I'm surprised that Huntsville doesn't seem to have the same smattering of biscuit houses or shacks that seem to populate every other mid-sized southern city. You know the kind- basically little drive-thrus or sheds with limited seating that open early and close around noon and serve a limited menu consisting of any kind of breakfast meat you can imagine on top of a biscuit for under $4. Well, since they don't, places like Gibson's are even more of a God send, open for breakfast at 7am seven days a week. Open for 59 years, Gibson's main claim to fame is the barbecue. It's got a large homey eating area, with two large private rooms for large groups. Expect checkered tablecloths, paper napkins, and crunchy ice for your drink. It's also about a mile away from Crestwood Medical Center if you need a good and cheap meal to hold you over when a loved one is in the hospital. For breakfast, I chose a two egg and bacon combo, which came with three generous pieces of perfectly cooked and extra smokey bacon, a side of unremarkable grits, and two of the best biscuits I've had in recent memory. These are not the flaky, layered, buttermilk kind, but more of the roll-like, cakey kind with a crisp, salty, buttery exterior. Though I'm normally a butter and honey biscuit topping kind of girl, these were good enough to eat plain. Best of all, this tasty breakfast was just $6. The only thing holding them back from the full five stars for breakfast is that service was a little slow, though I suppose that to be expected when you order during the height of the post church Sunday brunch rush.

By far the Best BBQ around. I have been a frequent visitor for over 20 years. You will not find better BBQ or Fried Catfish anywhere. The hush puppies and sweet tea are tops. You also might want to try the beef stew- it's great. As a matter of fact, I have never had anything that was not to my liking here. Give it a try and you will be back again... Trust me.

One of my favorite places when I visit home. Why I love it: 1. BEST.BRUNSWICK.STEW.EVER! 2. Crushed Ice 3. Sweetest people work there - I miss my sweet hometown people (I must be sweet too, right?) 4. Hush puppies 5. White sauce
(5)Mark J.
A stuffed potato about the size of a nerf football with REAL butter and BBQ sauce and sour cream (if you want it). Had it for lunch about a week ago and had enough potato left over for dinner that evening!
(5)Gray R.
Very average AT BEST. I would not recommend this place as one of my top 3 in the Huntsville area. Not bad just nothing special. Meat is fair - good, for the same price I can find MUCH better options in the Huntsville area.

Best breakfast around. We moved from Huntsville a few months ago, so stopped by while visiting family. Biscuits!!!!!

First of all, why are there at least 4 different BBQ joints in HSV named Gibsons? There's David Gibsons, Gibsons, Little Pauly's Gibson (and BTW, his last name isn't even GIBSON) and Big Bob Gibsons. I've now been to 3 of the four and David Gibsons is my fav so far (I may be starting some kind of Gibson war with that comment, but don't care.) And hey, this Gibsons is open on weekends and serves breakfast, which has good southern style food. Country ham is salty, biscuits are homemade, eggs are eggs, and the grits need lots of butter and pepper. Worth a try if you want any kind of Gibson. Evidently there's too much pork for ya fork. oO #

The food is good though the elderly wait staff is slow and getting slower. One lady barely talks anymore. Portions are large and it's a standard family BBQ place; huge stuffed potatoes, loose meat combo plate, etc, pie. It does NOT live up to the hype here and it's not "award winning" Big Bob Gibsons from Bob Wallace Ave or Decatur. This restaurant hasn't changed since the 1970s and that's just fine, though, geez, get some younger waitresses. Update: I have been informed that some of the wait staff are not elderly. Review stays at three stars since that has not been my experience.

Gibson's is one of those quintessential Southern fare restaurants that hits you with a delicious array of barbecue, platters, hush puppies and pies as you walk in, leaving you rather at a loss as to what to order because of the sensory overload. However, when it comes down to it, anything you fancy will probably be tasty. And then finish it off with one of their enormous slices of pie and you'll be good to go. Breakfast is also a good time to visit Gibson's--they have all the grits, sausage, eggs, bacon, pancakes and biscuits you'd want to eat, and for pretty reasonable prices. I'd say this is a definite must-try when in the Huntsville area as far as barbecue goes.

