Looking for a place to grab some grub, we went with the ole standby...cars in the parking lot...we were rewarded tonight... Blue nectar, was our chosen spot...the place was busy on a Sunday night... We opted for the bar area, as we were looking for the copa soccer game, and we figured the Mexican restaurant would have the game on...bingo...we found a winner... Mexican restaurants know how to make me happy, sit down, one minute later we had chips and salsa, with both mild and hot options. Happy...happy...happy Menu options were plentiful, but I went with the pork and avocado burrito with green sauce, yummy...son did the carnitas, a clean plate said everything, and he was complaining about going, but afterwards he said his meal was awesome..,wife did a burrito in a bowl...she chowed it down...they were 3 for 3 tonight...we capped everything with a dos Equis...and sopapilla were yummy...good place for grub...

The only innovative thing about this place is how to take an hour to serve tacos... and how to make them bland, salty, and full of grease. Our nachos were served at the same time as our meals, and they were nothing more than cheese out of a can and bland toppings. Seriously. Save yourself money, and time, and hit Del Taco.

Last minute decision to eat at Blue Nectar as we drove past it tonight. Drove all the way around the block to get back to it. Best decision made in the last week! FABULOUS seafood con crema! I couldn't finish the fish and shrimp because they gave us so much. Only issue I had was they didn't make our guacamole appetizer at our table, as it says in the menu. The dinner was so fabulous though it didn't matter. OK, it mattered just a little, but I still gave five stars. We will definitely be back soon!

Good mexican food. Reasonably priced. Table side guacamole was yummy. The whole party ordered burritos but I always order steak street tacoc no matter where I go. They were excellent, beans good and salsa is spot on.

Service was excellent. Food was a little more bland than I expected. Area was clean. Would go again!

I DONT WANT WARM SALSA!!!! But I would like hot food!. Been here a couple of times. There really wasnt anything horrible about the experience but the food is bland, tasteless and really nothing to write home about. Ive gotten tacos here and Carne Asada. Neither were something that I would finish the whole plate or try again. Its just meh.... and unfortunately, I just really dont have the time or desire to pay for meh.

Very underwhelmed. My friend and her family live in Castle Rock... We had wanted to get in one last patio drink before summer slips away, and although it was looking like rain and we sat inside, still wanted to give it a try. I met her with her 3 kids; 4 year old twins and a two year old. We got there right before 6 which was when the happy hour ended, and expressed our concern about maybe missing it to the waiter who assured us not to worry, so much so that he said even if we ordered our last drinks at 6:10 we would be ok. Don't worry he said! But thing is he never came by in the time after we ordered and received our first drinks until it was well after 6:10, but with his previous comment and the fact he hadn't come by we ordered another round. By this time the boyfriend had arrived and I ordered some HH food for him as well. Now granted we had kids there and kids are kids, I don't know if it was that or that we didn't order proper meals, when the bill came we only got the first round on HH. Now I had a witness to him saying we could get more drinks on HH, so I actually said something and he denied it. Said it was only for food, which wasn't true as at that time we weren't even going to order food and hadn't brought it up. So kind of annoying, but oh well. Margs were weak and not my fav, $3 on HH and $5 otherwise. Would pay $3, but not worth $5. Boyfriend said the tacos were just ok. I did like the fresh and warm/hot tortilla chips and the salsa and queso were good.

Service was horrible. Right from the start we were worried about how the food was going to taste because the salsa had no flavor. The sangria was a cup full of sugary juice with no fruit. The queso fundido wasn't even melted, super salty and I could lift the whole thing with my fork. We had 2 bites and couldn't even eat it. Then when we asked the waitress about it she gave us attitude. I got the carne Asada plate which was ok however the beans were salty and covered in a layer of hard greasy cheese that was unappetizing. We hardly touched our food and asked for our check. The biggest waste of $60.00 I've ever spent. My boyfriend said if he could give it zero stars he would... I would not go here. Taco Bell would even be a better choice then this place.

