This place was so good! I visited Bisbee with my family and this was my favorite restaurant we tried. We were welcomed into the tiny space and had the menu thoroughly explained. The pho came with fresh herbs and sprouts to add, the portions were huge, and I appreciated the vegan pho option. My family had the beef pho, summer rolls, and chicken curry and loved them all. I tried the iced coffee with milk as well, it was a bit sweet for me but others liked it. People were coming in and out for take-out, and the owner and server were both very kind and attentive. Will go back if given the chance.

I've been waiting for a Vietnamese restaurant close to where I live...i found it. The Pho is delicious! They carry beef and vegan Pho. Authentic Vietnamese cooking. Very friendly. I truly recommend this restaurant.

I had a craving for either Thai or Vietnamese and found this little place just across from the copper mine visiting center and museum. Don't let the small size or simple menu scare you away because it is PHOnominal! With pho it's all about the broth and it's superb. The noodles were just right and the beef, tender and tasty. Also don't leave without getting a "fresh roll". Two of these would even make for a nice delicious quick, light lunch. The service was friendly and quick. Even if it is busy or table unavailable it will be worth the wait for a table or even get it to go and eat it back in your room.

I would like to commend this establishment. Thuy has such a great thing going here. My family and I came from Hawaii, so we have had our share of great Vietnamese dishes. We were not disappointed with Thuy's cooking. The fresh rolls were delicious, and fresh...Hubby had the lemongrass chicken; it was excellent. My son and I had the beef and chicken pho, which was outstanding! This will definitely be my go-to place for Vietnamese while we're here. Thuy was super sweet and introduced herself. I would also like to comment on the server, Fernando. He was very attentive and an excellent host. They made a great team. Thanks Thuy and Fernando for great food and excellent service! It can be difficult to find.

Stopped here on our day trip and was pleasantly surprised. Though it be small, it be mighty. I had the chicken curry. It stole the show, though the pho noodles even inspired our four year old to try using chopsticks. Overall, a hugely successful choice for our whole family. Enjoy the warm atmosphere and friendly natives. A true Bisbee gem.

The basic spring roll was quite good but it stopped there. The traditional pho soup did not have much flavor, no rich broth, few noodles, and no vegetables beyond the traditional herb bean sprout platter. The cassava (tapioca) cake was dry, tasteless, and too hard to cut with the side of a fork. The cashier/waitress had an attitude that was not welcoming or helpful. The menu on the chalkboard does change daily so perhaps the other dishes are better.

In the land of overpriced mediocre restaurants that prevail in Bisbee, with a few exceptions, Thuy's is a very nice surprise. I can't say that any of the curry we have had, and we have had a LOT, has been better than the generous serving of chicken yellow curry we had here today. It was smooth, creamy, rich, and complex; obviously made with fresh and authentic Vietnamese seasoning. The beef Pho was also in the top five that we ever have had. A huge portion, with the traditional condiments to add to the subtle but flavorful broth. Even the jasmine iced tea was special. Our bill was about $20 and we brought home a bunch of pho. The only reason I didn't give five stars was due to the ambience. The service was just fine, but unfortunately these old but classic buildings in Bisbee, with their high ceilings, often have terrible acoustics and therefore it is a very loud environment. However, this would not at all prevent us from coming back to this wonderful little diner. Add a nice, quiet, and elegant atmosphere to the food and you have a true Five-star establishment in our opinion

FRESH! FRESH! FRESH! The best Beef Noodle Soup I ever had. The Spring Rolls are excelent. I drive from Sierra Vista to eat here and it is well worth the drive. Employees are great and the food is even better.

We had the pho, vegan pho, curry chicken, and the summer rolls. It was all very good - the pho was a little greasy, though. They were generous with the fillings for summer rolls and the peanut sauce was very good. The place was very busy and the food didn't come out all at once, but I hope the busyness means that this place will succeed, unlike the pizza place that used to occupy the space. There isn't a lot of seating, but they have long communal tables to maximize the use of the space.

Thuy's is a great Bisbee treasure! For the relatively short time the proprietress has been in the US, she has created an amazing cozy restaurant with delicious, authentic, fresh vietnemese food. Thuy (Twee) was a delight to chat with, it was great to hear her story, I so admire her drive to do what she has done!

I ate here a few weeks ago when I was staying in Bisbee for a writing retreat, and it was my favorite place! The first time I went I had the spring roll, cassava cake, and a side of vegetables and rice. I loved the spring roll and the dipping sauce: a few decent pieces of shrimp, lots of fresh vegetables, and they were HUGE. The cassava cake was moist and not too sweet, with a good texture and solid coconut flavor. The rice and vegetables were not on the menu, but Thuy was willing to serve them up just because I asked, and I was more than pleased. The second time I went I had the beef pho, and it was the perfect bowl of soup for that rainy day. The broth was savory and rich, with plenty of noodles and tender beef slices. I also liked the small platter of sprouts and herbs that came alongside the pho. These small and simple lunches were some of the best meals I had in Bisbee, and I look forward to visiting Thuy's the next time I'm in the area.