Gibson's should be considered a national treasure. Gibson's is definitely a Huntsville treasure. I often stop here before visiting family in Huntsville. This is a running joke and has been that way for 32 years. Anyway, the pit bar-b-q is some of the best in Huntsville. I've never tried the ribs like one of the other reviewers (must be a Yankee or something) but the regular pork sandwiches are great. I always ask for outside meat and I have NEVER been disappointed. Today I got stuffed potato like I usually get at Dixie Bones back in Virginia. This potato had to come from Texas because it was huge. Cooked perfectly with just the right amount of bar-b-q topping it. Truly lovely.

I don't get it. I've had a few different things here thinking maybe I just ordered the wrong thing, because the natives love this place. Pulled Chicken sandwich -no flavor, dry and served on dry white bread. Pulled pork plate... Again, dry, stringy and pretty much flavorless until you smother it in sauce. I tried the chicken again and got it with coleslaw... No. Just no. The hush puppies are good sometimes, but, sometimes they are just greasy... Like maybe the fryer wasn't hot enough and they just soaked up the oil. Same with the fries. Husband had a Brunswick stew once and he said it was really good, but got grossed out because he kept chewing on bones. Overall, it's too bland and greasy for my taste. I've never tried their breakfast though.

Best barbeque I've ever had. Chicken stuffed potato is to-die-for. And the hushpuppies. Mmmmmmmmmm...and the pie....and the...everything....gah! Love that crushed ice, too! I wish I could find a machine like that for my home. Only ever found it in commercial sizes. The service and speed is EXTREMELY fast, too! Always gonna go here.

Gibson's Barbecue is a Huntsville tradition, and while they truly are exceptional, it isn't for their barbecue but rather, for their breakfast. Their cheap, classic, consistent, & delicious breakfast is absolutely wonderful! It's a great place to get a taste of the Southern Huntsville history. It is a more-than-common tradition for all native Huntsvillians to stop by Gibson's for breakfast at lease once while visiting home. Their barbecue is fairly good, though it has been getting drier over the past few years, yet their pies are 100% made with love & pure deliciousness (you will NOT be disappointed). Go in for breakfast, order a CRAP-LOAD of biscuits (Trust me.) & chow down. Theirs are some of the *best* biscuits I've had in my whole life. They are fluffy, hot, smooth, moist, & full of tasty magic of some kind. I would absolutely love to steal their recipe!! Needless to say, Gibson's is popular with the old, the young, & everyone in between. I would definitely recommend their classically Southern breakfast. :)

We have had a great server. That makes this experience wonderful. Food was good a d the hush puppy's were great. Over all on the food maybe a 41/2. But it was good. Even if they did buy the BBQ sauce in the bigger bottle.
(5)Gina P.
Coleslaw was weird, blended, no carrots, like baby food. The barbecue was dry and tasteless. Not use to this type dry and cold.
(2)Jay D.
Game here for breakfast with a group of co-workers. (Breakfast at a BBQ place was probably the first problem) Nothing special. Food was warm, barely. Two eggs, grits, ham and biscuits w/gravy about $11.00. Biscuits were good...nice and fluffy. Parking lot was pretty full at 8am so it is a local favorite but for this guest from out of town...not so much.