I'm glad I tried it but I won't go back. The service was not very good. I asked for recommendations and the waitress just told me what was on the menu, not giving me a recommendation for a specific dish. I ordered the Fried Tilapia, expecting to get a fried filet of Tilapia. Instead, I got a whole, uncleaned, Tilapia fish with head and tail that was fried in a pan. The top half of the fish was cooked properly, although bland. The bottom half of the fish was way over cooked and hard. In all fairness, my wife ordered a combo plate with a Tamale and Enchilada and she liked it.

The margaritas are on point! The house margarita during happy hour is a steal at $3. The warm chips and salsa are plentiful, refilled frequently, and just the right amount of salty/spicy. I've had the chili relleno, beef burrito and chicken chimichanga (all on separate occasions) and I can say I've yet to have a bad meal here. The service has been uniformly excellent too. Prices are reasonable and there is a lot of food for the dollar. I can easily see this becoming a favorite dining spot in Castle Rock.

On vacation from Florida, we stopped for dinner. Amazing food, great service. The blue nectar enchiladas and fajitas were so flavorful. I don't review much but I couldn't help it after reading the others. Definitely give this place a try. Hope this helps.

  • Dale H.

Its your standard mexican food place. The music is loud, and in spanish. Prices are okay, food is medium, service was okay (not great, wait staff was fine but the other staff seem to think that they have the right of way not the customers.) I would probably eat there again, there are not a lot of places in Castle Rock to eat after 8pm.

I'm rating this establishment 5 stars based on approximately 10 experiences. I think it is always important to compare service and quality of food, to the amount of money that you are paying for your food and service. One of the things I like most about Blue Nectar is the Ambiance in the bar area. The rest of the establishment is average, but the bar area seems to have a very nice ambiance. I prefer sitting in a booth in the bar area more than sitting at any other local Mexican Restaurant. There are multiple TVs with sports, and I love the Dos Equis on tap. I have received excellent service, with courtesy during every one of my visits. It isn't the best Mexican food I've ever had, however I think it is the best food, service, and ambiance that you can get for the money, and I'm not much of a complainer.

  • Todd C.

We ate lunch here and both got a two-item lunch special, just $6.99 each. That's a steal for the high quality of the food! Our waiter was attentive but not intrusive. All in all, a very positive experience. We'll definitely be back.

  • John E.

The chips and salsa were ok. Actually it was the best part of the meal. Everything else was bland mexican. This is not close to authentic or even Texmex for that matter. However, the service was excellent and the atmosphere was nice as well. This place has tons of potential if they could just fix the food quality. Another area my wife an I noticed was that they were more impressed with using lots of Spanish words on their menu (which I get...it's mexican food). But at the expense of your patrons not knowing what they are ordering??? Atmosphere and service great, food quality bad. Sorry but we wont be coming back...

We finally tried BN a few months ago after moving to Castle Rock last year. Had I read some of these bad reviews, we might have skipped it - but so glad we didn't! Since our first visit, we have been back probably 5 times and once for carry-out. We have NEVER had a bad experience there with either food nor service! We've never gone during ultra-busy hours, but that's by design. I was surprised to read so many mediocre/poor reviews on service, because we've had 3 different waiters and at least 2 different hosts over the last few months, and they've always been outstanding. Drinks were refilled without having to ask for it, and everyone was fast and friendly with outstanding customer service. Food came out fast and was always outstanding. If you're going for the first time or not sure what to order, go before 6pm and ask for the Happy Hour Menu. You've got a handful of very inexpensive items to choose from and they're all awesome! It's a great way to sample a bunch of their items without breaking the bank. Since we started doing that, we're hooked on the happy hour menu items and don't even order off the main menu! It's like a sampler platter - try the vegetarian taco - it's really awesome! We've got a celiac kid (can't eat wheat/gluten), so it was really nice to see that they cater to it (even though it's spelled "glutten-free" on the menu, haha). It's really hard to find a good restaurant where our daughter can also eat what she likes, so it's nice to have another great gluten free option here in Castle Rock! Give Blue Nectar a chance for yourself. As I mentioned, we have had nothing but great experiences here with both food and staff! We even got warm chips and 3 containers of salsa with our carry-out order, which I did not expect. Not sure where all those bad reviews are coming from, but then again, there are a lot of snobby jackholes here in town as well, so I chalk it up to that. ;)

400pm on a Thursday and they have no avocados for guac? Send a dishwasher to the store, restaurant depot? I can walk to the store from here. Bad form, the little things in the food biz make or break repeat customers.

