsa as well. It was excellent. The tomatoes, onions and peppers were fresh, and it had a good amount of heat to it. We ordered the daily lunch special "chipotle pollo" and one of the supreme lunch specials, "con crema chicken" (more commonly knows as pollo ala crema). Both dishes were very good. They came out piping hot (this was actually a situation where a "careful, this plate is hot" warning would have been useful). The chipotle dish came with rice and refried beans and a little Mexican slaw. The chipotle pollo had subtle chipotle flavor and was rich and smooth. The refried beans were (I would guess) loaded with manteca and they were uber-delicious. The rice was well-cooked and had good flavor. The pollo ala crema was a huge portion; easily enough for two meals. It was extremely rich and loaded with chicken, onions, peppers and mushrooms. They also did not skimp on the cheese. Service was excellent. The menu here is huge. If you are not sure what you want, you could spend a long time considering options.

    Yuck. The albondigas soup tasted like it was frozen and then reheated- the veges were gooey and you just can't freeze a cooked potato without it being mealy/grainy and watery. The meatball was ok. No good-quality Mexican restaurant is going to use pre-made taco shells and ground beef.

    On vacation from San Diego and had an amazing dinner here with boyfriend for our anniversary. The absolute best part and a must get is the fried ice cream. It was extremely delicious and under $5 for a huge ball of yummy fried ice cream. This will be a must visit for when I come to Colorado again!

    One of our family's favorite dinner spots is the patio at Guadalajara. We enjoy the relaxed atmosphere and the many choices on the menu. The food's always good. The Elizabeth location seems better managed than the one in Parker, where we've been disappointed the last couple of times.