Absolutely delicious!!!!! I have had the Beef Pho, the Porridge with Pork, Vermicelli Salad with Fried Spring Roll(Bun), Summer Rolls, iced Vietnamese coffee and the fresh young coconut, as well as the Cassava Cake. Everything has been outstanding. I wish I could eat at Thuy's every day. I really cannot express how much I love this place. I don't give five stars for just anyone :) I had the best pho today that I have had in a very long time. The broth was so tasty I could not stop drinking it. I was not crazy about the spring rolls they were just not my cup of tea but hubby loved them and so did my daughter. I think that was a personal preference not a problem with food. They had some sort of flavored tea.. Was flowery tasting.. like Jasmine maybe? Was very good. This is a total package place to eat... Great food, great service, and cute place to eat. We will be happy to slurp down some noodle soup again in this great little gem.

I've had wonderful food at Thuy's. I can only think that the previous reviewer had a marginal experience because the restaurant had only been open a month or so. They seem to really have their act together now. The Pho makes for a light, delicious meal, the summer rolls are tasty and a screaming deal, and the curry is some of the best I've had. Just had steamed fish with rice - a bit of a project because it was part of a whole fish and had bones, but worth the effort. Only thing I would ask for would be some jalapenos with the Pho. Thuy's place is a great addition to Bisbee.

This is a small store front restaurant with limited room for seating. One long table to help get to know the locals or several small tables. Maximum seating of 15 or so. Most of the clientele appear to be locals, dressed in their thrift store "vintage" clothing too cool for school. As long as you don't get into a discussion on your love of Ted Cruz you should be OK. The people who work here are super friendly and go out of their way to make sure you are happy and well fed. During this visit I had the Pho Ga (chicken) and my wife had the beef pho. Both are served with a small plate of fresh herbs and bean sprouts. I also had a small helping of Thai peppers. The servings are large and served hot. The fresh herbs, onions, and peppers had the perfect texture. I have had the beef pho before but I liked the chicken a lot better but I think that is just my personal preference. My wife is addicted to their beef pho and has driven the 38 mile round trip to Bisbee to pick up an order to go on multiple occasions. The definition of an addiction. If you are in Bisbee and want a lunch or lite dinner check it out. Be prepared to either sit with strangers or take it to go. If you're feeling under the weather get an order of the chicken pho (to go). I guarantee it will cure what ails you. The best. The menu varies slightly from day to day and the chicken may not be available.

Let me let you in on a little secret. I have been to about 10-12 different Vietnamese spots in my day. I am not exaggerating when I say this is some of the best Vietnamese I have ever eaten. Everything is made fresh before your eyes and the menu is limited to keep the quality top notch. If you get to enjoy the Pho (they have VEGAN Pho! I was so stoked about this), you will get to partake in tearing into some herbs so authentic you may have never even tried them. Seriously. Yes, I know you've had Basil...but Thuy includes 2 more which I personally had never tasted. So cool! Her fresh spring rolls are what also really impressed me. The flavor and texture profile is a little different thanks to the fried garlic inside. A welcomed surprise. Oh and be sure to get a fresh coconut! When in Rome, err...Viet...Bisbee, am I right?

Oh my gosh!!! First time trying Pho (in Bisbee of all places) and this was AMAZING!! The vegan Pho and the fresh roll (vegan) are freakin amazing!!!! Also got the fresh coconut which came chilled (they later chopped it open so we could eat the meat) and it was perfect!!! The owner makes all the food where you can see it. This girl is a master at multi tasking!!! So amazing! The girl who took our order and served was extremely helpful in making sure that we knew the in's and out's. The owner herself came around to personally check on us. This place is amazing!!! I would come back to Bisbee based on eating at the restaurants including this one in particular. 200% worth it!!!

This was our first pho experience! My wife had the chicken pho and the shrimp roll. I had the beef pho and the shrimp and pork fried roll. Everything was terrific, and you look behind the counter and see the food being prepared. The jasmine tea was wonderful too!

I had the chicken curry. The chicken and vegetables were super tender. The curry broth was perfect, as was the sticky rice noodles. You can also get this dish with rice. My wife had the beef pho, which was also excellent.

LOVE LOVE LOVE Thuy's!! Everything is good! Our favs are the chicken curry and the beef pho. We usually get carryout because it's a small space and they don't serve alcohol. Definitely recommend, one of our FAV Bisbee restaurants.