  • Nancy T.

Coconut shrimp was soggy. They also loaded the plate with a goopy, sweet sauce of some kind. Yack! BN Soup was greasy....also, I prefer shredded chicken in soups not funky little chunks. Warm chips and salsa were ok but I'm tired of the same old "glarp" at these "Mexican" restaurants.

    (2)
  • Jamie T.

The food was AMAZING with generous portions, salsa was unique but very good. The "original margarita" was made to perfection. Not too sweet or tart - very smooth. Excellent service as well.

Don't waste your time here. I had heard that this was the new great Mexican restaurant in Castle Rock after El Parral left, but it is NOT. Service was so so, chips and both salsas (hot and regular) had zero flavor, and the food was extremely disappointing. My husband and I both ordered different dishes and both were nothing special. I will not be back. Don't waste your time or money at the Blue Nectar, go to the BEST Mexican Restaurant here in Castle Rock, EL MESON, everything is delicious there. Trust me, there is nothing "innovative" about it.

Lunch was good, not great. Came here about a year ago and it was fantastic. The portion sizes are fantastic and the plates are hot!! The restaurant does great business. Both times I came here the restaurant has been full.

Two stars feels generous but my food was good and cheap. Complimentary chips and salsa - excellent! Tacos all around $3 and pretty good though the chicken was a bit disappointing. My boyfriend's mahi mahi was a little funky. Now for the big let down- house margarita during happy hour... Literally a splash of tequila. We were sitting at the bar and we were both in shock. Neither of us drank them since they were all sour mix. I wouldn't return or recommend this place.

  • Ryan M.

When we arrived the resturaunt was basically empty and it still took the waitress 15 minutes to take our drink order. We ordered the Fish Tacos and the Seafood enchilada. I am not a picky eater. I took one bite of the Mahi Tacos and couldn't take another bite. It was warm at best and the Mahi was dry and fishy. The enchilada was only slightly better. I would of sent the tacos back except it took our waitress 20 minutes to come back to our table after our dinner was served. I would of happily eaten Taco Bell over this place any day. If the owner reads this, the service was terrible. I don't think I've ever taken one bite of something and dared not take another. The beer was cold.

Blue Nectar is just another one of those "Meh. I've experienced better." Mexican restaurants that Colorado seems to be filled with. The ambiance was rather boring and that was a clue how the food was going to be too. The food wasn't bad, but it wasn't good enough for me to purposely eat here again. One of those places you mark off as having been there, and if friends asked you to go there for dinner you wouldn't put up a fight, but down inside you wished you could go somewhere else.

Great food, pleasant atmosphere. Not that busy. A great place to support the Castle Rock community.

Don't waste your time. Margaritas are disgusting and the food is worse. Taco Bell might be better.

Taco Bell would have been better. This is the first and last time I'll eat at that establishment.

Average food, bland salsa, weak margaritas, bad service and a foul smell made it a forgettable dining experience.

This is a great little Mexican restaurant. It is right in the center of the quaint little old Main Street of Castle Rock. I didn't even know it was there until a friend asked me to meet her there. I couldn't tell from the outside if it was going to be very good, but I was pleasantly surprised. We both had a taco salad, it was very tasty. The salsa was awesome! I will eat here again for sure!

    (4)
  • Steve S.

Food is so good. My wife and I had the sampler platter. Every item was delicious thus leaving us to yearn for our next visit. Service was very good. I will agree with some other reviewers stating the regular margaritas are a little weak. I also don't get the salt at the bottom of the glass. I never seen a margarita like that. I will definitely be back and maybe stick with beer.

  • Jordan E.

Warm appetizer salsa was the best I've had, service was perfect, and the chili relleno (usually hit or miss at most places) was quite good, I'd recommend this place

Fantastic place. The Mexico burrito is awesome and table side Guacamole is my favorite in Colorado.

