Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Went for lunch one time with a workmate; we were first in when they opened the doors. The place was filthy. The busser's cart was in the dining room overflowing with dishes from the night before. (what ???!!) There was a bug graveyard at the window. Floor needed attention, etc, etc. We had no time to go somewhere else so we ordered and ate. Can't think of anything memorable about the food. My attention was drawn to the flys and the moping, slump shouldered staff. We seriously wondered if they just locked the doors at closing without cleaning up, and went out drinking all night and were now trying to push through a hangover. They never even turned on the lights. Oh, man. What does that tell you? Went back to work and looked up the County Health Inspection history online. Shocking and chronic. Got real worried. Fortunately everything stayed down. Will never go back. 1 STAR... for surviving. - If you feel this review was Useful, Funny, or Cool, please click the buttons below. Thanks

Come for the BYOB.... Stay for the fish and cactus burritos. Whenever I'm home with my family this is a regular dinner spot. I am ADDICTED to the fish and cactus burritos and have converted many of my friends to become believers. It's just a cute little hole in the wall Mexican place.. What more could you want?

Do not go there! Ugh. My stomach still hurts thinking about it. Having moved here from being a long term resident of Austin, I'm sort of a snob when it comes to food anyway...especially Mexican. I hate giving bad reviews & I had high hopes for this place, but we will never go back there. I had chicken enchiladas & my son had a chicken chimichanga. At first they seemed okay, but further in the meal we both got nauseous. I just cannot eat bad food. Granted we both eat healthy and organic 99% of the time, we definitely give ourselves a break to indulge in Mexican food. This wasn't bad as in diet, this was bad as in eating it made us want to vomit it back up. I almost didn't make it home, before it decided to leave my body. The only saving grace was the salsa. Even that had something weird in the background (soapy) I thanked the nice lady for the meal. I can't tell someone their food is bad, but I can warn you. I'll also take recomendations for a GOOD place? So far (for non Mexican) we love Raven Cafe & Iron Springs cafe. We also enjoy Bill's Grill. Thanks & good eating. The toilet calls.... :(

I was in Prescott looking for Mexican food with my daughter so I just started searching using the Yelp app--and up popped Maya! The reviews looked great so we decided to check it out. It was a bit after 8 when we arrived, and I noticed a sign in the window saying the kitchen closes at 8. I walked in anyway because there were several tables eating, and the woman working (I think she is the owner) said it was fine and that we could be served. I love this kind of service--she could have just as well turned me away. Another couple rambled in at around 8:30 and they were served as well, even though they ordered seafood and things that are probably complicated to make. The food was very fresh tasting and quite delicious. Everything was obviously made from scratch, including the rice, beans, and salsa. My daughter ordered a basic burrito from the kids' menu and I ordered the fish tacos. Excellent stuff. By the way, they do accept credit cards but they told me that their processing service closes down at 8pm. So, if you anticipate being there past 8, bring cash. It's also BYOB!

Meh.. I had the chicken flautas, it tasted like boiled chicken - no seasonings. We were given warm cans of Coke and they were skimpy with the chips and salsa (one small bowl for 5 people). We were disappointed :/

If you like hole-in-the-wall places you will probably like this place. If you claim to be a resident of Preskitt, this restaurant is one of the requirements for local citizenship. It is kind of a rite of passage. It is not fancy at all but they cook up a good plate of Mexican food that is not so gringo. Definitely a mom and pop shop. Most of the food is not too spicy and you can tell it is all from scratch. I love their enchilada plate, rice and beans. If you are a white-glover and are into antiseptics you probably won't like this place. One time my son and I had to fight off some black ants that were threatening to carry off our chips and salsa. We won the battle pretty easily though...

I was so excited to find a good fish taco up here in Prescott, but I was horribly disappointed. Sorry, but these are not good fish tacos. Actually, they are probably the worst fish tacos I've ever had and I've had many of all varieties. I also tried the chicken taco and it was good. I would say this is very average food and I am very confused by all the rave reviews.

Hole in the wall mexican joint that the locals love! Some of the best carnitas I've ever had. Just about everything I've had here is a treat. And it is cheap too! A short walk from downtown and well worth it to get a great lunch or dinner. The only people I would warn against going here is the clean-freaks. This is not a squeaky clean place. Or as I tell my wife: It has character. As mentioned by other reviewer it is vegan/vegitarian friendly. It is a fairly small restaurant, and generally fills up during peak hours, especially friday and saturday. WARNING: Cash or Check ONLY!