My wife and I have stopped here a couple of times after church and have had mixed experiences. I'll start with the food. It's a bit above the average bbq place around here, and prices are decent. The bbq beef potato is my solid choice, and the Brunswick stew is quite good. My wife gets the chicken potato, and friends have tried various other sandwiches and all agree it's good but not the best. The service is where it really gets shaky. The first time we had a very surly old woman who was clearly favoring an all-white family who I assume are personal friends and/or regulars. She seemed to have very little care for me and my wife, and my sweet tea glass stayed empty and my Brunswick stew didn't come until I had to ask for it after both potatoes were done. This may be because when she told me they don't sell pints of it I opened my menu and showed here where they did. She snappishly replied that was only for take-away orders. I think my "I'm about to walk out without paying, you miserable old hag" tone in asking for it is what eventually resulted in a bowl of stew with an apology. She had no trouble getting all the white tables food and drinks quickly and efficiently, and while I'm aware this is a hasty generalization I felt there was a definite racist vibe from our waitress. The most recent time we had a young server who seemed to have a bad smell under her nose. She was good at keeping my tea refilled, though, and ultimately that's my biggest concern with a waitress. A friend got the wrong order, and she let him keep it free of charge and brought the correct order out for him, which I felt was a good way to handle the situation. This place is okay for children. It's a bit noisy at times, so children don't disrupt the atmosphere as much, and the staff was friendly with our friends' children. This is one of those rare times where I will make such an admission. The one hope I have is some day to try their breakfast since they do bbq biscuits. I've not yet figured out why more bbq places don't do this, because bbq biscuits are amazing.

Ribs: 5 stars!!!! Limited non-barbecue items and a little pricey for the serving size. Very friendly service. Good local food experience!
(4)Ben L.
Stopped by here for breakfast cuz I was getting tired of Waffle House. I never thought going to a BBQ place for breakfast would be a good idea but Gibson's has a really good breakfast. Yes their menu isn't as extensive as Waffle House or Cracker Barrel, but their biscuit gravy turned out to be one of the best I've eaten. I'll be back.

Was recently in Huntsville for business and the desk manager at my hotel recommended Gibson's as being a good local restaurant to grab some lunch. This certainly isn't a fancy place, but the food was quite good, the prices extremely reasonable and the portions more than satisfying. I had the stuffed potato with pulled pork on top as well as fried okra and hush puppies on the side and all were quite tasty. I had never had a stuffed potato with bbq meat in it before, but I definitely will again. I plan on stopping here for lunch again if I happen to be in town in the future. Overall, good food, good prices, prompt services, nothing to really complain about.
(3)Bryan H.
Good stuff...that you can get other places too. It's a good place for families or even big groups in the back. The breakfast has a lot to be desired....I won't go there for breakfast again.
(3)Thomas A.
Nothing special about their barbecue. The restaurant looks old and dated and the menu's on the table were greasy and dirty. I got the pulled pork sandwich and it came out less than five minutes later so it was obviously already pre-made. Didn't try their famous "white sauce," but their bbq sauce wasn't out of this world either.
(3)Kirby B.
I know this is Yelp but YIPES! Bottom line, run away, be very afraid and don't look back. Now for the long version. First, the ambiance is about the same as eating at your great grandparents house that hasn't changed since they moved in it in 1956. Decor hasn't changed although they did upgrade to plastic plates like we got in elementary school lunches in the 60's. One high note was my waitress Rendy who was polite, never let my tea get low but didn't hover either. Kudos to her and 5 stars. She deserves better food to serve. Next the food. I got a pulled pork plate with 2 sides and hush puppies. The pulled pork was dry but edible. There were three accompanying sauces on the table that were all unlabeled. The first two were in squeeze bottles. One was a white sauce that tasted like watered down Ranch dressing. The other was a very watery barbecue sauce that was pretty much a watery vinegar sauce with hot spice in it. The last was in a standard BBQ sauce bottle that had a taste and consistency of Kraft barbecue sauce and basically tasted ok but there was no label on that bottle either. No descriptions or mention anywhere about them. Odd since most places are proud of their sauce, its secret ingredients and usually private label it for sale. I guess nobody from this place got a degree in marketing. The coleslaw was strange at best. It tasted a little vinegary and somewhat sweet. It had been processed in what I believe to be a blender until it was almost liquefied it was so fine. I guess I should have expected that looking at the age of the crowd in the restaurant. Another pulse or two in the blender and you probably could have given it to me through a feeding tube. Next was their adaptation of potato salad. It probably had four ingredients: potatoes, Mayo, a little mustard and a few chopped pimentos per gross of potatoes. REALLY? I've had better potato salad at a church social that was made by the hundred and two year old lady that could barely even see, heard even worse and called everybody Lenny no matter how many times you told her and spelled your name for her. There were two high points to the meal though in addition to my waitress, Rendy. There were three dill pickle slices on my plate that I actually had a bit of spice to them. I would be in absolute shock if they were made in this place. They had to come from a jar. And of course the hush puppies which were made fresh, they were hot and they were actually pretty tasty. My guess is that they actually make them in this restaurant from scratch (I know, you are experiencing the same shock I did) because they didn't have a standardized shape that you see in pre-manufactured, frozen ones. To top insult on injury to my meal, they only serve milk coffee tea or soft drinks. No beer anywhere. Yet again this is a sign that nobody in this place has a degree in marketing much less even took marketing 101 at the local Junior College. To my absolute shock this restaurant was rated 3 to 4 stars on Yelp. I can only assume from that that the people who have been rating this restaurant have only had BBQ at this place or have had such bad BBQ that they have very low expectations. Maybe you should try getting outside of Huntsville sometime.