    (5)
  • Brad C.

We loved this place when it first opened. The food has become progressively bad and the service is wildly inconsistent - some good days and too many bad. It's a shame because they once had a winning formula.

  • Justin V.

I'm not quite sure why there are so many poor ratings for this place. I have eaten here 7-8 times and haven't had a bad experience yet. The HH margaritas are a little light on tequila but they are cheap and taste good so I'm not complaining. The fajitas and carnita plates are both good but the nachos left room for improvement. Overall a 4 star place but I'll add a 5th to help them out since I feel many of the bad reviews don't fit. I think many people in Castle Rock prefer much more Americanized cuisine so this may explain it. It's not authentic but it leans a lot more towards that, than Taco Bell!

Rock solid Mexican food, great service & tasty margarita. Excellent edition to the Castle Rock restaurant choices. We will be back.

This is in response to the horrid outburst by said employee and now the management there. I am in no way shape or form unaware of self expression or against it. I am tatted and pierced myself. But when your overall appearance makes me question whether or not I should eat at an establishment, we have a problem. I have been questioned by the manager of this establishment saying my stating I got food poisoning when it wasn't in the original review to be over the limit. Really? Does anyone understand how the human body Works? I wrote the review, while eating such bland disgusting food, and proceed to get food poisoning along with the other members of my family. The food was bland with questionable looking meat and globs of cheese that looked like wax. Being dismissed by our waitress with a constant Uh huh and having to tell her multiple times what it is we wanted I felt is excessive and poor service. The overall experience was horrid and the treatment received after writing my original review is in no way the way a patron should be treated. Get upset all you like. You can express yourself all you like but you're still a representative of said company and it reflects on the company. I don't care if you're pierced just make yourself look presentable. As for management, how dare you attack me saying I'm over the line in stating I got food poisoning. I've been in the food industry twenty years and never have I ever treated a customw with such disrespect. Buck up. Learn how to treat your guests and never question when they say they got sick from your establishment. We are completely aware of how crispy food ends up when it gets moist from the heat of said food. Being talked down to like an idiot does not help your cause. That being said I have had crispy food from many other establishments, to go as well, and they've all held up the five minute drive from said location to my house. It truly is a question of service and quality of service.

We checked out happy hour this afternoon! The $3 margaritas were great! In fact, the happy hour prices (3-6, M-F) for food and drink specials were quite good! Service was excellent, as well. The chips are served warm. The salsa is flavorful. I ordered the Mahi taco and it was delicious. My hubby ordered the same taco; but, next time he said he would ask them to omit the mango salsa! I loved it! Update: we have enjoyed this restaurant and their food so much that we try to dine there at least once a week! Their happy hour margaritas do not disappoint and the Mahi tacos are a 'must try'.

Great hole in the wall Mexican restaurant. We stumbled on this place in a blizzard of a snow storm and was pleasantly surprised. The wait staff was great, the food was good and the prices were reasonable. You should give it a try!

  • Zac R.

Wow! I can't believe some of these reviews. The burritos, enchiladas, and fajitas are OUT OF CONTROL. The guac dip was also exceptional. When you factor the very good service in as well it was an ideal dinner. I will be coming back when I'm in town.

We have been here often and have yet to be disappointed. The service is always excellent, the food is superb and the happy hour is very good also. I've tried many of the items on the menu and I've enjoyed each and every one of them. In addition, the prices are reasonable. This is the best Mexican food in the Castle Rock area.

We have gone to Blue Nectar a few times and each experience was ok - food wasn't great but it wasn't horrible either. Our last experience is what made me write a review and drop from 3-stars to 1-star. During out last visit, our wait times were fairly long once seated and the fish dish that I ordered was extremely overcooked. They offered to remake the dish which I took them up on; however, the second try was still very much overcooked and bland. Will not be returning.

When we moved to Castle Rock we had to start looking for favorite places again. I was hesitant to try Blue Nectar because of the reviews but we eat there frequently and have never had a bad experience. We've recommended it to family who love it as well. Food is fantastic.

