    This review is strictly based off of two things: Steaks and Boudin. I wish I had more to tell about. But anytime I make the trip out, that is what I have to get. Hands down, best Boudin I have had outside of Louisiana/Southern Mississippi. It has great seasoning and a good blend of meats. My grandfather who lived most of his life in NOLA and is now in south Alabama, always asks me to bring him some when I visit. The steaks are also incredible. I ask them a recommendations on the cut they are most pleased with. And that usually pleases me. I am interested in the hogshead cheese. But they have it so rarely, I have yet to try it. A great neighborhood butcher shop overall.

    Dang it Nick! You should know better than to sell me bacon wrapped scallops with fillet in a package without warning me. I get home and cook em on the grill thinking our kids wouldn't like them. They were so good, the family broke out in a fight over the last one. My daughter had one and went upstairs waiting for us to tell her dinner time. She came down and wanted the bacon wrapped scallops and they were all gone causing her to get upset. The fillets were great also!

    I have bought ribeyes and kegs from them in the past and always had a good experience. Everyone is always friendly, but after I bragged about the Cajun Cleaver and how great they were I convinced some out of town relatives that they needed to try their steaks. When we showed up the only T-bones they had were frozen solid. I got a couple decent ribeyes that were fresh and they convinced me the frozen steaks would thaw out and cook well so I went ahead and bought them. The steaks looked like hell after thawing and werent very good. Don't call yourself a butcher shop if your going to sell frozen steaks. $175 later and I'll never go back.

    I'd passed by this place a hundred times before I actually decided to stop in. Shame on me for not going in before. the selection of different sausage and other meats was nothing short of impressive. They were having a beer and wine tasting when we stopped by, so we were able to sample a bunch of great craft brews for free. They don't only have bottled beer for sale, but a few options on tap, as well. The guys behind the counter were helpful and told us all about the store. It won't be the last time they see me. I'm officially a fan.

    I love this place. I am from Louisiana, and this place reminds me of home. Great boudin and andouille. I only wish this place was in a more convenient location, and not way down 150 in Hoover.

    I drove way out here on Saturday to check out their housemade hotdogs for a little 4th of July gathering. When I got there, the 1/3 lb beef and pork hotdogs in natural casings looked amazing but they only had 6 left and I needed about 15. They nicely offered to make up some fresh dogs while I waited. I had some other area errands to run so when we returned 30 minutes later they were all bagged up and ready. At around $5.69/lb, we are talking some spendy dogs (a little under $2 each), but these were amazing and very flavorful. Good snap, great beefy flavor without being too overpoweringly beefy (ie kayam or hebrew national) and only needed a little mustard. Even though the weather did not want to cooperate, I blanched them then grilled them in near monsoon conditions and they were the hit of the party. I wish V Richard's meat market had anything like these since it's so close. Thanks Cleaver; I will return to try those awesome looking andouille.

    Been buying sausage and beer from Nick for years. My father-in-law is in the Cajun Cleaver a couple of times a week and I get by any time I'm in town. His boudin and brats are outstanding. This year, we ordered our Christmas dinner from the Cleaver. We had the fried turkey, dressing with crawfish, mac and cheese, and squash casserole. The turkey was perfect, juicy and cooked through without overcooking. The dressing was probably the best I've ever had (sorry mom). The mac and cheese had chunks of sausage in it and was fantastic as well. I was not particularly fond of the squash, mom has Nick beat there. In addition to the Holiday food, they have fresh meats, a variety of sausages, and prepared foods like gumbo and stuffed chickens ready to go and the prices are reasonable for the quality. They also sell beer and wine plus craft beers on tap which they sell by the 1/2 gallon. I really hope the community continues to build support for the Cajun Cleaver, it's a real treasure.

    Excellent Andouille sausage. This is much different from the "Cajun" sausage that you get packaged in your chain grocery store. Very dark and spicy. I love to use it in my red beans and rice. I also recommend the stuffed chickens. The chicken is de-boned and stuffed with crawfish etouffee. Pop it in the over for 45 minutes for a great dinner.