Pretty good BBQ, if you are making a comparison to Big Bob Gibson's in Decatur this is way below that standard. My pulled pork had a good flavor, but was a bit stringy and tough. Sides were good. I do like the "Texas" style service where sauce is on the table and is optional. Their white sauce was very good. Service was excellent. Good, but certainly not the best.
(3)meredith m.
One of the best bbqsin Alabama. They have the famous white sauce, which you could drink by the glass it's soooo good, fantastic BBQ, marvelous pies and a Brunswick stew that angels sing about. This is a slow and easy restaurant. Nothing fancy. Just good food, done right.
(4)Leslie D.
Being from south, it's hard to find bad BBQ. That means I am never surprised by having good BBQ. But this place actually made me say, "This is REALLY good BBQ!" The sauce is the closest restaurant sauce I have had to my grandmother's. Kind of vinegary, kind of sweet, so perfect! The potato salad was good as well as the hushpuppies. Unfortunately I didn't try any of the pies, and now regret it after seeing other reviews, so if I find myself in Huntsville again, I will definitely try one.
(5)Connie W.
They have a great breakfast. My husband loves their stuffed potato. And believe it or not they have a good bbq salad. I also recommend the sf peach cobbler. THE SERVICE is way above average and it really has that local family restaurant appeal. PLUS for any outside kind of holiday like the 4th or memorial day you can call them and pick EVERYTHING up. oh and last thing I grew up on their brunswick stew (sp?) MY WHOLE family loves that stuff

I was in town on business, and being from Kentucky originally, I was craving some good BBQ as there aren't very many in Southern California. As soon as I get off the plane in Huntsville and grab my rental car, I head to Gibson BBQ. It's a little hard to find because of the way the roads are structured in HSV. After circling the area twice, I finally found it. I promptly walked up to the To-Go counter and am greeted by a friendly cashier who recommended the pork ribs. I ordered a full rack of pork ribs with a side of potato salad. The sweet, smoky flavor of the meat was delicious. The potato salad was also pretty tasty, and despite what I've read on Yelp, I liked their rendition of hush puppies. I would definitely come back here again if I was in town again.
(4)Jeff C.
It's barbecue. This one is no better, and no worse, than average. When reading the other reviews on this place, sort out the digs on Gibson's from the digs on Alabama in general. To quote Tom T. Hall, "If you don't like what we do here, don't COME here." Personally, I think the pork is a LOT better than the beef.

I'd been hearing about this elusive "Gibson's" place my mom had talked about all through my childhood, and it wasn't until she moved down to Huntsville about a year ago that I was finally able to experience bbq the Gibson's way. The sauce, the sauce, the sauce. That's all I heard about as many times as I heard "go clean up your room." The sauce is delightfully spicy and has a well-balanced, tangy vinegar taste. Some vinegar-based sauces make you feel like you need to wash your mouth out, but Gibson's sauce leaves me wanting more. (I wonder what kinds of narcotics they throw in there to make it so addictive.) The pulled pork is very good but not the best in the world. I've tried just about everything on the menu. The Brunswick stew is popular with the locals, but is in need of serious rehabilitation before it graces my palate again. Avoid the hush puppies altogether and get rolls instead. Their (per)version of this favorite southern treat at often dense, if not cold. (Perhaps folding in some egg whites might improve the density.) The french fries are great when fresh (which is most of the time); their vinegar cole slaw is a favorite of my mom's. One of the most remarkable things on the menu isn't a food, but their cokes. There's something about the way their amazing ice blends with Coca Cola. It's worth the price of admission. Bottom line: it's one of the better BBQ's in Huntsville and it's still a small, family-owned business.