This is the first time we have visited the blue nectar. what was really nice and made us decide to eat there was we went in there earlier to check it out. the concierge at the front was very kind very helpful and answered my questions as to the kinds of food and the types of margaritas that were available. The atmosphere also looked very inviting. The food we ordered was very good, the chips were only lightly salted or none at all, and the margaritas were pretty good too.The prices were very reasonable in the $11-$12 range deciding on what you want. I would recommend this restaurant to anyone that is looking for good Mexican food and a good atmosphere.

Great Find! We were bumming around DT Castle Rock and Yelped this place. The reviews were spotty but we could walk to the restaurant from out last destination, so we gave it a try and we are glad we did! The Blue Nectar margarita was very tasty, they have excellent chips & salsa, our food was great and the service was quick & friendly. We will be back.......

  • Sharon S.

I stuggled between 3 and 4 stars. The food was pretty good. I had the cheese enchiladas, which were very good. Big portion, fresh ingredients. My husband had the carnitas which were really good. The Salsa and chips were good, both were very fresh. The only turn-off was the kind of funky decor, and it seemed a little less than clean. When we were seated, there were crumbs on the table, and the hostess just used her hand to sweep them onto the floor. From our table we could see into the kitchen, which is always a turn off to me, unless it's spotless, which it didn't seem to be. We just moved here from New Orleans, one of the best food cities in the world, to Castle Rock, which is certainly lacking in that area, but we will go back.

Really good food, better than the much more expensive Mexican place in the Meadows. The service was very fast and people were friendly.

Clean, nicer sit down Mexican, friendly staff, typical Colorado prices. Not my kind of Mexican but many seem to enjoy. I can recommend as a comfortable place to go with guests especially kids.

Great place to go if you want to sit in a corner for 15 minutes and not get helped...don't know what the food was like but the lobby was bare and fountain was dry and team couldn't have cared less that we were there...Went to Carlos Miguels and had a great dinner.

I've been a few times and it seems each meal suffers a little more than the last. My latest experience could be my last. So far I've found the chicken salty, the steak dry and chewy and the service spotty. If you can get the queso fundido (instead of just queso, which is descent) it is very good. Unfortunately, the servers assume you're asking for regular queso and you miss out. I haven't found anything spectacular in my four visits. Some servers are good if you go at busy times, but 8 pm on Wednesday you get the guy who doesn't listen or doesn't care. I would go for happy hour apps, but that is about it.

My wife and I moved to Castle Rock about 10 months ago and are trying all of the restaurants to find our new favorites. Tonight we went to the Blue Nectar for some Mexican food. We were a little apprehensive after reading some of the reviews. Happily the service and food were very good. Our waiter was very polite and attentive. My wife had tamales and I had mole carnitas. Both were very good, in fact, we brought the left-overs home for lunch tomorrow. At this point we are not sure if we had the abnormal experience, or if it was those that gave the Blue Nectar low ratings in the past. As for us, we will go back and will recommend it to others. If you want good Mexican food, go to the Blue Nectar!

  • Beth L.

The Vulcan (jalapeno) margaritas make this place worth the trip! Service can be spotty but I will let that slide because the both times we ate here the food was very good. The last time we went, I ordered the crispy rellenos which were fantastic and very fresh tasting. I also tasted my husband's burrito which also was very good. If you love margaritas and spicy - please take my advice and order their Vulcan margaritas - you will NOT be disappointed. They are the perfect combination of sweet and spicy and can not be missed! They are cravable they are so good!

FANTASTIC food! This place is amazing and did a wonderful job with the service and food. They even have a healthy section for those of you who have allergies like me. I strongly recommend this restaurant to those of you who love Mexican food.

We like it here! Pablo, our server was great and fun. Service was a litttle slow because it was busy on a Friday night. The atmosphere was good and the food was great.

My wife and I wanted to try a new restaurant in Castle Rock, so we decided on the Blue Nectar. I was very surprised by the menu size; gluten free, vegan, vegetarian and regular. The food was great. We'll definitely be going back.

  • Eric R.

Service was slow, the atmosphere was loud, and the dissapointment was high. We had really wanted a great Mexican restaurant to be on this side of Castle rock. Alas this one is not it. Food was fair, the beer was cold, and prices were about 10% to high.