I used to love going to this place for lunch with my dad. It's a teeny tiny little hole in the wall restaurant that looks like it's been there forever. If you haven't been there before, it can be really difficult to find, but once you're there once, you feel foolish for having gotten lost before. Just street parking, which can be tough, but I almost always went on weekdays mid-afternoons, so we never had a problem. Inside, it's really small and the tables are super cramped, but it's still somehow cozy. They bring out some complimentary chips and salsa and everyone has always been super nice. My favorite thing on the menu is the chicken wet burrito. I love that thing. I honestly don't remember how anything else was, because once I discovered it, the burrito was all I ever got. I love this place, and always recommend it to all of my Prescott friends. You should give it a try at least once, just to support the local businesses if nothing else.

The worst fish taco I have ever seen or tasted. I wanted to like this place. But I will never go back.

Great food, quaint atmosphere, great service. BYOB, there is a mini mart across the street. Vegetarian and Vegan friendly. No lard in the beans, no stock in the rice or enchilada sauce. Family owned, local. Perfect!

I Love this little restaurant! Great food, ample portions, super reasonable prices! The staff is friendly and attentive. Remember it's BYOB. They provide uncorking service, but dont expect fancy tablecloths and fine china. This little gem is right out of Mexico! I can't say enough good things about this little "hole in the wall!"

A good Mexican-style eatery with good service and very good food. We had the mole chicken enchiladas which were done nicely with creamy refried beans and yellow rice. The guacamole was fresh and extremely good and served with fine salsa and chips. The small menu and ambiance pull it down a notch. However, I definitely would return if I'm nearby at the stores.

Great Mexican food....so far the best I've had in Prescott. Yes, look past the hole in the wall atmosphere, torn seats, dead flies in the window (that happens at my house too), but if you want really great Mexican food, this is the place. The salsa is fantastic too.

Some of the best Fish Tacos I've had since La Paz, BCS. Fresh corn tortillas to wrap around the fish, good stuff. The chili rellano is good, not great. The eggplant and bean burrito was good, but the enchilada sauce is boring. The mole chicken is heavy, but it is a mole sauce and that is heavy. Not cheap if you're in my economic class at $7.50 for lunch. Friendly staff/ owners, we'll go again and have more fish tacos.

i don't live in prescott, but almost every time i visit this town, i make a point to stop at mayas. a creature of habit, i often have to order the same thing--a potato burrito drenched in red sauce with a side of beans and rice. it is good...earthy and simple and is enough food for two meals. salsa, chips, and guacamole are important factors to consider as well. they are all fresh and flavorful. the prices are also quite reasonable.

I haven't eaten here in years and the reason is because of the dirty kitchen. It's unfortunate, because I have heard that the food is more authentic than other more Americanized Mexican places in town, but I don't think it's worth a health risk to eat there.

Great food at Maya's. Fish tacos, ceviche & mole reminded of food we had in the Yucatan. Small place, service was a little slow on a busy Sat night.

Well we just got back from here! They had just opened for dinner. OMG the food was awful the place was dirty, wish we would have seen the cook and kitchen first. No food was covered the pots and pans were on the floor the cook looked like he just got through working on cars in a junk yard, he was filthy. After a few bites of Chili relleno a chicken taco our stomachs were turning! The chicken was not seasoned the enchilada just had chicken rolled in a tortilla w red sauce on top.The cheese in the chili rellenos was like rubber. I am not sure where all these other people ate that reveiwed Mayas or what state of euphoria they were in but please if you must try this place first look over the counter at the kitchen you may just turn around and leave!

We were THRILLED to discover Maya's. This place was recommended by the owners at The Motor Lodge, which is right across the street. First off, we are vegetarians - I am a vegan - and were shocked to learn that the owner of this restaurant is a vegetarian (and a native Mexican). We thought it would be a safe bet, and were delighted to find it was. They don't use lard in anything on the menu, but rather vegetable oil. I had spinach enchiladas with NO CHEESE and NO SOUR CREAM - unbelievable! They were fantastic. My husband had cactus and potato enchiladas and wolfed the plate down before I could even get a bite. It was fabulous to eat authentic Mexican and not leave feeling like a greasy ball of lard. Apparently you can BYOB, and there is a convenience store located across the street next to The Motor Lodge. We're going up to Prescott this weekend, and Maya's is on our itinerary!

I used to frequent Maya's years ago. I went back recently with husband and 9year old, and as soon as we sat down I noticed a long black hair in our salsa. When I asked for another salsa, pointing out the hair, the waitress/owner seemed put off and walked off without a word. Then my daughter found a hair in her quesadilla - which we again brought to our waitresses attention and she again huffed off, no apologies. We brought the 2nd quesadilla home and reheated it the next day, only to find another hair. I mentioned to my friends who love Mayas about what happened and that I thought Id call the owner and they informed me I was waited on by the owner, and that they wouldnt do anything anyway. So we wont be going back.