Down the street from the hotel I stayed at, figured I'd give it a try. Unfortunately it wasn't much of an experience worth repeating. Everything was just okay, the ribs, beans, coleslaw and rolls were just so so. I did like the portrait of the, I'm assuming, founding Gibson's by the register, overseeing the restaurant.
(2)Mark B.
Excellent Barbecue! I had the pork plate with slaw, corn, and hush puppies. The other person I was dining with ordered a side of hush puppies as well, but our very nice waitress said she'd bring enough for the both of us, and he wouldn't have to order his own. Currently they are giving away free pie on Mondays and Tuesdays, and the coconut cream pie was EXCELLENT!!!!

So I asked the concierge at my hotel where I should go for lunch with the stipulation that it had to be "Huntsville". He said Gibson's BBQ. I said okay. I walk in and everyone turned and stared at me a little longer than they probably should have. It's not that I look funny, it's just I'm not from "these parts" I guess. I get seated at a booth with clear plastic tape keeping the seat together. Sweet. After looking at the menu and deciding on the pork the following takes place: Waitress: What can I get for you hun. Me: Is the pork plate just a bunch of pork...on a plate? Waitress: Gives me a weird look and finally answers yes. Me : Perfect. Waitress: Do you want a roll or hush puppy with that? Me: (thinking to myself a shoe??) Having no idea what a hush puppy is I ask. Waitress: Gives me another weird look then says its some kind of roll with onions...I wasn't really paying attention. Me: I'll pass. Waitress: Do you want pie? Me: (thinking to myself is pie really pie or is it something else) What kind of pie do you have (see, I asked what kind of pie they had which hid the fact I didn't know if she really meant pie...which she did). Waitress: lists all kinds of pie Me: no pie, thanks. Wiatress: Gives me another weird look then thanks me. I got half way through the pork and started to think it was a little dry (it didn't have any BBQ sauce or anything on it). That's when I look right and see a big ole bottle of unlabeled BBQ sauce. I couple of shakes of that on my pork and all is well. Well, now it just takes like BBQ sauce. So I'm not really a big BBQ guy so maybe that's just how it's supposed to be. I had a side of BBQ beans and green beans. The food came out about 2 minutes after I ordered so how fresh could they have been? I think this will be the first and last time I eat anywhere "Huntsville."
(3)David P.
Can't believe this has such a good rating, but I guess that answers the question "How the hell is that place still in business?" I always assumed it was because everyone assumed it was the famous Big Bob Gibson's BBQ, but that is in Decatur (and even that one doesn't live up to the hype). Anyway, I'd stay away from this place if you want decent quality BBQ. Little Paul's is way better.
(1)Ryan M.
After eating here 3 times while visiting family in Huntsville, I can honestly say this place is overrated. The basic pork is kind of dry, even after you add sauce. The brisket and ribs are much better however. This place is solid but unless I want Brisket I'd much rather skip the wait and the fuss and pick something up from Whitt's or the Texas Smokehouse.
(3)Manda J.
No trip to Huntsville is complete without a meal at this Gibson's location. Love the food, the service, and the sweet tea! Heading north on Memorial Parkway, take the first Drake exit.
(5)Kim P.
Love their BBQ!! I lived in Huntsville while attending grad school and often had dinner at Gibson's. Yummy desserts!! Whenever my family is in the mood for BBQ, this is where they go. Highly recommend!!
(5)Jeff B.
Haven't had the barbecue so I can't speak for that. The draw for us is the breakfast. Try the country ham biscuits! Friendly and quick service, I'd say early Sunday morning is your best bet, as Saturday can get a bit crowded.