    (2)
  • Kelly Q.

I thought the food was delicious, but the service was awful. Loved the warm salsa and freshly made chips. We had the cheese enchilada and crispy rellenos. Yum! The queso is also deliciou. Now for the service...when we arrived a lady was behind the counter doing something. She didn't even look up and acknowledge us. She walked away. Finally another employee saw us (we had been waiting 5 minutes) and SLOWLY walked to us and seated us. We were seated at least 10 minutes before our waiter came and took our drink order. The waiter was also very slow at refilling out drinks. I would really like this restaurant to succeed and hope they get their customer service under control.

  • Scott W.

Well.... If you're all about bland salsa, bagged chips, watered down ground beef, semi warm sauces and bland rice, the you'll love Blue Nectar. They have innovative in their title, but when are folks going to learn that Mexican food needs to be full of flavor, scalding hot, spicy yet palatable. Stop trying to be innovative and just make really good traditional Tex Mex. I feel bad for this place because they look like they dropped a lot of coin getting the space all fixed up. But if the food isn't memorable.... well you know the rest.

    (2)
  • Scott G.

I hope they can improve their food and service. Server was friendly but food was slow to come out and they were out of two items we ordered and we didn't find out until 10 minutes after our order was placed. Food was fair. I actually liked the warm salsa. It was unique.

Wanted to try something new in Castle Rock. So BN was the choice. There is a beautiful fireplace but no seating near it. Shame :-(. Food was ok, I order fish tacos, but got chicken tacos. Guacamole tasted store bought. Not going back.

I have been to this restaurant a few times, I like to give second chances when it comes to small business in the area but Blue Nectar has run out of chances. I frequent a lot of the Happy Hours in the Castle Rock area and decided to give them a try right after they first opened. The first time I went it wasn't anything special, everything was pretty meh; I ordered a frozen strawberry margarita, a shrimp quesadilla and queso for the table. None of the above were on happy hour special. The queso was in a big bowl, enough for a table. Although I ordered typical Mexican cuisine there is nothing "innovative" on the menu. Being that the first time was pretty "meh" and the restaurant was fairly new I gave them a second chance more recently. It was worse than the first time. I ordered a sangria and queso. The sangria was literally wine with ice cubes. It was nothing sangria should be. The queso was in a small bowl, only a little bit bigger than the size of the salsa bowl they give you for sitting at the table and it wasn't even filled up all the way. There was about an inch from the top of the bowl to where the queso actually started. After the queso arrived at the table I had pretty much decided that I would not be coming back. But to add icing to the cake we had requested more chips, they were delivered a few minutes later by a women that was on her personal cell phone! THEN she sat a couple at the table behind us while she was still on her cell phone! If I was that couple I would turned right back around and walked right out of that business. That is simply unacceptable. Businesss that have moved into this building don't last very long, and the same will be said for Blue Nectar if they don't clean up their act.

Hallelujah! Some really good Mexican food in Castle Rock! Fortunately I didn't read the reviews before going for lunch yesterday, they might have made me think twice about going. But I'm so happy we decided to try it. Our experience was first rate from beginning to end. We were seated in the bar, which we found a little strange when the rest of the restaurant was pretty empty, but never mind, it was a great place to sit. Started out with an icy cold draft Mexican beer, great! The homemade chips and salsa were excellent, in fact, best salsa I've had in a while. We both ordered the crispy relleno and enchilada combo plate. The relleno was the best I've had in Colorado, and really pretty much the best I've had EVER. Just the right amount of good cheese, nestled inside a crunchy, fresh jalapeño, batter dipped and fried to perfection. I asked for a spinach enchilada, which was not on the menu, but they happily obliged and it arrived fresh and tasty. Maybe a little white queso sauce mixed with the spinach would make for a perfect spinach enchilada, but that's just my thought. Service was great. Seriously, this will be a restaurant that will be frequented by me and my friends on a regular basis. I am looking forward to trying other items on the menu. Give it a try, I don't think you'll be disappointed.