I don't know what Elaine N. is talking about...but-we came with a large group they were wonderful and VERY accommodating and nice. Even as they brought out our food, they took the time to explain all items to us as they placed them in front of us. I loved the fact that we sat with locals, tourists and random folk! ...and let's talk about the food. Oh, the food was so tasty!! If you are a pho lover-you will not be disappointed. According to yelp, there are only 5 restaurants in Bisbee. For your money, this is your best bet. The restaurant is small, and was very warm as we walked in. You will notice that there is no back room kitchen, everything is done right in front of you. Their menu is very simple, and everything is made fresh. You can watch it made right in front of you. We started off with the spring rolls. You have your choice of pork, shrimp, shrimp and pork, or vegetarian. I got the shrimp, and the were some of the tastiest spring rolls I have ever had. They had cucumber and crispy garlic thrown in there along with the norm, and it was just perfect. I got the Beef Pho for the entree. It was tasty. Nothing super special about this pho, but it wasn't bad. However, their selection of herbs set it apart. You had your normal thai basil, bean spouts, and chilantro (or in this case culantro), and this spicy little number called a spicy paddy herb. That one spice really made all the difference from taking this pho from normal to top notch. Lastly, they do serve young coconut, which I had never had before. It was tasty, and they even offered to cut the husk in half afterwards so we could eat the young tasty pulp inside.

Went on a random Tuesday. Located a few doors east from the Lyric. 15 of 17 Chairs were full and a local gentleman gave up his seat so we could sit as a couple. The lemon grass was tasty, chicken was fine quality and could have been cut in more bite sized chunks. No plate was over 10 bucks. The fried noodles were supreme this night. Favorite flavor was the brewed Jasmine Iced tea. The fresh coconuts are fun. Our server yelled out a warning every time she took a big cleaver to chop open the empty coconut shells. Keeps everyone from jumping out of their skin when banging on the wooden countertop. Small kids loved this. Kindness and service pours out of the kitchen and staff. I would not come in a rush. Enjoyed the social atmosphere and the experience!

I was not expecting such a gem in bisbee. its a 19 chair noodle shop. The soup comes two ways beef or vegan. I had the vegan and it was full of veggies and garlic! yum. The Broth was not as flavorful as i would have hoped, but the garlic made up for it. The iced coffee is hands down the most amazing coffee ice had thus far. I was lucky enough to visit bisbee on a cold rainy day and the view was breath taking. I would def make another trip from ft huachuca to bisbee again! the staff was super friendly and they even pointed out some cool spots to check out.

Very nice fresh food prepared in an open kitchen by the owner who takes great pride in the food she serves. The waitress was friendly and efficient. Compared to most Vietnamese restaurants I have eaten in it is slightly more expensive, but only minimally, so not to worry, we were in Bisbee Arizona!

I used to live in a Vietnamese neighborhood in Oakland, CA and Thuy's beef pho and bun (noodles with veg. and fried rolls) were better than anything I ever ate in CA! The beef broth tasted like BEEF not watered down or overly salty, the meat was perfectly rare and beautiful, the fried rolls and the fresh rolls we tried were ginormous and delicious. Everything was fresh and minimally processed (for example, no red dye on the sliced pork in the spring roll) so you really enjoyed the flavors. And even though she's located seemingly out of the way in dusty Old Bisbee, Thuy has all the authentic ingredients: Asian herbs I don't know the name of and great hot Thai chilis to add if you want to spice things up. The small pho was enough for my dinner but I got one fresh roll, too, and surely did not regret it.

Boo thumbs down!!!! Greasy pho, and the vegan is not really vegan. We walked in and a girl with dark hair, I think I heard Jess...or Jessica...looked at us funny. She kept talking to her friends and not taking our order. Finally we got our order in. Nothing was good, ok....but not good.

Great little noodle shop in a cool town, Bisbee. Got the beef noodles and they were great. The kitchen is right there and you can watch your food being made. The woman doing the cooking was smiling the whole time, there was some nice Vietnamese decoration, and a great local painting of Bisbee on the wall. This will be the first place I recommend for anyone heading to Bisbee.

SOOO delicious! The ingredients are super fresh, 100% authentic Vietnamese food. We tried 2 of their daily specials and both were wonderful. They also offer vegan options. Definitely worth a stop if you are in Bisbee. Very friendly service too. Loved it!

Very surprised to see a vietnamese restaurant in bisbee! The menu is very small and she sticks with the basics. The large bowl of pho for $8 can't be beat. My wifey ordered the chicken curry noodle dish and it was delish. My only gripe is they didn't have pho dac biet (combination with tendon, tripe, beef brisket). For those familiar with pho the type served here is pho tai. But all in all an excellent meal with fresh ingredients. Hoping this restaurant makes it in bisbee! Also worth mentioning there's vegan pho here too to cater to the funky hippies of this town lol.
