Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

We are a late dinner here and shared a large combination plate of chicken burrito, chicken enchilada, and a tamale. The food was all fabulous! Very flavorful. The beans were spectacular- we pretty much fought over them and wished there were more. The tamale was moist and cooked in a banana leaf which was different from a Mexican tamale. We also tried the platanos fritos and they were delicious. Our service was great with a friendly hostess and waitress. The atmosphere was great too with Latin beats playing in the background at a good volume. We will be back for sure!

Chimichangas Sopes Sopapilla 2 sodas All for $28 My brother and I went here after a long few days backpacking out near Snowmass. We just wanted to get ripped on some Mexican food, my personal favorite. Because I was burning thousands of calories a day backpacking, and on vacation, I was down for whatever foods they could give me. I had the veg chimis and rocked them like a hotdog eating competition. They were gone before the poor waitress had enough time to bring me a fork and knife. I probably drank like 5 sodas too. No problems! This place was definitely small, and frequented by locals. Not a bad choice.

Cheese dip was a gooey mess. Queso is normally white where we come from but this was a gummy orange. Food was not much better. Will not be back.

Worst Mexican I have EVER had! Horrible! Terrible! Awful! Over salted! Burned! Total waste of money! Poor service... Who doesn't know what bourbon is? Don't servers normally stop by to check if you are out of beverages? Aren't diners traditionally served together?

TL;DR: OK food, but don't come here if you are on your lunch break. I've eaten here several times and the food ranges from excellent to meh. The ceviche and most of their El Salvadoran food is surprisingly good. I cannot emphasize enough that service is unbelievably slow during the day, and even with an hour lunch you would be cutting it close.

We were visiting our daughter in CO and went here because we had a coupon from restaurant.com , but when we got there, the waitress was unwilling to honor the certificate. She said her manager wasn't there--when asked when he'd be back, she was very vague and told us to just come another time. We stayed and ate and it was great food, but disappointing that they say they belong to restaurant.com but then don't honor the certificates. We were thrilled that the sign on the door advertised margaritas for $3...but I'm not sure there was any tequila in them!!

Great salsa, great sopes. Food took a little long, but in the end it was totally worth it. Everything was super fresh and delicious. I loved all their decorations in the dining room :)

Five stars for the pupusas. I haven't had better in Salvadorian homes. Camarones ala Diabla was one of the best I've ever eaten and this is the dish I judge all Mexican restaurants by. Sweet, spicy and just a little smokey...plus they threw in mushrooms which I've never seen before. Awesome little gem in Carbondale. Estaré de vuelta!
