Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Cantina on Wheels is the best! Recently, Cantina on Wheels came out to Birmingham-Southern College for Jazz on the Hilltop. Nachos + tacos + truck fries = lots and lots of happy guests. This is the second time I've worked with Cantina on a big event, and both times they have been nothing but helpful. Their food is always a crowd pleaser, and I trust them to do a great job. I highly recommend you book Cantina on Wheels for your next big event!

Two Words = Happiness. Fish Tacos! I feel like jumping for joy anytime I see this truck near me and make my way over for my beloved fish tacos (which include grilled or breaded & fried fish, slaw, cilantro mayo, and avocado). I'm guilty of eating the same item from Cantina and Cantina On Wheels most of the time I stop by either. However, the tacos are sooooo good I don't feel like my taste buds are missing out on anything else on the menu! In addition to the delicious tacos, the Mexican style street corn (when it's available), garlic fries, and veggie tacos are all killer options. The staff is also always welcoming and the hilarious Big Bang Theory Sheldon tip jar puts a smile on my face with each visit. Seriously, make sure to tip these nice folks when you stop by for a yummy bite!

This is The Best Mexican food truck I've ever had. I've been here many time when they park at UAB. The Club Tacos are amazing and the best item on the menu. The tacos come with fresh grilled chicken, fresh avocado slices (not that fake avocado paste at some places), a strip of bacon, cheese and a special sauce that just adds that delightful end note to the taco. The service is fast and efficient for a good truck. It's kinda pricy but the food is actually worth the money! I would recommend it to anyone who wants good Mexican food on the run!

Preface. ..I ate everything before being able to take a picture, sorry. Finally I got the opportunity to try the famous food truck. It was awesome. I decided to go for street food fare vs overpriced ballpark fare. I ordered the veggie taco & mexican street corn (steamed corn on the cob topped with cheese crumbles, amazing spices & cilantro mayo)...they were both yummy goodness $4each! The line moved very quickly in the middle of right field at Birmingham Baron's second season in Region Field-such a perfect evening to skip cracker jacks & reach for tacos! Fresh eats on wheels!

The food snob in me always cringes when I give exceptionally high reviews for something like a food truck that serves non-authentic Mexican food. And who knew that not having the real thing can taste so good. Your food is prepared faster than a microwave. This is scary because everything tastes hot and fresh. It must take them more time to put this together, right? The chicken nachos may not be enough to fill you up all the way but you'll be satisfied so I made the mistake of ordering the garlic fries that make your breath terrible but your stomach oh so happy.

Recently tried out this food truck at an event in Homewood. I walked away very impressed with their tacos. I'll rate each individual menu item separately. For two people we tried the following: Cuban Taco - 5 stars. Excellent taste prepared well and quickly. Wanted another one of these after I finished it. Asada Taco - 4.5 Stars. Near perfect but not quite as memorable as the Cuban. Fish Taco - 3.5 Stars. This taco came with a huge tilapia portion which was awesome. Normally I'm not super picky but it did seem like they burned the tilapia, but the avocado on top was a great touch. Chicken Taco - 3.5 Stars. Tasty but not outstanding like some of their other taco options. Garlic Fries - 3 Stars. I kind of wish I would have tried the Garlic Cheese Fries. I'm glad I tried these but will probably just stick to ordering tacos in the future. Overall, great quick service and lots of food for a decent price. Can't beat three dollar tacos. Support your local food trucks!!!

While I don't see it much during the day, I've been lucky enough to catch Cantina on Wheels at events around town. The latest was a Sunday evening concert at Good People Brewing. For two people, I ordered the Chicken Nachos, Asada Taco, Chicken Taco, and the Cuban Taco. All four were fantastic, but the tacos stuck out. Each had a different sauce and toppings. The Cuban included pickles and was by far my favorite. All three employees greeted me as I walked up and were friendly throughout. If you get a chance to try this truck out, you should.

Very fresh take on flavor! Everything on the menu is something you've seen before, but not in the combinations and with such fresh components. I recommend.

Awesome food for value. I suggest the club taco and chicken taco. Their plane fries are fanominal! The fire taco is good if you like spice...if not stay away from that one cause it will light you up...still sweating...so good.

Two words: Cuban taco. And veggie taco. And chicken taco. And black bean taco... Okay, that last one was three, but one thing is consistent across the list: they're all delicious! The Cuban was the best in my opinion - the pork and the sauce work great together, and the pickles add a good crunch to the mix. At the Street Food Rally at Workplay and then again at Party on the Porch at Alabama Outdoors in Homewood, Cantina brought the flavor and flair to the party. Definitely keep an eye out for this roaming food truck to pick up a couple tacos to munch, and you won't be disappointed!
