The omakase basically serves things from the menu in a certain order (the menu is pretty small). The omakase is fun, to get a sampling of the items they offer. We spent about $65/person on the omakase. The omakase seems to be pretty much the same each time - doesnt seem to vary much. I loved how fresh tasting everything was, and how delicious it was. I also loved how the chef seemed to take a lot of pride in his work, and I loved the mom and pop feel of the place. My favorites were albacore blue crab roll !!!!!!!!!!! yellowtail snapper

After hearing that this was the best sushi in OC I went recently and was almost disappointed to find a closed sign at 7:20. Fortunately we were able to take the last table from a party that had moved to the bar. We did a 19 course omakase which is the only real way to go to properly experience this place. Interesting to note most of the nigiri came topped with a garnish which eliminated the need for extra soy and wasabi. I tend to prefer that let the sushi chef add his own touches rather than simply sticking to soy and wasabi. Although Katsu-san did use ponzu a lot. Also, its interesting to note the rice here was a fair bit looser and wetter than most places. While that took some getting used to I eventually found I liked the flavor of Katsu-san's rice. Albacore sashimi - Served in citrus ponzu with scallions. It was interesting seeing how albacore is usually cooked. I discovered I greatly prefer the seared version. Tai nigiri - Served with with tobiko, scallion, and ponzu. Very fresh and slightly tart. Bigeye tuna nigiri - a very clean fresh and lean piece of tuna Baked scallop - The scallop was baked in its own shell and topped with mayo. In general I am not a fan of scallops and mayo and even though this was better than most I still wasn't impressed. Uni nigiri - I have been acquiring more of a taste for uni and this piece was rich and smooth with the slightly sweet flavor I have come to love. Blue crab hand roll - The restaurant's signature dish a cigar shaped roll stuffed with crab and a touch of mayo. Much better than the earlier course with mayo. I can see how this is popular. Kumamoto Oysters - Fresh oysters in the shell topped with tobiko, scallion, and... you guessed it... ponzu. I liked the oysters very much they were fresh and sweet, bursting with cold brine. Also no bits of shell in the oysters which I have found at many places, much to my dismay. Hamachi nigiri - One of my favorites when I first started eating sushi and this morsel reminds me why. Hirame nigiri - Simply an excellent piece of halibut the texture makes it one of the standout pieces of the evening. Mirugai nigiri - Unlike some clams which have an almost rubbery texture and an overpowering taste of the ocean, this giant clam had a nice crunch to it and sweetness mixed into the subtle ocean tastes. Toro tartare nigiri - Perhaps the most disappointing dish as the piece lacked the fattiness I look for in good toro. This was "cheek of toro" now I was under the impression toro was tuna belly but hey what do I know. Aji nigiri - Topped with scallion tobiko and ponzu. An excellent if unique mackerel. First it was served raw secondly the flavor was milder than most aji. I happen to enjoy the standard aji flavor but a change of pace is nice too. Hotategai nigiri- A delicious raw scallop with rice and a hint of lime juice to give it some zing. Sake nigiri - Topped with toasted sesame. An good dish if a touch unconventional. Amaebi nigiri - Unlike the normal one shrimp one piece, this had several smaller shrimp per piece. Also this was quite a bit creamier upon mastication that standard sweet shrimp. All things considered I prefer the regular version. Spicy tuna hand roll - Another cigar shaped roll this time filled with creamy tuna with just a whisper of spice that teases the tongue and leaves you wondering if it was really there. Shiro maguro nigiri - topped with ginger scallions and ponzu. I have had shiro maguro on the east coast which on the west we call escolar. This was something entirely different: albacore belly think toro crossed with albacore. I enjoyed this immensely and would like to see it at more places. Ankimo nigiri - topped with shiso and tobiko. My first experience with ankimo was when I started eating sushi and I remember it was a bit much for my palette then. This was much softer and almost a bit more liquidy in its consistency. Rich velvety but not too dense what a difference three years makes. Unagi - Normally the sauce is a lot thicker and stronger here they added some spices to the top and the flavors were much more complimentary to the taste of the eel. After 2 hours and a bottle of Kubota Manju the total came to $160 per person Pictures at: tangmeister.com/sushi_wa…

Me and my wife love this place! Been eating here for a few years now. The sushi here is fabulous. The crab hand roll is incredible. The kumamoto oysters are fresh and tasty. i've had almost everything on his omakase menu and let me say it is great. Finally i've found a good authentic sushi chef and restaurant. I admit it is expensive but having consistent good quality sushi is hard to find these days. If you want to order what you want to eat, sit at one of the 5 tables. Sushi bar is "Omakase" style only. Traditional it is.

Another hidden gem in the OC area. Don't let the look fool you, once you get your food... you know this place is a step above the rest. I been here many times and the sushi is always top quality. The store is run by a husband + wife team and they only serve Omakase style. I been here many times and katsusan never fail to deliver me the freshest fish. The only reason I didn't give this place a 5 star is the chef never change his Omakase menu, so I lose the excitement of wondering what new sushi creations I will be getting next.

I went back here again today for dinner. This would have been my favorite most perfect sushi bar if the omakase menu changed. Alas... I had the same thing as I did last time (add a spicy tuna handroll). Minus one star....

Came back here last night for our anniversary dinner and left with a happy belly! I have to admit that there is not much stuff to choose from. If you're just looking for fresh fish and just right flavor, this is the place to go! Be ready for a big bill though!