Served our large group quickly and efficiently. Good food, courteous service, lots of chips and salsa. A smattering of vegetarian choices.

Food was bad from the burned tasting salsa to the Sysco canned mole sauce. Lukewarm food served by a don't bother me waiter. Will not go here again!

First visit and the smell of the restaurant was not good, so that's a very bad first impression. Food was typical mexican fare, not innovative whatsover so that was a big disappointment. Shirmp dish was so loaded with hot pepper sauce it was inedible. Bacon wrapped shrimp was overpowered by the thick bacon that's all you could taste and it was overcooked, and bland. The chicken quesidilla was ok. On a positiive note, the server was friendly and attentive. I will not be returning.

Chips and salsa were ok, enchiladas were average. I think they are putting the effort to try and make this place good but the food is really just average. For an average of about $10+ for dinner entree I expect a bit more.

Great pork, there salsa is served hot, a nice treat. The flan was so good , hold the wiped cream. Will defiantly come back.

Blue Nectar doesnt even deserve the one star yelp forces me to give them. This place is absolutely atrocious, the service was obsolete and the food disgusting. The blue nectar salad was a bowl of lettuce and a piece of chicken, for $10 mind you. The cup of green chili was a bowl of inedible sludge. I pity the fool that comes here expecting decent Mexican food, my wife's veggie fajitas was just grilled zucchini, chatted black, served with white rice and black beans, sans tortillas. One would think that's an important component of the dish, si or no? Our drinks were incorrectly ordered and then forgotten. Our meal served without silverware. Our server could not have cared any less. I have never walked out of a restaurant but there's always a first!

When the hubs finds a place he enjoys--we go to it as much as humanly possible. The food is good. I love the Vallarta burrito--steak and shrimp in a tortilla. Yum. They have different salsas. The darker salsa my husband and I love, but the lighter green takes some getting used to. We have been here 3 times now. Usually for a restaurant it takes someone coming in way more than that to be recognized by staff and treated like a regular. So image my shock when we were seated on Friday, the server comes over and goes "Diet Coke right?" We were floored, and then naturally had to tell him we were drinking that night. Margaritas are good--you don't taste the tequila as much (I hate margaritas where you feel like you are drinking straight tequila) but man does it sneak up on you in the end! We have not yet found a menu item we did not like, and with the good service we will definitely keep returning here.

I was really hoping this would be our answer to good sit-down Mexican food in Castle Rock. We were seated immediately but that was the best part of our experience. After sitting at our table for 10 minutes without anyone helping us, I went to the hostess stand and told a manager that we were still waiting. We finally ordered the steak fajitas and 007 enchiladas. I will say that the amount of steak was the healthiest amount I've ever seen served for fajitas but would've been better if it wasn't an inch thick. Also, a steak knife would have been helpful to cut STEAK. The chips were warm but the salsa was not good at all. The guacamole tasted mass-produced. The presentation of the food was as bland as the food itself. Luckily we had a coupon so the prices didn't hurt quite as much but we won't be eating here again due to the bad service and mediocre food.

I've eaten here twice now, both times we really enjoyed our experience. The table side guacamole is amazing and the bartender was willing to make me a "skinny" margarita. Only improvement I could recommend is better tortilla chips. Everything else was delicious!

Food and service were average. I prefer Guadalajara also in Castle Rock for better food and stellar service.

The only reason I gave 3 stars because the food was GREAT!! The service was NOT!! We were sitting in the bar and there were only a few other tables with people, so not busy at all. The waiter took forever to even come and get our drink order. The drinks came fast and they were great. The food was also delivered relatively quickly and it was also great. However, when it came time to pay our bill it was a different story. The waiter brought our bill and it took him 20 minutes to pick it up from the table!! 20 minutes!!! He also informed me, after taking my card and running it the old fashion way by making a copy of it, that the machines were down! I would have liked to know that before he made a HARD copy of my credit card information!! I could have just paid with cash. I was VERY disappointed with the service here, and that is too bad because the food it very good!

Good warm salsa and chips. Chicken chimi tasted burnt. Fish tacos, fish was dried out and very small. A little expensive for Mexican food.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
